Sept. 13 Wilderness photo safari Tamarac Wildlife Refuge hosts a wilderness photo safari from 2 to 5:30 p.m. Experience autumn on the refuge through the lens of a camera. Travel by car caravan to the edge of the northern wilderness area, then take a short hike to capture images of this very interesting and diverse habitat. Celebrating 50 wild years of the wilderness

A

s summer quietly slips away, autumn starts its slow but steady progression. Eventually deciduous trees show their brilliant hues of red, yellow and orange including the Tamarack, which will be illuminated in golden needles throughout the refuge. The skies come alive with swans, geese and migratory birds starting their journey south. Sanctuary now open After a busy summer of waterfowl and other wildlife raising their young, the sanctuary area is now open for visitors use. Venture onto the many trails of Tamarac to experience pure Minnesota wilderness. Beginning Sept. 1, and continuing through

February, the northern half of the refuge will be open for hiking and foraging for wild edibles. During the fall, the refuge permits hunting for small game, waterfowl and white-tailed deer. However, there are still a few areas closed. Be sure to pick up a brochure at the information kiosks located at the entrances of the refuge. marshes and meadows. If you feel inclined to exercise, hike the twomile long Old Indian Hiking Trail and experience the beauty of the maple basswood forest. Another option is to venture out on the new North Country Trail, which traverses 14 miles through the southern half of the refuge.

The visitor center is located 9 miles north of Hwy 34. Visitor center hours are Monday-Friday, 8 a.m.-4 p.m. and weekends 10 a.m.-5 p.m. through Oct. 19.

Designated wilderness allows for the highest form of land protection meaning no roads, vehicles or permanent structures are allowed. It also means no logging or mining is allowed. The benefits of this land conservation are profound: • Provide habitat for wildlife and havens for threatened species • Filter and clean the air we breathe • Protect watershed and provide clean drinking water to communities • Boost nearby economies with tourism and recreation dollars • Provide outstanding places to recreate and to escape the bustle of the modern world. The National Wildlife Refuge system is one of four federal agencies with stewardship of designated wilderness. One-fifth of all wilderness areas in the nation, approximately 20 million acres, are managed by the US Fish and Wildlife Service. About 90 percent of refuge system wilderness is in Alaska.

In 1976, the U.S Congress designated the Tamarac Wilderness Area. It consists of 2,180 acres lying mostly in the northwest corner of the refuge. Also included are the three islands of Tamarac Lake. Access to the wilderness in the northern part of the refuge is by foot only. This section of wilderness is part of the sanctuary area and is open September-February. Here you will find stands of mature white pines, a favorite nesting tree of bald eagles. Serene ponds created by beavers provide homes for trumpeter swans and loons. Perhaps the most iconic symbol of wilderness, the wolf, also calls this area home. The islands of Tamarac Lake are accessible year round by boat, canoe or kayak. The wilderness does not have established hiking trails and overnight camping is prohibited. With the brilliant fall colors of aspen, maple, birch and tamarack interspersed with evergreens, autumn truly is a beautiful time to experience the wilderness of Tamarac.

Celebrating 50 years of wilderness There is a special feeling of wildness about this place, Tamarac, best expressed by the eerie howl of a wolf, mournful wail of a loon, or the drumming of a ruffed grouse from deep within the forest. 2014 marks the 50th anniversary of the 1964 Wilderness Act, the landmark conservation bill that created a way for Americans to protect their most pristine wildlands for future generations. The Wilderness Act created the National Wilderness Preservation System, which protects nearly 110 million acres of wilderness areas from coast to coast. The definition of wilderness is recognized as an area where “the earth and its community of life are untrammeled by man, where man himself is a visitor who does not remain.” DETROIT LAKES NEWSPAPERS

Spirit of the Wilderness By Nancy Moulden, refuge volunteer Have you been feeling cranky and stressed lately? Are you feeling frustrated in the battle with technology that is supposed to simplify your life? Have you been having trouble concentrating on your daily tasks? If you answered yes to any of these questions it sounds like you need to take a break and get away to the wilderness. No, it doesn’t have to be a faraway wilderness, but you will have to leave your electronics behind. Just find somewhere away from human habitation, maybe the shady woods, a sunny meadow or beside 18 | FALL SCENE | SEPTEMBER 2014

a still lake. Sit quietly until you notice the many sounds of your secluded spot that you wouldn’t ordinarily hear. Soon you will also begin to see the many signs of life that you wouldn’t ordinarily notice. When you concentrate on these things you will feel a peaceful lightness that clears your mind and makes you smile. You may be surprised at how much time has passed and how your thoughts may have solved a problem you’ve been wrestling with for awhile. You probably will be reluctant to leave your special spot and join the rest of the world again but you can keep that spirit of the wilderness inside you. Then you can immerse yourself in that feeling, remembering it to help you through darker times. When the opportunity arises you can visit that spot again to take a break, as well as notice how it changes at different times of the year. Sometimes you may want to bring a companion and share the wonders of nature that you have been observing. Teaching children to appreciate the beauty around them or convers-

ing quietly with a friend will increase your pleasure while being in your special spot. So, don’t wait! Plan to discover the spirit of the wilderness as soon as you can and then share it with others! There are many wonderful places in Tamarac National Wildlife Refuge to explore and enjoy. On Oct. 4, please join us to celebrate the Fall Open House. There will be tours, activities, shopping, a silent auction and delicious food to enjoy.

Bring your camera, a snack, water, good walking shoes and creativity! • Sunday, Sept. 14, 2 p.m. Movie: “Green Fire; Aldo Leopold and a Land Ethic for Our Time” This Emmy Award winning film explores the life and legacy of famed conservationist Aldo Leopold and the many ways his land ethic philosophy lives on in the work of people and organizations all over the country today. 73 min. AUTUMN SLOW COOKER CHICKEN TACO SOUP

WARM APPLE CINNAMON COBBLER Serves: 6 Prep time: 20 minutes Cook Time: 30 hours

Ingredients 4 apples - peeled, cored and sliced 1 cup water 2 teaspoons ground cinnamon 2 tablespoons cornstarch 1/4 cup fructose (fruit sugar) 1 cup whole wheat pastry flour 1 teaspoon baking powder 1/4 cup canola oil 1 tablespoon honey 1/2 cup lowfat buttermilk

Serves: 8 Prep time: 15 minutes Cook Time: 7 hours Ingredients 1 onion, chopped 1 (16 ounce) can chili beans 1 (15 ounce) can black beans 1 (15 ounce) can whole kernel corn, drained 1 (8 ounce) can tomato sauce 1 (12 fluid ounce) can or bottle beer 2 (10 ounce) cans diced tomatoes with green chilies, undrained 1 (1.25 ounce) package taco seasoning 3 whole skinless, boneless chicken breasts shredded Cheddar cheese (optional) sour cream (optional) crushed tortilla chips (optional) Directions 1. Place the onion, chili beans, black

beans, corn, tomato sauce, beer, and diced tomatoes in a slow cooker. Add taco seasoning, and stir to blend. Lay chicken breasts on top of the mixture, pressing down slightly until just covered by the other ingredients. Set slow cooker for low heat, cover, and cook for 5 hours. 2. Remove chicken breasts from the soup, and allow to cool long enough to be handled. Stir the shredded chicken back into the soup, and continue cooking for 2 hours. Serve topped with shredded Cheddar cheese, a dollop of sour cream, and crushed tortilla chips, if desired.

Directions

1. Preheat oven to 375 degrees F ( 190 degrees C). 2. In a large saucepan over medium heat, combine the apples, water, cinnamon, cornstarch and fructose. Cook until apples are soft and mixture is thickened, about 10 minutes. 3. Pour the apple mixture into a casserole dish. 4. Prepare biscuit dough by combining the whole-wheat pastry flour and baking powder. Add the oil and stir until well mixed. Add the honey and buttermilk; stir with a fork until flour mixture is moist. Add additional milk if necessary. 5. Drop biscuit dough by tablespoons on top of apples. Bake for 20 minutes or until biscuits are golden brown. Serve warm.

SLOW COOKER CHICKEN STROGANOFF Serves: 4 Prep time: 10 minutes Cook Time: 5 hours Ingredients 4 skinless, boneless chicken breast halves cubed 1/8 cup margarine 1 (.7 ounce) package dry Italian-style salad dressing mix 1 (8 ounce) package cream cheese 1 (10.75 ounce) can condensed cream of chicken soup

Directions 1. Put chicken, margarine and dressing mix in slow cooker; mix together and cook on low for 5 to 6 hours. 2. Add cream cheese and soup, mix together and cook on high for another 1/2 hour or until heated through and warm.

Serves: 4 Prep time: 10 minutes Cook Time: 2 hours, 15 minutes Ingredients 2-1/2 cups rotini pasta 1 (12 fluid ounce) can evaporated milk 8 ounces American cheese, cut into cubes 4 ounces shredded sharp Cheddar cheese 1 (4 ounce) can diced green chile peppers, drained 2 teaspoons chili powder 2 tomatoes, seeded and chopped 5 green onions, sliced Directions 1. Bring a large pot of lightly salted water to a boil. Cook the rotini at a boil until tender yet firm to the bite, about 8 minutes; drain.

2. Combine the rotini pasta, evaporated milk, American cheese, Cheddar cheese, canned green chiles, and chili powder in a slow cooker. 3. Cook on High, stirring twice, for 2 hours. 4. Stir tomatoes and green onions through the pasta mixture. 5. Continue cooking until the tomatoes are hot, 5 to 10 minutes.

DREAMY NIGHTTIME DRINK Serves: 1 cup Cook Time: 5 minutes

Ingredients 1 cup milk 1 teaspoon honey 2 drops vanilla extract 1 pinch ground cinnamon

Directions

1. Pour milk into a microwave safe mug and place into microwave. Cook on High until the milk is very hot and begins to foam, about 3 minutes. Stir in honey and vanilla, then sprinkle with cinnamon before serving.

DESSERT NACHOS Serves: 4 Prep time: 5 minutes Cook Time: 5 minutes Ingredients 1/3 cup peanut butter 2 tablespoons confectioners’ sugar 1/2 cup chocolate chips 2 1/2 cups mini round corn tortilla chips 1/4 cup miniature marshmallows 1/4 cup sweetened flaked coconut Directions 1. Preheat your oven’s broiler. 2. Combine the peanut butter and confectioners’ sugar in a microwave-safe bowl. Heat the mixture until the peanut butter melts, about 1 minute. Place the chocolate chips in a separate microwave-safe bowl; melt the chips in the microwave, about 1 minute.

3. Arrange the tortilla chips into an even layer on a baking sheet. Drizzle the peanut butter mixture and the melted chocolate over the chips. Scatter the marshmallows and coconut over the chips. 4. Place under preheated broiler until the marshmallows begin to brown, 2 to 3 minutes. Serve hot.
