Pizza aficionados are well versed in many shades of pizza— Chicago deep dish, Neapolitan, and New York-style ranking high on the list—but even so, very few know about stuffed pizza. In 1971, Nancy and Rocco Palese decided to open up their first pizza parlor in Chicago with a signature thin crust pie at the heart of the menu. However, the pies didn’t sit well with Chicagoans, so the couple started to experiment. Instead of following the trend of deep dish, Rocco created a pizza dough using a family recipe for an Easter specialty cake made by his mother—a creation we now know as stuffed pizza. The newfangled pie was a success, leading to the Palese’s new restaurant in 1974, named Nancy’s Pizza. While the war between pizza devotees—Chicago deep dish here, Neapolitan there—has been waged for almost a century, Nancy’s Pizza brought another contender to the field some 42 years ago. Indeed, stuffed pizza has found its own loyalists over the last half-century, most recently in Atlanta, where veterans of Nancy’s Pizza are serving up stuffed goodness at two celebrated locations. Gregory Cole—once proprietor of the Nancy’s in Buckhead—has helped educate the greater Atlanta area about pizza since 2006. It hasn’t all been smooth as sauce, however. After a decade of soaring business, Cole decided to uproot the restaurant, moving it to South Fulton where it will open in 2017 with a fresh look and feel. In truth, Cole was met with a bit of speculation at the outset: Could an African-American man spearhead an Italian pizza restaurant and succeed? Nobody thought the Buckhead location would thrive—but they were dead wrong. Cole’s success is no surprise, however. For over 20 years, he has worked in hospitality— beginning at Starwood Hotels, where he served as the director of food and beverage. He actually won “Manager of the Year” during his tenure, marking him for success—a success he found after branching out on his own with the Atlanta Nancy’s Pizza franchise. Still, to be successful in the restaurant business, you need to have a solid concept. There are two

things that give Nancy’s Pizza an edge in that department: a one-of-a-kind recipe for stuffed pizza, and an unwavering commitment to everything fresh. The pizza itself is more like a pie with two layers of crust—each layer stuffed with ingredients, then topped with a veneer of homemade sauce. While that’s enough to turn heads and prime palates, Nancy’s commitment to fresh, sustainable ingredients is just as astounding. In a world of processed products and frozen foods, it’s refreshing to see a restaurant—chain or independent—rely on made from-scratch cooking and responsible sourcing. If you’re new to the stuffed pizza, you’ll want to spend your first visit to Nancy’s on the signature Uncle Tony’s pie—named after Nancy’s uncle. It’s similar to your classic supreme, featuring fresh Italian sausage, pepperoni, green peppers, and onions. Or if you’re more of a meat-head, the A Lots of Meat is a must—Italian sausage, bacon, Canadian bacon, and pepperoni. Recently, Nancy’s decided to introduce an original menu item dubbed the Rustic Crust. Imagine a crispy-on-the-outside, fluffy-on-the-inside pillow of dough, drizzled with extra virgin olive oil and sprinkled with a piquant blend of four cheeses. Topped with tomato fillet—a perfect stand in for tomato sauce—this simple pie is purely delicious. Although Nancy’s is naturally famed for its pies, beyond the ‘za lies a full menu of fresh eats. Featuring baked—never fried—appetizers, fresh handmade pastas, and a variety of made-toorder sandwiches, Nancy’s is sure to satisfy any appetite. And if you want a taste of fluffy crust without all the calories, opt for a salad, which can be served in a delicious Nancy’s signature bread bowl. Nancy and Rocco Palese have had 42 years to perfect their recipe and refine their concept. But that doesn’t mean the brand will stop growing. Taking the culinary innovations from the Paleses to greater Atlanta, Cole aims to open locations in Cobb County and Alpharetta within the next five years. Ambitious? Maybe. But if Nancy’s Pizza can move beyond a disbelieving Atlanta public to two buzzing locales, it would seem that the pie’s the limit for Cole.

How WOMEN OF THE VINE breaks barriers in the alcohol beverage industry BY MAYA S ILVER

In 2005, New York City-based tech marketing guru Deborah Brenner took a trip to Napa that would change her life—and the role of women in wine—forever. During her tour of the area’s famous wineries, she discovered how male-dominated the wine industry is. She even learned of several cases where a winery made a conscious decision to omit a female winemaker’s name from the label due to concern that female-led production would negatively affect sales. This resonated with Brenner, who had worked her way up in the similarly male-dominated tech industry. “My journalist background kicked in and I started researching women pioneers in the wine industry,” Brenner recalls. When she discovered a paucity of literature on the topic, she left her corporate life behind to write “Women of the Vine: Inside the World of Women Who Make, Taste, and Enjoy Wine.”

CYNTHIA LOHR Telling her family’s story

It has always been important to Cynthia Lohr to advance based on her hard work and talents rather than her family name. That’s what led her to explore beyond the security of the J. Lohr San Jose Wine Center after college. She built a successful career in strategic marketing—including a stint in PR for Yahoo!—and developed a powerful knowledge base in helping brands tell their stories. Only after she found success on her own did she have the desire to return to J. Lohr in 2002 to help her family winery tell its story. In 2010, Wine Enthusiast Magazine named J. Lohr “American Winery of the Year,” in no small part due to Lohr’s expertise. She also pioneered online sales and marketing, as well as forged a philanthropic partnership with the National Breast Cancer Foundation to help fund mammograms for women in need. “I can’t express enough how important it was to develop knowledge of marketing and public relations outside of J. Lohr,” Lohr explains. “When I came on board, I had a fresh pair of eyes, and expertise that helped advance our business.” Just as Lohr’s path to a career in the wine industry followed more of a zigzag than a straight line, so too did her father Jerry’s pursuit of winegrowing and winemaking. Hailing from a South Dakota farming family and a true man of the soil, Jerry moved to California in the late-’50s to pursue advanced degrees in civil engineering at Stanford. While operating his own successful building and development business, he set aside time for his burgeoning passion: winemaking. “My first exposure to the wine industry wasn’t until we started taking weekend family field trips to Arroyo Seco in Monterey County where we planted our first vineyards,” Lohr remembers. “Only then did I understand that this was a passion project for my father.” Neither Lohr nor her parents had any idea that this passion project would become a powerful award-winning brand producing 1.5 million cases of wine annually.

“We absolutely welcome men of the vine to join us,” Brenner says. “This is something we’re doing together—bringing men to the table with us to create change.” One of the key figures at the Women of the Vine table is, not surprisingly, Cynthia Lohr. Brenner asked Lohr to join the Advisory Board in part because of her important role in shaping the organization, and in part because she’s one of a handful of women who co-own large wineries. “There may be a lot of women co-owners in boutique wineries, but I could count on my hands the ones at J. Lohr’s level of distribution and production,” Brenner says. Lohr is passionate about using her involvement with Women of the Vine to increase the number of female winemakers in the industry. “90-percent of the country’s wine is produced in California and 10-percent of those wineries have lead female winemakers,” Lohr explains. Among that 10-percent is J. Lohr’s own lead winemaker of white wines, Kristen Barnhisel. Lohr affirms that J. Lohr hired Barnhisel because she was the best person for the job, not because she was a woman. Yet the company—with facilities in San Jose, Monterey, and Paso Robles and sustainably farmed estate vineyards concentrated in the latter two growing regions—is thrilled to help improve the prominence of females in winemaking. “The more women we can have in leadership positions, the better it is for the industry,” Lohr says. “I would say that the statistic is likely to grow toward 20-percent in the coming years,” Barnhisel adds. “People are more open to women winemakers than ever before.” While changing perception remains important, Brenner, Lohr, and Barnhisel insist it’s also about encouraging women to consider career paths in the wine, beer, and spirits industries, and ensuring that they have mentors to guide them. And that’s where Women of the Vine comes in, with its discussion forums, job board, trainings, networking events, and annual symposium. But it isn’t just about advancing women in the world of wine, beer, and spirits—it’s also about making better products for all to enjoy. “Women naturally approach things very differently than men,” Brenner says. And isn’t it in the best interest of wine-lovers to have bottles diversified through different skill sets and perspectives? inthemix Winemaking has taken Kristen Barnhisel all over the world. But before she made wine herself, Barnhisel watched her parents make wine. Her mother, a microbiologist at Simi Winery, and Zelma Long, the winemaker at Simi, served as Barnhisel’s mentors and role models in her pursuit of a career in winemaking. But it wasn’t the science of wine that sealed Barnhisel’s fate as a winemaker herself. Rather, she was moved by the power wine holds over people during a trip to Italy during college. “I saw how wine is enjoyed in an everyday sense, how it brings people together,” Barnhisel says. “It made me appreciate a whole different side of winemaking—creating something that can gather people around the table and be a conduit for conversation.” After that realization, Barnhisel earned a master’s degree in enology from UC Davis and went on to gain experience at wineries in South Africa and throughout California. Before joining J. Lohr in 2015 as the lead winemaker of white wines, she had the opportunity to work under some inspiring female winemakers such as Zelma Long, Milla Handley, and Sandi Belcher. “Just learning how these women—these wonderful pioneers—had the courage and fortitude to become winemakers was very important in my path,” Barnhisel says. “It solidified that this was the direction I wanted to take, and it’s a wonderful place to be.”

Executive Chef Mary Grace Viado Executive Chef Mary Grace Viado has worked at Village Tavern for nearly 15 years. Prior to joining the Village Tavern team, Viado fine-tuned her culinary skills by stage training at several top New York restaurants including: Restaurant Daniel, Aquavit, Le Cirque 2000, Aureole, Payard Patisserie and Bistro, Café des Artistes and Le Bernadin. Additional culinary experience includes working at several high-end hotels such as the Hotel Sainte Claire in San Jose and the Four Seasons in both New York City and Atlanta. A native of the Philippines, Viado graduated cum laude with a degree in hotel and restaurant administration from the University of the Philippines. KITCHEN From a COMMUNITY helping one family to SUPPORT for an entire industry

The most important ingredient in a restaurant’s recipe for success is its people. Chefs, bartenders, and servers alike each play a role in crafting memorable experiences centered around food. Sadly, however, these workers often don’t receive the compensation and support they desperately need. Low wages, meager benefits, and inconsistent tips leave many on the edge of a financial crisis. And if the worst happens, most cannot afford to take the hit. Sickness and injury can lead to weeks out of work, leaving few options to stay afloat. This is where The Giving Kitchen comes in. Founded in 2013, The Giving Kitchen provides financial support to members of Atlanta’s restaurant community facing unanticipated crises. The nonprofit organization offers grants that assist with living expenses not covered by insurance, ranging from rent and utilities to even funeral expense reimbursement. The Giving Kitchen began when the Atlanta community rose up to support one of its own. In 2012, Chef Ryan Hidinger and his wife Jen embarked on their dream of opening a restaurant. Ryan, a veteran of Bacchanalia and Muss & Turner’s, had been hosting underground dinners with his wife since 2009, and had hoped to use the earnings to open his own restaurant named Staplehouse. But in December 2012, Ryan was diagnosed with late-stage gallbladder cancer and given six months to live. Everything came to a halt. As devastating as the news was, family and friends rooted in the restaurant community rose to the occasion. They planned a fundraising event, Team Hidi, which raised $275,000 to assist the couple with their medical bills. Overwhelmed by the amount of support, the couple had an epiphany: If the community could come together to help them in a crisis, what could it do for others? And so, together, they began The Giving Kitchen. The organization has grown beyond what the Hidingers could have ever imagined. To date, the charity has awarded over $750,000 in grant money to over 420 individuals and continues to impact the 31 counties in which they serve. Chris Pomar, a board member of The Giving Kitchen, isn’t surprised by its success at all. “Like most great ideas, The Giving Kitchen makes you wonder aloud, ‘How has no one ever thought of this before?’ It’s a 82

remarkably simple concept—to serve those who serve in restaurants and bars throughout our fine city.” Providing this level of support would be impossible without local Atlantans. The Giving Kitchen receives substantial funding from the community by way of partnerships with multiple restaurants and breweries, as well as donations from individuals and businesses. “The creation and growth of The Giving Kitchen embodies everything we value, specifically the sense of community,” states Bob Amick owner and founder of Concentrics Restaurants and an avid partner of The Giving Kitchen. “It has elevated and united the Atlanta food and beverage industry and we are honored to be a part of that.” Although Ryan passed in 2014, his legacy lives on. In addition to The Giving Kitchen, his wife Jen, with the help from her sister-in-law Kara and Chef Ryan Smith, Kara’s husband, continued his dream by opening Staplehouse in September 2015. The Americanthemed restaurant also supports the nonprofit; all of the restaurant’s profits after taxes go directly to The Giving Kitchen. The Giving Kitchen is always looking for volunteers ready to spread the word. From helping out at annual fundraising events such as Team Hidi—which brings together over 50 of Atlanta’s most celebrated restaurants and bars— to educating the restaurant community about their mission, volunteers are always needed. Thankfully, The Giving Kitchen is poised to impact Atlanta communities for some time, pressing forward with their purpose: to give back to those who give to us.
