DEFINING MOMENTS An appreciation by KARL FENDER

01 Artist impression of Pacific House Private Residences in Saint Moritz. Curvaceously designed to celebrate the theatre of sunlight as it transforms from morning to afternoon to evening light. 02 Nicky Drobis and Karl Fender of Fender Katsalidis.

YOUR MEMORY OF GROWING UP IN ANY PLACE REVOLVES AROUND CERTAIN INSTANCES AND SPECIFIC EVENTS, AND ST MORITZ WAS ONE OF THOSE FOR ME.

I love that St Kilda continually evolves through time— people go there to enjoy special moments. One of my earliest memories was actually skating at St Moritz. It was a revelation to me. It gave St Kilda character by its presence, and we still talk about it! St Kilda has all those wonderful beachside landmarks that we love. Beyond the beach, St Kilda is equally an eclectic tapestry of Victorian mansions, Art Deco apartments, and 60s and 70s architecture—a living, breathing timeline of Melbourne’s rich history.

It really is a diverse neighbourhood and our involvement in GURNER™’s Saint Moritz project represents an all-new design epoch still faithfully true to the St Kilda scene. It promises to be an irreplaceable piece of contemporary architecture that will never age. Over the last decade or so we’ve seen tremendous change in Melbourne and a great sophistication has evolved in the residential market. However, until now, I don’t think Melbourne had really begun to explore its relationship with the waterfront the way other global beachfront cities have. There’s something that marks this entire suburb through time, which is quite incredible—not many suburbs have that—and to be a part of the journey is very special.

Melbourne’s own Chris Pang, rising movie star, is in illustrious company, and not just for the actors he shines alongside. He’s a member of that surprising group of Hollywood elite who started their working life as a salesperson. Fun fact: George Clooney flogged insurance, Jeff Goldblum hit the phones to push stationery and for Chris Pratt, it was coupons he had to hawk to make a living. Pang, who studied at Monash University, was a door-to-door phone salesman. From those humble beginnings, Pang has Hollywood at his feet, and is our cover feature interview this week. ●

Actor Chris Pang’s career sounds like a Hollywood plot, but this is the true tale.

E

ver since Australian actor Chris Pang played Colin Khoo in the Hollywood blockbuster Crazy Rich Asians, his acting career has hit the proverbial big time. Just how this Melbourne-born and former mobile phone door-to-door salesman quit his casual job to move to Los Angeles in 2013 is the stuff Hollywood dreams are made of, but Pang says there’s more to his success than meets the eye. At 34, Pang is at the top of his game and knows it. These days he can knock back scripts that don’t appeal and meet with Hollywood directors before castings are even announced; a good position to be in as a rising star. When he takes this call, he’s running a little behind schedule due to a photo shoot for his first suit campaign (he won’t say which brand) at the Joshua Tree National Park in southern California. He’s also the face of Sheridan, and appears in the brand’s Tonight Makes Tomorrow campaign. “When the opportunity came up to represent a true Australian brand like Sheridan, I couldn’t say no,” he says.

Crazy success “My mum was the first in the family to get excited about it. She told me their luxurious sheets are the highest quality and was gifted a set for their wedding present.” On fine bed linen, Pang says when he first moved to LA he knew nothing of the kind – couch surfing his way around Sunset with other Aussie wannabe actors.

have a movie like this to call their own.” It was his award-winning part in the Australian film Tomorrow, When The War Began (based on the popular novel by John Marsden) in 2010 that catapulted him to the top of the local film industry. “I quickly got to know everybody in the industry after that film, and it pushed me to head to the States and look for more opportunities,” Pang says.

“You have to have a love for the art of filmmaking. You can’t just turn up in LA and hope to be famous.” “Since filming Crazy Rich Asians my career has gone up a whole new level from where I was once standing,” he says. “People started messaging me congratulations via social media for my part in the movie, for helping break down barriers for other Asian-Australians. “It had an inter-generational appeal factor, with many parents telling me they are glad their children

“You land in LA wide-eyed and full of hope and you’re just like every other actor looking for work. “The biggest win for me after Crazy Rich Asians is I have options and don’t have to sacrifice my integrity to get in the front door. “I’m that slightly bit higher up and it’s a nice feeling.” Pang was raised by his martial art instructor

parents Barry and Anne Pang, who run a kung fu school, and spent most of his childhood in Kew. He went on to study multimedia at Monash University before deciding he didn’t want to work in design. “I always had an interest in art and drawing and produced my first comic in year 12,” he recalls proudly. “But, after studying at Monash University, I found the industry very limiting. “As a freelance designer you work for someone else, and all you end up doing is working within their brief and not being as creative as you’d like to be. You’re hired as a designer but everyone has an opinion.” It was while selling phones to raise money to buy a car that the epiphany occurred. “I found myself door-knocking at a casting agency and they actually got me onto their books instead,” he says of his career break. Pang, who has now just finished working on directing his first film – it’s in post-production – says he is grateful he followed his gut instinct to LA.

Above: From Kew to LA, Pang (far left) with the cast of Crazy Rich Asians. Opposite: Chris Pang kicks back in the Sheridan ‘Reilly’ sheet set in carbon.

“I think, at the end of the day, you have to have a love for the art of filmmaking,” he says. “You can’t just turn up in LA and hope to be famous. “My passion for film along with a strong support system is what got me to where I am today.” Pang doesn’t plan on remaining in LA forever,

and hints Melbourne is where he wants to return sooner rather than later. “When I get to a position where I can continue to work in LA but be based in Melbourne would be my absolute ideal,” he says. Pang is proud he hasn’t lost his accent while in the US. “I have had to neutralise my accent though, just so people can understand me,” he jokes. Pang will also star in the new Charlie’s Angels reboot, due for a November cinema release, although his character is still under wraps. “The first Charlie’s Angels really resonated with me as a kid,” he says. “I remember the three women as total badasses and loved that one was Asian actress Lucy Liu. “That made it all the more relatable to me. “What we do with the 2019 version is a modern take on that – it’s all female empowerment. “I get to do everything from action to comedy, and with such talented people from Kirsten Stewart to Naomi Scott and director Elizabeth Banks. It was so much fun.” ●

ustralian actress Rachael Beck was just 16 when she moved from her family home in Sydney to Melbourne to star in Cats the Musical. Now, at 47, and as a mother of two young daughters, she reflects on her parents’ trust in letting her go. “When I joined Cats, I was at least 10 years younger than other cast members. I mean, anything could have happened, but nothing

did,” says Beck, who stars in the new season of Barnum The Circus Musical with Todd McKenney. “It’s only as a parent looking back that I realised my parents must have felt hugely confident in their own parenting to let me go,” she reflects. “I moved in with a family of a costar – even though she was staying somewhere else – and then a family relative, but it was still a lonely time for a teenager.”

I sometimes freak out and I take myself away when I feel like it’s not working out. I go to the Blue Mountains to think about the breadth of life and the time we have here. Life is too short. I also see a psychologist. I am not afraid to ask for help when I am in those down places – I get resources from whatever feels right at the time.” Beck, who split from Stenlake six years ago, says she’s in a great place and is focusing on raising children Talulah, 13, and Roxie, 10. “I try to get my kids to do meditation,” she says. “It’s a great thing I have carried through my life thanks to my dad John, who taught me as a child.” ●

From a four-year role playing Samantha Kelly in TV sitcom Hey Dad! in the late ’80s, to starring in the stage show Me and My Girl in the mid-’90s, Beck has continually worked hard to fulfil her dream as an actress. She’s considered a veteran in the biz, and thanks her parents for encouraging her to follow her dream. Beck has performed alongside some of the best – Hugh Jackman in Beauty and the Beast, David Hobson in Chitty Chitty Bang Bang and her former husband Ian Stenlake in You and II. However, she doesn’t take her place in the industry for granted, and says it’s still tough work securing roles no matter what has come before. “Working as an actor can be very challenging,” Beck says. “Sometimes I cry, I turn to meditation and read a lot of books when things don’t work out. I also like to chat with my girlfriends and male friends who understand the nature of the business and what we’re

ith Easter just around the corner, I thought about creating something different from traditional hot cross buns. These treats bring back a lot of childhood memories. Traditionally eaten over Easter and on Good Friday, the bun represents the end of Lent or fasting period, and the crosses represent the crucifixion of Christ. Whatever your beliefs, it’s safe to say that hot cross buns are now eaten by people of many religions and races, and are a crowd favourite. The smell of freshly baked hot cross buns is very nostalgic, and they are best eaten straight out of the oven. The only downside about hot cross buns are that they are sold only over the Easter period, so for those of you who love hot cross buns as much as I do, you can now make them just as easily at home with this recipe –no matter the time of year.

700g high protein or bread flour 21g dried yeast 2 teaspoons salt 500ml warm whole milk 50g aged cheddar, grated 50g manchego cheese, grated 50g Monterey jack cheese, grated 5 tbsp grated parmesan

Mix the flour, yeast and salt in a large mixing bowl. Make a well in the centre and pour in the milk. Mix with a wooden spoon, then using your hands, to form a soft dough. Knead for 10 mins, then put into a clean bowl. Lightly cover with oiled cling film and leave somewhere warm until doubled in size. This should take approximately 30 mins. Tip the dough onto a lightly floured surface and knead in the cheeses. Dust a large, flat baking sheet with flour. Shape the dough into 12 round buns and arrange on the sheet with a 2-3 cm gap between each. Cover with another sheet of lightly oiled cling film and leave to prove until nearly doubled in size. Heat oven to 180C fan. In a mixing bowl, add in the 6 tbsp flour, 6 tbsp water and the 5g of parmesan cheese to make the crosses. Pour mixture into a disposable piping bag and pipe a line along each row of buns, then repeat in the other direction to make crosses. Bake for 20-25 mins until golden. ●

The design and the location of this large and lovely weatherboard house put it firmly in the category of exceptional family living. Pale colours, plantation shutters, timber floors and stylish finishes give it a relaxing and welcoming Hamptons vibe. The rooms are spacious, attractive and filled with natural light. There is a guest room or study at the front of the house but, apart from that, all of the generous ground floor is living area. The formal living and dining rooms – open to one another via a large cut-out – are also at the front of the house. The informal living, dining and kitchen area is very large. The lounge section, with gas log heating in an ornate fireplace, is 9.2 metres by 7.2 metres and opens via double doors to a covered al fresco deck. The classic white Caesarstone kitchen is well equipped for the largest family, and entertaining all their friends, with a 900-millimetre Emilia stove, a very large fitted pantry and premium appliances. Opposite this is the laundry, which is large and fitted with plenty of cupboards. On the first floor, the main bedroom suite opens to a balcony that overlooks the pretty rear garden. There is an en suite with double basins, a deep walk-in wardrobe and a retreat zone. The three children’s bedrooms all have built-in wardrobes and share a retreat or study that opens to roof storage. The family bathroom has a separate shower and
