Australian singer Conrad Sewell's new album Life – his long-awaited first – is highly confessional. It is fitting then that he was photographed for our magazine at The Espy in St Kilda – a shrine to live music at its stripped-back, visceral best. ““I am Anne Myers ” … and I’m a palliative care nurse I worked at St Vincent’s for about 10 years in their intensive care unit (ICU) and then for about one year at Caritas Christi, which is St Vincent’s hospice, before coming to work as a community palliative care nurse at Melbourne City Mission. I’ve been there ever since. I was working in ICU when my mum died. I was in my mid-30s at the time and it had a huge impact. I had a lot of questions I wanted answered about death and dying. She died in hospital and no one ever sat us down and had a chat about her dying. So I think, since then, it became a quest to make sure other people have good deaths. With palliative care we’re looking after someone with a life-limiting illness and taking a holistic
approach, going from a symptom-management point of view through to an emotional and spiritual point of view. And that’s not just for the client, it’s for the carers as well. We’ve got about 200 clients at any one time and we probably average four to five visits a day, for all different sorts of reasons. Our goal is to keep people at home and manage their symptoms, although there’s no right or wrong way to do this. I don’t work full-time. Most of us work four days or less just because of burnout. This job’s all about giving all the time. We support each other though and the Mission’s an amazing employer. I think palliative care is incredible. It keeps you grounded and in contact with your own humanity.

A
RIA award-winning singer/songwriter Conrad Sewell has spent the past four years writing his debut album Life, struggling to find his voice among record company executives who all thought they knew better. Now, the 31-year-old is ready to share his story, the inspiration behind hit singles, such as Healing Hands, and studio trial and errors which provoked his new awakening. “It took me so long to get this album together, working with many producers and writers [and] being pulled in so many directions,” says Sewell, who grew up in Brisbane and now lives in LA. “The result is a really honest body of work; there’s no bells and whistles, nothing sonically lifechanging in its sound, but it’s what felt most authentic to me – to write something timeless and classic.” Sewell says the long and arduous process to make Life taught him some valuable lessons. “At one point I had Timbaland producing the record and it sounded just like Justin Timberlake. It was like we were trying to recreate Justin and I pulled away from that and started again,” he says. “It’s scary to stand up for yourself and speak up, but you have to do what makes you happy.” The new album is full of Sewell’s personal highs, lows, moments of hope and despair. There are piano ballads to tug the heartstrings, falsettos and high-pitched harmonies that would make Freddie Mercury take a peek from the heavens above and plenty of husked grit reminiscent of Joe Cocker himself. Sewell grew up listening to Michael Jackson, Prince and Queen – he was always interested in the classics – and even cited the Bee Gees as part of his formative soundtrack, thanks to his grandparents who toured with the band in their heyday. Long before launching a solo career, Sewell tried his luck with a rock band The Frets, later changing their name to Sons of Midnight. He left Australia for Europe straight after high school, signed to Universal and dreamed of becoming the next Kings of Leon. “I took out a credit card out to fund the band’s demo,” he says. “My guitarist [Matthew Copley] and I went to Sweden to write pop songs and signed to Universal, but it was a constant battle. We had some success but it wasn’t quite up there. “Then around five years ago I wrote Start Again, my first big single. Kylie Minogue even wanted to cut it. I was finally seeing a shift but it was a constant roller coaster.

“I was in LA trying to write, had no money and wondered what the hell was I actually doing. You have to have a certain amount of confidence in your ability and I was losing that feeling. “It was hard staying mentally above water,” he adds, even after co-writing the single Taste the Feeling with the late Avicii in 2016. But every time Sewell thought the doors were closing, another would open. When Jay Brown and Jay Z, founders of Roc Nation (responsible for signing Kanye West), told Sewell they had never heard a voice like his, he felt destined to sing. “It’s just what I needed to hear,” Sewell says. “That’s when I thought I am doing what I should be doing, but seriously moments before that I was ready to get on a plane and go back home.” Sewell signed to Sony Music Australia last year and the rest is ballad history in the making.
Melbourne’s home of music, The Esplanade in St Kilda, he’s on a whirlwind trip back home. Sewell says he is happy to spend time by the sea and practise meditation. “As I get older I am trying to live in the moment and take time to look outwards. I spent so much of my life searching for something and constantly not thinking about anything but my career,” he says. “I feel guilty if I go home to the beach, but it’s crazy to think like that. I knew singers like Avicii who got worked into the ground. You see in the documentary about him, how much an artist needs that space to live a normal life as much as the next person because it can get the better of you. “I don’t want to get to that point. It’s sad because it’s a fine line.” Sewell returned from a meditation retreat in San Francisco a few months ago and is willing to find

Songs such as Healing Hands reference the impact of human compassion and his own battles with drugs and alcohol. “The message behind that song is people change, but if you stick by them it can make them stronger. There’s a positive message even in the darkness I was going through,” he says. Then there’s the title track – in its Joe Cocker throttle – which is about not over-thinking it. He thanks his supportive parents for encouraging him to pursue his dream and a younger sister Grace (who will head on tour with him) for standing by him in times of need. When he takes the call for this interview, after a Domain Review shoot at
new ways to disconnect from his workaholic ways. “I am the kind of person who knocks down my successes, which is why I push myself so hard,” he says. “I hate that about myself and wish I didn’t do it, but that’s what keeps me wanting more. “It’s what makes an artist work even harder and life is about all those trials and tribulations, and what makes me human.” ● CONRAD SEWELL \ Tickets on sale for his all-ages show at the Forum Melbourne on June 7. The pitter-patter of tiny feats Collect a magnifying glass at check-in to these Melbourne hotels, where micro art invokes guests’ wonder.
W
ould you call it art? Adelaide-based artist Joshua Smith has created a blue mailbox for an exhibition that is running in all five of Melbourne’s Art Series hotels. You might not think that a USPS mailbox is a masterpiece: it’s covered in graffiti and stickers, surrounded by spray paint cans. But when you realise that the mailbox measures roughly the size of Smith’s thumb, and that the equally scaled-down spray cans are so detailed that they even rattle when shaken, thanks to a teeny ball bearing, you might discover an appreciation for the world of micro art. The powers that be at the Art Series Hotels have done just that, showing more than 40 minuscule pieces in their exhibition, Art in Micro, which runs in different permutations across their eight Australian hotels. Ryan Tuckerman, marketing director for Art Series, says the hotel group became interested in these miniature works when they were looking to create an art-inspired experience that would be different to other offerings. “We wanted to make sure it’s not just about putting art on the walls, but making art more accessible to travellers,” he says.

Upon check-in (until July 31), guests are given a magnifying glass so that they can properly inspect the micro art; there’s also the opportunity to win a trip for two to Le Louvre in Paris. The exhibitions also include pieces from Russian sculptor Salavat Fidai, who carves itsy-bitsy sculptures out of lead pencil tips. On social media, he’s up there with the world’s most famous artists, boasting 765,000 followers. One of his pieces for Art in Micro is a man playing a piano, carved out of a lead pencil tip; at 2mm high, it’s a fraction of a matchstick head. Micro art doesn’t come cheaply; Smith’s works of large buildings cost as much as $17,000. But this is no easy pay day, given that a single miniature might take Smith anywhere from a week to a couple of months to complete. Then there’s the danger. “Once I built a fire escape stairwell and constructed it from 300 individually cut cardboard pieces. It took about 12 hours,” Smith says. “I just finished assembling it, and put it down on the ground. Thirty seconds later, I had stepped on it and pretty much destroyed it.” Packing and sending to overseas buyers can also lead to nasty surprises if couriers aren’t careful enough. But Smith says it’s worth it when you consider the joy that micro art brings to audiences of all ages. “It takes people back to when they were kids. But it also changes people’s perception of what constitutes beauty and art … in my work, I might [create] a run-down or abandoned building or dumpster, which are covered in grime,” Smith says. “If you put a person in front of that building or dumpster, they would think, ‘Why am I looking at this?’ But when you shrink it down to miniature, there’s this fascination and wonder. It makes everyday mundane things fascinating.” ●

ast year, Nick Offerman and his wife, actress/musician Megan Mullally (best known as Karen in Will & Grace Grace), wrote a New York Times best-selling novel The Greatest Love Story Ever Told. It humorously plotted the story of how they met in 2000, why age difference doesn’t matter [she’s 11 years older] and how their 16-year marriage is still going strong. Now, the couple returns to Australia to perform their own shows – Offerman on stage with a political show All Rise and Mullally touring with her band Nancy & Beth. The super-busy couple refuses to stay apart for more than a few weeks. Recognised for his role as Ron Swanson on NBC’s sitcom Parks and Recreation and 2014 TV series Fargo, Offerman gets political and talks about how humanity got it wrong [and right] while poking fun at the US government along the way. “In a nutshell, All Rise is a way to step back from the divisive rancour that is ruling the English-speaking part of the world,” offers Offerman, who has authored three woodworking books – his most recent Good Clean Fun. “Everybody is so angry about politics these days and there is so much fist-shaking going on that I thought I would give the audience a chance for us to make fun of ourselves all together,” he says. “Through our sheep-like adherence to capitalism and consumerism we got ourselves in this mess together; the purpose of All Rise is to discern a way to be better than we have been.” Offerman got his start in theatre in Chicago and still lives for the stage. “Nothing beats the medicine of a live audience, communicating to you that you have succeeded in making

But his new career move as a humorist caught him by surprise. “I never expected to perform as myself in this form of humorist iteration, but now that it is upon me, I am crazy about it. It’s addictive. To make an audience roar with laughter is one of the most gratifying feelings I have had outside of the bedroom,” he smiles. “In my mid-30s I was working steadily as an actor, was Mr Megan Mullally – a wonderful gig I still hold – and had my wood shop in LA. I was happy and content.

I have gotten wonderful and varied acting jobs because people knew me from other things but it put me in a new spotlight. “Nowadays, I try to organically follow what is the next good writing – be it in theatre, TV or film and taking myself on the road. ow in its 11th season, MasterChef Australia has proven a fruitful formula for contestants who want to become much more than TV stars who slice, dice and smile for the cameras. Khanh Ong, who finished third in last year’s MasterChef on Network 10, is proof that you don’t need to win the series to be successful. In less than a year since leaving the show, the Melbourne-based chef has scored a spot on a new TV cooking show, signed a book deal and is now a business partner at The George on Collins, an established business housed within the iconic Collins Street building. It’s certainly not a bad effort for a 25-year-old former DJ who also dabbled in work as a fashion stylist and spun vinyl at VIP parties attended by celebrities such as Miley Cyrus and Justin Bieber. “MasterChef was great for me, I would not have “MasterChef had the chance to do what I am without it,” says Ong, who was born in an Indonesian refugee camp to Vietnamese parents and grew up in the southeastern suburbs of Melbourne. “I would have stuck with my vlogging and writing a food blog and hoped it would lead me somewhere, but MasterChef opened doors a lot quicker and if you’re a determined contestant you can get things happening much faster.” The Asian-inspired menu at The George on Collins captures the flavours of his Vietnamese upbringing and reinterprets some dishes he ate as a child. He worked alongside head chef Quim Hernandez to curate the menu. “The flavours in all the dishes are very Vietnamese; with some modern takes on classic recipes,” Ong says. “Some are peasant home dishes that you wouldn’t necessarily find in any restaurant.” Ong says a popular dish, and one that has many diners curious, is the caramel rockling with crispy
Formula Ong pork belly. “People don’t necessarily see the connection between the rockling and pork, but I grew up eating it and it’s delicious,” he says. “Combining a river fish with pork in a sauce that is peppery and sweet is a definite highlight. I was accustomed to the flavours growing up and now I get to show others.” Ong, who also auditioned for Channel Nine’s The Block, was keen to shift gears from DJ work to a

role where he could channel his passion for food. “I never thought I would start a restaurant this early in my career but when Greg Kahan [owner of the original venue The Long Room] approached me to join forces I couldn’t resist,” he says. In another career coup, Ong will also co-host Network 10’s afternoon cooking show My Market Kitchen, alongside 2016 MasterChef Australia winner Elena Duggan. “I am doing exactly what I want to be doing,” he says. “Who knows what the future holds. s I am up and close and personal to clients when doing their makeup, some will ask me about botox and fillers. Dr Vilma Di Maria from Dr Face is the expert in this area – a former GP and teacher at the Royal Australian College of General Practice, training registrars and overseas doctors for their Australian exams, she is intrigued by facial anatomy. Dr Di Maria also instructs other doctors how to inject botox and fillers. I have relayed to her all the common questions I get asked by my clients. What should we look for when choosing a professional for botox and fillers? If you have a friend or family member who is having work done and you really like the way he or she looks, then word of mouth is one of the best ways. Look at the website to find their qualifications – doctors are able to prescribe injectables, so the
doctor can inject. Registered nurses under the supervision of a doctor are also able to inject. This means the nurse can inject but you need to see a doctor first. Seek out reviews and before-andafter photos. Is the industry here in Australia regulated? The industry is regulated but we do have people abusing the system. The worst possible complications from fillers is blindness, so they need to be taken seriously, and not with the attitude that anyone can inject. A cosmetic consultation should still be considered as medical. This is evident when a complication arises that needs to be managed. What is the difference between botox and filler? We assess a patient and decide on what is going to be treated. We determine the cause of what they

For example, if a frown is the issue then the lines are due to muscle contraction. This means you use an anti-wrinkle injection to temporarily stop the muscle movement and soften the lines. If the goal is to help the patient look less tired, then the cause of this is usually loss of fat in the mid-face (cheek area), so we use a dermal filler to restore some of the volume loss. The results should always be age-appropriate and normal looking.

How does this differ to the past 20 years? In the past we were limited in what we could treat with dermal fillers. This is the area of growth. t’s 7am. The sun is rising over the Bukit Peninsula and the whirring of our coffee machine breaks the silence. I wander out to our private pool garden where I can see the sea shimmering below. It’s another magical day on this serene and spectacular part of Bali’s southern coastline, and my new Happy Place. And it’s hungry work sitting here by the pool with a macchiato. So the only option is to buzz for a buggy (yes, it’s the way you get around here) and head to one of the hotel’s restaurants – Cira, a casual menu ideal for sharing, or Warung, which offers superb Indonesian food – which bookend the resort. At sunset the buggy takes us on a winding journey down to Warung where we find a front-row table looking out over a pavilion on the edge of the cliff overlooking the ocean. dinner icy Bintang and an impressive mocktail, we order a tantalizing array of food, from a yellow chicken curry, chicken satays, and a Mi Goreng, accompanied by a board of spices and sambal, serious condiments with some serious heat
to apply sparingly to the dish that needs it. We vote this the best dinner of our trip. The next night we tried Cira. Overlooking the infinity pool on the edge of the cliff, Cira also is a deeply relaxing place for dinner or lunch. We ordered capsicum chilli dip with amazing just-made warm bread, a grilled and smoked watermelon salad followed by the seafood platter – an array of octopus, barramundi, calamari and prawns. We finished with a lemon tart and a dark chocolate fondant. We did not hold back. The buggy seemed to be straining a little on the way home. The Alila Villas Uluwatu is a long way from the craziness of Seminyak, so this suits if you want to get away from all “urban” action. There’s no nightclubs or loud bars, just serenity and amazing views.
But you’re not remote here. If you can tear yourself away from the resort, nearby there are some amazing places to see. One of the world’s most famous surfing spots Uluwatu - is a short car trip away.
It is an absolute must-see while you’re here. An excellent day trip is a morning watching the surfers tackle the various peaks from one of the cafes, and then an afternoon on the beach, just a few minutes drive away. A similar distance away is Jimbaran Bay where the celebrated fish restaurants are great fun. Do I recommend it? Absolutely. I liked that it was luxurious but still had a low-key style about it. There’s wonderful eating, the Alila’s spa will put you in the deep relax zone, and you can chat to others by the communal infinity pool, or just hang out in your villa. A healthy knock at the door
I
love cooking, but I’m not going to lie – since my little daughter, Willow, was born nearly two years ago, Uber Eats and Deliveroo have become our friends. According to the following stats, we’re not alone. A recent study by finder.com.au found that there are 68 million online food orders each year and more than 7000 orders placed every hour. That works out to be about $2.6 billion each year that Australians are spending on meal delivery. With this in mind, I thought it might be good to give some tips on the good, the bad and the unhealthy of at-home food delivery. BURGERS \ Sam approved: Grass-fed beef or
organic meat patties/veggie patties, salad and healthy fillings. Skip it: Greasy bacon, brioche buns, heavy sauces/aiolis, too many chips and soft drink. To really step it up health-wise, opt for a lettuce
bun, mushroom bun or bun-free. If that’s not for you, try to get burgers with a traditional bun. Go easy on the sauce and limit the chips. PIZZA \ Sam approved: Wood-fired pizza. Skip
it: Processed bases, toppings with the lot, excessive amounts of processed meats, cheese-heavy sauces and garlic bread. Most of us don’t need a family-sized pizza to ourselves. Have a few slices with a side salad. THAI \ Sam approved: Veggie-packed dishes with great flavour such as a lemongrass chicken and vegetables stir-fry. Skip it: Deep-fried delicacies such as spring rolls or money bags, and excessive amounts of rice or noodles. Go for veggie-packed dishes that are flavoured with herbs and spices like chilli, and stir-fried

SUSHI \ Sam approved: Sashimi and brown-rice hand rolls. Skip it: Tempura or other fried fillings (crispy chicken), mayo-packed rolls and sushi rice. Go for brown rice over white rice and sashimi in favour of hand rolls where you can. I love raw tuna hand rolls with brown rice when sashimi just won’t do the trick. MEXICAN \ Sam approved: Grilled fajitas, softcorn tortillas, salsa, salads and corn. Skip it: Enchiladas, sour cream, bulk cheese and too many corn chips. Mexican salads are delicious as they often use salsas, beans, guacamole and other flavoursome additions. It can be easy to fill up on corn chips when you’re hungry but give these a miss and have grilled corn instead, or just wait until your main meal. Fajitas are a better option than burritos as they come with grilled meat and vegetable and a fresh corn tortilla. Yum.
CHINESE \ Sam approved: Steamed dumplings and vegetables, with a small amount of rice. Skip it: Fried rice, spring rolls, sweet and sour sauces. Always go for the steamed options, load up on veggies, have a broth-based soup and practise portion control. Have no more than a fistful of rice. FISH AND CHIPS \ Sam approved: Grilled seafood
with healthy salads. Skip it: Battered fish, large quantities of chips, dim sims and potato cakes. Almost everything on the menu at traditional fish and chip shops seems to be fried. Try grilled fish instead – lots of fish and chip places serve these with a side of brown rice and a salad. INDIAN \ Sam approved: Tandoori meats, spinach or tomato based sauces, with a little bit of plain naan. Skip it: Butter chicken and deep-fried snacks. ome mornings when Kathryn Williams walks through the gates of Shelford Girls’ Grammar, she can quite easily imagine she has taken a step back in time. Now a year 5 teacher, Williams’ relationship with the leading independent girls’ school goes back much further. She first joined Shelford as a year 11 student and says much of the school remains the same – the values of respect, integrity, passion and creativity, the warm and inclusive atmosphere, and the smaller school population. Shelford has around 620 students – the youngest girls begin at the Early Learning Centre and progress through to year 12. “Joining a new school in year 11 could have been tricky but the girls who were so welcoming at the start are still my best friends today,” says Williams. “I had such exceptional experiences when I was a student at Shelford and I always felt valued and cared for. Teachers always had plenty of time for each student because we were a smaller community. “My history teacher, Mrs Sinclair, led me to travel the world after I finished school. We studied European history and, through that, I knew I had to go and experience the world.” During her time at Shelford, Williams decided she wanted to become a teacher herself. “I realized how a great teacher can positively influence your life and I thought if I can be that positive influence on young students, that would be a great career. I remember the great teachers I had and if I can be remembered in that way years down the track, how wonderful that would be.” After studying at Deakin University, a stint working in London and then at a Melbourne primary school, Williams joined the teaching staff at her old secondary school in 2015. “I loved the idea of teaching all girls because, by themselves, girls are willing to take more risks and not as self-conscious as when they are with boys,” she says. “And I particularly wanted to teach primary school because girls of that age are so receptive to learning. You can foster a lifelong love of things that you’re passionate about. For example, every day when we sit and have lunch, my class and I read a novel together because I want them to love books.

“I want my students to appreciate what they are doing and to realise why they are being taught something and how it impacts themselves and other people. I want them to be passionate about what they learn.” Williams’ positive experiences at Shelford both as a student and teacher made choosing a school for her own daughter, Georgie, a little easier last year. “During [Georgie’s] later primary school years she thought she’d be more comfortable at a girls’ school.
I did look at other schools, but a number of points always drew me back to Shelford,” says Williams. “I knew, like me, she would make some beautiful friendship groups and I knew she would appreciate the school’s smaller size. The range of subjects offered was also important. In year 12, we offer more than 30 different subjects, so whether Georgie goes down the arts pathway or is more mathematically or scientifically-minded, she will find something to suit her.” ● SARAH MARINOS
