W

hen Pam Ledbetter was a college student, she wasn’t quite sure what she wanted to be when she grew up, so she got a stop-gap restaurant job waiting tables. In time, she worked positions from the front to the back of the house, when one day she paused and realized that her day-to-day work was more than just a job—it was a vocation. “I love the diversity of this industry,” says Ledbetter in a lilting drawl. “It encompasses so many things.” And it’s true—a successful restaurateur must have a skill set that ranges from fixing minor plumbing issues to pairing wine with food and ensuring diners are having a great experience. Ledbetter was a sure bet. For years, friends, family, and guests had told

Even the restaurant’s name begets her design enthusiasm. “I’m a joy-filled person, and ‘wahoo’ is something I say a lot as an expression of that joy,” says Ledbetter. “I felt the restaurant should be a representation of who I am.”

Made exclusively from the coveted Blue Weber agave piñas grown in the hills of Los Altos de Jalisco, Talero organic tequila is an ultra-premium tequila with a smooth, soft, and velvety taste profile. Grown at an altitude of 7,200 feet above sea level, Talero’s organically grown agave plants are carefully cultivated for six to 12 years before being harvested at peak maturity. The agave heart is then slow-roasted in a traditional oven, releasing the sugars that lead to the perfect tequila. Talero also doesn’t use commercial yeast, pesticides, or artificial growth accelerants, giving the tequila a quality superior to other tequilas on the market. And with blanco, reposado, and añejo versions, Talero offers a transcendent tequila experience for any experience or palate.

It wasn’t long before Ledbetter discovered that Decatur loved supporting its small businesses, and that Wahoo! Grill became the sort of place where locals eagerly gathered. “I wanted to create a space that was inviting to everyone, where dinner was the main event; where people could relax and enjoy good food and good company.” Without question, Wahoo! Grill is all of that and more—the type of place to bring a first date, meet up with your best girlfriends over wine and cheese, grab a burger and a beer with your best bro, even get married. Why? Well, part of it is the charm of the space. Beyond the rustic chic of the main dining room, there’s an enclosed all-season atrium surrounded by windows that leads to an expansive patio and garden space so lush visitors refer to it as The Secret Garden or Garden Paradise. But the menu is equally as enticing. Conceived as an homage to Ledbetter’s Southern upbringing, but with an elevated style, Wahoo’s menu takes Southern classics and gives them an updated and healthier slant. “Growing up, everyone kept a garden and ate seasonally,” she relates. “It was just the way people did things. It just seems like the right way to eat.” In that vein, Wahoo’s current chef, Scot Davis, maintains a menu of classics that are available year-round (like the Southern Fried Chicken) but others change seasonally. For example, scallops are always on the menu but their presentation changes every few months.

“I WANTED TO CREATE A SPACE THAT WAS INVITING TO EVERYONE, WHERE DINNER WAS THE MAIN EVENT; WHERE PEOPLE COULD RELAX AND ENJOY GOOD FOOD AND GOOD COMPANY.” The bar program is just as fun and engaging as the food, and is cooperatively produced by the entire bar staff. Though the spirits list is made up of many local, interesting, and small-batch spirits and boutique wines, the pricing is on point and no one takes themselves too seriously. “I just wanna introduce people to good wine,” 12

Mamma Mia! Authentic Italian pizzas bubble at Varuni Napoli

Authentic pizza perfection happens daily at VARUNI NAPOLI, the celebrated pizzeria with locations in Morningside and a recently opened location in the Krog Street Market. Naples (the birthplace of the dish) is also the hometown of Chef/Owner Luca Varuni, who grew up working in local pizzerias before coming stateside to work alongside his uncles living in New York City and Philadelphia. When he met the love of his life, he headed south to Atlanta to open his own pizzeria—but not before taking time to explore the culinary secrets of Italy’s many pizzerias.

Varuni's goal? To create the most authentic Neapolitan wood-fired pizza possible by understanding and perfecting every single step of the pizza-making process. On his travels, Varuni developed relationships with farmers and purveyors of the imported goods he uses in his pizza-making process to keep the flavors just as they are in Italy. The pizza dough, for example, is made simply using olive oil, “00” flour, water, yeast, and sea salt—like they do in Italy. The Garaguilo extra virgin olive oil they use comes from a small family farm in Sorrento; the family's olive trees line the gulf of Salerno and face Capri, the island of love. The bufala mozzarella, made from water buffalo milk, comes from a farm south of Naples, and is made without additives or preservatives. The very fine, low-gluten flour Varuni uses lends the wood-fired crust its fluffy quality, while the mother yeast for the dough gives the crust the same consistency and flavor every time. Varuni's simple yet intensely flavorful pizza sauce comes from the imported GustaRosso San Marzano tomatoes they use, grown in volcanic soil at the base of Mt. Vesuvius. The sea salt they use also happens to be used in the Vatican and consumed by the Pope. You can't get any more Italian than that. The pizzaioli (professional pizza makers) 36

A LEAP OF FAITH BY RE BECCA TREON

Grace 1720 began 13 years ago with what the owners of the restaurant describe as a leap of faith. Fittingly, they took their name from Matthew 17:20—“Truly I tell you if you have faith as small as a mustard seed, you can say to this mountain, ‘Move from here to there,’ and it will move. Nothing will be impossible for you.” However daunting the opening of a new restaurant was, it was not impossible. Part of the reason for Grace 1720’s success is its vision of family; the family behind the restaurant truly embraces the idea of bringing both guests and staff into the restaurant as if they were kin, even honoring the tradition of staying closed on Sunday as a day of rest so staff can spend time with their families. Grace 1720 has an almost European feel to it, with high-beamed ceilings and expansive picture windows. White linens give the dining room a crisp feel, while the taupe-hued walls offer a warm cozy glow, accentuated by large

There are a variety of burgers, too, but what Grace 1720 is really known for is its Pumpkin Bread, served to each guest when they sit down. It’s gained such notoriety, in fact, that it’s now shipped all over the country to guests who want a taste of Grace at home. Whatever the occasion, Grace 1720 has always focused on one thing—treating guests like family. It is that faith in family, alongside keen attention to culinary comforts, that has delivered Atlanta’s one of most beloved institutions. Truly, they are moving mountains.
