““I am Brett Diprose ” … and I design sports stadiums I decided I was going to be an architect in grade
7. I’m not exactly sure how it happened, but I woke up one morning and definitively knew it was what I wanted to do with my life. My uncle was an architect in Western Australia. The second thing was that my father, a pastor, went to the Solomon Islands to rebuild some of the buildings that had been destroyed after a cyclone. I remember being devastated that I couldn’t go and contribute. It’s one of those professions where it’s a blend of art and science. As I got older my fascination with detail and putting things together or dismantling things kept growing. As a student of architecture, I was fortunate enough to work on the second stadium of Melbourne Park (formerly known as Vodafone Arena, then Hisense Arena, and now Melbourne Arena). It was a seriously complex project. The stadium was going to do a number of different things. First and foremost, it was the second venue for the Australian Open. The second was as a velodrome, and then as a basketball stadium for the NBL. Equally, it was a concert venue. I worked on it for 18 months, part of a team of up to 10 architects. Most Melburnians probably don’t even remember when it didn’t exist. There are not too many projects you can work on as an architect that have such a big impact. Years later I went to an NBL game there and sat there with my son who wasn’t even born when I worked on it. I also worked on the Melbourne Sports and Aquatic Centre stage two development for the Commonwealth Games in 2006, which stretched and exposed me to so many experiences. I also spent four years on the redevelopment of Whitten Oval. I think my favourite project was working on the Metro Sports Facility (a large aquatic and leisure centre still being built) in Christchurch. It’s far and away the best team environment I’ve worked in. It began as a master plan that really started to address what Christchurch as a community needed as part of the recovery after the earthquake. Then there was the human aspect of knowing people had been through a pretty traumatic experience. ● ● warrenandmahoney.com

uyers in Melbourne’s most luxurious development to date, The Muse, could feel themselves pulled in two directions: from every window, the very best of Melbourne will entice residents out to play, while inside, a combination of space, grandeur, comfort and a level of craftsmanship rarely seen will encourage them to stay put. Residents of the 14-level, 42-residence development on the corner of St Kilda and Toorak roads will pay between $3.2 million and $45 million for an apartment here – some of the homes come with their own pools. Knight Frank’s head of project marketing Michael Robinson says most buyers are trading out of $20 million (or more) properties in Toorak or South Yarra and are seeking a high level of service and care as well as the “next level” in luxurious interiors. Up in the double storey display suite, Melbourne’s charms are on show through the windows. There’s Toorak Road to the east, with Fawkner Park running alongside it. The Shrine of Remembrance sits enigmatically to the north, surrounded by space and greenery. Beyond the Shrine are the city’s skyscrapers, the distinctive flagpole and tower of Government House and the lights of the MCG. Robinson says most buyers already know and love the area. “They like the proximity to transport, the city, parks and the arts,” he says. Much is within walking distance. The charming Bistro Gitan is metres away, the Tan or Fawkner Park are ideal for a morning stroll, and the Palace Como is the local boutique cinema. Robinson says many retirees or empty nesters dislike leaving their “patch”, so moving only one or two kilometres is appealing. For many of the wealthy purchasers, the level of luxury and care on offer are significant drawcards: a concierge to bring up the shopping or the dry cleaning, high-tech touches such as number-plate recognition to open the gates to the car park, voice control to switch on the TV and the lights or call the lift, all the way up to facial recognition and fingerprint scanning if they choose.

Inside the apartments, the emphasis is on the highest-quality natural materials crafted to an exquisite finish. From the ocean deep to dinner plate
I
spent a couple of weeks in Greece recently, and one thing I noticed was how the Greeks prepared seafood so simply. It is straight from ocean to plate, making it so fresh and tasty. All over Greece you will find old men tenderising octopuses by hitting them against rocks. We don’t do this in Australia, but I believe some restaurants and houses have dedicated washing machines to tumble octopus and tenderise them. Another way is to massage the tentacles for 30-40 minutes. This recipe uses a tenderised tentacle, which can be bought from your fishmonger. I get mine from my dear friend Angelo, of Aptus Seafood, at South Melbourne Market. It saves the hassle of cleaning up and having sore hands. I try to make it there once a week to get my seafood, and curb my oyster cravings. There are also many ways to prepare the tentacle – slice it into thicker pieces or serve it whole with a side of greens. Do not overcook the octopus, because it will be rubbery if you do. Octopus carpaccio Ingredients (serves 4) Good olive oil 1 tenderised octopus tentacle A few sprigs of thyme Salt to taste For garnish/dressing 6 radishes, thinly sliced to 1mm A few sprigs of fennel fronds Juice of 1 lemon

Method ■ Put a griddle on high heat. Alternatively, you may use a barbecue, if you have one. Add olive oil, and, when the griddle is hot, put in the octopus. Drizzle with more olive oil. ■ ■
Add in the thyme. Cook the tentacle for approximately 10 minutes on high heat, turning around every 30 seconds. You want to get a nice char on the suction cups. Season liberally with salt.
Once cooked through, remove the tentacle and let it cool. Once cool, using a sharp knife, slice vertically down the middle into discs about 2mm thick. Put the discs on baking paper, creating a grid of four by five or however many you like. You may want to do multiple plates. Put another piece of baking paper over the top of the sliced octopus and place something heavy on top to compress it. Leave overnight in the fridge. This part is optional. You can serve immediately, but leaving it overnight allows it to dry out a little and form a better shape. When ready to serve, remove the weight and baking paper. Transfer the octopus onto a serving plate. Drizzle on some olive oil and add some radishes on top and around the carpaccio. Garnish with fennel fronds and a squeeze of lemon juice. Season with salt. ●

elbourne roasteries such as Proud Mary are helping coffee lovers take their knowledge to the next level, without expensive or lengthy training courses. The group’s coffee bar, Aunty Peg’s, draws inspiration from the traditional cellar door of wineries and is designed to help bridge the gap between consumers and farmers. Visitors can watch the roastery in action, sample coffee straight from the producer and learn a little more about the origins of their caffeine kick. While most roasters and baristas would be quick to assert that it’s not quite as simple as reading a bean’s origin and roast style to predict its flavour profile, there are a few handy phrases the casual drinker can throw into a conversation to sound a little more knowledgeable and to know what to expect in their cup. According to Jo Watson of the Bureaux Collective (a co-working roasting space in Melbourne), espresso coffee is roasted darker and richer, so that it can cut through milk. “Your lattes, cappuccinos and flat whites will all be made on an espresso machine,” Watson says. “With espresso, the aim is to create a full body flavour, so the coffee is roasted for longer.” On the other hand, filter roasts tend to be lighter in style. “It’s a more tea-like beverage,” she explains. “The coffee is roasted less, which means that the flavour is more delicate than espresso.”

Join the bean scene SINGLE ORIGIN OR BLEND?

For espresso, baristas will commonly use a blend of two or more coffees from different locations. Spaces such as the Bureaux Collective are allowing even the smallest of cafes to create their own coffee blends. By leasing roastery space, cafes have more control in creating blends that allow each component to reach its potential. “A good blend will often have fudgy, caramel and chocolate flavours that go nicely with sweet milk,” Proud Mary’s Lisa Feeley says. Single origin coffees naturally are sourced from one location. “The motivation of the specialty coffee movement is to work directly with the farmer,” Feeley says, noting that all of Proud Mary’s products come from individual farmers, served to highlight the fresh flavours that can be found in that particular coffee. Feeley explains that, like wine, coffee has beautiful, soft flavour profiles, and the best way to taste these individual flavours is to enjoy a single origin coffee through a filter method.
While the taste of a coffee is never solely determined by its place of origin, certain flavours can be expected from beans from that general area. For example, because of its phosphorous volcanic soil, a coffee from Kenya will often feature dark, fruity aromas. “Kenyan coffees are known for their blackcurrant flavour,” Feeley says. “It is like drinking Ribena or cola.” Other common profiles to be alert to include floral Ethiopian coffees – which will often taste of berries and other sweet fruits – and citrus flavours in a Colombian bean. Feeley says those who are new to disseminating the specialties should try Colombian-style coffees, which are generally more accessible, with less intense fruit flavours. Based on what is in season, Feeley expects to see a fair bit of Colombian, Ethiopian, Kenyan and Brazilian coffees making their way into Australian roasteries and cafes in the coming months. ●

ow do you design a showstopper pavilion that only lasts for a week? Japanese luxury car manufacturer Lexus has pulled out all the stops at the spring racing carnival this year, with an edgy, moody three-storey structure that is given the kiss of life by standout works from some of Australia’s most intriguing artisans. The Lexus Design Pavilion, in Flemington’s Birdcage for Melbourne Cup week, is black and minimalist on the outside, but is a sensory feast to match the top cuisine that will be served on the inside. In recent years, sustainability has become a central issue, and companies are moving away from erecting wasteful structures made of poor materials, industrial designer Henry Wilson says. Spurred on by the collaboration with environmental champion Joost Bakker in the past, Lexus will ensure the structure is packed away and re-used for future events. Wilson says this pavilion was inspired by the Japanese idea of takumi (artisan) craftsmanship. “It’s a constant balance to make something both industrial but also have a handmade approach, and when you achieve that harmony objects really sing,” he says. Influenced by the idea of utopia or paradise, The Big Group worked with top artists to create a perfectly designed interior space. The first level of the pavilion is a gallery offering a sneak preview of the new Lexus LF-1, though all eyes will turn to the striking 2.5-by-2.5-metre horse sculpture by Anna-Wili Highfield, an artist known for her animal portraits.
“My work investigates a shared consciousness with animal life, but also an execution of an elemental spirit,” she says. A large staircase leads to level two, where bifold doors open to an expansive balcony softened by greenery. Landscape architect Jack Merlo has introduced lines of Japanese natives – a great backdrop to the uninterrupted view of the track. The main attraction on the top dining level is the monumental coloured dining tables crafted by Studio Twocan. Sculptor Maddie Sharrock, of Studio Twocan, has moulded two coloured concrete tables for up to 76 people, one of the largest seated dining spaces created in the Birdcage. Sharrock was trying to emulate natural patterns of the Pilbara, where she is now working. “People will be literally eating off a work of art,” she says. “Knowing that someone will be sitting down in front of my work for a long time, I wanted to make sure they had something interesting to look at and visual cues to lead the eye all over the table.” Making the slabs was tricky because the tabletops would normally weigh a tonne, but by using special methods the hollow tops are under 100kg. Cutting-edge lighting installations by Volker Haug Studio and bespoke furniture curated by Grazia & Co add to the rich textured atmosphere. Large-magnification glass pieces hanging from the ceiling will highlight the floral details of Cecilia Fox’s flower arrangements. Wilson says this year’s line-up of collaborators is strong and the concept is ambitious. “It’s the small details that make this an elevated experience.” ●

t’s high time we reimagined the quarter-acre block, says architect and Grand Designs host Peter Maddison. The traditional front or back yard is often large enough to contain a compact dwelling. As part of the tiny house movement, Maddison recently worked with the RACV to design an energy efficient, pint-sized home. This prototype could be a solution for an older couple, who could move into the house at the back while the original home is sold to a young family. New building methods such as flat-pack modular housing and transportable homes make the construction process much quicker.

almost three decades and Grand Designs Australia is now entering its eighth season. The straight-talking expert is always happy to share his knowledge. “I’ve spent eight years travelling to all points of this country,” he says. “I’m aboard a lot of journeys watching what’s going on, so I’m in a fantastic position to see and experience what’s happening.” During a World of Style master class with Porter Davis, Maddison recently shared examples of good architecture – from Maddison Architects and Grand Designs Australia – in different locations. Homes are much more experimental in fringe
areas because people aren’t as conservative as those in suburban areas, he says. Before you build or renovate, seek the advice of someone who has design experience – architect, designer or artisan, Maddison advises. “Sustainable design is now something people understand.” It’s not just about getting a six-star rating on a house – it’s more about how we operate and live on a daily basis, Maddison says. We need to recalibrate our homes and our lifestyles, he adds. “We’ve had it too good for too long.” ● ● worldofstyle.com

Maddison is passionate about what makes good building design and what’s appropriate in a city, suburban or city fringe location. Australian houses are among the largest in the world. The average Australian house is about 267 square metres compared with the average 67-square-metre British house, he says. However, Maddison believes change is coming as our house sizes are beginning to get smaller. Maddison wants to encourage people to build smaller, more sustainable houses that are suited their locations. “Design should respond to your personality and respond to the opportunities of the site,” he says. Design does not have to be exclusive and expensive. It’s about sea breezes, orientation and letting the sun in, which all improve wellbeing, he says. “Good design has a huge part to play in creating quality environments for people.” There’s no denying Maddison has learnt a thing or two about architecture over the years. He has been running Maddison Architects for

hen Angela Bishop was 11, she knew she wanted to be a journalist. Bishop, now 51, grew up in a household where news was never far from the dinner table. Her father, Alan, was prominent in the Sydney law community and a member of the City of Sydney Council. Her mother, Bronwyn, was kicking goals back then in the Liberal Party. “The news of the day is what we talked about at the dinner table,” Bishop says. “I remember thinking at 11, that is what I wanted to do. “I wanted to be a journalist, and I also knew I wanted it to be on radio and television, because I loved the live aspect.” All these years later, Bishop is not only Australia’s best-known entertainment and arts television journalist, but is also now an accomplished presenter, signing on full time as co-host of Network Ten’s Studio 10 this year. She started in Ten’s Sydney newsroom in 1992, just days after she was involved in a serious car

How did she deal with her mother, who was in the news headlines for more than three decades, while she was in the newsroom? “She went into parliament in 1987 when I was at university, so I don’t know anything else,” Bishop says. “It’s really weird, I don’t know what it’s like to be a journalist whose mother is not in the news from time to time.” Her mother, 75, is her biggest supporter, and she has been there every step of the way the past year, which has been tough for Bishop after her husband, Peter Baikie, 54, died of cancer. “She is really proud of me, and has been the biggest supporter of my sister and I,” Bishop says. “Certainly over the past few months, I could not
have done it without her. She has been absolutely incredible the past few years.” Bishop is as proud of her mother as she is of her. Bronwyn Bishop was a trailblazer for women in parliament, particularly in the Liberal Party, although debate about female representation in Canberra continues to rage. “She was the first woman to be elected to the Senate in NSW, the first woman in cabinet from NSW,” Bishop says. “She broke down so many barriers. I thought it was really interesting, on her last day in parliament, the number of women from all sides of politics who came up to her and said thanks, because she showed them that woman could do it. “I thought that was really special, and that meant a lot to me.” With a degree in political science from the University of Sydney, Bishop is relishing the
opportunity on Studio 10 to cover topics other than entertainment. She has a shrewd news brain and has the support of the show’s panel. It shouldn’t come as a surprise that two old bosses and mentors were Derryn Hinch and Alan Jones. She worked on both of their shows as an investigative reporter in the early to mid-1990s. “Derryn was a great boss,” she says. “If you stuffed up, you were hauled over the coals, but if you did well, he wrote you a little handwritten note. To me that was such a great thing,” she says. “As for Alan, I think he is such an incredible communicator. You don’t have to always agree with him, but he will argue his point like no one else. “Also, when he turns his hand to helping someone who is down and out, they will be fine. “His charity work is without par, most of it very unknown.” ●

ou don’t need a gym to smash a great workout. Whether you’re strapped for time, taking a break from your current routine or travelling, here are four great workouts that you can do anywhere – no equipment required.
FARTLEK RUNNING \ One of my favourite types of training when I’m travelling or don’t have access to a gym is called fartlek training. Fartlek means “speed play” in Swedish, and involves randomly mixing up the intensity during your runs to ensure you get out of your comfort zone. There are several apps that will do the hard work for you by creating random work and rest periods, so all you have to do is get up and run. STAIRS \ Stairs are all you need to get a complete
cardio workout that gets your heart pumping and
engages several leg muscles at the same time. Mix it up by taking the stairs one step at a time, then two steps at a time and perhaps even three (step height and safety permitting). I like to warm up with a slow jog and stretch for a couple of minutes before sprinting up quickly. Jog or walk down for recovery before going again. My go-to steps are at Sandy Point in Sandringham. BODY WEIGHT WORKOUT \ Some of the best fatburning functional exercises can be done using your own body weight. Burpees, squat jumps, push-ups, lunges – the list goes on. Movements that use multiple large-muscle groups are the most effective, and keeping the rest between sets to a minimum ensures you continuously spike your heart rate for a maximum calorie burn.
