Fix Restaurant & Wine Bar is the signature award winning restaurant of the Port Office Hotel. Fix uses only the best quality meat from Australia’s finest beef producers. The menu showcases a diverse range of steak dishes, with over 8 different cuts and varieties to choose from, including the house specialty – Tasmanian wilderness rib-eye fillet as well as the popular wagyu rump and 450g rib-eye on the bone. Fix also showcases an array of fresh seafood dishes, with the ever changing fresh fish of the day dish being the most popular. ASCOT/HAMILTON

Brisbane City has a broad crosssection of eating precincts, styles and flavours. With numerous parks and outdoor areas, its Al-fresco lifestyle is a direct influence on many of these restaurants, however you will find that there are precincts within the City precinct. Eagle Street Pier and Riverside are a given, laneways are popping up with the funkiest of venues, not to mention some hidden gems throughout the city limits. Eat, drink and enjoy the diversity!

Lined with Poinciana trees, Ascot and Hamilton offers an old-world elegance, in true Queenslander style. Racecourse Road is the hub of this precinct, with both Eagle Farm and Doombden Racecourses on its boundary. Racecourse Road offers fantastic dining, and with only a few minutes walk you will find Bretts Wharf and Portside Wharf, with a diverse selection of dining choices, as well as cafes and boutiques.

BULIMBA/HAWTHORNE Experiencing a resurgence over the past few years, Bulimba and Hawthorne offer a village charm mixed with contemporary elegance, it is a foodies haven, coupled with a real laidback lifestyle. Stretching along Oxford Street there are a variety of different bars, cafes, restaurants and boutiques, but don’t forget Riding and Hawthorne Roads, with some new additions, this entire precinct is the place to be, any day of the week!

CAXTON ST/THE BARRACKS Only a stones throw from Suncorp Stadium, these close-knit precincts offer a diversity in nightlife, bars, cafe, dining and lifestyle offerings. Caxton Street has been synonymous for years with great food (seafood in particular) and great nightlife! In one of Brisbane’s oldest historically settled areas, The Barracks has been transformed from prison and police depot to the vibrant foodie and lifestyle haven it is today.

FORTITUDE VALLEY Commonly know as ‘The Valley’, it is a hub for culture, music and shopping. The Valley stretches in several different directions, including The Mall, China Town, Brunswick Street, Ann Street Emporium and James Street. They all offer their own ‘flavour’ of The Valley. Take your time and explore what it has to offer.

KANGAROO PT WOOLOONGABBA Kangaroo Point, stands on the peninsular opposing the city of Brisbane. The Story Bridge pierces it’s way through this suburb and defines one of Brisbane’s legendary pubs, The Story Bridge Hotel. Just a few k’s down the road is home of the Gabba (Brisbane’s official Cricket and AFL ground), it’s namesake Wooloongabba offers a mix of pubs, great dining and cafes, mixed with a smattering of eclectic boutiques and stores.

KELVIN GROVE/SPRING HILL Surrounding QUT (Queensland University of Technology), Kelvin Grove is a hub of creative and cultural activity. Victoria Park & Golf Complex is just near-by offering golf, restaurant and function facilities. Spring Hill completes this triangle of dining, entertainment and cultural offerings. With a variety of pubs and hotel dining, Spring Hill also offers some of Brisbane’s first history with it being one of the oldest residential neighbourhoods.

MILTON/PARK ROAD Milton is home to some of Queensland’s most iconic, with Suncorp Stadium and the Fourex Brewery (XXXX) within it’s boundaries. The Park Road strip offers an European flavour, with venues such as La Dolce Vita, a Brisbane institution. Whilst Coronation Drive (aka Coro Drive) divvies up some quintessentially Queensland architecture, with The Regatta Hotel a prime example.

NEW FARM/TENERIFFE This peninsular offers a fantastic diversity of bars, cafes, restaurants and of course the beautiful New Farm Park and Powerhouse dining and entertainment precinct. New Farm stretches much of the length of Brunswick Street down to the park on the water, Teneriffe extends along the waterfront.

PADDINGTON/ROSALIE Paddo, as the locals know it, is edgy without being ostentatious, offering a mix of trendy boutiques, bars and dining. Rosalie ‘Village’ is an attractive hidden pocket of Brisbane, and the locals would love to keep this secret, however... the word is out! This is a quality not quantity precinct that is sure to delight!

SOUTBANK/WEST END Southbank speaks for itself with a wide variety of boutiques, dining and bars, mixed with family-friendly outdoor spaces. With Boundary Street as it’s spine, West End offers a diverse ethnic mix, and this throws up some delectable gems when it comes to cuisine. But don’t forget the varied vintage shops and eclectic mix of characters.

TOOWONG/ST LUCIA These two suburbs are a little further from the inner-city heart of Brisbane, but still worth the look in for dining, as there are gems popping up in these suburbs all the time. Perhaps driven by it’s proximity to UQ (University of Queensland), there is a real diversity and quality of cuisine. 51

You may have heard of Dry-Aged beef, but you may not know what the hype is all about. You may have heard of Dry-Aged beef, but you may not know what the hype is all about. Several restaurants throughout Brisbane now offer Dry-Aged beef on their menu and customers are loving it! The general consensus is that the premium that you pay for your meal is well worth the delectable delight, and your taste buds will be thanking you! The age old process of Dry-Aged beef is in fact the traditional way in which meat has been prepared throughout the ages. So what is involved? Dining Out sat down with Steven Adams from award winning Moo Moo Restaurant & Bar in Brisbane to discuss the process and why it has become so popular. Moo Moo hang their beef in purpose built cabinets between the temperature ranges of 2-4 degrees Celsius, and is hung for 50 days on average. Whilst the beef is hanging, moisture is drawn out of the meat. As the meat starts to dehydrate, bacteria forms around the beef. The enzymes in that bacteria work hard 58

to break down the beef sinew and the fabric of the beef. “The decision to proceed with installing these expensive cabinets was made because we wanted something to display to the customers as they walked by, that showed the Dry-Ageing process by having samples of beef, identified by a label, throughout their varying different stages of ageing. These samples being the very same beef that we would ultimately serve in the restaurant. During the hanging process, each week we remove the meat from the cabinet and dress the meat back to a raw clean product, then re-hang”. Adams goes on to explain, “It is this combination of the process and resulting enzymes within the bacteria that gives the beef: its strong texture; slightly acidic taste; and real beefy flavour, which really makes Dry-Aging a connoisseurs piece of beef. If you ask me, It really is some of the best beef you can eat”. The Boatshed in the newly fully refurbished Regatta, also prides itself on serving extraordinary meat, sourced from a range of first class beef producers as either dry aged

or wet aged; as Shane Keighley, Executive chef of The Regatta Hotel explains, “This is a big difference for The Boatshed because as meat purists, we offer the more complex, time-consuming Dry Aged range, because it tastes so good”! Following a very careful $10million restoration program following the devastating January 2011 Floods, this hotel, the site of 138 years of history, has just recently thrown open her historic doors and welcome Brisbane to celebrate on her cast iron-laced verandas and amid her famous brick-worked walls, and Brisbaneites couldn’t be happier! The Dining Out team, would like to offer an official welcome back to The Regatta. So, back to the beef... the passion for this age old process of Dry-Aged beef is evident in these two Brisbane Restaurants, we have the feeling that it is contagious and that more and more restaurants will look at the benefits as more and more of their customers demand this exceptional quality beef. Every second restaurant is sure to have an amazing signature seafood dish on their menu, such as Il Centro’s Sand crab Lasagne, as featured on the front cover of the last issue of Dining Out Magazine Brisbane. It makes sense, being seafood fanatics and all, that Queensland’s’ East Coast is the home of the largest fleet of fishing boats in Australia. One of the most rewarding things about being a local, is the range of seafood that we have access to. It makes some our Southern counterparts somewhat green with envy. With access to the fisherman’s freshest catch at your local, we can see the fish coming in off the trawlers and straight to the restaurant.

Dining Out sat down with Executive Chef, Sunil Savur, of Gambaro’s, a Seafood institution in Brisbane since the early 70’s. Savur explains that Gambaro’s stocks between 5-6 varieties of fresh fish daily, and ensures they come from the local trawlers between Brisbane and the Sunshine Coast. The Gambaro Family places great importance on sourcing the freshest produce in Brisbane and local areas, and uses local produce as much as possible. An example is a popular dish from the a la carte menu - the famous Gambaro Seafood Platter, including Ocean King Prawns from Mooloolaba, Bugs from Moreton Bay, Oysters from Tasmanian or Coffin Bay, Sand Crab from Brisbane River mouth, Mud Crab from Brisbane River Mouth or Stanage Bay and Lobster from Tasmania. Salivating yet? So whether it is following what is so entrenched in the essence of what it is to be a Queenslander, throw a shrimp on the Barbie or indulge in a fine seafood dining experience in one of the many excellent restaurants throughout Brisbane, I am sure that this has whet your appetite. So go forth and eat meat, the white one that is!
