Welcome to another digital issue! With spring just around the corner I’m looking forward to everything this wedding season has in store. Not least our first wedding at The Boatshed! It seems like summer 2021 is going to be busy so I think I’d better enjoy my freedom this summer while I still can… I’m looking forward to pottering in the garden, taking my son to Camp Bestival and doing plenty of sea swims. I made it to Most Curious in London this year. It was such a fantastic day full of inspiration. The Truman Brewery was bursting at the seams with wedding industry trend-setters! I met Tim Dunk at the show, we’ve featured his business Draw My Wedding on pages 6 and 7. I’m a big fan of his work. It’s unique, bespoke, edgy and arty. Right up my street.

I also met Luna & Sol at Most Curious (featured on pages 32 and 33.) I loved their organic seeded invitations. How cool that your friends and family can grow your wedding invitation into a plant?! Our featured caterer in this issue is Grate Catering and Events. Norm and Iris are based locally to me and they’re super passionate about cooking high welfare meat over their fire pit. They joined us at The Boat Shed recently and their food was sublime. Our real wedding on pages 14-17 is a simple back garden affair with an EPIC car (in Margot’s Wedding brand colour!)

Finally, I loved catching up with Carole who is taking over the reins at Duncton Mill. She’s been based on-site with her catering company The Naked Food Company for years so when the opportunity arose, she jumped at the chance. She’s got big plans, read all about them on pages 24-25.

Margot’s Wedding are running the show when it comes to weddings in The Boat Shed (located on Wicor Marine in Portchester, Hampshire). It was such a lovely opportunity to invite folk down for a glass of fizz to celebrate the opening of the unique industrial space.

Entertainment was provided by Amy Baker who wowed visitors with her warm, jazzy vocals, and Mister Kanish whose upbeat sound and look worked perfectly in the space.

9 Outside we had Grate Catering and Events (our featured caterer, see pages 20-21) serving up tasty samples, the fire pit being their unique showpiece. Catch A Fire Pizza was there doing what they do best. Pizza! Cooked in their wood-fired oven.

Megan Metcalf even travelled from Margate for the occasion. Her business is House of Love Illustration, she captured aspects of the event via live drawings.

Wedding planner and stylist Sally Gallis previously worked in theatre. She’s been a drama teacher, director, producer and set designer. We caught up with her to find out how she’s transferred her experience to the marvellous world of weddings.

Sally Gallis is a self-confessed creative magpie, so after planning her own wedding, and a friend’s, she decided to change career. She launched Events by Design just two years ago. “People ask whether the job is massively different” says Sally, “and honestly, I don’t think it is. I still get to lark about with pretty things and make people happy”. Sally finds inspiration via interior design, art and fashion, and she adores shapes and textures. She drools over flowers, loves contemporary theatre design and is constantly inspired by those she works with. She observes trends in the wedding industry and finds ways to use them in her own unique way. Sally is a styled shoot QUEEN. “I love everything about them!” she says, “watching a concept come to life, seeing what talented suppliers bring to the table, and then the thrill of seeing it published”. She’s found them to be a brilliant way to build her portfolio, try new ideas and connect with fellow suppliers. Sally’s clients are contemporary, non-traditional, open-minded and fun. Initially she likes to have a face-to-face meeting to find out how they met, their likes/dislikes and, importantly what they want and equally DON’T want at their wedding. She then creates a concept using words and pictures which allows clients to start to visualise their wedding and get excited. When Sally’s not working (or running after teenagers) you can find her weight training, walking her dogs, supping on cocktails or eating chocolate whilst enjoying a good box set. Her home is a mix of old and new; modern and quirky paired with mid-century. She loves pops of colour and is a sucker for a fun, kitsch ornament. New for 2020: Events by Design Worthing showroom.

HI NORM! WE LOVE GRATE CATERING & EVENTS AND EVERYTHING YOU STAND FOR. PLEASE TELL THE READERS WHAT YOU’RE ALL ABOUT… We’re a fire pit catering company where the produce is the focus of everything we do. Our high welfare meat is always sourced from the South Downs or The New Forest. Our vegetables are seasonal and sourced from as close to home as possible. We also run a monthly supper club served at our kitchen table in Southsea. This is where we get to cook some amazing local produce and try new ingredients and dishes. HOW DID YOU GET INTO THE CATERING INDUSTRY? WHAT’S YOUR BACKGROUND? While at school I did work experience in the kitchens at the NEC in Birmingham. I fell in love with it… so much so I worked for free through the holidays! My efforts paid off, I was offered a job and started work when I was 15. And I’ve never looked back. After this I was fortunate enough to work for the likes of

Raymond Blanc (twice) and more recently, Hugh Fearnley-Whittingstall from River Cottage. WHAT WOULD BE YOUR FAVOURITE MENU TO PROVIDE FOR A WEDDING? After working in restaurants with rosettes and Michelin stars, my style of cooking (and eating!) has now become more relaxed. I prefer to focus on fantastic produce cooked well and served simply, thus allowing the produce to speak for itself. So, a festival-style wedding with beef flank tacos to start, followed by a whole lamb cooked over the fire, served with amazing seasonal salads and sides. To finish, a fire-roasted fruit Eaton mess. WHAT CHEFS/RESTAURANTS DO YOU LOVE? As I mentioned before, Raymond Blanc and Hugh have been a huge inspiration to me. But for eating out, Temper in Soho. You can sit kitchen-side watching meat cook slowly over the open coals enjoying small plates while having a chat about food with the chefs.

WHAT CAN YOU TELL US ABOUT THE PRODUCE YOU USE? We love the suppliers we work with. Our meat comes from a butcher with a small supply chain, so farm to abattoir, butcher to us. We can trace our meat back to the point that I even know the farmer’s name. To me that is a very special thing, when people’s connection to food is so removed. Our charcoal comes from a managed woodland in Waterlooville which in turn helps to keep that woodland going. YOU’RE A RECOMMENDED SUPPLIER AT THE BOAT SHED, WHAT MENUS/IDEAS DO YOU THINK WOULD WORK PARTICULARLY WELL THERE? The great thing about The Boat Shed is that it’s a blank canvas and can be whatever you want it to be. The great thing about fire pit cookery is that it’s so diverse. If you want a festival-style wedding where your guests come and get food when they want it, we can do it. But if you want a sit down three-course meal, we can do it. Personally, I would always go for the chilled-out festival menu. WHAT FUTURE PLANS HAVE YOU GOT? Eventually, we want to buy a small holding. We want to grow our own produce, raise our own livestock. Hold fire pit feasting evenings serving up the produce we grew and reared with our own hands.

Duncton Mill near Petworth in West Sussex is a fishery and beautiful lakeside marquee venue. Caroline and Martin have been running the venue for years but as they’re due to retire, Carole from The Naked Food Company is taking over… and she’s got BIG plans. Carole’s catering business has been based on the estate at Duncton Mill for years. The awardwinning company creates bespoke menus to suit a variety of tastes, styles and budgets. Choose The Naked Food Company to cater for your lakeside wedding (think grazing tables under the trees and desserts on the jetty) or bring in a caterer of your choice. The beauty of the venue is you’re not tied to any suppliers, you have complete freedom and Carole and her team are on hand for advice and contacts. (Pssst - you can even bring your own booze!) Whether you have a traditional pole marquee or a tipi, you’ll enjoy stunning wildlife and beautiful sunsets. The traditional rowing boat on the tranquil lake makes for picture perfect photos. New for 2020 – Barlavington Barn The 150-year-old onsite barn is being lovingly restored in time for the summer season. As the barn is listed, all the original materials have been removed, strengthened, treated and put back. Once complete, the eco barn will store heat in summer to use in winter. It will be licenced for ceremonies and will also be home to Carole’s cookery school and pop-up foodie events.

FADING GRANDEUR This shoot took place at The Queens Hotel in Southsea, a magnificent Edwardian hotel overlooking the Solent. The hotel boasts ornate stone-carved balconies and neoclassical decoration. The styling team took over the disused top apartments, as the hotel carried out a complete renovation. “I was looking for a venue that had decaying walls, a feeling of abandonment… like the house of Miss Havisham in Great Expectations.”
