FOODANDBEVERAGE MATRIX

MONTHLY NEWSPAPER FOR F&B INDUSTRY Dear Readers; India is the second largest food producer in world but on Global Hunger Index 2014, India ranked 103rd out of the world’s 119th hungriest countries. Due to some protocols, Food businesses also destroy food with smaller shelf life. Prevention of food waste and promotion of surplus food distribution is a global concern.

To address the same, FSSAI steered a second round of meeting with 20 Surplus Food Distribution Agencies from various parts of the country to discuss the steps taken by government to ensure safe distribution of surplus food. The first meeting of a similar kind was organized on 30th July which was attended by 13 Surplus Food Distribution Agencies. Food Safety and Standards Authority

September 2019 | Food And Beverage Matrix of India had Gazette notified Food Safety and Standards (Recovery of Surplus Food) Regulations, 2018 on 4th August 2019 to establish a uniform national regulation to protect organizations and individuals when they donate food in good faith. This will further encourage big food businesses to come forward and donate food to these Surplus Food Distribution Agencies. These regulations will be enforced with effect from 1st July 2020. FSSAI has also started an initiative called ‘Save Food Share Food Share Joy’ to create a food recovery ecosystem. This initiative aims to bridge the gap between food companies, surplus

MOFPI DENIES BEING INCLINED TO TAKE OVER APEDA FROM COMMERCE MINISTRY

T

he Ministry of Food Processing Industries (MoFPI) has denied having any inclination to takeover the Agriculture and Processed Food Export Development Authority (APEDA), which comes under the Ministry of Commerce presently.

Rameshwar Teli, minister of state for food processing industries, said MoFPI had no plans in this regard. Speaking to FnBnews on the sidelines of a function in Mumbai, he added, “There are no plans as yet.” However, sources stated that the ministry was indeed inclined on taking control of not just APEDA, but also the Marine Products Export Development Authority (MPEDA). It is learnt that the commerce ministry is planning to make a separate body for promotion of the processed food export, while the ministry of agriculture is also vying for taking control of APEDA. An official with the agri ministry stated that bringing APEDA under its fold would enable the ministry in its goal of achieving doubling the farm income by aligning farm to market through a well-organised supply chain. Also, with the control, the ministry could thereafter bring agricultural best practices and standards required specifically for the purpose of exports. Teli, meanwhile, said that soon a Mega Park would be announced in Siliguri, West Bengal. “Preparations are on and soon a Mega Food Park shall be launched in Siliguri, as we are focussing on bringing the North-Eastern Region on board with the overall development plan for the country. This would be a step towards completion of the 42 Mega Parks envisaged by the MoFPI,” he added. Teli stated that the Cabinet has told MoFPI to also focus on Jammu and Kashmir. The ministry also plans to hold a road show in the northern state to sensitise the people about the opportunities in food processing. n

NESTLÉ REFORMULATES ITS PLANT-BASED AWESOME BURGER AFTER ITS LAUNCH SIX MONTHS AGO

S

already makes lentil, chickpea and quinoa kale burgers. It has introduced vegetarian schnitzel, sausage and faux chicken nuggets, among other meatless products.

wiss food giant Nestle is reformulating its recipe of plant based burger to be juicer and have more grilled beef flavor before launching. Six months ago, Nestlé has released its Garden Gourmet Incredible Burger in Europe and now plans to launch the product in the U.S., where will be called the Awesome Burger. Other plant-based products in the line include a ground beef alternative called Garden Gourmet Incredible Mince that will be released next month in Europe. According to Nielsen’s data, the plantbased meat market is expanding at an impressive clip. Sales climbed 42% between March 2016 and March 2019 to $888 million, and Euromonitor predicts the market for plant-based meat substitutes will reach $2.5 billion by 2023. Although Beyond Meat and Impossible Burger burst into the space several years ago and were catapulted to stardom by insatiable consumer demand, both companies combined are unable to satisfy the demand.

With so much market potential for companies to capture, companies like Unilever, Tesco, Nestlé, Marks & Spencer and Conagra are looking to take a bite. Nestlé was identified as one of the most proactive companies preparing for the rapid expansion of the $19.5 billion alternative protein market. To directly take on the success of Beyond Meat and Impossible Burger, Nestlé is working diligently to perfect the formulation of its Awesome Burger.

The problem with so much potential comes a lot of competition, and the multitude of options has made consumers discerning. Nestlé’s plant-based burger, which has both wheat and soy protein, has been in the European market since April. Plant-based items make up about half of the company’s protein sources now, including in pet food. Its Garden Gourmet brand — under which the Awesome Burger will be released —

Nestlé isn’t the only one feeling the pressure to get plant-based burgers out there. Impossible Burger has until now only been available at restaurants. Much like Nestlé, though, the company plans for its namesake product to enter U.S. grocery stores this year, which could potentially complicate the choice for consumers. At the same time, two big competitors entering the plant-based burger space at the same time could do wonders for marketing. The companies have the potential to ignite a social media tasteoff war that could bring attention to both brands. That attention, regardless of its source, will be beneficial. With a seemingly insatiable market for plantbased burgers, there is enough room for everyone — at least for a whilen

DAIRY STARTER CULTURE MKT TO SURPASS $1,670.2 MN BY 2027, FINDS STUDY

T

he global dairy starter culture market accounted to $1,124.3 million in 2018, and is expected to grow at a CAGR (compound annual growth rate) of 4.5 per cent during the forecast period 2019-2027, to account to $1,670.2 million by 2027. These were the findings of a Market Study report, titled Dairy Starter Culture Market. It provides a comprehensive analysis of the dairy starter culture market segments, including their dynamics, size, growth, competitive landscape, and emerging opportunities of global industry. It also provided the market landscape and market share information in the dairy starter culture market. Dairy starter cultures are microorganisms that are deliberately added to milk to initiate and carry out desired fermentation under controlled conditions. It is used in the production of fermented milk products such as cheese, kefir, and yoghurt. The rapid growth in the dairy processing industry coupled with upsurge demand for fermented dairy beverages are the key factors boosting the growth of dairy starter culture market globally. However, stringent government regulations in North America and Europe are projected to hamper the dairy starter culture market growth over the forecast period. Moreover, increasing production and consumption of dairy products in the Asia Pacific region is expected to deliver substantial growth opportunities to the dairy starter culture market players in the coming future. The growth of the dairy industry is driving the growth of the dairy starter culture market. As the dairy industry has become an important part worldwide, and thus, the demand for starter culture is growing at a faster pace over the past few years. The dairy industry is flourishing in the developed and developing countries such as the UK, Turkey, New Zealand, France, Russia, Germany, Brazil, China, India, and the United States. The overall growth in the production of dairy products and growing demand for dairy-based products is anticipated to boost the demand for the dairy starter culture globally. For instance, India is among the largest producer of dairy and dairy products globally. The dairy industry in India has made remarkable

progress in terms of utilising the available technologies. The global dairy starter culture market is bifurcated on the basis of product type into buttermilk, cheese, ripened butter, sour cream, yoghurt, and others products. The cheese segment accounted for the largest share in the global dairy starter culture market. Dairy starter culture play a very important role in the cheese production process. High production and consumption of cheese in developed and developing regions, such as North America, Europe, and the Asia Pacific, is projected to propel the growth of the dairy starter culture market. The metabolism of the dairy starter culture reduces the pH value and contributes to the desired flavor of the cheese, and it also prevents the growth of spoilage organisms and pathogens. These factors are anticipated to boost the growth of the dairy starter culture market. Some of the players present in global dairy starter culture market are BDF Natural Ingredients S.L., Biolacter, Inc, Chr. Hansen Holding A/S, CSK food enrichment B.V., Dalton Biotecnologie S.R.L., Dohler Group, The Dow Chemical Company, Lallemand Inc., LB Bulgaricum, and Sacco System, among others. The dairy starter culture is used on a large scale in the manufacturing process of kefir, yoghurt, sour cream, butter cheese, and other fermented milk products. The starter is added to the milk products during the manufacturing process and is allowed to grow there under controlled conditions. The primary function of the starter culture is the conversion of lactose

DIP IN DEMAND IN FOOD PROCESSING SECTOR; CRISIS COULD DEEPEN FOR MSMES

T

he murmurs of a slowdown in the Indian economy are getting serious, as one of the largest employers, the food processing sector, has also started experiencing a dip in demand. According to industry insiders, the matter can be more serious for the MSME (micro-, small and medium enterprises) sector, wherein even a smaller dip can lead to huge crisis.

purchasing power, which has taken a beating in recent time. Ram Kutwal of Kutwal Foods said, “There is a slowdown in the food industry, and it has just started. As you must be aware, the automobile industry is going through its worst phase, that has started showing its effect on other industries.” “Food industry, it is generally believed, is recession-proof. But it is not completely true,

as everything does not come under essential commodities. For example, milk is essential but ice cream is not,” he added, saying, “However, food industries and in that dairy are the last to get affected in a slowdown.” Kurade stated that to overcome the slowdown, the government need to increase spending, liquidity and prioritise the MSME sector lending, besides rationalisation of taxes.n

Parle, which is one of the largest biscuit manufacturers of the country is expecting a layoff of close to 10,000 jobs on account of an imminent slowdown in the demands. “Though it is claimed that Parle is expecting lay-off of close to 10,000 jobs, it may lay off between 1,000 and 4,000 employees, as the company, which has nine plants, is already into contract manufacturing for a few years,” according to a source close to Parle. Sagar Kurade, former president, All India Food Processors Association (AIFPA), and managing director, Suman Projects Pvt Ltd, said, “There are two categories of products experiencing dip in demand. One is low-margin products, which are experiencing a dip in demand between 5-7 per cent as compared to the first quarter of the last fiscal, and the other one is premium products, which are experiencing a dip between 8-10 per cent.” “There are some internal factors and global trade consequences,” he said. “The internal factors include liquidity problem. The RBI has decreased the repo rates, but the reduction has not percolated down. The banks are focussing more on the MNCs, and the MSME sector is sidelined. And the consumers have started prioritising their spending,” he said. Arpita Mukherjee, professor, Indian Council for Research on International Economic Relations (ICRIER), added that overall economy is facing a slowdown and dip in demand. One of the major factor for this was individual
