Inspired Intuition Intuition: It’s that unspoken knowing or ability to just get it without the need for overthinking. Because Meridian Yachts are built by boaters for boaters, Meridians just get it naturally. They immediately feel like home, and the comfort and peace that accompany that livability are what make spending time on the water so special. This boundless on-water lifestyle is at the heart of this issue of Meridian Lines. While the American South has inspired literature and music for decades, it’s now inspiring the wanderlust of Meridian owners. From Tennessee to Texas and crawfish boils to fish frys, we follow several families enjoying true Southern hospitality from the comfort of their yachts. But Meridian Yachts isn’t just defined by its coziness or craftsmanship, it’s also defined by its people. One family’s enthusiasm for these boats has stirred them to build a small fleet; we catch up with them—as well as their 341 and 541—down on the bayou. You might guess that love for Meridian Yachts extends far beyond America’s shores and lakes. It’s true; the intuitive design and incredible livability of these yachts have been discovered all over the world. At the opposite corner of the earth—Acadia, Australia—we see how one couple’s 441 has inspired them to put their house on the market in favor of an enviable cruising lifestyle near storied Sydney Harbour. True intuition comes only after many years of hard work, but boating is more than a pastime—it is a passion. Benefit from Meridian Yachts’ years of experience, and embrace your on-water lifestyle.

CHARMING CHATTANOOGA Written by Jennifer Chesak | Photography by Robert Glover

What’s there to do in Chattanooga? That’s the wrong question. Actually, one would be hard pressed to find something he or she couldn’t do in what’s known as the “Scenic City.” The fourth-largest town in Tennessee boasts festivals, fine dining, mountain biking, hiking and fantastic yachting.

“We like that it’s a small-town city,” says Alicia Farris. She and her husband, Bill, own a Meridian 469. “We don’t have the congestion like Nashville or Atlanta. And it’s an outdoorsy place. The weather is really good. We can boat all year, and we love to ride our bicycles.” On the bridge, Alicia takes a seat next to her husband at the helm. Bill maneuvers the Meridian out of Gold Point Yacht Harbor and onto quiet Chickamauga Lake just northeast of the city. After work, the pair can be onboard their boat, Dr.’s Orders, in 20 minutes or less and head out for a late-afternoon or early-evening cruise. When fellow boaters who don’t know the couple see the name on the transom, they assume either Bill or Alicia is a doctor, but that’s not the case. Bill is actually an executive for a trucking company, and Alicia is a hair stylist. The couple maintains that the Meridian was a prescription from Bill’s doctor after Bill survived two heart attacks. “He looked at me, and he said, ‘If you don’t get rid of some stress…’” Bill recalls. “It works. I had a rough day at the office today, and I’ve already forgotten all about it.” The idea to de-stress may have come from Bill’s doctor, but the order to get the Meridian came from his wife. Bill had purchased a different brand of boat shortly before friends had introduced him to Alicia. The pair began

experience dating, and three weeks later, Bill proposed. Of course she said yes, but she had a request. “She wanted the Meridian,” he says. “I love the headroom in the salon and also the aft cabin master stateroom,” Alicia explains. Bill couldn’t argue with his new bride, so he bought the 469, which is a one-off model, meaning it’s one-of-a-kind. “I love it,” Bill says. “It’s very reliable. The Cummins MerCruiser engines are great, and the boat performs well. It’s very economical and comfortable.” Bill purchased the Meridian from Scott Manning at MarineMax of Chattanooga. “MarineMax has been so good to work with,” he says. “They’ve been very good to us.” Chattanooga and Lake Chickamauga are nestled amongst the ridge-andvalley Appalachian Mountains and the Cumberland Plateau, giving the area a stunning landscape and varying topography suitable for an array of outdoor activities like rock climbing, trail running, kayaking and more. Lake Chickamauga is surrounded by forested bluffs and offers a nice hideaway from any hustle and bustle of the town. “The lake ’s never congested,” Bill says. “We have a lot of coves you can anchor in.” When the couple can round up other boaters, they’ll get a crew together to raft up for the weekend. Bill and Alicia enjoy cooking onboard and using the grill. “I need to put together a boating cookbook,” Alicia says. While Chickamauga provides plenty of nooks and crannies to explore, the Farrises are also eager to take their Meridian on far-flung adventures. “You’re not landlocked on this lake,” Bill says. “You can go north to Knoxville to watch a UT football game. And if we want, we can head down

to Florida or even go up to Minnesota or Chicago.” Chickamauga Lake is on the Tennessee River system managed by the Tennessee Valley Authority. The system comprises nine main dams and locks, which allow boaters to explore far and wide. Chattanooga is also home to Nickajack Lake. On Chickamauga, the Farrises love to entertain on the Meridian, and Bill frequently brings clients out on the water. But both Bill and Alicia are quick to admit that no crewmember is more important than their British Shorthair cat, Sherlock Holmes. Sherlock has the mid-stateroom to himself when they spend the night onboard. “He absolutely loves the boat,” Alicia says with a laugh. “I think he thinks it’s his big cat playhouse with all of the levels.”

The pair began dating, and three weeks later, Bill proposed. Of course she said yes, but she had a request.“She wanted the Meridian,” he says.

When Bill and Alicia aren’t aboard their Meridian—or too busy doting on Sherlock— they head out on the town to enjoy all that Chattanooga has to offer. The city is home to one of Frommer’s top-10 rated public markets with more than 50 local farmers selling veggies, cheeses and meats; others set up tables displaying artisanal products. Musicians perform at the open-air market, which runs every Sunday from April to October, and visitors can enjoy the many food trucks that flock to the event. A favorite festival in Chattanooga is Wine Over Water, which takes place in late September on the Walnut Street Bridge, one of the world’s longest pedestrian bridges. Attendees sample more than 100 wines from around the world while overlooking downtown Chattanooga and the Tennessee River. In fact, Bill and Alicia often head to the event via their Meridian and spend the night on the river. Craft brew aficionados might prefer the Southern Brewer’s Festival, a latesummer favorite on the riverfront, which in addition to stouts and IPAs also features live music. Music lovers tend to indulge in the nine-day Riverbend Festival, also on the waterfront, which showcases everything from bluegrass to rock. Relatively new on the scene is the River Rocks Festival, catering to adrenaline seekers. This festival, held on weekends in October, is a mishmash of outdoor activities for cyclists, runners, climbers and more. Really, Chattanoogans and visitors to this gorgeous Tennessee city can pack their calendars as full as they want with just about whatever they want. Of course, Bill and Alicia are biased to boating. “Any day is a beautiful day on the lake,” Bill says.

LONE STAR GETAWAY Written by Jennifer Chesak | Photography by Mike Calabro

From a boater’s perspective the Seabrook, Texas, area can seem almost overwhelming: It holds a plethora of options in any direction one chooses to point his or her bow. Seabrook is nestled on the northern shores of Clear Lake, just southeast of Houston. The lake feeds Galveston Bay, and from there, boaters can find their way to the Gulf of Mexico and beyond. The possibilities are endless, but with so much fun to be had right at home, some boating journeys are relatively short and sweet.

10 | Meridian Lines Magazine

That’s how Chris and Mimi (short for Marilyn) Hilliard are playing things right now. “Our ultimate plan is to hang here until we become proficient and then really take it places,” Chris says of the couple’s recently purchased Meridian 441. “I’d love to go all the way around Florida,” Chris says. “I’d love to go to Charleston,” Mimi retorts. Chris gives her a playful grin. “Maybe we can go up to Baltimore.” They keep at it like that with the travel plans growing bigger and bigger until it seems they might travel all the way around the world. Chris idles the boat for a moment so Mimi can head down to the stern to watch some birds dive for fish in the froth. When she returns to the bridge and once again takes her first-mate seat, Chris maneuvers the boat through a long creek that connects Clear Lake with the bay. He and Mimi enjoy ogling the elaborate mansions that line the shores and canals as they idle out toward open water. Before buying the Meridian, Chris’s previous boating experience had been on smaller ski boats and sailboats. He is now learning the ropes of captaining the yacht from the good folks at MarineMax of Seabrook. He ’s certain he ’ll be an old salt in no time thanks to their expertise and diligence in helping their customers with every aspect of owning a boat. “If I’ve had any question,

they’ve answered it,” Chris says. “Everybody there has been so good.” That element of customer service is just one of the many reasons Chris and Mimi chose a Meridian. “The brand is part of a good company: Brunswick,” Chris explains. “And with MarineMax, you have a local dealer backed by a national company. You know they are going to have your back.” Once Chris points the Meridian under a large bridge that connects the north shores of the lake with its southern shoreline, the Hilliards are in sight of the lively Kemah Boardwalk. A roller coaster and a Ferris wheel are just some of the many rides that make the destination a paradise for kids and kids at heart. The boardwalk also features several souvenir shops and fun restaurants for devouring Gulf-caught seafood. Kemah is home to a giant marina, as well, but Chris and Mimi keep their boat at Lakewood Yacht Club. The Clear Lake recreation area is known to have the third-largest concentration of pleasure boaters in the U.S., which can be attributed to its many waterways, of course, but also to its proximity to the Johnson Space Center, which provides a large number of jobs in the region. Out on the bay, Chris and Mimi relax and enjoy a light breeze that eases the Texas heat. They continue to discuss destinations near and far where they can take their new boat. One of the closest hotspots beyond the

experience

“The Meridian is like a house with a little terrace outside and a family room upstairs.” Kemah Boardwalk is Galveston Island, just a short trip down Galveston Bay. The island’s first inhabitants were the Karankawa and Akokisa tribes, which had settlements along much of the Texas-area Gulf Coast and on the barrier islands. But Galveston is also steeped in pirate lore. The infamous Jean Lafitte set up his own buccaneering government there until the U.S. Navy finally sent him on his way. Now a treasure itself, Galveston Island is a resort destination with upscale hotels, restaurants and beachfront rentals available for enjoying the 32 miles of sandy shoreline. Moody Gardens is one of Galveston Island’s main attractions. The theme park features an extensive aquarium and also a replica of a rainforest ecosystem. Other attractions include a ropes course, a zip-line and a water park. The island has plenty of options for simply kicking back and relaxing, too. The Hilliards like the fact that the 441 can go anywhere, yet it can also serve as a vacation condo on weekends when they don’t have time for a longer journey. “We wanted something we could have close to home,” Chris says. “But we also wanted something we could spend a week on.” Chris raves about the Meridian 441’s amenities. “A bridge boat with a hardtop almost doubles your space,” he says. “Plus, it has air conditioning. And in Texas, you need that. The Meridian is like a house with a little terrace outside and a family room upstairs.”

12 | Meridian Lines Magazine

The couple laughs about the customizations they’ve made to their Meridian to make it feel even more like home. “Honestly, we had more TVs put on here,” Chris says with a sheepish grin. “We like our football season, and the fall weather that goes along with it.” Chris is a University of Texas fan, but he’s quick to point out that there’s a big conflict onboard. “She went to the University of Oklahoma,” he says of Mimi, “so we’ve got a rivalry going on.” In addition to hosting game-day parties, Mimi is looking forward to inviting her two-year-old grandson, Carter, for fun overnights at sea. He lives in

BETTER IN TEXAS Chris and Mimi Hilliard enjoy all that Galveston Island, Texas, has to offer from their 441 Sean Bridge, Last Tango.

Austin with his mother, Jennifer. “Becoming a grandmother is the best thing that’s ever happened to me,” Mimi says. Chris, born and raised in Texas, loves the access he has to culture but cites good food as one of the Lone Star State ’s best assets. “I can get Tex-Mex and seafood on the same plate,” he explains. At the mention of food, Chris says he hears his stomach rumble. He decides it’s time to head back to shore and begin the arduous task of choosing which waterside restaurant to visit; the options are endless. Mimi, who hails from California, says she enjoys the state ’s diversity and friendliness, as well. Both Hilliards relish the camaraderie that goes along with owning a boat. “We just like being in a marina and being near people who enjoy the same thing as we do,” Chris explains.

Of course, the Hilliards welcome the sense of solitude they’ve experienced, also. “There ’s a feeling of peace when you’re out on the water,” Mimi says. The wind blows tendrils of her hair, and she lets out a contented sigh. “This life can get hectic, and our Meridian is a worry-free zone.” Chris, who practices real-estate law, says the boat is all part of a plan to make sure he ’s truly enjoying life. “Eventually you need to stop and smell the roses.”

EXCEPTIONAL DESIGN Written by Alexa M. Poteet | Photography by Richard Steinberger

Much is said about the difference between a house and a home. But what changes your boat into a place that feels like home? Of course, your Meridian provides physical safety from the elements, but for a place to feel truly livable it needs to be an emotional haven. A place to feel comfortable and at peace. Achieving this sense of comfort through design is what Meridian Yachts strives for, and the soul is in the details.

Nothing so clearly conjures the essence of home as the aroma of a signature dish wafting from the kitchen. For the model-year 2015 finishes, Meridian Yachts upgraded all galley countertops to handle your most lofty cooking ambitions. These new surfaces are an ideal balance of strength and versatility in handsome sand-inspired hues that stand up to daily wear with grace. An affordable luxury, the counters have the good looks of granite, but the antibacterial properties and stain resistance that life on the water demands. Intuitive and stylish design goes beyond having the best countertops for a full life aboard, though. Light wood finishes in French Walnut or Quartered Oak provide a sleek new choice for your yacht’s interior. These practical and hardy woods not only wipe clean for excellent durability in the galley but also bring a bright, airy sensibility to your salon and living spaces. Just because you’re inside your boat doesn’t mean you need to be detached from nature. A connection with your surroundings is what drew you to the water in the first place. On a Meridian, whether you’re inside or out, you’ll always feel close to nature ’s peace yet have everything you need, including ample style, right at your fingertips. Complementing these caramel tones throughout your yacht is a new gelcoat offering for 2015: Mojave Tan. While Blue and Black gelcoats are classics, take advantage of the opportunity to lighten up. Named for the vast and grand California desert, this gelcoat gives a long-lasting and durable finish, so your yacht can not only look sleek, but also stand the test of time.

16 | Meridian Lines Magazine

The Native American tribes who first lived in Mojave named it so for its juxtaposition to the Mojave River, so the name literally means “beside the water.” It’s a perfect fit for a life whose proximity to the water is of paramount importance. When people talk about livability, they are frequently talking about comfort—a quality mattress, lush pillows and soft blankets. But too often comfort and style are seen as enemies, rather than as Meridian Yachts sees them: two important priorities that need to be integrated seamlessly. Drawing inspiration from the blues, silvers and taupes of the Pacific Northwest, Meridian has created two completely new fabric themes to outfit your yacht in design-conscious comfort. The high-quality textiles are soft to the touch yet woven from fine materials to ensure they will last sleep after dreamy sleep. Making life on the water boundless is a passion for Meridian, reaching all facets of the customer experience. From your countertops to your accent pillows, your yacht’s details were designed with a full life in mind. Practical design doesn’t have to be an oxymoron. For Meridian Yachts, it’s at the heart of what makes cruising so special.

HIGH STYLE High-end finishes combine with natural light to create a harmonious balance of comfort and style on every Meridian.

» PARADISE FOUND John Milton famously wrote of a paradise lost, but on the new Bimini Superfast ferry, paradise is actually closer than ever before. Explore the azure waters and amazing vistas of Bimini, The Bahamas’ westernmost district, in record time, thanks to an innovative ferry service by Resorts World Bimini owned by the Genting Group. Owing to the completion of a new, larger pier, ferry guests can now disembark directly onto Bimini rather than taking water taxis from neighboring islands. This makes a huge difference in on-island time for visitors, allowing what was once a hurried hour or two to now be an afternoon in paradise. Average time on Bimini for ferry travelers from the U.S. is now about six hours— more time to enjoy brilliant sun, some cracked conch and the gin-clear water. The lightning-fast new service began in October 2014 and carries approximately 1,500 passengers three times a week from Port Miami and Port Everglades to the tropical island. On board, the ferry is equipped with several amenities, including two casinos, a sports bar and special VIP rooms. But the fun continues even on land: Many day visitors eat and play at Resorts World Bimini’s impressive facilities on the island. A new beach club, restaurant and

18 | Meridian Lines Magazine

craft market are in the works too, so you can find the perfect souvenir to help you treasure your Bimini experience always. Bimini is small in size but big in beauty and steeped in culture. Time on the island passes quickly, while gentle breezes blow, and you can enjoy the multi-hued blue waters as they lap the white powdery sand beaches. Then, shop at the straw market to get native keepsakes, before stopping at a local conch stand or native restaurant to sample the local cuisine. And of course no one wants to leave without a loaf of the famous Bimini bread. Although overnight stays are welcome, the all-new Bimini Superfast ferry service could not be easier for day trippers. The ferry leaves its American ports around 9 A.M. and returns at a leisurely 7 P.M. The perfect hour to regale friends with the tale of your Bahamian day over a seaside dinner. The new pier in Bimini also includes a customs and immigration facility, so entry and exit go down as easy as an umbrella drink. A refreshing day trip and a goombay smash are now only a stone’s throw away. Come explore The Bahamas and discover paradise, faster.

THE BIG EASY Written by Jennifer Chesak | Photography by Mike Calabro

Dan Casey maneuvers a Meridian 341 around a bend in Louisiana’s Tchefuncte River. The shores are lined with live oak shrouded in thick strands of Spanish moss, and the gleaming Meridian Yacht looks almost out of place in the swampy ecosystem.

Dan and his son, also named Dan, are enjoying one last father-son hurrah on the 341. The Casey family recently traded it in for a new Meridian 541 with the help of Nunmaker Yachts, the Meridian dealership that services the greater New Orleans area. Dan and his wife, Monique, are keeping their new Meridian at a marina near Gulfport, Mississippi, while they wait for their slip near their home on the Tchefuncte to be remodeled to accommodate the larger yacht. The Tchefuncte feeds large Lake Pontchartrain on the north side of New Orleans. Pontchartrain itself is a boating haven, covering about 630 square miles. Dan and Monique live a short distance by boat from the river’s mouth and from Nunmaker. Their home is a modern oasis tucked back in a bayou setting. Curtains of Spanish moss conceal their swath of impeccable landscaping. Their new abode features a boathouse, a pool, a large wine cellar and an outdoor kitchen in the making. The couple recently bought the home after

24 | Meridian Lines Magazine

selling their horse ranch in north Covington. They’ve been remodeling their place at a rapid pace, with Monique handling all the details of the new décor. The younger Dan, 26, recently returned from serving more than four years in the military and completing a tour in Iraq. He is temporarily living with Dan and Monique until he can get settled in his own place. For a while he was content to live aboard the 341, but all that changed when the Caseys found their new boat. “Meridian is a lot of boat for a good price,” Dan says of the purchase. “It’s true comfort on the water.” He and Monique bought their first Meridian after weighing the pros and cons of buying a vacation condo. “We finally decided on a yacht,” he says. “It’s basically a condo we can move up and down the water.” After a short jaunt north on the river, Dan points the 341 south to take it back to Nunmaker Yachts, where he will officially hand it over to its new owners. “Nunmaker is just great,” Dan says. “We’re friends with everyone there.” As Dan nears the Madisonville Bridge, he can see that it is down, blocking their passage. They will have to wait a good 20 minutes as road traffic passes over before the span will rise again to let them through. They tie up along the western shore, and the younger Dan disembarks to grab a cool drink in one of the nearby waterside taverns. Thanks to Louisiana’s “go-cup” culture, he can take a couple of beverages back to the Meridian to enjoy. Mike Nunmaker from the dealership, who’s joined the pair for the river cruise, agrees to take the helm for the rest of the way so father and son can hang out on the stern and enjoy the sultry evening.

Madisonville proper is everything one could want in a Louisiana town minus the hustle and bustle of New Orleans. At this time of year, pale magnolias bloom beneath black wrought iron balconies. “The good thing about Madisonville,” says the younger Dan, “is that it has a small town feel in the middle of everything.” Just down the road is Abita Springs, home to the famed Abita Brewing Company, one of the oldest craft breweries in the United States. And, of course, just a short drive across the Lake Pontchartrain Causeway, the longest bridge in the world, sits New Orleans, where Dan was born and raised. It’s there that he appreciates the good food like fresh crawfish at every turn and music events like the French Quarter Festival held in the spring. The next day, Dan rounds up Monique for a couple’s getaway on their new boat: the 541. After boarding in Gulfport, just a little more than an hour’s drive from Madisonville, Dan captains the yacht out of the marina into the Gulf and sets it on a course for Ship Island about 11 miles from the coast. Sitting on the bridge of the boat near her husband, Monique tucks her blonde hair underneath a ball cap so she can enjoy the breeze on her face. “Some days we like to take the isinglass off and enjoy the air,” she says. “And other days we close it up and let the AC blow.”

profiles “Meridian is a lot of boat for a good price. It’s true comfort on the water.” As the boat nears Ship Island, Monique points out a pod of dolphins frolicking in the Meridian’s wake. Dan slows the boat to an idle so that his wife can retrieve her cell phone from the salon to take photos. Then when she ’s perched in the generous sitting area on the stern, Dan begins to make a slow loop to see if he can encourage the dolphins to engage in more play. Sure enough, their glistening bodies jump in tandem on the starboard side. SONG OF THE SOUTH This page: (Top) The Caseys savor Southern living from the bow. (Below) The 541 makes cruising effortless. The still-intact Fort Massachusetts on the north shore of Ship Island comes into view. Ship Island is part of Gulf Islands National Seashore and is one of Mississippi’s barrier islands. The United States built the brick fort following the War of 1812 to enhance coastal defense. It became the site of a shortlived battle during the Civil War when Confederate forces took control of the unfinished fort, though Union forces aboard the warship Massachusetts eventually regained control of the island. Now the island serves as a popular day-trip spot for picnicking, hunting seashells and bird watching. The Caseys have a dinghy that drops into the water via a motorized lift on the swim platform. They use that to get from the Meridian to the white sand beach. The couple enjoys taking guests out to Ship Island and especially clients from Dan’s business. Dan’s grandmother started the family business, which provides solutions for car dealerships to register cars and find lenders. Although he recently sold the firm to a larger company, Dan was a third-generation owner. He and his daughter Amy are now employees of the larger business. In his new role, Dan enjoys having a little more time to spend with his six grandchildren. Amy has four kids, and his daughter Melissa has two.

THE RIGHT START You picture it when the snow keeps you inside. You can’t help daydreaming about it after another workday when the sun is hidden behind clouds. Your anticipation builds every day, until the warm weather calls your Meridian back onto the water. There’s nothing quite like the first spring cruise after a long winter. The air is a little fresher, the sound of vibrating engines a little sweeter. But the biggest roadblock to hitting the water is a faulty battery that won’t start the engines. Over long periods of inactivity—like winter storage—many batteries can lose start-up efficiency. The rugged design of the DieHard

Platinum Marine battery counteracts potential power loss, ensuring the same reliable performance no matter the conditions. The corrosion-resistant brass terminals, protected by a robust, military-grade shell, have one mission: getting your boating season off to the right start. DieHard Platinum’s epic reserve capacity for longer storage periods ensures that whenever the weather’s ready for boating, so are you. Monique is enjoying having her workaholic husband around a little more, as well, now that she too has a bit more free time. When the Caseys owned their ranch, Monique tended to several quarter horses and racehorses. She still owns a few horses, which she keeps at a nearby stable. For Monique, more free time means more fishing time. “I’m just fascinated by what’s under the water,” she says of her passion for offshore angling in exotic locales like Costa Rica. Dan grew up fishing the region for speckled trout, rainbow and flounder and plans to occasionally fish off the stern of the Meridian. He and Monique laugh while recalling the story of a recent fishing trip near Pensacola where Dan was reeling in a snapper, and an 8-foot hammerhead shark came and took it right off the line.

When they’re not boating or fishing, Dan and Monique often spend their time watching the New Orleans Saints rule the gridiron. “I’m a football escort,” Dan says. “My wife is the big football fan. I like football, but I’m nothing compared to Monique!” Monique laughs and nods her head in agreement. She and her girlfriends enjoy going to games, but she ’s also looking forward to hosting friends onboard the new boat. “I love the sedan bridge layout,” she says. “You can have several people in different areas.” For Dan, one of the big highlights is Zeus, the Cummins MerCruiser pod drives, which allow for precision control. “Zeus makes boating crazy easy,” he says. As they get ready to head back from Ship Island, Monique jumps on the phone to wrangle friends for an early waterside dinner in Gulfport. Then they’ll head back to their picturesque hideaway on the Tchefuncte. “This area is great, because you have so many options,” Dan says. “You’ve got the ocean, the lake, the river, anything you want.” And it’s all so simple. He makes an adjustment on the touchscreen navigation. “You just point and push the button!” he says before stealing a kiss from Monique.

A Perfect New Zealand Pairing for Fall PAN-ROASTED CHICKEN, CONFIT EGG YOLK AND ASPARAGUS and NOBILO SAUVIGNON BLANC Developed by New Zealand-born chef Matt Lambert, executive chef and owner of Michelin-starred restaurant The Musket Room. Prep and Cook Time: 90 Minutes | Serves: 4 DESCRIPTION “The Pan-Roasted Chicken dish is less about New Zealand and more about my personality. I wanted to do a dish that was chicken and egg, because I think it’s funny—which came first the chicken or the egg?” – Chef Matt Lambert INGREDIENTS CHICKEN • 4 chicken breasts • 1 sprig of rosemary • 2 tbsp olive oil • Zest of 2 lemons • 1 tsp salt • 6 tbsp butter • 4 sprigs of thyme ASPARAGUS • 2 bunches asparagus (6–10 spears per person) • 2 tbsp finely chopped parsley • 1 tbsp olive oil • Salt • 2 tbsp finely chopped chives EGG YOLKS • 4 egg yolks • 1 cup olive oil CHICKEN JUS • 4 cups chicken stock reduced to 1/2 cup for sauce • 1 tbsp butter GARNISH • Dandelion leaves • 2 tbsp chopped parsley • 2 tbsp chopped chives METHOD CHICKEN 1. Lightly season the chicken with salt and about 2 tbsp olive oil. I recommend about 1 tsp of salt. Roll the chicken into a tight cylinder in plastic wrap and tie up the ends so the chicken is sealed in the plastic wrap. 2. Poach the chicken breast in 180°F/80°C water for 60 mins. Remove from plastic and pat dry. 3. Pan roast the chicken in a medium hot pan to achieve a nice golden brown sear on the skin. Then add 2 tbsp butter and bring to a brown foamy stage, add lemon zest, thyme, and rosemary. Spoon liberally over the chicken. 4. Remove and let stand. ASPARAGUS In a hot pan add 2 tbsp olive oil and sauté the asparagus until golden brown. Season with salt and add 2 tbsp each of chopped parsley and chives just before removing the asparagus from the heat. EGG YOLKS Separate 4 egg yolks and submerge the yolks in a small container of olive oil, about 1 cup. Allow to cook for around 1 hour at 140°F/60°C. CHICKEN JUS Use 4 cups of sodium-free chicken stock, and reduce it to 1/2 of a cup. Add 1 tbsp of butter towards the end to achieve the perfect consistency. TO SERVE Trim the ends of the chicken roll, and cut in 4 pieces: the first piece bigger than the other ones. Place the chicken in the serving dish, with the biggest chicken piece facing end up. Take the roasted asparagus and gently put on top of the smaller chicken pieces. Take the dandelion greens and mix them with 2 tbsp each of olive oil, chopped parsley and chives in a small bowl. Once tossed, stack them on top of the chicken and asparagus. Take the egg yolk out of the oil with a slotted spoon and nicely place it on top of the biggest chicken piece. Add a small amount of salt and chives on top of the yolk. Pour the chicken jus on the center of the asparagus and let it run down under the roasted chicken to the point when it creates a small pool. Pour yourself some Nobilo Sauvignon Blanc and enjoy! Visit www.nobilowines.com/us/Entertaining/Recipes/PanRoastedChicken/index.htm to see a video of Chef Matt Lambert cooking this beautiful dish.

TWO OF A KIND Written by Samantha Meltzer | Photography by Scott Breithaupt

As you walk down Midway dock at the 146-year-old Detroit Yacht Club, you start to believe you’re seeing double. But your eyes aren’t playing tricks: These are, in fact, two nearly matching Meridian 441s, owned by Ray Batt and Steve Ellis, close friends and self-proclaimed Meridian Yachts junkies.

It wasn’t intentional, Steve explains of the purchases. In 2012, he and Ray travelled to boat shows together and happened to commit to the 441 Sedan Bridge on the same day. “It was just luck,” Steve says. It wasn’t the first time that luck played a role in Ray and Steve’s friendship. Coincidence and a dose of curiosity were what first brought them together nearly five years ago. Since then, the two have developed a bond over their mutual love of Michigan boating and Meridian Yachts. And though the boating season may be short, these two friends continue to make the most of their time together—and with their families—on their Meridians. “We really live and breathe boating,” says Ray. For these two friends, it’s all about the journey at the helms of their 441s, not the destination. It all started in 2009 on a trip sponsored by Colony Marine, their local dealer, to Put-in-Bay, Ohio. Although both Ray and Steve had been part of the Colony Marine community for years, they met for the first time on the outing, where they were anchored next to one another in Lake Erie’s waters. Steve ’s wife, Tina, was quickly intrigued by Ray’s boat, then a Meridian 408. She asked for a closer look, and the Batts happily obliged with a tour. “She got on the boat and fell in love,” Ray recalls. “Then she turned to Steve, and said, ‘I want one of these.’” Steve, for his part, was a little skeptical. “I remember telling her, ‘I don’t think so. I don’t know if that will ever happen,’” Steve recalls. Yet sure enough, after learning more about the quality and craftsmanship of Meridian Yachts, Steve couldn’t resist. Shortly after, the Ellises purchased their first Meridian, a 391. “For better or worse, I was the impetus for him getting into a Meridian,” Ray says. But if you ask Steve, he couldn’t be happier about the decision and credits his dealer, Colony Marine, for helping him find that perfect first yacht. “Pete Bauregard, the owner, spoke so highly of the Meridian Yachts brand and how beneficial the boat would be to our family. How it would fit into our lifestyle.” Since then, he ’s upgraded to his current 441, Shenanigans,

again with the help of Colony Marine. “It’s by far the best boat I’ve ever had. We get so much enjoyment out of it,” says Steve. “I absolutely adore our 441, and I couldn’t imagine being on any other boat right now.” After purchasing the 441s but before delivery, Colony Marine gave both Steve and Ray the opportunity to travel to the Meridian Yachts factory in Florida to see the construction process of their own boats. They received a tour of the factory and saw their own 441s come together before their eyes. “I came away with an appreciation for the craftsmanship and attention to detail and love that goes into these boats,” Ray says. “Everyone should see this process so they can have the same appreciation for it that I have.” From the time they were young, owning a yacht was an aspiration for both men, who remember admiring the boats of their friends and family. Steve recalls that he wanted to get into boating after falling in love with his brother’s boat. For Ray, who spent his childhood surrounded by water on Long Island in New York, boating was all around him. “I always wanted a boat as a kid; I basically grew up on friends’ boats,” says Ray. “When I moved to Michigan and realized how much freshwater was surrounding us, my wife, Lisa, and I talked about getting a cottage. But then I thought about getting a boat,” he explains. The rest is history. Ray took ownership of his first Meridian, a 368, in 2005, followed by the 408 and finally his current 441, which Ray dubbed The Batt Cave, a play on his last name. “When I was a little kid, I got the nickname Batt Man,” Ray explains, with a laugh. “The 368 was the first time we used The Batt Cave, and we stuck to it ever since.” Although Michigan’s summer may be fleeting, the two friends get plenty of use out of their 441s with their favorite feature—the bridge. The model’s spacious bridge is large enough for entertaining and accommodates both air conditioning and heating, allowing Ray, Steve and their guests to enjoy the numerous lakes around them longer. “It’s a short season, so the bridge is huge,” says Ray. “It’s an excellent entertaining platform, and because it’s closed I can use it as early as April and late as November when everyone else is pulling their boats.”

WINTERIZATION MADE EASY Protect Your Meridian This Winter with ValvTect

After a stellar season of boating, haul-out time inevitably approaches with the cool weather. But by giving your fuel the special care it needs, you can hit the water the first day of spring. Winterize your Meridian with these tips from the fuel experts at ValvTect: 1. Add an ethanol gasoline treatment, not just a stabilizer. Particularly during winter storage, corrosion and phase separation can occur in ethanol-blended gasoline. This causes ethanol and water to separate from your gas and sink to the bottom of your tank. If you use ethanol-blended or non-ethanol gasoline, add ValvTect Ethanol Gasoline Treatment to stabilize fuel and prevent problems. 2. Add a diesel-fuel treatment for ultra-low sulfur diesel/biodiesel. Bacterial growth can plug your filters and cause engine corrosion. Unfortunately ultra-low sulfur and biodiesel are more vulnerable to this, but ValvTect BioGuard Plus 6 can help. This multifunctional diesel-fuel additive contains microbiocide, stabilizer, corrosion inhibiter, moisture dispersant, lubricity improver, detergent and cetane improver to keep your diesel fuel in great shape. 3. Leave your tank 95 percent full. Leaving your tank 95 percent full will actually minimize the adverse effects of condensation and allow the fuel inside room to expand when spring temperatures arrive. The better care you give your fuel in the fall, the better your Meridian’s engine will run after a long winter. Make your spring boating season spectacular by using ValvTect Marine Fuel additives for all the care your fuel needs. To learn more, visit www.valvtect.com.

“The friendships you make through boating are incredible. I’m grateful and feel very, very fortunate.” The two have plenty of stories to share about favorite trips and destinations they’ve explored, both citing this year’s Up North Rendezvous with Colony Marine in August as one of their most memorable journeys together. For both men, the trip was a real odyssey—787 miles round-trip—with stops at ports throughout Lake Huron and Lake Michigan. The 441s took on the challenge with ease, letting them relax and enjoy the gorgeous weather and time with family and friends. “It was the most incredible trip I’ve ever been on,” Steve says. “I’ll never forget it.” Yet typically Ray, Steve and their families spend their time enjoying waters closer to home. There ’s an annual trip to Put-in-Bay, and with easy access

to Lake St. Clair and Lake Erie, there ’s always an opportunity for a quick trip or overnighter. And though Ray and Steve have seen their children head to college, move away and even start families of their own, the summer always brings them all back together. Ray says that his sons in particular have developed a love for their boat, while Steve got to take his 18-month-old granddaughter out on a cruise this summer. And when the boats are finally pulled at the end of the season, Ray and Steve get together on land and hash out next year’s trips. For Ray and Steve, not only have their Meridians given them countless memories with their families, but they’ve also given them a community of new friends. “Ray’s become one of my best friends. Our families have grown very close,” Steve says. “The friendships you make through boating are incredible. I’m grateful and feel very, very fortunate.”

SYDNEY

Written by Alexa M. Poteet | Photography by Mike Calabro

When Australians Alan and Lynne Dibben took delivery of their 2013 Meridian 441, there was only one name that would do: Spot-On. Outfitted with Cummins QSB 480 DTS engines, the powerful yacht was everything the lifelong water lovers had dreamed of and more. “The name was obvious to us because Meridian had exactly what we wanted,” Alan shares, “the spacious flybridge, well-appointed salon, two staterooms and, of course, the superb finish.” Indeed, it seems the luxurious yacht has really hit the “spot” for these Aussies.

destinations The Dibbens live in Arcadia, New South Wales, about 40 minutes from Sydney and its harbor—one of the finest in all the world. With such a scenic attraction close to home, it’s no wonder the couple isn’t new to boating. They both grew up in coastal areas as children and were always attracted to the waterways—lucky to be close to both inland rivers and some of the Southern Hemisphere ’s most spectacular surfing beaches. Owning several boats over the years, they began looking for their most recent upgrade about three years ago; but Alan says it was love at first sight at the Sydney International Boat Show: “We saw the Meridian there, and it became a ‘must have.’” Soon after Max Sutherland of Sports Marine Sydney was handling the transition to their new boat with ease. The Dibbens turned their delivery into a holiday of sorts, spending the next few days on Sydney Harbour before making the sea voyage back to their marina two hours north. “It was a great way to check out our new boat,” Alan shares happily.

Alan says it was love at first sight at the Sydney International Boat Show: “We saw the Meridian there, and it became a ‘must have.’”

That maiden trip on their 441 opened up Sydney Harbour and beyond for the couple. Living in Arcadia on five acres with a view of the Blue Mountains, you could say the Dibbens have the best of both worlds. They love that their rural lifestyle can be enjoyed so close to the center of the city. “Sydney has so much to offer especially for a boatie,” Alan says. “There are several marinas where you can moor overnight for as long as you wish, and it is also full of secluded spots to hide away for the weekend.” Their favorite spot for casual berthing is Darling Habour, which offers easy access to all of Sydney’s star attractions: Sydney Harbour Bridge, the Opera House, Taronga Zoo, shops and restaurants. “The list is endless,” Alan says, “and the views spectacular.” In fact, the Dibbens have made some of their sweetest boating memories close to home. While perhaps lesser known to some Americans, on January 26th each year Australians celebrate Australia Day, a national holiday commemorating the 1788 arrival of the first fleet of British ships at Port Jackson. This year, the Dibbens invited their daughter, Vanessa, and four friends to come cruise the harbor with them for the grand celebration, including two

dear friends who came all the way from Germany. Alan counts it as one of his best memories with the 441. “It was a spectacular day on the harbor packed with thousands of boats and people.” Although not every day can be Australia Day, their typical routine is no less sweet. The couple spends a lot of time at their favorite club mooring in Pittwater at a protected inlet known locally as The Basin. They’re early risers and both enjoy the water to the fullest. Alan explains, “I will often start the day by setting out in the tender with hopes of catching a few fish while Lynne will go paddleboarding, rock trekking or swimming… We have made so many new friends that way. Later in the afternoon we often join up.” Boating is a family affair for the Dibbens as well. Their daughter and her husband, Matt, have their own boat, as do Alan’s sister Denise and her husband, Graeme. Alan says that when they have time, “we often moor up

and spend a night or two together to catch up. We ’ll put a roast on the barbie and invite everyone to join us.” He mentions proudly that their invitation for these lovely get togethers has “never had a knock back.”

With so many friends to see and local hot spots to explore, one might think the Dibbens don’t spend too much time at home. Turns out, that’s not too far off. “Since purchasing the Meridian our lifestyle has changed,” Alan shares. “We now go boating at least once a week, sometimes only coming home to restock, mow the lawn, and then we are off again.” Never fear, though; the enterprising Dibbens have a plan to cut down on their yard work. “We now have the house on the market,” Alan confides, “and we soon hope to do those extended cruises we dream of.” While Sydney certainly has the capacity to provide a lifetime of cruising experience, the couple has already set sights on some envy-inducing future trips. This summer they are planning a cruise about five hours north to Nelson Bay as a test run for a farther cruise to Queensland to visit the Great Barrier Reef—the trip of a lifetime by any measure.

The Dibbens say they’ve met their match in the 441 and enjoy its countless features. Especially as Spot-On’s captain, Alan says Meridian’s designers didn’t forget a thing. It has “molded steps for easy access to the flybridge, as well as bow and stern thrusters that make any skipper look good, even in strong winds,” he comments. With luck, the Dibbens’ house will soon sell, and they can take their 441 to new, hidden corners of their beautiful Australia. Alan says he would certainly recommend the Meridian Yachts brand to friends, speaking of the stunned looks they get at the boat’s superior fittings and comfort. “Everyone who comes aboard is amazed and a little jealous, I think,” Alan says. “And believe me, there is no shortage of people wanting to look.” This of course comes with a problem, but it’s one the Dibbens will have to get used to: “The only trouble is,” Alan laughs, “it’s hard to get them to leave!”

A Smooth Celebration It’s the small things that make your journey all the more rewarding. Aboard a Meridian Yacht, the waves roll a little slower, the horizon stretches a little farther. And the single malt Scotch whisky tastes better because you’ve chosen Glenfiddich, a family-owned distillery from Scotland in the business of preserving the tradition of craft. The world’s most-awarded single malt Scotch whisky, Glenfiddich was founded by William Grant in 1886 and retains its rich history through subtle gestures. Techniques are passed down, a father’s careful lessons are taught generation after generation, and a single malt is forged that is so sensational it was the first to venture outside of Scotland’s markets.

Celebrate those little things that make a difference with Glenfiddich’s own Gran Reserva variant, a 21year-old single malt Scotch whisky aged in American oak casks then finished for up to four months in casks seasoned with a unique recipe of golden rum created using spirit from three Caribbean islands. These rum-soaked casks infuse this Glenfiddich 21 year old with luxurious notes of fig, fudge and ripe banana intermingled with exotic flavors of lime, ginger and spice. And as you savor the last drops in your glass on the sun-soaked deck of your Meridian, that sweetness will remind you how the little things can make life extraordinary.

NANTUCKET & BOSTON Written and Photographed by Jamie Elvidge

“As soon as I step through the gate to the marina, the stress rolls off,” says Dana Munick, owner and president of two busy turbine-enginecomponent manufacturing companies. “Everything about my day, my week, my work world changes the minute I step onto the boat.”

The funny thing is, when Dana and his beautiful wife, Ellen—likewise hard at work running a real-estate business—decided to spend a day at last winter’s New England Boat Show they had no idea how much their lives were about to change. For the better. “It’s like a whole new life,” says Ellen of owning their 391 Sedan, aptly named Sea’renity. “What an incredible adventure it’s been for us, as a couple and as a family.”

building businesses, everything is rush, rush. It’s hectic. So the concept was to take a step back and enjoy what we have.” That included enjoying time with their sons, Alex, 18, and Ben, 16, before they head out into the world.

The Municks had never owned any sort of boat before, and short of a few fun childhood memories on runabouts, they had spent very little time on the water. “I really hadn’t been boating in 30 years,” says Dana, “and I had absolutely no experience handling a boat. But still, we went straight for the 40-footer,” he laughs, making a crack about a possible mid-life crisis, though Ellen says it’s always been Dana’s nature to dive in the deep end and come up swimming.

Within days of the boat show the Municks had signed a deal for the 391 with Russo Marine, a third-generation family-owned empire that specializes in customer support. “Russo was spectacular to deal with,” says Dana. “As an inexperienced captain I was a little skeptical when they said the boat would be easy to drive. But it was true. We spent a couple of hours at a time with them, practicing maneuvers and docking, and they also spent time with Ellen and my kids, teaching them how to deal with the dock lines, because really, having a great crew makes a huge difference. After a couple of weeks I felt very comfortable, and after three or four weeks, I had no problem taking the boat anywhere.”

“We didn’t know if owning a boat would be the right thing for us,” explains Dana, “but we did know that at this point in our lives we wanted to do things differently. To change the pace. When you have young kids and are

summer escape, Nantucket Island, a four to five hour ride from Sea’renity’s home slip along the Commercial Wharf in Boston Harbor. “Our weekends are now planned around the boat,” says Ellen. “It’s like we have this vacation home on the water, only if we get tired of the view, we just drive our beautiful suite to another location.” Like so much of New England, Nantucket Island is steeped in American history. Yet unlike Boston, so famous for making history with its wars, plagues, protests and hockey playing, Nantucket, with its weatherworn flair, is famous for easy pleasures and gentle repose. True, it’s seen its share of shipwrecks and Melville-esque whale hunts, but these days Nantucket is renown for charms: windswept beaches, lighthouses, farmers markets, seafood chowder, bike paths and golf courses that wind along the cottagestrewn dunes.

“It’s like we have this vacation home on the water, only if we get tired of the view, we just drive our beautiful suite to another location.” “The best part about spending time on Nantucket is being around so many people who are happy,” says Ellen. “Everyone is in such a good mood and feeling so lucky to be there.” We love to bring our bicycles and ride around the island, and there are so many great boutiques, restaurants and fun bars, but honestly, this year, we spent most of our time on the boat. It's so much better than staying in a hotel, where you’re removed from the scene at night. Now we get to go to sleep and wake up in the middle of the action.”

When Ellen isn’t busy in the fully-equipped galley feeding her two ravenous teenage boys, she says being on the 391 Sedan allows her to connect with Alex and Ben on a different level. “When we’re underway we’re always on the hunt for seals or sharks or whales,” she says, “and that’s pretty fun. It’s peaceful. We can just be together, relax and enjoy the day.” “At that age kids don’t usually want to hang with their parents,” adds Dana, “but our boys love the boat and can’t wait to spend time on it. We’re seeing a lot more of each other these days.”

Ellen says she doesn't miss any of the comforts of home while away on the 391 Sedan. In fact, she says she prefers being on the boat these days and often conducts her business day from the dinette. “This boat has everything that I could want, every luxury. I love the living space. The salon is very elegant and the furniture is comfortable. It looks nice, it feels nice and it’s easy to keep clean. I also like that the galley is a part of the social space, not a dungeon below deck.”

On the other hand, the 391 Sedan, with its spacious bridge, wide-open salon and two huge ensuite staterooms offers plenty of privacy for the family and visiting friends. “We can sleep eight people on board,” says Dana, “and we can entertain lots more.” And entertain they do. Most often from the luxury of their skyline-view slip. “We use the boat as a meeting point for friends, have a cocktail, watch the sunset and go out from there,” says Ellen. Then there are the other nights when the couple orders take out from one of the dozens of restaurants within walking distance of their downtown marina and spends a quiet evening on the Meridian watching Boston’s dazzling skyline.

“We are very modern,” she says, “and we like dramatic, sophisticated styling, something this boat definitely has.” For Dana it’s also about the boat’s balance of maneuverability and magnificence. “It’s right in that sweet spot,” he says. “You can do lots of things a smaller boat can do. You can fit into tight dock spaces and travel out to shallow waters, but for a 40-foot boat it has a tremendous amount of living space.”

“Buying this boat is the best thing I could have done,” says Dana. “It’s a great way to unwind and think less about work.” says the engineer whose businesses building turbine components for the aerospace industry require very tight schedules and huge quality pressure. Ellen agrees. “Dana works so much,” she says. There are days I hardly see him. But when he gets on the boat the stress just melts away, and I get my old husband back.”
