As the vibrant energy of spring begins to bloom across our islands, we are excited to share with you the latest updates and enhancements at Divi Resorts. Our team has been hard at work making sure your next vacation will be even more memorable, relaxing, and full of new experiences. From exciting renovations to fresh dining options, we’ve been committed to creating an unforgettable escape for every guest.
We’re excited to announce that the renovation projects at Divi Aruba Phoenix Beach Resort are progressing well. Phase 1 Villa Suites, the Villa pool area, and Phase 2 Beach Tower Buildings B, C, and D are all completed. Renovations for Phase 1 Tower Suites will begin this April, followed by Phase 2 Beach Tower Building A later in the year. These updates reflect our ongoing commitment to providing guests with the ultimate vacation experience in Aruba.
At Divi Village Golf & Beach Resort, we’ve also been busy. The renovation of Seabreeze Bar & Grill is complete, and the newly-renovated Seabreeze Marketplace is now open, adding a variety of fresh all-day dining options around the busy Seabreeze Pool area. We’ve also introduced Cucina Italiana to Windows on Aruba, offering delicious Italian cuisine with a Caribbean twist for dinner, Friday Late Night Brunch, and incorporating some of the most popular items into Sunday Brunch. These updates bring even more choices to our guests, ensuring your dining experience is as exceptional as your surroundings. Check out all that’s new and improved at our resorts on pages 4 and 5.
Speaking of dining, we’re thrilled to welcome back Paul Melskens as the Food and Beverage Director at Divi Little Bay Beach Resort. Paul has worked closely with Chef Julio to introduce new and exciting menu options and enjoyable foodie events for our guests. Don’t miss his interview and expert recommendations on pages 6 and 7! At Divi Southwinds Beach Resort in Barbados, at the newly revamped pureocean restaurant, we’ve added toes-in-the-sand dining, new menu choices, and enlarged the deck with comfortable seating to relax and enjoy a cocktail at the end of the day. Meanwhile, Divi Flamingo Beach Resort & Casino in Bonaire has launched new dining options at all its beachfront eateries, perfect for a post-dive meal—a fantastic way to refuel after a day of underwater adventures. Paul Melskens Director of Food & Beverage
Returning to Divi Little Bay Beach Resort as the Director of Food & Beverage, Paul Melskens brings a wealth of experience and a deep passion for hospitality. With years of industry expertise spanning the Netherlands and the Caribbean, Paul shares his journey, insights on the evolving dining scene at Divi Little Bay and Oceans at Divi Little Bay, and his vision for creating unforgettable guest experiences.
How does it feel to return to Divi Little Bay Beach Resort as the Director of Food & Beverage? What has changed since you last held this position in 2022?
It feels fantastic to be back. I truly enjoy collaborating with the incredible team here. It’s inspiring to see so many dedicated employees who have been with the resort for decades, some for 30, 40, or even 50 years, while also welcoming talented new staff and reconnecting with our loyal guests.
Since I was last here, the resort has undergone significant changes, including the opening of Oceans and the addition of new dining options, plus more all-inclusive guests. This shift has been a great motivator for me to refine our food and beverage operations, ultimately benefiting all our guests, from timeshare owners to local visitors.
How did you get your start in the F&B world, and how has your experience prepared you for this role?
My passion for hospitality started when I was about 12 or 13. My family frequently dined at the same restaurant in my hometown in the Netherlands, and I asked the owner for a job. He jokingly told me to come back when I was taller than the bar. A few years later, I got my first job there, working weekends until I graduated high school.
From there, I gained experience in various hospitality roles across the Netherlands, from bartending at a popular nightlife venue to serving at a Michelin-starred restaurant. I earned my degree in Hotel and Event Management and have worked as a restaurant supervisor at a large hotel chain, and at various F&B and operations management roles in both Sint Maarten and Curaçao.
What’s your favorite part of working in hospitality, and what keeps you passionate about this industry?
I love the multicultural environment and meeting new people. Collaborating with a diverse team, learning from different cultures, and motivating staff to achieve our goals while delivering exceptional guest experiences keeps me energized.
A great day for me is seeing our plans come together, benefiting both our team and guests. I stay passionate by keeping up with industry trends and constantly finding ways to enhance operations and create new, memorable experiences for our guests.
What’s your vision for the overall dining experience at the resort?
Divi Little Bay operates eight food and beverage outlets. My vision is for each to have a distinct identity while elevating our overall offerings. By continuously enhancing the guest experience, I aim to make our dining experience one of the best parts of Divi Little Bay overall.
Can you share a favorite memory or experience with guests at Divi?
During my first tenure at Divi (2018-2022), I worked throughout the COVID period. One couple chose to stay at the resort rather than return to the USA after the first lockdown, and we formed a close bond. I was also lucky to share many memorable meals prepared by Italian chef Ms. Rosalie Cangelosi and cherished moments with her late husband, Mr. Joe Cangelosi. Those times made an unforgettable impact on me.

We recently caught up with Katherine Young, a proud President’s Elite Divi Vacation Club member from
New Jersey, who has been enjoying the Divi experience for over a decade. Her love for the resort, the staff, and the community keeps her coming back year after year.
Katherine’s journey with Divi started about 10 years ago when a friend invited her on a trip to Aruba. “We stayed at La Cabana, and I immediately fell in love with the island,” she recalls. During that visit, she discovered Divi Aruba Phoenix and knew it was the perfect place to return to year after year. She initially chose a one-bedroom unit for Week 7, and when Week 8 became available in the same room, she couldn’t pass up the opportunity. “It felt like home, and I knew I wanted to keep coming back,” she says. Over time, she transitioned to the points system, giving her even more flexibility to enjoy her stays.
Each year, Katherine spends three warm winter weeks at Divi Aruba Phoenix. As a President’s Elite member, she enjoys the privilege of booking a year in advance, which is a huge advantage given how quickly rooms fill up! “I haven’t visited other Divi locations yet, but I recently purchased extra points. I’d like to see St. Maarten next,” she shares.
Beyond the stunning beaches and luxurious accommodations, it’s the incredible staff that makes her Divi experience unforgettable. She is emphatic: “The staff is phenomenal. They know me by name and go above and beyond to make my stay perfect. I cannot say enough about them.”
Following a recent surgery, she was especially touched by their attentiveness. “They brought my groceries up to my room, helped me with my walker, and even moved my belongings when I needed to change rooms. Claudia at the front desk, the concierge team, Adrianna, Michelle, Jesus — everyone, even the restaurant and towel hut staff, treat me like family.”
Katherine usually travels with friends, making each trip a memorable getaway. “My friend Lynn (a fellow DVC member) rents a unit at Phoenix I, stays a week, and then moves over to Divi Village Golf & Beach Resort for another week,” she says. “We spend our days between the pool and the beach, and have lunch over at Purebeach and dinners at Pureocean. I always get the lobster!”
She also makes the most of Divi’s amenities, frequently visiting Phoenix’s on-site spa (“The views are great”). Another major President’s Elite perk? “The dining discount is a huge plus. It means we don’t have to leave the resort to eat, which makes everything so much easier.”
It’s not just the staff that makes Divi special — it’s the guests, too. “There’s a real sense of community here. People are so kind and helpful. After my surgery, even fellow guests offered to lend a hand. It’s contagious in the best way.”
Even when she’s not on the island, Katherine appreciates the exceptional service from Divi’s corporate office team. “The call center team is fantastic, too. They’re always very nice,” she says. BASECAMP FOR ADVENTURE: MY 4-DAY GUIDE TO ST. CROIX & THE CB
If you’re the kind of traveler who loves exploring off the beaten path, finding hidden beaches, and drinking rum where it’s made — St. Croix is for you! It’s laid back, rustic, and full of history, with some of the best beaches, hikes, and local experiences in the Caribbean. The Carina Bay Boutique All-Inclusive Resort (The CB) isn’t a place where you sit at the pool all day, it’s where you rest, refuel, and recharge between epic adventures. Here’s how I spent a fantastic four days at the CB.
Day 1: Arrival, Beach Walks & BBQ Nights
We arrived at the airport and picked up our car rental from Centerline (easy to do ahead of time online!). After a scenic 30-minute drive from the airport, we arrived at The CB, where check-in was quick and seamless. Within minutes, we were sipping cocktails and grabbing lunch at Oceans Bar & Grill, soaking in the ocean views.
The afternoon was spent exploring the coastline and collecting shells. Since there wasn’t much Sargassum, we grabbed free paddleboards from the activity center and hit the calm waters. Pro tip: since the CB is an all-inclusive resort, there’s no change for resort water activities, so you can rent snorkel gear for free, at the activity center to spot tropical fish past the seaweed line.
Dinner that night? Waves Marketplace, where we dove into a hearty BBQ buffet, the perfect way to fuel up for the adventures ahead. We ended the night with drinks at the lobby bar, plotting our next day’s escapades.
Day 2: Rum, Fun & Late-Night Wins
We kicked off the day at East End Coffee with gourmet coffee and a fresh pastry, followed by a smoothie to-go to prep for a spirit-filled day.
First stop: Mutiny Island Vodka in Sion Farm, home to the world’s first breadfruit-based vodka. The tour gave us a behind-the-scenes look at how they transform this island staple into smooth, sustainable spirits. We sampled this unique vodka straight and in cocktails, plus
a surprise tasting of their breadfruit rum and whiskey - so cool! A light lunch and snacks rounded out the visit—turns out, breadfruit pairs well with everything. Pro tip: tours run every hour on the half-hour, so it’s easy to drop in and explore.
Next, we headed to the Captain Morgan Visitor Center on the island’s south shore. The tour was part history, part behind-the-scenes rum-making, and all fun, especially the tastings. They run every 40 minutes on weekdays, so just show up ready to sip and shop.
After a full day of rum and vodka-fueled adventures (shoutout to Jaylyn for being the designated driver!), we rolled back to The CB for some serious unwinding on the beach, napping on a comfortable chaise lounge under the shade of the beach umbrella. Dinner at Tuscany was on point: fresh seafood, great vibes, and the perfect way to soak up all that alcohol. Afterward, we popped into the casino for a little late-night roulette (walked out $5 richer, which is still a win).
Day 3: Buck Island & Christiansted Vibes
Fueling up for the day, we hit Waves Marketplace for a big buffet breakfast before heading out on a bucket-list adventure: a half-day tour to Buck Island. We booked with Big Beard’s Adventure Tours, and let me tell you, this place is straight-up paradise. Powdery white sand, crystal-clear water, and snorkeling with schools of tropical fish (including a barracuda, but don’t worry, he was just cruising).
Afterward, we spent the afternoon exploring Christiansted. We explored shops and bought some locally made jewelry. Just a scenic 20-minute drive from the CB, this waterfront town is colorful, safe, and full of great spots to eat and drink. We ended the night at Oceans Bar & Grill back at the resort, dining poolside with live entertainment and tropical cocktails.
Day 4: Sunrise Views & Botanical Bliss
For our last morning, we drove about 12 minutes to Point Udall, the easternmost point in the U.S., just in time for sunrise. The views? Unreal. If you have time,
hike down to Jack and Isaac’s Bay for a secluded morning swim.
We made our way back to The CB for a buffet breakfast at Waves Marketplace, loading up on American favorites before checking out. A final stop at East End Coffee for a muffin and another cup of that delicious coffee set us up for the day ahead.
Before heading to the airport, we squeezed in a visit to the St. George Village Botanical Gardens, because why not fit in one last adventure? Our car return was easy, and we left already planning our next trip back.

Every year, in remembrance of Alex Nieuwmeyer, Managing Director of Divi Aruba AIl-Inclusive and the Tamarijn, we have a fantastic turnout for this annual golf tournament. The tournament honors his memory and raises money for an important local cause. Last year, we raised over $8,000 for Aruba’s Animal Welfare Alliance and our local breakfast program.
