PENANG ROADSHOW TO INDIA 2023: CHALO PENANG CAMPAIGN TO BOOST MICE INDUSTRY

The Penang Convention & Exhibition Bureau (PCEB), is once again hosting the 6th edition of Penang Road show to India 2023, that will be taking place in Mumbai, New Delhi, Chennai and Hyderabad from February 13 to 20. There will also be a networking event hosted in each city to connect and collaborate with India buyers from the MICE industry.

Going back to its physical form, this year a total of 14 registered exhibitors together with Team PCEB will be welcoming an estimation of 800 buyers and trade visitors in total.

Yeoh Soon Hin, Penang State Minister for Tourism and Creative Economy, said, ‘’PCEB will also be launching the latest meeting and incentive packages to re-establish connections with the India market to cater to the preferences of our business travellers.”

These are one of the many efforts in providing a fresh perspective of Penang by including the attractions available in Mainland, Penang.

This year, Penang anticipates around

2500 events with 260,000 delegates, with an estimated economic impact (EEI) of RM1 billion. This conveys a message of confidence that Penang is ready and reflects its capability to host large and world-class events. One to mention will be the V-Convention, one of the largest events hosted bi-annually in Penang with a total delegate of 15,000 in each round. This notable convention draws a majority of delegates from India.

AshwinGunasekeran, CEO of Penang Convention & Exhibition Bureau (PCEB), said, ‘’PCEB is strategising comprehensive blueprints to position Penang higher

Moving forward, Team PCEB will be doing more site inspections in the mainland to identify and utilise the products and services in Mainland, Penang for the MICE industry. This effort will also be inline with the vision and mission of Penang State Government.

As a strategic partner, Malaysia Airlines will support and provide a wide range of services and connections across our local and

The apex food regulator, FSSAI, has expressed concern over ‘food borne’ illness and stated that a ‘judicious’ mix of regulation & supply chain management can achieve its goal of ‘Eat Right’ movement'.

"We get about 150 – 170 million cases and about USD15 billion of expenditure on foodborne illnesses alone", said Inoshi Sharma, Executive Director, Compliance Strategies, FSSAI, adding that ‘foodborne illness’ is a major strain on the Indian economy.

She was speaking at FICCI's Food Systems Symposium in partnership with GAIN, Syngenta Foundation India and Nutrition Connect recently.

She added that FSSAI puts a lot of emphasis on food safety and a judicious mix of regulatory, supply and demand side initiatives based on the three pillars – ‘eat safe, eat healthy, eat sustainable’ shall help

in achieving the goal of ‘Eat Right Movement’.

Speaking on the occasion, Dr Lawrence Haddad, executive director, GAIN, noted the significant increase in the coverage of nutrition programmes delivered through the health system between 2015 and 2019. However, he pointed to mixed progress on

nutritional outcomes.

Alluding to the Global Nutrition Report, Haddad underlined significant progress on parameters like ‘childhood stunting, childhood overweight and exclusive breastfeeding, being on track’ in India.

Dr Haddad concluded that

‘unhealthy diets are part of the problem’, requiring ‘attention to the middle of the food systems in India’.

Present on the occasion were Siraj Hussain, adviser, FICCI & former secretary Government of India, and Tarun Vij, country director, GAIN India. n

CAVIAR MARKET TO REACH A VALUATION OF US$975 MILLION BY THE END OF 2033

The global caviar market is expected to reach a value of US$975 million by 2033-end, according to data provided by Fact.MR, a market research and competitive intelligence provider. Worldwide consumption of caviar is predicted to increase at a CAGR of 7.6% through 2033.

Caviar is rich in B12 vitamins, selenium, and omega-3 fatty acids. It is manufactured from salt-cured roe that has been taken from the Acipenseridae family. Caviar is used as a spread or a garnish and is wellregarded as a delicacy.

Demand for caviar is driven by increasing health-consciousness among people around the world. In addition, rising standards of living and increased production of caviar from aquaculture are also driving their sales. Docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA) are the two pivotal omega-3

fatty acids that are abundant in this delicacy. These fatty acids are responsible for noticeable health advantages.

? Dietary Guidelines for Americans mention that an individual needs to get around 250 mg of DHA and EPA each day.

Numerous restaurants around the world are using caviar at a significant rate. Caviars are also gaining traction in the food & beverages industry owing to their rising demand as global cuisine.

Exposure to international cuisines is also predicted to drive opportunities in the target industry.

However, illegal trading of caviar in certain parts of the world is estimated to stifle market opportunities. Moreover, some people are allergic to certain types of fish products, which can also limit the adoption of caviar. However, governments as well as private organisations, around the world are taking initiatives

to increase the production of caviar, which can create lucrative opportunities for industry players in the coming years.

Key Takeaways from Market Study

• The global caviar market is projected to reach a valuation of US$975 million by the end of 2033.

• The market for caviar is currently valued at US$465 million.

• Demand for caviar is anticipated to increase at a significant CAGR of 7.6% through 2033.

• Sales of caviar in the United States were more than US$100 million in the year 2022.

• Demand for caviar in Germany is forecasted to advance at a CAGR of 4.9% through 2033.

• The Canadian market is anticipated to progress at a CAGR of 6.8% from 2023 to 2033.

“Growing consumer awareness about healthy and nutritious food products, including caviar, is estimated to create lucrative opportunities for industry players,” says a Fact.MR analyst.

Competitive Landscape

Prominent suppliers of caviar are indulging in numerous strategies, including novel product launches and others to open up opportunities for new entrants.

For instance, Heinz is a food processing company, which launched new ketchup in 2019, with the name, Ketchup Caviar. This newly developed product has been claimed to contain caviar pearls that will burst into the mouth of consumers. The company has mentioned that this newly launched food item can also help consumers to convert any ordinary meal into a delicious dining experience.n

Sanjeev Foods & Beverages, a subsidiary of Universal Beverages LLC, views that energy drinks will play a prominent role this summer to quench parched throats.

"As the temperature starts to soar, so does the demand for cold, refreshing beverages. While colas and juices have long been the go-to options for Indian consumers, energy drinks are slowly but surely making their way into the mix," said MK Vasudev, COO, Sanjeev Foods & Beverages Pvt. Ltd. a subsidiary of Universal Beverages LLC.

"Over the last decade, energy drinks have become increasingly popular among Indian consumers, with a wide variety of options available from leading global brands. According to a report by Research and Markets,

the energy drink market in India is predicted to grow at a compound annual growth rate (CAGR) of 10.17% between 2021 and 2026. This growth can be attributed to various factors, such as rising disposable incomes, changing lifestyles, and the growing fitness culture in India," he added.

However, the rise of energy drinks in India has also brought with it a number of health concerns and misconceptions. "Many consumers believe that energy drinks are loaded with caffeine and sugar, and can cause a variety of health problems such as heart palpitations, high blood pressure, and even kidney damage. While it is true that energy drinks do contain caffeine, the amount is no higher than what you would find in a cup of coffee. In fact, many energy drinks contain less caffeine than a cup

of coffee. Additionally, most energy drink companies voluntarily list the caffeine content on their labels, making it easy for consumers to know exactly what they're consuming," said Vasudev.

"To appeal to the Indian consumer, energy drink companies are tailoring their marketing and products to suit local tastes and preferences.

For example, Xtra Power Classic is a finest taste of energy drink, developed with best ingredients from Germany. It contains Caffeine, Taurine and Vitamins: B2, B3, B6 and B12. In addition, many companies are targeting the fitness-conscious Indian consumer by highlighting the energy-boosting benefits of their products during workouts and sports activities," he said.

Another reason that energy drinks are

likely to be successful this summer is that they are becoming more popular in general. In recent years, energy drink sales have been on the rise, with more and more people turning to these beverages as a way to boost their energy and stay productive throughout the day. As a result, it's likely that we'll continue to see growth in the energy drink market this summer.

With the market continuing to grow and companies tailoring their products to suit local tastes, it seems that energy drinks are here to stay. However, it is important for consumers to be aware of the health concerns and misconceptions surrounding energy drinks, and to consume them in moderation, according to Vasudev.n

Packaging plays a fundamental role in the food and beverage sector, with a far-reaching impact at every stage of the product life cycle. Sustainable packaging is absolutely crucial for brands, manufacturers and consumers to address the needs of the industry today.

Green packaging (also known as sustainable packaging) is the development and use of packaging, which results in improved sustainability. This involves increased use of life cycle inventory and life cycle assessment to help guide the use of packaging which reduces the environmental impact and ecological footprint.

Green packaging, also known as ecofriendly packaging or sustainable packaging, refers to packaging designs that have low impact on the environment. They accomplish this by reducing the packaging waste produced and using sustainable materials, such as recyclable or biodegradable packaging elements, along with the usage of renewable energy during production. Plantbased plastics, recycled paper, and reused polyethylene (PE) bags are some of the common materials used for producing green packaging.

The India green packaging market is expected to exhibit a growth rate (CAGR) of 7.24% during 20232028.

When it comes to the food and beverages industry, sustainable packaging is no longer just an option today, even if its importance was not already blaringly evident. Government rules and regulations, consumer preferences, and changing market standards frequently require enterprises to use sustainable packaging methods in order to lessen their impact on the environment.

For instance, starting from July 1, 2022, India no longer allows the production, import, storing, distribution, selling or use of any single-use plastic goods that

have been classified as having a high potential for littering and low utility. Hence, the usage of ecologically friendly packaging options is required by many such environmental concerns and mandates, but fortunately for company owners, these solutions could potentially wind up even saving them money over time, when implemented effectively.

Incentives of Sustainable Packaging

The main objective of eco-friendly packaging options is the long-term preservation of the viability and quality of human existence through safeguarding global ecosystems. With the use of renewable energy sources and recycled or renewable materials, sustainable packaging results in significantly less resource waste. From manufacture to disposal, it makes use of resources in the most efficient manner possible, with little negative environmental effect.

There are several advantages to employing green packaging, and doing so does not really require massive or elaborate adjustments to business practices:

Responsible Consumer Engagement

Today's customers put a lot of thought into their influence on the environment. This links people to the goods they like to buy, and as a result, the brands to which they are more devoted. By adopting environmentally friendly packaging, a brand can significantly strengthen its corporate responsibility.

Improved Disposal

Organisations may use a variety of packing materials for their products, but they should all be recyclable. If their customer has a composting facility, they will be able to convert compostable packaging waste into compost.

Easy-to-Reuse or Recycle

Promoting the reuse or recycling of packaging increases its usefulness and decreases the need for brandnew materials, thus reducing its carbon impact. Used beverage cartons can be used as raw materials in the production of a wide range of utilitarian objects including furniture, corrugated cardboard, and more.

Implementation Model

1. Apart from framing the Packaging Regulations that provide guidelines for businesses looking to verify

that the packaging materials and processes they are using are safe for food, FSSAI has recently taken an initiative towards reduction of plastic footprint in the F&B industry, wherein many of the food businesses have pledged to eliminate single-use plastic in coming years; develop environmental friendly substitutes and also an efficient plastic collection and recycling/disposal system in the F&B sector.

2. In alignment with the Swachhata Hi Seva Campaign, various awareness generation and collection drives were organised to free our houses, offices and workplaces from single-use plastic.

The changing regulations, the informed consumers, technological advances, varying purchase behaviour, and extreme concerns for the environment. These are some of the crucial factors that have enabled drinks companies to renew their commitments toward sustainability. Refurbishing the drink's packaging can encourage the shrinkage of carbon footprint, increase the recycling of products, and establish a plastic-free environment.

PET Bottles Replacing Glass Bottles

The production and shipping of glass bottles are one of the major components of a wine and spirits supply chain that use up a lot of energy and increase the carbon footprint by approximately 51% to 68%. Although being impermeable and fantastic for storing beverages, they require inferno-like heat to make and an immense amount of fuel and packaging to be shipped.

However, PET (Polyethylene Terephthalate) is made of 100% recyclable plastic and is clear, strong, and lightweight.

Cellulose-Fibre Material Paper Bottles

Using layers of recycled paperboards fused with waterbased glue to create a bottle, the cellulose-fibre bottles are 94% chemical-free and 5 times lighter than a glass bottle. It requires less fuel to shop and can survive a 5-foot drop without breaking.

RTDs (Ready-To-Drink) or Canned Beverages

Aluminium beverage cans are the most recyclable drinks pack in the world and with an average recycling rate of 69%, they can be endlessly recycled without any loss of quality. The beverage can is already wellpositioned in the beverage industry and is a good initiative. Due to their size and weight, they effectively reduce the CO2 emissions during transportation, encourage trials due to their smaller size, and are also a portable alternative for consumers. However, producing aluminium alloy also releases harmful greenhouse gasses into the atmosphere.

A smart alternative to the aluminium can is an initiative by which offers a beverage packaging system made of paper. It is 30% more eco-friendly than aluminium or PET and uses 30% less total raw materials that come from renewable resources.

Beer Can Holders

Replacing plastic rings to hold beer cans with cardboard ones has been a revolution within itself. To eliminate single-use plastic, beer brands are using

sustainably sourced, recyclable, and biodegradable cardboard to hold the beer cans together. The new format along with other wastesaving innovations can help in reducing plastic waste globally by more than 1,200 tonne a year which is equivalent to 60 million plastic bags.

Across the drinks industry, there are numerous initiatives taken to shrink the carbon footprint of wine, spirits, and beers.. Beverage brands are focusing on providing ‘How to recycle?’ information on their labels to educate the consumers and are also becoming 100% transparent about their carbon footprints.

Packaging Ideas on the Rise for Beverages

Consumers and legislation are driving the demand for sustainable packaging in the beverage industry. Designing for recycling and increasing the use of PCR content in beverage packaging are wellknown trends in the industry.

Here are a few Trends on the Rise -

Premium

With millennials demanding more from all aspects of their lives, from customer service to packaging and the products within, the beverage industry is no exception. This demand for premiumisation of beverages covers everything from the flavour, healthier ingredients, and attractive and sustainable packaging. Both alcoholic and nonalcoholic drinks are becoming more geared towards people who demand more and do not mind paying for them.

motivator for consumer purchase decisions, and here are some of the sustainable initiatives taken around the drinks industry which are being integrated into their packaging.

Beverage packaging

Active Packaging Vs Intelligent Packaging

Packaging that interacts with the contents and helps in improving the shelf life or quality of the contents is deemed as active packaging. There are certain substances released or removed from the packaging.

E.g., Film packaging with ethylene absorbers. On the other hand, intelligent packaging can keep track of the contents and let the consumer be aware of what is happening with the contents. This includes the time of packaging, freshness of the contents, temperature, or other useful information. It is done with the help of sensors added on, chips for certain products, or other LED barcodes.

This kind of packaging is a gamechanger in the drinks industry and plays a huge role in reducing the impact on the environment. Not only this, but it can also help drinks companies to remain competitive and promote a positive brand image to their consumers. Sustainability has already become a compelling

With consumers and regulations being the driving force, many beverage companies are embracing more sustainable ways of packaging and selling their products. Water comes in boxes, beer comes in paper bottles, and recycled plastics are being used for different products. While designs like the tethered cap are on the rise, all of which is movement in the right direction.

The Future of Green Packaging in Food and Beverage

The future in packaging for beverage companies is sustainable. This encompasses the entire life cycle of a beverage product, from internal systems that improve bulk shipping or warehousing, to packaging systems that appear on store shelves. All signs point to this growing industry. Pressure from retailers and consumers are forcing companies to rethink their packaging methods to satisfy demand. International regulations are pressuring global beverage leaders to meet requirements to continue to expand business into the 21st century. These pressures and demands are met by emerging technologies that allow food and beverage companies to grow their operations in a cost-effective manner. Leaders that have the foresight moving into the future will invest in these solutions and will ultimately reap its benefits. n

MILLETS MAY BE MORE NUTRITIOUS THAN OTHER CEREALS

Priyanka and Kiranbeer Kaur (The authors are M.Sc. students, Department of Food Science and Technology, I.K.G. Punjab Technical University, Kapurthala. They can be reached at gursimrank999@gmail.com, kiranbeer51@gmail.com )

As said by Hippocrates, "Let food be Thy Medicine shall be Thy Food". We have to reboot ourselves by switching to organics and millets. As millets are regarded as a superfood. They can help combat many modern-day lifestyle disorders due to their high quantities of fibre, vitamins, minerals, phytochemicals and antioxidants. Important amino acids enhance millet's nutritional value. Millets contain several bioactive principles that have been demonstrated to lessen the risk of cardiovascular disease, diabetes, aging, and even cancer. This article looks at the potential health benefits of millet.

Millets are natural grains of many nations, including India, and may be used as an alternative staple food to address concerns such as water shortages, desertification, global warming, and carbon footprint management. Furthermore, due to their low carbohydrate-fibre ratio, they may be beneficial in several lifestyle conditions such as cardiovascular disease, diabetes mellitus, and some types of cancer.

Dietary fibre consumption reduces glucose absorption while maintaining blood glucose levels, making it advantageous in non-insulindependent diabetes (NIDDM). Furthermore, fibre binds cholesterol, protecting against heart disease.

Millet fibre enables regular gut

functioning due to its incomplete or slow fermentation by microorganisms in the large intestine. Dietary fibre increases fecal bulk while also increasing fecal motility and fermentation of contents, both of which contribute to the prevention of colon cancer. Millets are also 'nutritional supplements,' containing phytochemicals such as phenols, tannins, flavonoids, alkaloids, and tarpenoids, as well as anti-nutrients that are essential for maintaining good health and have a significant impact on the treatment of chronic illnesses. They include essential amino acids, carbohydrates, lipids, fibres, folic acid, vitamins such as thiamine, niacin, and riboflavin, and minerals such as iron, calcium, and potassium. Millet-based foods nourish the body and protect it from diseases such as diabetes, cardiovascular disease, cancer, inflammation, gastrointestinal

issues, and others.

Raising the danger of Sorghum (Jowar), Pearl Millet (Bajra), Finger Millet (Ragi) (major millets), Foxtail Millet (Kakum), Little Millet (Kutki), Kodo Millet (Kodon), Proso Millet (Chenna), and Barnyard millet (Sanwa) are among the millets (minor millets). Some pseudo millets are Amaranth (Rajgira), Buckwheat (Kuttu). These are among the earliest foods that humans have ever consumed. One of the several varieties of coarse cereal grasses in the Poaceae family, these are grown for their tiny edible seeds. Although pseudo millets do not belong to the Poaceae botanical family, which is the family to which "true" grains do, they are nutritionally comparable to "true" grains and can be used in similar ways.

Modernisation has had a significant influence on India's consumption pattern, resulting in decreased consumption of some cereals such as millet and increasing consumption of animal-derived goods such as oil, refined sugar, fat, and alcohol. Noncommunicable diseases currently account for around 71% of all mortality globally, a burden that has grown as a result of this consumption pattern.

Furthermore, the present pattern of consumption is critical in creating oxidative stress. Oxidative stress is frequently caused by an imbalance between the production and accumulation of reactive

oxygen species (ROS) in cells and tissues. Furthermore, ROS has a role in the development of NIDDM, mutagenesis, carcinogenesis, and DNA damage. Cancer is one of the numerous diseases caused by faulty DNA. Increased oxidative stress can considerably contribute to inflammatory disorders such as arthritis, vasculitis, adult respiratory disease syndrome, and muscular dystrophy, as well as AIDS and other ailments.

To resist oxidative stress, the human body possesses a plethora of indigenous antioxidants (naturally generated or provided externally through food). These antioxidants act as free radical scavengers, preventing and repairing ROS-induced damage, enhancing immunological response, and lowering the risk of degenerative diseases. Millets naturally contain antioxidants. Furthermore, the potential of millets to scavenge free radicals can aid to prevent and treat illnesses caused by free radicals, as well as reduce ROS. Consuming millet reduces the risk of the aforementioned degenerative diseases by decreasing oxidative stress.

Potential Health Implications:

Millets are favourable in lifestyle, diseases like cancer, diabetes, and cardiovascular issues due to their low carbohydrate: fibre ratio, higher antioxidant content, and other impacts. Millets may even be more significant than staple grains in terms of production and seasonal sensitivity, and they may be more nutritious than other cereals. Because they are rich in essential nutrients like fibre and essential amino acids like leucine, isoleucine, valine, and phenylalanine as well as minerals like calcium, iron, and zinc.

Impact of Millets on Diabetes Mellitus

The hallmarks of NIDDM, a chronic metabolic disease, are hyperglycemia and altered protein,

carbohydrate, and lipid metabolism. A higher risk of developing NIDDM is closely correlated with a dietary glycemic load. Dietary fibre is essential for the metabolism of glucose. Millets are natural foods for diabetes because they are a good source of the amino acid leucine, a carbohydrate that digests slowly, and minerals that reduce the sharp rise in postprandial glucose levels. Studies done in vitro have shown that millets are excellent at reducing blood sugar levels. Additionally, in vivo investigations have shown that millet-based meals have hypoglycemic effects with intervention.

Impact of Heart Disease

The risk of cardiac diseases rises dramatically as NIDDM risk rises. In terms of the likelihood of developing heart disease, lowdensity lipoprotein (LDL) and

high-density lipoprotein (HDL) have opposing effects. As a result, every 1 mg/dL increase in LDL increases the risk of heart disease by 2%, while every 1 mg/dL increase in HDL reduces the risk of heart disease by 2-3%. Triglycerides are another element that raises the risk of developing heart conditions because there is a long-standing link between having high triglyceride levels and an increased risk of heart conditions. The best method of preventing heart disease is to lower LDL cholesterol, according to research. Therefore, a diet that lowers LDL should be chosen to lower the risk of cardiac problems. Niacin-enriched millets lower LDL and triglyceride levels and correct lipoprotein abnormalities.

Impact of Millets on Cancer

As anti-nutrients that reduce the incidence of colon and breast cancer

in animals, millet grains include phenolic components like phenolic acids, flavonoids, and tannins. Fibroin-modulator-binding protein (FMBP), a novel 35kD protein isolated from foxtail millet, was shown in an in-vivo study to inhibit the growth of colon cancer cells by causing GI phase arrest and the loss of mitochondrial transmembrane potential, which causes colon cancer cells to undergo apoptosis (programmed cell death) through the activation of caspase.

Impact of Millets on Brain Disorders

Stress in the brain may result in oxidative brain dysfunction because an HFD has been demonstrated to produce it. Furthermore, it has been suggested that oxidative stress is a trigger and exacerbating factor for neurological disorders like Addison's disease (AD). Increased oxidative stress also promotes the synthesis of pro-inflammatory factors, which causes inflammation in the brain and can lead to dementia.

The Indian food industry is growing with a higher rate , increasing its contribution to the world food trade every year. In India, the food sector has emerged as a high-growth and high-profit sector due to its immense potential for value addition, particularly within the food processing industry.

Food is a basic necessity and requirement of everyone without any doubt; therefore the demands are always going to be high. There are many big companies already actively involved in the food processing industry and the government is playing a vital role in promoting it. Many factors are shaping and affecting the growth of such industries. Investors are more attracted to the food processing industry, foreseeing its high potential and wider customer base.

The Indian food processing industry is currently one of the largest in the nation in terms of growth, production, consumption and exports.

The industry produces and manufactures several food products such as, fruits, vegetables, spices, milk and milk products, alcoholic beverages, plantations grains meat, poultry, fisheries. It also manufactures cocoa products and chocolates, confectionery, mineral water, soya-based items and high-protein foods. Since the liberalisation in August 1991, the government proposed and accepted

multiple projects, for instance, creating foreign collaborations, joint ventures, 100% export-oriented units and industrial licences to encourage growth and investment in the food processing industry.

Foreign Direct Investment (FDI) in India was estimated at Rs. 2,934.1 crore (US$368.8 million) in FY21.

India's food processing sector is a rising segment that has gained prominence in recent years. Major processed food products exported from India include processed fruits and juices, pulses, guar gum, groundnuts, milled products, cereals preparations, oil meals and alcoholic beverages. India created history in agriculture and processed food exports by exporting products worth US$25.6 billion in FY22.

Export of APEDA products stood at US$7.4 billion as of April-June 2022, up 31% compared with US$.7 billion over the same period last fiscal, according to the Directorate General of Commercial Intelligence

and Statistics. Furthermore, exports of processed fruits and vegetables grew by 59.1%; cereals and miscellaneous processed items grew by 37.66%; meat, dairy and poultry products grew by 9.5%; basmati rice grew by 25.5%; non-basmati rice grew by 5%; and miscellaneous products grew by 50% (Source: APEDA)

The food sector is currently undergoing a transition in India. The Agricultural and Processed Food Products Export Development Authority (APEDA) forecasts that the sector will grow at a compounded annual growth rate (CAGR) of 3% between 2022 and 2030.

The need for food processing in the present world

• These include toxin removal, preservation, easing marketing and distribution tasks and increasing food consistency

• In addition, it increases yearly availability of many foods, enables transportation of delicate perishable foods across long distances and makes many kinds of foods safe to eat by de-activating spoilage and pathogenic micro-organisms

• The extremely varied modern diet is only truly possible, on a wide scale because of food processing. Transportation of more exotic foods, as well as the elimination of much hard labour gives the modern eater easy access to a wide variety of food unimaginable to their ancestors

• Mass production of food is

much cheaper overall than individual production of meals from raw ingredients

• Processed food freed people from the large amount of time involved in preparing and cooking “natural” unprocessed foods. The increase in free time allows people much more choice in lifestyle than previously allowed

The food processing Industry is significant in India, for the following reasons:

• Enhance farmer’s income by better utilisation and value addition of agricultural produce

• Minimise wastage at all stages in the food processing chain by the development of infrastructure for storage, transportation and processing of agro-food produce

• Introduce modern technology into the food processing industries from both domestic and external sources

• Encouraging R&D in food processing for product and process development and improved packaging

• Provide policy support, and support for creation of Infrastructure, capacity expansion/ Upgradation and other supportive measures form the growth of this sectors

• Promote export of processed food products

• Generate Employment: It provides direct and indirect employment opportunities, because it acts as a bridge between Agriculture and Manufacturing

• Reduce malnutrition: Processed foods when fortified with vitamins and minerals can reduce the nutritional gap in the population

• Crop-diversification: Food processing will require different types of inputs thus creating an incentive for the farmer to grow and diversify cropsn

FSSAI SPECIFIES COMPREHENSIVE GROUP STANDARD FOR MILLETS

The Food Safety and Standards Authority of India has specified a comprehensive group standard for millets vide Food Safety and Standards (Food Products Standards and Food Additives), Second Amendment Regulations, 2023 notified in the Gazette of India and the same will be enforced w.e.f September 1, 2023.

Millets are group of small-grained cereal food crops that are highly tolerant to drought and other extreme weather conditions and require low chemical inputs such as fertilisers and pesticides. Most of millet crops are native of India and they provide most of the nutrients required for normal functioning of human body. Millets are also gluten-free; low in Glycemic Index (GI); and rich in dietary fibre and micronutrients, including calcium, iron, phosphorus. Millets should ideally be an integral part of our daily diet. FSSAI guidance note (“Millets - the nutri-cereals”) provides more information about nutritional composition and benefits of consumption of Millets.

In order to create awareness and promote production & consumption of millets, in April 2018 millets were rebranded as “Nutri Cereals” and “2018” was designated as the National Year of Millets. Later, The United Nations General Assembly at its 75th session in March 2021 declared 2023 as the International Year of

Millets (IYM 2023). International Year of Millets (IYOM) – 2023 will provide an opportunity to increase global production, efficient processing and better use of crop rotation and promote millets as a major component of the food basket.

Currently, individual standards for only a few millets like Sorghum (Jowar),

Whole and decorticated Pearl Millet grain (Bajra), Finger Millet (Ragi) and Amaranth are prescribed in the Food Safety and Standards (Food Product Standards and Food Additives) Regulations, 2011.

FSSAI has now framed a comprehensive group standard for 15 types of millets

specifying 8 quality parameters i.e. maximum limits for moisture content, uric acid content, extraneous matter, other edible grains, defects, weevilled grains, and immature and shrivelled grains, so as to ensure availability of good quality (standardised) millets in domestic and global markets.n

ALTERNATIVES SEEM TO BE HEADING NORTHWARDS

(The author is principal consultant – food processing sector at Nexdigm)

Plant-based meats (i.e., products which have the properties of animal-based items but are sourced purely from plants) and plant-based dairy products (i.e., products using plant-based alternatives to derive the whole range of dairy products from milk, yogurt, cheese, paneer, and so on) have been the rage all across –particularly the Western world over the last couple of years.

India was not far behind; we, Indians, have been introduced to this category of food products by a number of startups that entered this arena. A lot of influence was added using Bollywood and cricket stars, who have taken up promoting this category to the masses. In addition, major QSR brand Dominos

introduced a plant-based option as part of their pizza range and ITC introduced an SKU or two as part of their frozen range. Albeit with little success.

Plant-based alternatives started to make deeper inroads during the pandemic when there was a concern for health, well-being and hygiene, and, moreover, a lot of consumption was limited to indoors, with out-of-home consumption severely impaired. Furthermore, the talk of how strong an environmental impact plant-based options have over real meat was an added selling point, particularly to the younger generation of consumers who are environmentally conscious to a greater degree.

This gave plant-based alternatives the necessary fillip with a lot of media bites and also became a strong conversation

piece across all forms of media.

However, the situation in more developed markets, which saw the rapid rise in the introduction, consumption, and acceptance of plant-based alternatives, seems to be flattening out over the last two quarters. For instance, Beyond Meat Inc., a Los Angeles–based producer of plant-based meat substitutes listed on NASDAQ, lost over 75% of its share value in 2022.

Particularly so with the retail-focused D2C brands in this segment. About two-thirds of the plant-based meat products are in the frozen category and the rest are in the chilled section. Additionally, apart from the largely funded startups in this space, we have also witnessed the entry of large CPG behemoths such as Unilever, Nestle, and more, who have acquired some of the challenger brands and entered this category.

Subsequently, all leading QSRs brands such as Domino’s, McDonald's, Burger King, and Starbucks have all been adding plantbased meat options to their menus. Ikea, which is amongst the top 10 food chains globally, has introduced a lot of plant-based options in its stores and is targeting a 50% switch to plant-based options over the next 3 to 5 years.

Thus, what we can infer is that the food service channel is continuing its efforts to introduce the consumer to different plant-based options, with possibly a large number of trials being initiated. Notably, any major food trend initially starts off first in the out-of-home setting and then only gravitates inwards into the house kitchen or refrigerator.

Plant-based meat is made from proteins isolated from plant sources, including soy and peas, and dairy-product alternatives are derived primarily from oats, almonds, rice, and soy. Mimicking the taste and texture of what meat products actually taste like requires a whole lot of scientific engineering, processing, the addition of taste-maskers and enhancers, a whole range of chemical additives, colour, flavour, tasteenhancers and so on.

In summary, many of these products are ultra-processed. A cursory glance at the ingredient list of one of the leading brands reveals, for instance, that a burger patty almost reads like a postgraduate’s chemistry textbook. Furthermore, currently,

pricing is also seen as an issue with plant-based alternatives, on average, priced about 2 to 5 times higher than the real ones. I believe that these are two challenges that the category also has to surmount in its journey to becoming mainstream.

However, as the struggles of plantbased meat continue, the situation with regard to plant-based dairy alternatives seems to be gaining traction across the world, including India. In US market, plant-based alternatives are already about 16% of total retail milk sales. Cheese and other plant-based products are continuing to show healthy growth and acceptance.

Even in India, we have witnessed a number of startups in the alternative dairy category offering a range of products. Unlike plant-based

meats, several plant-based milks seem to have a much cleaner label, and with consumers aware of their lactose intolerances, they seem to prefer alternatives to milk which are derived from animals.

However, the price premium issue still needs to be addressed. In fact, I have now come across an “Oatsbased fresh milk” option available in Bangalore, which is at a nominal premium to fresh organic cow milk and is a relatively clean label. This is a good start to addressing the price premium of plant-based alternatives.

The question of what is next for this industry and category arises. Being another food product with aspirations of becoming mainstream, marketers would first need to tackle the issue of price, taste, and health in equal measure. Consumers will not pay a premium for a product that delivers inferior taste or texture or nutrition

parameters unless it is ordered by the doctor.

Clearly, the quality of products in the market is getting better every day and with growing scale and advancement in technology, the price issue could potentially be addressed. Furthermore, with QSRs pricing their plant-based options on par with the real meat-based options, this would help in generating trials and building traction for the category.

Dairy alternatives, however, seem to be heading northwards and with more competitive pricing, should only see better traction. The challenge the category faces is to improve taste, keep the labels clean, and keep the pricing attractive for consumers to adopt. A tall challenge indeed, but very hopeful with extraordinary talent working on these fronts and the billions of dollars flowing into this category.n

CONFECTIONARY SECTOR IN GULF MARKET

Yasmin Basheer Ahmed & Dr PA. Raajeswari (Ahmed is lecturer, University of Hafr Al Batin, Clinical nutrition department, Saudi Arabia. Dr Raajeswari is associate professor, Avinashilingam University, Coimbatore. They can be reached at ybahmed.uhb.edu.sa)

The annual chocolate spend per person in Saudi Arabia is $41, which is substantially higher than the average outlay on the same in the Middle Eastern countries is $4. The demand and consumption of chocolate are predicted to grow at a rate of 31.5% in Saudi Arabia for the next three years. The total demand for chocolates in Saudi Arabia is estimated to be close to 1,230 tons in 2014.

Chocolate is one of the foods the consumption of which is growing rapidly across the world. As per the data published by the annual production of cocoa beans were 3,931 thousand tons against an estimated demand of 4,091 thousand tons in 2013, which is an increase of 11% from 2012.

Most of this growth is fueled by the Middle Eastern countries, such as UAE and Saudi Arabia and Southeast Asian countries, such as China and India. Currently, the chocolate market size in Saudi Arabia is estimated to be of $1.2 billion. Chocolate makes up 55%of the total confectionary market in Saudi Arabia.

The total market size was $596 million in 2011, but within last four years the market has more than doubled. Mars, an American chocolate company, holds the largest market share in Saudi Arabia. It

has 45% market share in the country. The chocolate market is predicted to grow at a rate of 43% by the end of 2016. Switzerland leads the market in terms of per capita consumption of chocolate with 12 kgs.

Even for the fifteen years back, Saudi Arabia had no big chocolate factory within the kingdom. Currently, apart from small size chocolatiers, there are about 20 medium and large size chocolate factories in Saudi Arabia. These factories produce approximately 30 tons of chocolates per year with Mars being the largest in-house producer.

Mars produces mainly Galaxy brand and imports other brands, it is planning to invest $140million in the next 3 years to build new manufacturing facilities. The total demand of chocolate in Saudi Arabia is 1,230 tons and only 30 tons of chocolates are produced within the country. Therefore, there is a huge supply and demand gap of about 1,200 tons, and this gap is fulfilled by importing chocolates. In 2013, Saudi Arabia imported 62,480 tons of sweetened cocoa, chocolate and other products made of chocolates.

Saudi Arabia is one of the largest importers of chocolate. In 2014, Saudi Arabia imported 1,167 tons of chocolate from outside the country, 250 tons of the total import was Swiss chocolates. The total value of imported chocolate is estimated to be $950 million in 2014. Saudi Arabia does not export any chocolate product to other countries as demand far exceeds supply.

Biscuit Market

Although chocolate is one of the fastdeveloping markets in Saudi Arabia, biscuit forms a market larger in size in terms of sales volume in Saudi Arabia. The overall biscuit market sales were 86.7 thousand tons in 2009.It has seen a 5.6% year on year growth, and in 2014

the overall market size has increased to 114.1 thousand tons. The overall biscuit market in terms of value has increased from $457.6 million in 2011 to $549.6 million in2014.

It is estimated that the demand of biscuit will continue to grow at a rate of 7.7% for at least next five years, by 2019, the overall market demand of biscuits will rise to 114.3 thousand tons. New varieties of biscuits such as McVities Digestive and chocolate sandwich biscuits are scaling up the demand. Additionally, a growing population of youth is also attributing to the growth of the biscuit segment. Biscuit segment is well-developed in Saudi Arabia.

The major market share in the biscuit market is enjoyed by local players, such as United Food Industries, National Biscuits and Confectioners, and Al Jazira Food Processing. International players, such as Nabisco and Danone, also have biscuit factories based in Saudi Arabia. Saudi Arabia fulfils almost 70% of its demand from local production. The current production capacity is approximately 86,000 tons with some of the manufacturers planning to swell their production capacity in the coming days.

In the biscuit industry, there is no gap between demand and supply.

We found that the main snack consumers are

school children, university students and young working adults with various income levels. Price and part size were the main elements shaping the demand for wafer products on all brands. High demand is for the low priced more filling brands like Lambada and Samba.

Main consumers are of these brands are low-income adults and university students. School children prefer sweeter tastes (Shamadan). Some vendors promote Bisco Misr wafers as suitable for diabetics. Medium to high-income consumers prefer KitKat and Loaker. Also, Metallic packaging of chocolate has been prioritised than any other packaging.

Hence, producers can give variety and changes on metallic packaging of their products. Since purchasers consider value of received chocolate in view of receiver of chocolate, producers should pay due attention to this point that the chocolate which they offer to someone should associate with its price.

IMPORTANCE OF MULTI SOURCE COOKING OILS FOR HEALTH NEEDS WOW! MOMO INTRODUCES END-TO-END

Dr Shalini Sehgal

(The author is associate professor, Department of Food Technology, Bhaskaracharya College of Applied Sciences, University of Delhi)

The dietary recommendations have focused on balancing calorie intake and decreasing fat content for decades.

But we fail to understand that fat is one of the three essential macronutrients the body needs, along with carbohydrates and proteins. The cornerstone of most dietary recommendations for lowering the cardiovascular disease (CVD), risk has been based on reducing the amount of saturated fat in the diet.

A balanced diet should include healthful monounsaturated and polyunsaturated fats which include omega-3 (alpha-linolenic) and omega-6 (linoleic) fatty acids. The inclusion of these healthful fats in one’s daily meal not only creates a sense of fullness, but slows down the digestion of carbohydrates, and adds flavour to food.

They assist in the absorption of fat-soluble vitamins, providing essential fatty acids and protection of organs. Some fatty acids also maintain blood lipid balance, better immune functions, and better brain functioning. Studies have shown that both the quantity and the quality of fat have an impact on the health of an individual. As per the ICMR-NIN report, adults having a sedentary lifestyle should consume about 25 g of visible fat, while individuals doing physical work need 30 - 40g of visible fat accounting for 15-30% of the diet.

Edible oils act as a predominant source of fats in our daily diet. In India, they are the basic ingredient

in cooking and various food formulations. The nutritive value of edible oils depends upon various factors such as the types of fatty acids present, their degree of unsaturation, and arrangement. The consumption of essential PUFAs like linoleic acid (LA) and alpha-linolenic acid (ALA), in the diet, is essential since they cannot be synthesized by the human body.

No single-seeded vegetable oil provides good functional and nutritional properties, along with appropriate oxidative stability. Therefore, they need to be modified to enhance their commercial applications with better functionality and oxidative stability along with improved nutritional quality using different methods.

One such method is the Blending of oils which is used for modifying the profile of an oil at an industrial level. The rationale for multisource cooking oil is that not all single oils offer the benefit of a complete balance of fatty acids, and oxidative stability during hightemperature processing or usage. Blending is a scientific, feasible, and economical method to enhance

the physicochemical and nutritional properties of the oil in a healthy way with multiple health benefits.

It has become a common practice in the food industry and as a result, there has been an increase in the availability of multi-source oils in the market over the last few years.

A multi-source vegetable cooking oil is a mixture of edible oils where

nutrients that provide health benefits like reducing LDL-cholesterol levels and promoting heart health. But PUFA is not very heat stable, and their degradation products may pose a risk to human health. Hence, they need to be blended with more heat-stable oils like groundnut oil and rice bran oil.

Blending allows the creation of unique blends with different nutritional and functional benefits, in addition to offering a better fatty acid profile, such as low absorption oils; oils with improved taste (groundnut oil: sesame oil); oils for better heart health (rice bran oil: sunflower oil with added oryzanol). Multi-source cooking oil is prepared by blending of high-value oils with affordable oils because of which the costs of it are reasonable and competitive.

the proportion by weight of one oil must not be less than 20 percent. A traditional oil can be blended with unconventional oils to achieve an ideal fatty acid combination. Oils which have bioactive lipids such as medium-chain triglycerides; antioxidant compounds and high oxidative stability are desirable for optimum functional and nutritive benefits. For example, blending soybean oil with other oils like rice bran oil, sesame oil, and groundnut oil provides not only omega-3 fatty acids but also important antioxidants and bioactive compounds in the resultant blend, with health benefits.

Unsaturated fatty acids which are Monounsaturated (MUFA) and Polyunsaturated (PUFA) has active

The majority of vegetable oils lack certain essential characteristics in their natural form. Hence, there is a need for healthy and stable oil in day-to-day life. A multi-source cooking oil is an economical and regulated option to provide oil with a balanced fatty acid profile, and greater stability along with increased content of antioxidants and bioactive compounds. These oils are highly beneficial in managing cardiovascular disease in the country.n

Indonesia Agriculture Equipment Market Segmentation

Indonesia Tractors Market: Tractors

Sales Volume and Revenue took a fall during 2014-2020 outlook periods at a negative CAGR of 6.8 per cent and 4.6 per cent respectively due to small landholding size, poor access to credit and financial institutions and deteriorating resource base which are collectively obstructing the growth of tractors. 4W Tractors have been segmented based on power out of which less than 40HP were the most preferred in Indonesia. On the other hand, 2W tractors have gaining traction due to a surge in the total number of farm households and agricultural cooperatives.

Indonesia Implements Market: Revenue from the implements segment increased at a CAGR of 4.7 per cent during 2014-2020. Demand for tractor implements is complimentary to the sale of 2W and 4W tractors since a majority of farmers procure implements along with tractors. Rotavator and ploughs are the most preferred and demanded tractor implement as they help in seedbed preparation and ploughing of land.

By Regional Demand (Jawa, Sulawesi, Kalimantan, Sumatra and Others): Java region dominated the tractors and rice transplanter product segment during 2020. However, the Sulawesi region took lead for combine harvesters in terms of sales volume during the year 2020.

Comparative Landscape of Indonesia Agriculture Equipment Market
