Long before expensive advertising, the Melbourne Cup was the biggest party in town. Melbourne’s population was 125,000 in 1861, and 4000 people flocked to Flemington Racecourse, on mud flats by the Maribyrnong River, for the first Cup. One in 31 Melburnians were there, without Instagram to lure them. Back then, drapers and dressmakers ran out of the fashionable colour of the day, and gossiping journalists reported who wore silk and who sported lesser flourishes. Not much has changed. This edition captures the thrill of the spring racing carnival – still our biggest party. ●

““I am Sam Hyland ” … and I know my way around a racecourse I had my first ride at 16 at Bendigo on Caulfield

Cup day. My first ride ran third and my second won, a horse called Retrieve. That was really exciting. My dad, Pat Hyland, was a successful jockey. He spent a lifetime in racing riding from the age of 14 to 44, and is part of an elite group of jockeys to win a Grand Slam: the Golden Slipper, Caulfield Cup, Cox Plate and the Melbourne Cup. He retired when I was 15 and bought a property at Clyde. I quickly learned to ride a horse and decided I wanted to be a jockey. I served my apprenticeship with dad and was a middle of the rung jockey – I worked hard and consistently rode winners. But I had a fall when I was 32, fracturing a C1 in my neck and a C7 in my back; I also broke a collarbone and whacked my head. That ended my career. I had a year off, then once I was back on my feet got a gig on racing channel TVN. I worked there for three years hosting country meetings during the week and on Saturday I’d be in the mounting yard giving tips. I then started working for Racing.com doing horseback interviews. I was really lucky in that I had friendships among the jockeys, having done the job with them. For six years I was also Racing Victoria’s trackwalker. It involved a lot of travelling and early mornings, driving all over Victoria, but that came easily to me. We race 363 days a year in Victoria. Trackwalkers drive to the racetrack the night before or morning of a meeting, walk the track and rate it for the day’s races – a good three or four, a soft five or six, for instance. These tracks are raced a lot and show signs of stress, so I’d give an indication of where I thought the best part of the track was on the day. It’s not an exact science. Recently, I also did horseback interviews for Racing Queensland meetings throughout the winter carnival and the Northern Cup series, which was really different. It’s a relaxed atmosphere in Queensland and a really good day at the races. The spring racing carnival is underway and it’s a fantastic time of the year in Melbourne. I’m part of 1116 SEN’s radio coverage for 16 meetings, which is keeping me busy. I’m just a roustabout in horse racing and dabble in whatever’s going. I’m from a racing family, it’s always been my life and I hope it continues to be. ●

hen the premiership scores are tallied at the end of each racing season, themes are revealed. Racing in Australia’s two biggest cities has been a land of giants for a handful of years now. The only significant new theme when the scores came in at the end of July was that trainers Chris Waller and Darren Weir have become not just bigger and stronger, but bigger and stronger than anyone before them. Amid the deserved celebration of the backstories of both trainers – country hamlet kids who went from zero to hero – their steamrolling success has exposed sores that already existed. Victoria has more than 800 registered horse trainers and two dominators, Weir and Team Hayes. Many trainers, frustrated by slow horses and slow payers, struggled before Weir swaggered onto the landscape. His horses run and win everywhere, from Flemington to Swan Hill. In a bid to keep pace, Team Hayes’ horses go where Weir’s go. Waller, thankfully for those out bush in NSW, is more city-centric, where the effect has been dramatic. Previous giants, like Gai Waterhouse, have been cut in half by Waller, whose dominance on the form guide reads as though a finger got stuck on the “search-and-replace” key. In some cases, Waller’s horses comprise almost entire race-fields in Sydney, particularly staying races. Punters scratch their heads – “Which one?’’ – and stewards hawk tactics. They’re assisted by Waller, who presents them each Saturday with the “grid’’, his take on how his horses might position themselves in the race, making something potentially murky look a little more clear. Both Weir and Waller are in their mid-40s, so are at the peak of their dominance: soft-spoken, tearprone Waller at times self-conscious about crushing his rivals, once saying he felt relieved when the stable had a lean patch; and steel-jawed, unsentimental Weir, far more blinkered, insisting struggling rivals have had the same opportunity, more in most cases, to make good.

Weir merely shrugged, reduced his numbers a little and imported truckloads of sand to his Maldon farm; his own inland beach. One of the great quirks of racing is that the rich and powerful don’t win all of the time. Waller had every runner bar one in a 12-horse field (two were later scratched) at Randwick in early August. In that one race, bookies offered $1.04 about a Waller victory, only for $8 chance Red Alto, trained by Brent Stanley near Bendigo, to withstand the tsunami. On the same weekend in Melbourne,

where they raced at Moonee Valley on the Saturday and Sandown on the Sunday, Weir won just one race; a minor hurdle at Sandown. This spring, the Weir and Waller teams will descend upon Caulfield, Moonee Valley and Flemington, but the world will also arrive – armies from England, Ireland, central Europe and Japan. Weir and Waller, always ahead of the game, have imported foreign battalions of their own. History says that, come carnival time, the superpowers come back to the pack. The higher the stakes, the greater the competition. Spring has always been a pretty good time for giant-slayers. ●

The outside-world perception of Waller is that he trains a horse called Winx. But Winx is his shop window. Waller trains an army of more than 200 others from four stables – a core squad at Sydney’s Rosehill, plus barns at Warwick Farm, on the Gold Coast and in Melbourne. Just as Weir wandered into Stawell as a hardworking 25-year-old horse-breaker in the mid1990s, New Zealand-raised Waller gambled his way across the Tasman in 2000 with six horses, a maxed-out credit card, a girlfriend – Stephanie, now his wife and mother of their two children – and a trajectory that has seen him win the last eight Sydney training premierships. Weir, born on a wheat farm at Berriwillock, a Mallee blip on the radar of two big wheat silos and a handful of facades of long-deserted local businesses, has won five straight Melbourne premierships. The numbers reveal that Waller and Weir are bigger than those who dominated before them. The effect has been felt by trainers who are hopelessly out-gunned and under-resourced. Others work out ways to combat them. Training partnerships – with two heads being better than one – have become increasingly popular. Waller trained 189 Sydney winners last season. His horses earned $22 million. He trained 152 the previous season; 169 the one before that. Waterhouse won seven Sydney premierships but only topped the “ton’’ four times. Weir trained 153 Melbourne winners in 2017-18. It’s been a steady progression, increasing season by season from 86 wins to take his first title in 201314. David Hayes and Lee Freedman won scores of premierships but each only once trained 100 winners-plus. Weir’s 250-plus horses in training are scattered around Victoria. Most are at Ballarat, more than 60 at Warrnambool, a growing number at Weir’s new farm near Maldon and dozens of “pre-trainers’’ with other trainers, who have worked out that the best way to combat Weir is to be paid by him. There have been growing pains. Rival Warrnambool trainers believed the catalyst for

If the shoe fits ... THE FARRIER Meet the young woman honouring a specialist racing tradition.

N

atasha May-Keas was a teenager when she mastered the old art of the farrier. The now 29-year-old loved horses and wanted to learn a trade, so she combined the two, fitting horseshoes and managing hoof health. “I worked on a polo farm with a lot of ex-race horses and wanted to learn how to trim my horse, so I did a week of work experience at Cranbourne,” she recalls. “I thought it was the worst job ever, it was so hard. But at the end of the week the boss said, ‘You couldn’t decide what you wanted to do so I’ve decided for you. You start your apprenticeship on Monday’. And it’s been the best thing I’ve ever done.

“It’s a mix of old-school blacksmithing and newage farrier skills. I love the horses, the travel, the races and the knowledge I’ve gained from the people I’ve met.” Once May-Keas finished her apprenticeship she started her own business. Now based in Queensland, she has worked all over Australia. “When a new horse comes into the stable I get the trainer to walk it up and down the aisle, to see how it walks and if it has any ailments, or throws a leg. [I give it] a visual assessment then take it into the stripping stall and pick up the foot and trim it. ‘‘You have your prefabricated shoes, which come in all different sizes and brands, then you shape and fit

that to the horse’s foot, nail it on and finish it. “I really enjoy subcontracting to other farriers because you gain a lot of knowledge that way, meet new people. Different stables means learning different techniques too; there is a right and wrong way to shoe a horse, but it’s very subjective. “I enjoy broadening my knowledge by working with older and more experienced farriers who are willing to share what they know to make you a better race person.” May-Keas forms bonds with most of the horses, but says even she has her favourites. “Kiss Me Ketut and Little Bita Spunk were racing with Matt Brown, and will always be my two.” ●

A single phone call altered life’s course for racing’s Cumani family. Wo r d s

I

t was late in 2004 when the phone rang in Luca Cumani’s office at his historic Bedford House stables in Newmarket, England. On answering, he tuned in to the raw Australian accent of Paul Makin, a sometimes rambunctious but wealthy professional punter who owned one of Australia’s champion horses of the time, Starcraft. Cumani, a leading horse trainer like his father before him, accepted Makin’s offer to train Starcraft for a campaign in Europe in 2005. Little did the Italian realise at the time that it was a decision that would change his life forever, and turn his family’s world upside down. In five starts for Cumani, Starcraft won two of Europe’s most important “mile” races, the Prix du Moulin at Longchamp in France and the Queen Elizabeth II Stakes at Newmarket. After that great run with Starcraft, Makin encouraged Cumani to buy an English stayer, Glistening, to target the 2006 Melbourne Cup.

That adventure to Melbourne with Glistening, who finished 10th behind Japanese stayer Delta Blues, gave the Cumani family more than a just a taste of Australia at Cup time; it started an obsession with the country that would eventually “adopt” a Cumani daughter and son. Cumani was joined on that trip by his horse-mad, 23-year-old daughter Francesca, who was Glistening’s track rider. Australia endeared itself to the suave Italian-Englishman, whose obsession since has been to win the Melbourne Cup – so far without success. However, while Luca was focused on the Cup, Australia became obsessed with Francesca, who within two years had joined Channel Seven as an expert commentator during its Melbourne spring racing carnival coverage. Ten years on and Francesca not only remains a permanent fixture of Australian racing coverage, but she lives in Scone and Sydney in NSW with her husband, champion polo player Rob Archibald, and their 30-month-old son Harry. Her elder brother, Matt, 37, who gave up a life as a financier and political adviser in London to pursue the family tradition in racing, has settled into life as a trainer at Ballarat with his Australian wife, Sarah Bell.

Matt said it took a while for his parents to come to terms with having their two children living in Australia. But he realised the Cumani brand was so strong in Australia, particularly in Victoria, that this was the right place to start his own business. “I suppose we’ve become a bit of a name in Australia and when you’re weighing up whether to come here or go to America – where it wouldn’t be as strong a brand – you’ve got to do everything to give you an advantage in terms of attracting owners and buyers,” he says. Cumani started with only 11 boxes at his stables at Ballarat, but now he has room for 40 and all the boxes are full. Incredibly, while Francesca became the easily recognisable face of the Melbourne spring racing carnival, she was a relative unknown in her home country. It wasn’t until 2016 that she was offered a position as part of the English ITV racing commentary team. Her CV includes hosting a racing show on CNN in the US, and following the world racing circuit means she and Harry can spend time at “home” in Newmarket with a couple of doting grandparents. Recently, The Sun newspaper in England ran a feature on her headlined, “Who is Francesca Cumani?” The Poms are a bit late to the party. She’s ours. ●

t wouldn’t be a Melbourne spring racing carnival, or maybe a racing carnival anywhere, without the effervescent figure of Gai Waterhouse. The Sydney-based trainer has been coming to Melbourne at this time of the year ever since she was a girl with her father, the legendary trainer Tommy Smith. The family would park for three weeks in an executive suite at the iconic Southern Cross Hotel in Exhibition Street. Although the Southern Cross is long gone, Waterhouse has become one of the world’s most successful thoroughbred horse trainers and one of the most recognisable faces in world racing. Melbourne has had a love affair with Waterhouse since she burst on the racing scene in her own right in 1993, when her horse, the 160-1 longshot Te Akau Nick, finished second in the Melbourne Cup behind the ground-breaking Irish gelding, Vintage Crop. For the next 30 years, Waterhouse rewrote racing’s record books and, along the way, endeared herself to an information-hungry media. She became the face of Australian racing for many with her infectious enthusiasm for the sport that she loves. However, the glory of winning the Cup eluded her until she imported an Irish horse with an Italian name, Fiorente. Fiorente finished second behind Green Moon in 2012 but the following year, with Damien Oliver in the saddle, stormed home to provide Waterhouse with a glorious win and another title – that of the first Australian woman to train the winner of our greatest race. Since then, Waterhouse has changed tack.

In recent years, with the help of a youthful cotrainer, Adrian Bott, she slowed her pace enough to not only pat the horses, but also enjoy more family life, doting especially on her grandchildren. She also spends more time in Melbourne, where she and bookmaker husband Robbie Waterhouse bought a lavish Spring Street apartment in 2014. The apartment is now not only a base for the Waterhouses during the Melbourne spring racing carnival – her quest for a second Melbourne Cup still burns strong – but also for whenever they feel like getting away from heady Sydney. The pair enjoy particularly going to the theatre – Waterhouse, as Gai Smith, was a budding actress in her youth – and to pay further homage to their favourite restaurants. They love Melbourne’s cultural scene and exploring its bustling laneways for the next Melbourne morsel to savour. Arm in arm, the Waterhouses are a familiar sight in Melbourne’s streets at any time of the year.

They love to walk, and it’s not uncommon to them to trek across the Botanic Gardens to South Yarra to enjoy one of their favourite places, such as seafood restaurant Bacash, and for a coffee, Lawson Grove Shop. “Melbourne has a multitude of things to see and do. On many occasions I have enjoyed the walk between Spring Street, through the gardens to South Yarra and Chapel Street, and back along the Yarra to the Crown casino precinct. It is all very close,” Waterhouse says. The go-to post-races place is down Little Collins Street. ‘‘Regardless of the outcome of the races, after Rob and I will go out for dinner to chew the cud at the Italian restaurant Il Bacaro with our very close friends Lea and Bruce Stracey,” Waterhouse says. “If it was a winning day, we’ll toast our success, but if it wasn’t we’ll still have a few laughs.” Waterhouse and Bott have two horses aiming for this year’s Lexus Melbourne Cup; Hush Writer and Thinkin’ Big. ●

pring racing delivers an annual changing of the guard in fashion trends. Often getting the outfit right comes down to knowing how to modernise the classic raceday themes, and wearing it like it was meant just for you. Strong silhouettes are predicted to dominate for women this year and power suiting is back, along with palazzo pants and cropped blazers. Structure is the ticket to a winning look. However, Victorian Racing Club’s official stylist Elliot Garnaut says suiting does not mean corporate. “Go for a strong pant suit, but wear it with a fitted blazer and show off your decolletage a little,” he says. Stella Artois Caulfield Cup Day (October 2o) and Ladbrokes Cox Plate Day (October 27) are less formal and the days to opt for contemporary labels and edgy streetstyle inspired looks. Why not give a nod to pastel (complemented by bell sleeves and frills on dresses and blouses); go for separate suiting (think the ’90s look, kept chic with slick millinery and block heels or stilettos); or try patterns – floral, animal print and stripes for an eclecticism that is perfect for the fashion thrill-seeker. When it comes to millinery, The Eternal Headonist has daring, artisan pieces, Matcho Suba delivers on sweeping bold statements, and modern crowns and perspex creations rule the collections of Danica Erard Millinery. However, she says: “It’s more relaxed at Caulfield, so it’s an opportunity to express your own style and wear something that makes you feel good. “Prints are a great option, pastels are a big hit, but tonal dressing done well is also another way to look ontrend – go for pops of colour with accessories to keep it fresh.” The dress code is more classic on Flemington’s big days.

Traditionally, the AAMI Victoria Derby (November 3) is black and white, but if you must do a print, consider a contemporary point of view with polka dots, plaid, tweed or Prince of Wales checks – a nod to British royalty. Although Kennedy Oaks Day (November 8) is always about feminine style, Lexus Melbourne Cup Day (November 6) is where racegoers can modernise the bright colour theme of the occasion with baby pinks, lilac or blues, instead. ●

But there’s a fine art to curating an outfit and, according to Miles Wharton of The Bespoke Corner Tailors, men must take note of a few rules before they walk out the door. “A three-piece suit will always turn heads,” says Wharton, who specialises in custom-made premium fabric suits from Europe. “Leave your business suit and corporate shirt behind, this is not the day.’’ Pinstripe and wide chalk-stripe suits and checks are a hot favourite for this year. Linen blends and mohair are best for breathability. And you’ll win extra points if you can strut like a dandy straight from an Italian piazza for a day at the track. It’s the season to think tonal, the time for tobacco and sandy tones, and pops of pastel, but always muted and nothing bold.

Tell your sartorial story of 50 shades with a single colour in mind. Slim-fitting suits are still king, but a slightly more relaxed silhouette is winning precedence – just make sure your pants aren’t too tight, because nothing looks worse than ill-fitting trousers. And if you’re doing the cropped length, be wary of nothing too short; you don’t want anything above your ankle. As the head of menswear for The Iconic, Tom Simpson travels the world several times a year looking out for the best in men’s fashion trends. He says the spring racing season will see a renaissance of the neutral suit, and pale linens will reign supreme. Simpson urges punters to think tonally – go all white or all black – but the look must be worn with confidence. “Match your cream linen suit with a pastel colour tie and some brown leather loafers,”

Simpson says. “And for the more daring gentleman, my suit colour suggestion of the season is khaki.” When it comes to footwear, the loafer is not going anywhere, while brogues and double monk straps are also highly recommended. “Designers like Gucci have made sure that the loafer will never die,” Simpson says. “Slimmer shapes and horse-bit details have been key loafer trends the past few seasons. If you’re confident and stylish, you can go that one step further and wear the latest rebellious ‘son-of’ trend – the open-back loafer.” Simpson’s tip to look the part on the more casual days – such as Caulfield’s carnival and Flemington’s Seppelt Wines Stakes Day – is to ditch the collared shirt. “Shirtless suiting looks dominated the catwalks in Paris and Milan,” Simpson says. ‘‘I’ve tried it and it has definitely made me stand out from the regular suited crowd.” ●

There were actions and consequences, and we knew that.” results. “I was fortunate enough to take David on this trip, which really opened his eyes to see the challenges these people are facing when running these programs,” Goodes says. “Teachers and teacher aides are doing incredible work to educate kids in these remote areas, and it’s not easy.” Why should a department store put its social conscience on the retail floor? “It doesn’t matter whether you’re a department store or an airline business, you need to be doing your bit for social change and reconciliation,” Goodes says. “Partnering with the Australian Literacy and Numeracy Foundation is helping close the gap in Indigenous and non-Indigenous literary and numeracy rates. There’s a large percentage of our

children and adults who can’t read or write well, and it affects their ability to contribute to mainstream Australia. Education is a key in closing the gap for that disadvantage.” Adelaide-born Goodes moved to country Victoria at the age of 13 with his mother, Lisa May, and brothers, Brett and Jake. His parents split when he was four, and he was raised by a loving mother who did all she could to give her kids a good education. From schooling in Merbein and then Horsham, Goodes says his school experience was a positive one. “I loved school. I was a total sponge and the learning came easy for me,” he says. “Our mum sacrificed a lot for us to have an education, put food in our tummies and have dinner on the table. we did. We were always loved and supported. But mum was very hard on us and disciplined. It kept us involved in our studies. “If we didn’t get a good report card, we weren’t allowed to play sport. The 38-year-old, who hasn’t shied from revealing he can’t wait to start a family of his own, says he and his wife are keen to do so – and when the news can be shared, it will be. “I definitely want a family,” Goodes says. “It’s something Natalie and I are looking forward to. There’s no news at the moment, but it’s definitely on the horizon.” ●

hen it comes to the form guide, there’s two types of people. There are those who treat it with a reverence usually reserved for sacred texts and there are others to whom it is sheets of foreign language, usually the first part of the newspaper reserved for kindling. But that all changes in the spring carnival, when even first-time punters heading to the track or at parties want to know how to pick a winner. We asked Channel Seven spring carnival presenter Jason Richardson to put together a beginner’s guide to the form guide, including some pointers that even hardened punters might heed.

These numbers show a horse’s finishing position in its races, with the most recent race closest to the horse’s name. If the number is 0, they finished worse than ninth, and an ‘X’ denotes a spell – or rest – in the paddock. “Obviously winning form is good form,” Richardson says. “But, it’s also hard to maintain. If you find a horse with a string of recent placings, then maybe they’re due to break through.

Trainers are responsible for getting your horse to the track in top fitness, and when the gates open it’s up to the jockeys to steer the best course. “Australian racing is totally dominated by the big

stables at the moment, so the Ws – [Darren] Weir and [Chris] Waller – are always a very good place to start,” Richardson says. “But, in the spring, the famous families will also be a big factor – Hayes, Snowden, Cummings and, of course, Waterhouse. Damien Oliver traditionally gets it right in the saddle when it counts. Hugh Bowman and Kerrin McEvoy are hall of famers for a reason, and then we’ve got the ‘Superfreak’, James McDonald.”

The weight your horse carries consists of its jockey, and if extra is required it is carried in the saddlebag. Many of the spring carnival’s top races are weighted, based on each horse’s age and gender. But in handicap races such as the Melbourne Cup, a handicapper determines the weights based on each horse’s previous form. “In the cups, the higher the weight the better the form, but history shows winners often come from horses carrying less.”

Blue-blooded mission THE RAIDERS Dubai’s ruler has chased a Melbourne Cup for 30 years.

C

harlie Appleby is the stable boy who became the boss. Twenty years ago, Appleby started working with Godolphin, the international horse racing stable of Dubai’s ruler Sheikh Mohammed bin Rashid Al Maktoum. His duties would have been riding unruly colts and the tedious chore of mucking out stables. In September, Appleby was at Melbourne’s Crown casino, standing under the bright lights set up by a Godolphin TV crew, perfectly positioned in front of the Godolphin marketing signs, wearing his distinctive Godolphin blue jacket, his hair brushed neatly by a Godolphin marketing person and facing a barrage of questions from an inquisitive Melbourne press gang. It was something akin to a

presser with an AFL coach, but in this case the coach was a trainer of horses; Appleby was representing Godolphin as the head trainer of Sheikh Mohammed’s massive Newmarket-based English training operation. The former stable hand is now giving the orders. A tick over 24 hours later, Appleby was greeting the Godolphin-owned galloper Jungle Cat and a beaming Irish jockey James Doyle after they had won one of Melbourne’s premier spring sprint races, the Sir Rupert Clarke Stakes at Caulfield. Appleby, 43, was born on a farm near Plymouth in south-east England, where his parents Andrew and Patricia kept ponies and Arab horses, on which the young Appleby honed his skill as a horseman.

He is armed with what he considers two “high-class” stayers – Cross Counter and Hamada – that give him the best chance to win the Melbourne Cup.

By the time he was 12, Appleby was riding jumpers and working for local trainers, and at 16 he did a course at the British Racing School. Appleby was a more than handy amateur rider. It was while working for trainer Susan Piggott, the wife of legendary jockey Lester Piggott, that Appleby realised his ambition to make racing and training his vocation. Riding out each day beside the retired Piggott taught him a lot, he said, although the reclusive Piggott “didn’t say much”. The introduction to Godolphin came in 1998 through his next boss, David Loder, who was training Sheikh Mohammed’s most famous horse of the time, Dubai Millennium. The rest, as they say, is history. Winning the Sir Rupert Clarke was only the start of this spring’s Australian dalliance for Appleby and Godolphin, because Appleby is here to win what has eluded Sheikh Mohammed for 30 years – the $7.3 million Lexus Melbourne Cup at Flemington. Until this year, Sheikh Mohammed, who owned his first winner in 1977, had three desperately unfulfilled ambitions in racing – to win England’s famous Epsom Derby, America’s historic Kentucky Derby and Australia’s iconic Melbourne Cup.

Appleby was able to tick off one of those for his boss when the colt Masar won the Epsom in June. Now the Melbourne Cup awaits. Sheikh Mohammed’s first attempt at winning the Melbourne Cup was in 1988, when Authaal, trained by legendary Australian trainer Colin Hayes, finished 19th behind Empire Rose in the Cup at Flemington. Barely has a year gone by since that he hasn’t tried to win the Cup. Appleby had his only Melbourne Cup runner for Godolphin in 2016 – Oceanographer, who finished 12th behind Almandin – although that year he also found a formula to plunder the second and thirdtier country cups with old English stayers such as Qewy (Geelong Cup) and Francis Of Assisi (Bendigo Cup). This time it is different. He is armed with what he considers “high-class” stayers – Cross Counter and Hamada – that give him and his boss the best chance to win the Melbourne Cup. He summed up his chances: “I don’t want to get too carried away, but I feel they’re two proper horses coming down here with a great profile going into the race.” Sometimes, he said, he has to pinch himself to think he is in such a position. Winning the Melbourne Cup will be an exaltation he can’t imagine. ●

his is a story about three of Melbourne’s biggest stars of TV, radio and the AFL, and a man from the western suburbs they’ve never met. It sounds like the start of a bad joke and, to at least one them, it is. “I’ve never met him, yet I hate him,” Ross Stevenson joked with real envy. One half of 3AW Radio’s top-rating Ross and John program, Stevenson fell in love with racing while working alongside his mum at the Church Street TAB in Hawthorn as a teenager.

From there he started punting, and that eventually grew into the ultimate gamble: racehorse shares. In the past two decades, Stevenson, 61, has partowned about 20 horses trained by some of the biggest names in racing – Chris Waller and David Hayes among them. None have competed on the big stage of Melbourne’s spring carnival, let alone won a group race. In August, Stevenson told us this was his spring carnival. He had two or three good ones. It was his turn. It’s not. Jack Gunston feels that jealousy because he’s lived the thrill vicariously. The three-time Hawthorn premiership player had just turned 20 when Glass Harmonium, part-owned by his father, won the $1 million Mackinnon Stakes on AAMI Victoria Derby Day, 2011. Three days later he was contesting the Melbourne Cup. Glass Harmonium finished secondlast, but that only made Gunston more eager to return with a horse of his own. “It was an amazing experience,” he says. “It’s like before a grand final; everyone started thinking

about what could be, what winning a Melbourne Cup looks like, and then it wasn’t to be. I was hooked from then.” Two weeks ago, Gunston thought he might have a Kennedy Oaks Day runner but, like Stevenson, this spring carnival is not Gunston’s turn. Playing For Keeps star Olympia Valance, on the other hand, is enjoying her second turn. Mr Sneaky, trained by Richard Freedman, is only the second horse she has part-owned, but the gelding is now in

foot, but his horses are international stars. He opened his account with a 2.5 per cent share in Shamrocker, a filly who finished second in the 2010 VRC Oaks before winning the group 1 Australian Guineas and AJC Derby. She won $1.9 million and was sold to Japanese breeders for a pretty price. Next, Hitt and his mates purchased a colt called Shamexpress. That stallion won Victoria’s richest sprint, the $1 million Newmarket Handicap, which earned the owners an all-expenses-paid trip to London to race at Royal Ascot and Newmarket. Shamexpress won $1.2 million in prizemoney and was sold to stud. “We were at the right place at the right time,” Hitt says, admitting he has “had a lot of slow ones since”. Though jealousy burns, stories like Hitt’s keep owners – big names or otherwise – dreaming it’s their turn. “There’s never been a more untrue statement than, ‘I’m never buying a horse again’,” Stevenson says. “Just when I’m out, they pull me back in.” ●

he racetrack is a hotbed of superstitions. I’m not really sure why anyone might would wear a green suit in Bourke Street but never, ever at Flemington, where it’s very bad luck. Or why a bird pooping on your flash suit is a dripping nuisance in the real world but a glorious, heavensent signal of good fortune at the track. Maybe the nature of the racetrack – of racing – lends itself to sudden onsets of spiritualism and omen fearing. These superstitions are centuries old and still going strong. You’ll only see green suits at the races from those who are new to the cult of the track. Early in the day, you will see the occasional white smudge on a suit and a confident smile from a punter deadset sure they will be rich by day’s end because the poop deems it so. You will see grey horses start at short odds on wet

tracks not because they are proven swimmers, but only because they are grey. Racetrack lore has it that grey horses are all great wet trackers. Someone once said it had something to do with hoof pigment. One of the greatest grey horses was a sprinter called Schillaci, and Schillaci hated the wet. I pointed this out to a punter who subscribed to the grey/wet theory. “An aberration,’’ he muttered. Old-school punters are always alert when they enter the racecourse because it’s good luck to back the first runner of the first trainer you see. It’s a hitand-miss superstition, usually just a desperate moan when Jo Bloggs’ 100-1 shot wins the first race. “Ya not gonna believe it, Bloggy was the first bloke I saw! But I backed the bloody favourite instead …’’ Some superstitions are personal rather than universal. Some are even regional. A Channel Seven reporter once did a light-hearted piece on “the early crow’’ at a Moonee Valley race meeting. The “crow’’ is when you cheer your horse prematurely. It’s regarded, in Victoria at least, as “terminal’’ if you mutter “gee, this thing’s travelling well …” before the horse even enters the home straight. But they’d never heard of the crow in

wet trackers.”

Sydney. The reporter asked legendary Sydney racing scribe Max Presnell about the “crow” and Presnell screwed up his face. “The what?’’ One reporter mate believes that if he enters the track and sees a person with a certain type of “affliction’’, it’s a bad omen. Another usually astute journalist mate was once burdened with four numbers; 6, 3, 5, 2. His wife wasn’t particularly interested in horses but stood in front of him one morning when he was heading to the track and said she’d dreamed of those four numbers. “So I had to take these numbers in the quadrella every day from that day forward,’’ he rued. “I had to do it because I knew the day I didn’t they’d get up.’’ He was getting fed-up with the endless chore and about to call an end to this superstitious nonsense one day at Sandown. “This is the last time,’’ he told himself. The numbers got up and he won five grand. The chore was rebooted by the first-ever success of the four numbers and continues unsuccessfully to this day, not because my mate is superstitious but because his wife checks the numbers every Saturday night. ●

he day Sopressa won the Australasian Oaks in Adelaide, Harry Coffey and his jockey mate, Dean Yendall, dashed straight from Morphettville to the airport. They landed in Horsham where Coffey hopped in his car and drove 228 kilometres to his parent’s house in Swan Hill. He arrived at 11pm. By then, celebrations of young Coffey’s monumental feat – the first group 1 victory for a jockey who should never have ridden, let alone ridden a feature winner; a kid lucky still to be breathing – were still in full swing. friends were waiting for him. “I didn’t get on the drink back in Adelaide, I just wanted to get home and be with my mum and dad,’’ Coffey said. It was a special celebration for a special 22-yearold, spent with those who had been part of Coffey’s heroic story from the day he was born undersized (but perfect jockey size) and afflicted with an illness that was expected to kill him by his mid-twenties. Cystic fibrosis cripples the lungs and restricts breathing. The lungs bleed. Sufferers gasp and cough. They are constantly fatigued. They do not become jockeys. But young Coffey did become a jockey. His parents always told he was no different from the other kids, even though he was.

Coffey was only six or seven when a young bushie called Darren Weir started working as a breaker for his old man, a trainer. Weir would kick a football as high as he could and challenge Harry to catch it. He never dropped the ball, not once. The bets kept parlaying. He’d cough and gasp but never lose sight of the ball or lose count of Weir’s accumulating debt.

Payback was to have come 15 years later when Coffey was partnered with Weir’s star imported stayer Signoff for the 2016 Melbourne Cup. It was to be Weir – and racing’s – second great Cup fairytale in two years; first Michelle Payne and Prince Of Penzance, then Coffey and Signoff. Signoff couldn’t shrug off injuries in the lead up and the dream was suspended, until Sopressa, also trained by Weir, won the Oaks in May. Sopressa’s journey to something big this spring, maybe even the Lexus Melbourne Cup, will be a tightrope, something Coffey has walked his entire life. There is no cure for cystic fibrosis. Coffey’s youthful optimism, and promising data that says patients are now living longer than before, means he does not feel he is living on borrowed time. But he still has long stints in hospital to have

protein and antibiotics pumped into him. He’s been in and out of hospital wards since he was a kid. The day after he spent 10 days in The Alfred hospital this year, Coffey rode four winners at Mildura. “Drugged up and flying,’’ he joked. Coffey is riding more up the bush these days, meaning he has to be mentally and physically fitter. Coffey says his disease rarely weighs him down, although he admits he’d began to doubt “the dream’’ before Sopressa came along this year. “I’d began to think I was going to be forever a bush battler who’d had a chance that had slipped. But she came at the right time,” he says. “I don’t know if she can win the Melbourne Cup but she was the best filly in Adelaide that carnival, the one with the most scope. In this game you just never know.’’ ●

rom culinary collaborations with Stella Artois at Paris Fashion Week in June, to his exclusive appearance at the brand’s Caulfield Cup Carnival marquee this month, Guillaume Brahimi is a very busy man. The French-born and Sydney-based chef, who spends 150 days a year in Melbourne overseeing Bistro Guillaume at Crown, says the emphasis in the invitation-only Stella Artois marquee will be on simple yet substantial dishes. “I always start by thinking to myself what would I like to eat at the races,” says 50-year-old Brahimi, who moved to Australia at 23.

Brahimi says he is looking forward to overseeing the kitchen and celebrating in the marquee with friends at the Caulfield Cup. “French food has always been about using seasonal produce, so it’s not dissimilar to fashion, which delivers collections twice a year on average,” he says. “We’ve brought that concept to the marquee to show our most fashionable side, too.” ●

“Partnering with Stella Artois means I have dishes that work well with a cold beer,” he adds. Stella Artois are this year’s sponsor of the $5.15 million group 1 Caulfield Cup, and Brahimi has created four signature dishes for the Stella VIP guests, which he says will be in abundance on the day. It’s prawn cocktails for arrival – think large, kingsized ones with lashings of thousand-island dressing, avocado and Yarra Valley salmon rose, plus some crispy lettuce. “Prawns and beer are such a classic combination, and we’re serving them in the most elegant manner for the guests,” he says.

A carbohydrate meal never goes astray either, hence his decision to add pasta to the menu. He’s chosen pea tortellini filled with asparagus, goat’s cheese, mint and olive oil. Then there’s the braised spring lamb shoulder served with ratatouille, black olive tapenade, crushed kipfler potato and zucchini flowers. For those with a sweet tooth, a dessert duo of sorbet raspberries comes with fresh lemon cream, caramelised white chocolate pistachio cake, meringue and marshmallow. “French food is the cornerstone of every cooking,” Brahimi says. “I am so proud of my heritage and proud to be able to bring it to the marquee for the

Duo of raspberries with lemon cream, white chocolate, pistachio & meringue Makes 10 2 punnets raspberries Elderflowers Lemon curd 1 sheet gold gelatine 75g pouring cream 75g lemon juice 135g whole eggs 55g sugar 30g butter Soak gelatine in cold water. Combine cream and lemon juice in a small pot and bring to a simmer, remove from heat. In a medium bowl, whisk the eggs and sugar. Pour cream on to eggs and return to pan over medium heat. Whisk until 80C or until thick. Remove from heat, squeeze gelatine to remove excess water and add to lemon curd with butter. Whisk until combined, strain and chill in fridge.

Caramelised white chocolate 100g white chocolate Heat oven to 120C. Chop chocolate into pieces and put on a baking-paper line tray. Bake in oven for 15 minutes, stir and continue to bake until golden. Cool and chop into small pieces. Reserve in fridge. Meringue 100g egg whites 200g caster sugar Preheat oven to 100C. Whip whites until foaming, add sugar and whip until thick and stiff. Put in piping bag and pipe into ½ cm dots. Put in oven and cook for an hour or until crisp. Raspberry sorbet 500g raspberries 130g sugar 12g glucose powder 100g water Juice of 1 lemon

Combine all ingredients in blender and blend until smooth. Strain and churn in ice-cream maker according to manufacturers instructions. Reserve in freezer. Crystalised pistachios 50g caster sugar 25ml water 100g roasted pistachios 4g salt Put the sugar and water in a pot and take to 115C. Remove from the heat and add the nuts and salt, stir until nuts are crystalised, and pour onto baking paper. To assemble Pipe lemon cream on to a dish, sprinkle with chocolate and raspberries, quenelle between two spoons a small scoop of sorbet and place on top, sprinkle over pistachios, meringue and elderflowers. Can also be arranged in individual glasses. â—?

he Victorian Racing Club’s impressive new $128 million stand will appeal to more than just racegoers. An eye-catching sculptural design, cool contemporary interiors and rooftop garden are designed to endear a new generation to the sport. The luxurious club stand, the 10th in its history, is Flemington’s boldest architectural statement since the VRC was founded 154 years ago. VRC chairman Amanda Elliott says she gave architects Bates Smart the task of designing something that would do for Melbourne what the Opera House did for Sydney. “We wanted to raise the bar and build a beautiful building to reflect what Flemington is all about,”

Elliott says. “It’s elegant but joyful; it’s got a lightness about it that lifts the spirits on entering – no matter how bad the day on the punt has gone.” Inspired by the shape of the race track and its rose gardens, the curvilinear stand was designed in the round so there are uninterrupted views of the course, the winning post and Melbourne’s CBD. Six years in the planning, the stand was completed in 20 months. The lobby feels more like a five-star hotel, and a central staircase leads to two upmarket restaurants, three cafes and eight bars, all with their own individual style. Elliott says the VRC has built the stand with the future in mind. “It will be something that nonracing participants along with our racing purists will enjoy.” Elliott says the roof was inspired by racing hats

Bates Smart director Jeff Copolov, who is responsible for the interiors, has nailed every single venue, she says. “We wanted to create a building that was as joyful and sculptural as a wonderful hat or dress,” Copolov says. The grandstands of the past faced one way with catering at the back, but Bates Smart wanted a building in the round with floor-to-ceiling glazing and uninterrupted views. “Great architecture is made by great clients, and Amanda was extraordinary in her passion and vision for the project,” Copolov says. The neutral external shell, the arrival spaces, the staircase and the members’ lounge are all genuinely timeless, Copolov says. The personality-filled food and beverage outlets are designed so they can be updated if needed in the future. In the lobby, a grand staircase creates a central

void connecting the five levels. A rich-green rug with the VRC insignia echoes the green of the Flemington turf outside. Copolov set out to create a sequence of spaces with different moods to offer a variety of experiences for racegoers. The upmarket restaurant on level three, the Byerley, features upholstered banquets, rich carpets and an acoustically-treated ceiling to create a rarefied air. In contrast, the contemporary Straight Six bistro is more textured with terrazzo stones, handmade tiles and woven metal finishes, giving it a robust, lively feel. The designer’s favourite space is the stylish Mumm champagne bar. Copolov and his team travelled to Reims in France to visit the Mumm cellar. The traditional riddling racks have inspired the

brass displays and the iconic Mumm red ribbon is used as a dynamic stripe in the bar, also echoing the slipstream of a horse race. And no detail was forgotten. The club stand’s different carpets, which were designed inhouse, pay tribute to the history of the club and British horse racing. Playing with the idea of traditional racing fabrics, the carpet designs reference tweed, houndstooth, tartan, plaid, stripes and one inspired by a Paul Smith-type pattern. Bespoke pieces echo the heritage of the VRC while items of the club’s collection are on display throughout the building. The roof garden on top of the five-level stand offers spectacular views and will be opening specially for AAMI Victoria Derby Day. Bates Smart director Kristen Whittle, who headed the architectural team, says the club stand is an elegant and timeless building that will become a strong new cultural symbol for generations to come. “We’ve captured everything we hoped and dreamed about,” Copolov says. ●

bviously there are edgier celebratory drinking options available, but when it comes to the spring racing carnival, it really has to be champagne. And if you’re going to be spending the dollars on champagne – and let’s face it, you will be forking out $25 or more a glass for decent French bubbles – you’ll want to choose a venue that not only knows its wine, but also adds glamour to the drinking. The Chablis Bar at Kisume, Chris Lucas’ multilevel sushi palace on Flinders Lane, is all about the glam. In Milwaukee, “the bloody”, as it’s affectionately known, sparked garnish wars of over-the-top insanity, with Sobelman’s Pub and Grill creating a 13-topping bonanza of cheeseburger sliders and mini-dogs, culminating in a whole fried chicken. Considered it the ultimate “hair of the dog”; there may be some scientific truth to its rejuvenating properties. With a perspective honed from decades of home building innovation, Len Warson says he can see radical changes ahead for housing. Warson says arriving home in 2040 will be very different. With car sharing we may or may not have garages; the front door will have multiple electronic features and open to a smaller, multi-functional living space. New technologies will mean a single space could be used for multiple functions, contributing to the affordability of housing. “You may have electric beds that fold down for sleeping and disappear during the day, and use the roof space for wardrobe storage rather than filling rooms with excessive wardrobes.” Room heat sensors will restrict heating, cooling and lighting to occupied areas of homes, saving power; all homes will generate and store their own power and landscaping could be regulated to ensure communities have sufficient green cover and canopies. Bricklaying will be a historic relic replaced by

high performance composite materials including solar sheeting. “In the next 20 years housing will change more than mobile phones – they’ve already had their revolution.” Warson says automation will be a radical space with major breakthroughs predicted once a common language is agreed for home systems and appliances. “Smart homes now are not that smart – products can’t talk to each other. When they can we’ll see radical shifts in what homes can do.” Foreseeing radical changes, Warson says Glenvill Homes is reinventing itself over the next six months with a relaunch planned for February. “Our new home range will disrupt the housing market in the same way YarraBend is disrupting the concept of urban renewal.” ● LIZ McLACHLAN
