Gary ‘Spike’ O’Sullivan - AFO Light Middleweight Boxing Champion In a year that sees Neptune Stadium celebrate its 25th anniversary, Cork’s newest sporting hero will be hoping to take his career to the next level at ‘The Stadium’ this Friday evening. Gary ‘Spike’ O’Sullivan, hotly tipped as Europe’s most promising prospect in the ring and will take on Ciaran Healy from Belfast for the vacant Irish Middleweight crown, moving up a weight division having taken the AFO title at Light Middleweight earlier this year. Recently linked with a possible tie in with Frank Warren, the Mahon man will have former World Champion Steve Collins in his corner for Friday night’s fight should bring a World Title opportunity that bit closer for ‘Spike’. Tickets for Friday night’s fight night at Neptune stadium are still available and are available from Ticketmaster outlets and Maher’s Sports Oliver Plunkett Street. Gary ‘Spike’O’Sullivan, who earlier this year won the AFO Light Middleweight Boxing title beating Bostonian Jimmy Le Blanc in Boston on St. Patrick’s weekend, began boxing at home when just six years old, sparring with his dad who taught him to hit hard and straight. A lesson he has held onto up to the present day. Gary joined St. Brendan’s Boxing club, the Glen just before his 9th birthday, boxing his way up through the ranks winning 35 titles along the way, at Cork, Munster, National and International level before turning professional in January 2008. So far in his short professional career Gary has nine fights under his belt and a 100% win rate including 7 knockouts (4 in the first round). Training for the Cork Champ takes place in Dublin at The Bronx Gym which is run by Gary’s trainer Paschal Collins together with his brother and TV soccer pundit Roddy. The third brother in this dynasty is none other than Steve Collins, 2 times World Champion. ‘Spike’ has also trained at the world famous Petrenelli Gym in Boston where he was watched closely and assessed by Godi Petrenelli who launched the careers of all time greats Rocky Marciano and Marvin Haggler. Paschal Collins was also trained by Petrenelli. Godi has said that, “Gary has the tools and mental attitude to become World Champion”, a view corroborated by Steve Collins who rates Gary as a much harder hitter than he himself was. Gary and his family set up Loughmahon Boxing Club in 2002 at Bessboro and is one of the most successful clubs in the country with over 50 young boxers using the club’s facilities producing many champions including a recent National Champion. The club is a huge asset to Mahon and surrounding areas offering an a healthy and encouraging outlet to youths. Gary ‘Spike’ O’Sullivan is seen as a role model to the youth of his area and Cork in general with his fights attracting a huge following, even fighting as far away as the U.S. has drawn supporters from around the country to see the Cork star in action, while Cork venues are packed to the rafters with ‘Spike’ supporters and the atmosphere at Neptune stadium this Friday night is guaranteed to be electric. * * * On the entertainment front, once again The East Village has pulled a mighty stroke this week with ASLAN appearing on both Thursday and Friday nights. family ties On Being a Parent By Diane Graff Cooney The snow glistened like sparkling diamonds in the sun as Blain came zipping around the moguls at the base of lower Treasure. His bright yellow ski parka was easy to spot among the children coming down the same run. This was Blain’s second year of skiing, and like many other twelve-year-olds in his sixth-grade class, he had taken to it like a duck to water. As my husband Judd and I ran up the gentle slope calling out to our son, the snow crunched under our footsteps. Hearing his name and turning around, Blain was delighted to see us and to think we had seen him skiing down the mountain so expertly that cold, crisp morning. His expression changed to one of concern as he realized that something must be wrong. It had been only twenty-four hours since the hospital conducted the tests and only a couple of weeks since his teacher noticed him putting his head on his desk when his work was completed. Then we spotted his enlarged spleen. When the doctors wanted to keep him overnight, Blain got teary-eyed and was very upset. He really wanted to be with his buddies from school on their special ski day. And then the doctor called: If we didn’t get him off the mountain, our son might fall, rupture his spleen and die. They didn’t tell us about the leukemia until later. On the way down from the mountain, Blain slept with his head in my lap. He knew we were headed to the hospital, but he was exhausted. In his present condition, he was operating on pure guts, refusing to give up anything, even if he really didn’t feel up to it. Ever the outdoorsman, at ten years of age, Blain had become the youngest member of an exclusive group known as “The Circle of the Gobbler,” after he called in and brought home his own spring turkey. He had nearly driven us out of the house with his endless clucks and gobbles as he spent all of his spare time practicing, trying to get just the right sound. When he was only six, he and Judd went on a pack-in fishing trip with some friends, including a boy around Blain’s age. They all rode into the high country
on horseback, and Blain and his little buddy were flying high as they bounced along the mountain trail, astride their respective mounts. After setting up camp, they took out their fishing gear and headed down to the picturesque lake. It wasn’t long before Blain and his dad had a stringer full of pan-perfect trout. They had caught their supper, and I’m certain that fish never tasted better to the two little novices. Alongside his day’s catch, Blain looked like Huckleberry Finn as he posed for his proud father on the other side of the camera. One weekend after Blain’s radiation treatments were completed, some friends invited us to a picnic extravaganza. After eating our lunch, our fifteen-yearold daughter Lisa and a couple of other teenagers decided to climb the peak that was looming before us like a giant challenge. It wasn’t long before others decided that it would be a great way to work off the delicious meal we had all just devoured. I made sure Blain was busy throwing a Frisbee with someone and told him where I was going. Then I began my ascent along with some other hardy souls. It was a beautiful climb and not particularly easy. Along the way, we all had to stop periodically to catch our breath. As we reached the top, there was a great sense of accomplishment in having made the climb. The view from the summit was spectacular! The vehicles and those people remaining at the picnic site were as tiny as toys moving around below us. I looked for Blain, but couldn’t see him anywhere. Then I spotted Judd making the climb; he was already about halfway up. Suddenly, I recognized Blain’s colorful shirt. He had decided he wasn’t going to be left behind. If the rest of us had made the climb, so would he. I prayed that he wouldn’t fall and hurt himself. He was wearing western boots, hardly the best thing for climbing. Everyone began to cheer Blain on as he headed closer and closer. He crossed over a rockslide area, and I held my breath as he eased his feet over those slippery rocks. Slowly and confidently, he took his next step, one by one, with the same determination that had always marked his spirit. We were so proud of him. No matter how demanding the challenge was or how badly he felt, our precious Blain had been through fourteen months of treatment, but he wouldn’t give up. And slowly but surely, he made his way up the mountain—to be with his family and friends. When our courageous son passed away eight days short of his thirteenth birthday, he was still on top of the world! And we’re still right there with him.

The Way We Were ! Dear Editor, Ah, what memories your letter from Con O’Mahony (8/10/09) brought back to me, wonderful memories of the Misses Cornwall! As a child I used to spend a lot of time with both of them. Their house was like Aladdin’s Cave, full of souvenirs of foreign holidays. They had a big glass frontal cabinet full of miniature Swiss Chalets, little skis, miniature dolls in all different costumes etc. etc. They had thousands of books and I’m sure that it was Miss Mabs who encouraged me to read – Girls Own from the 1800s, ecology, entomology, medieval warfare, you name it. Miss Iah of course was an intellectual. They also had huge albums of photographs, Valentine cards and those lovely embroidered cards from the First World War. We used to spend hours talking and they used to tell me all about their childhood. They were really the last of the real Victorian ladies. They had a horse reputed to be 38 years old He also held a fascination for me. He used to come to the kitchen door in the basement at the same time every day to be fed a big, juicy apple! I’m 70 now, but those happy memories have stayed with me through all the years. They were two truly remarkable ladies and their encouragement and zest for life has stayed with me. We the residents of Tramore Road are well aware of the history of this company. We had to put up with noise and movement of trucks for years day and night. Independent inquiry must shed light on who made what decisions and when An independent inquiry into the floods that engulfed Cork, which cost millions of euro in damages and devastated the lives of thousands, will be fundamental in determining the reasons why the flooding occurred, allowing measures to be taken to prevent further occurrences from happening in the future, according to Fine Gael Cork Senator, Jerry Buttimer “Fine Gael has called for an independent inquiry into the causes which lead to some houses in the city being swallowed up by water and half the houses being left with no running water, causing untold devastation to the lives of thousands. “The people of Cork want and deserve answers about what decisions were taken by whom and when. They require answers from the ESB about the release of water from Inniscarra and the effect that these decisions had on the overall situation in the city. “They also require answers from the Minister for the Environment and the Minister of State with responsibility for the Office of Public Works as to why no early warning system was in place to alert people about what was coming down the line. Questions must be answered about the means and methods employed by the ESB and Cork City and County Council in informing the people of Cork of the impending flood. “The events of the past week demand a national independent investigation into what exactly happened. The facts relating to who was responsible for alerting the general public and local business people about the decision to release the water into the city must be unequivocally determined. “This is not about apportioning blame but about ensuring that a system is put in place to prevent a situation such as this from happening again. Without doubt we are in need of an improved communication notification system. “The Government’s decision to cost and tender for a national flood alert system, having been pressed on the matter by Fine Gael, is to be welcomed. However, decisions made by the ESB and the local authorities with regard to the part each played in whatever decisions were taken to keep the people of Cork abreast of the situation have yet to be uncovered and resolved.”

Adoption Bill will radically change law The Adoption Bill 2009 which was been debated in the Dáil last week will introduce major changes to our adoption laws. The new Bill consolidates all existing laws on adoption into a single Act, and replaces the Adoption Board with an Adoption Authority of Ireland with expanded powers. It recognises that the child’s interests must be the main concern at all stages of the adoption process but also tries to support and protect prospective parents. The Bill gives force of law to the Hague Convention governing intercountry adoptions. Ireland signed the convention in 1993 but has never ratified it. The Hague Convention safeguards the fundamental rights of children in inter-country adoptions, in both their country of birth and the country of adoption. Until the 1990s, the vast majority of children adopted in Ireland were Irish, now such adoptions are relatively rare.Since 1991 some 4,600 children have come to Ireland under intercountry adoptions, with about 1,400 of these coming from countries not covered by the Hague Convention or bilateral agreements.

With the Bill passing through the Dáil it is now more important than ever that the Government refocus it efforts on the problems that have arisen with Vietnam and Russia. In 2008, of the 498 declarations of eligibility issued by the Adoption Board, 286 were for Vietnam, followed by 125 for Russia. The Government’s mishandling of the renewal of our bilateral agreement with Vietnam has had a devastating impact on families across the country involved in the adoption process.

Water Shortage Ballinlough & Boreenmanna Road were some of the areas with out water .Although it was difficult for all households, there was a great community spirit. Cork City Council must be praised for their 'Help Lines' and their Outdoor teams that worked around the clock in bad weather conditions. Updates were issued on a regular basis from Cork City Council. The lads at the 'Water Stations' were so helpful and always in such good humour Also to Denis Coffey, and all the Team at Mahon Community Centre, they spent long hours giving water to all the callers. Our Community Gardai that delivered water to hundreds of homes to elderly people, and persons that didn't not have transport or that were unable to go for water themselves. To all the neighbours that looked after each other. Well done Laura A big big thank you to Deputy Lord Mayor Cllr. Laura McGonigle for her part in the water shortage. Laura updated her website every few hours, anyone on her mailing list and her Mobile phone list (which must be everyone in Ballinlough) got the same updates. she also phoned people particularly those living alone to check if they had a supply of water, if not she delivered the water to them herself. Laura also liaised with the Community Gardai. Laura found time to attend Council meetings for updates. Herself and her team spent Sunday afternoon dropping 5,000 letters into every house that hadn't water with information. On behalf of Ballinlough Community Association, thanks Laura, your work was very much appreciated by everyone. . Posture is Powerful! A lot can be said about a person based on their posture. In fact, it can have a major effect on how you look and feel. Research shows your posture conveys a lot of information to the world around you about your mental and emotional state. But that’s not all… Posture can also be a window into your overall health. According to the American Journal of Pain Management, “To live a long, active, energetic life, few things matter more than good posture.”
The first x-ray on the left is a side view of the neck and an example of what many doctors would identify as “healthy”, almost perfect neck posture. The second x-ray, on the right, is an example of very poor posture. What can be said about the overall health of this patient? Do they suffer from migraines, headaches, extreme stiffness of the neck muscles? Maybe tinnitus or facial pain? Upper back pain or “Frozen shoulder”? Parkinson’s Disease? Constipation or incontinence? Low back or pelvic pain? Insomnia or a foggy memory? The list of possible symptoms could go on! So, what’s the connection? The spinal cord itself is intended to fit loosely within the neural canal of the spine. It should never be stressed or agitated. Thanks to good posture, the left picture suggests this “normal” presentation. However, when the cervical spine (neck) translates forward due to poor posture caused by the subluxation process, the spinal cord becomes stretched, hindering its laxity. This can have a devastating impact on the function of the entire nervous system, and all of the organs and tissues it controls. Nobel-prize winner Roger Sperry, Ph.D., advocated this concept when he said, “The more mechanically distorted a person is, the less energy is available for healing, metabolism, and thought.”

Quitting smoking: 10 ways to ride out tobacco cravings For most tobacco users, cravings or urges to smoke can be powerful. But you're not at the mercy of these cravings. When an urge to use tobacco strikes, remember that although it may be intense, it will be short, and it probably will pass within a few minutes whether you smoke a cigarette or not. Each time you resist a craving, you're one step closer to stopping smoking or other tobacco use for good. In the meantime, here are 10 ways to help you ride out the urge to smoke or use tobacco. Delay. If you feel like you're going to give in to your craving, tell yourself that you must wait 10 more minutes and then do something to distract yourself. This simple trick may be enough to derail your tobacco craving. Repeat as often as needed. Don't have 'just one.' You may be tempted to
have just one cigarette to stop a craving. But don't fool yourself into believing that you can stop at just one. More often than not, having just one leads to another, then another — and you may wind up back in the habit. Avoid triggers. Urges for tobacco are likely to be strongest in the situations where you smoked most often. Identify your trigger spots — or people — and have a plan in place so that you can avoid them entirely or get through them without using tobacco. Get physical. Physical activity can help distract you from tobacco cravings and reduce the intensity of cravings. Just 30 minutes of moderate physical activity can make a craving go away. Get out for a walk or jog. Practice relaxation techniques. Coping with a craving to smoke or use tobacco can be very stressful. In the past, smoking may have been your way to deal with stress. Take the edge off your stress by practicing relaxation techniques. These include deep-breathing exercises, muscle relaxation, yoga, visualization, hypnosis and
massage. Call reinforcements. Touch base with a family member, friend or support group member for moral support. Chat on the phone, go for a walk together or simply share a few laughs — or get together to commiserate about your cravings. Remember the benefits of quitting. Write down or say out loud the reasons you want to stop smoking and resist cravings. These might include feeling better, getting healthier, sparing your loved ones from secondhand smoke or saving money. Join a group. Join a stop-smoking program. Try replacements. Table Quiz in aid of Ballycotton Lifeboat to be held in Wallis’ Bar, Midleton, on Monday, 7 December. 2009 has been a tough year all round and especially so for charities. People have been feeling the pinch and cutting back on their spending. Several charities have suffered as a result. The lifeboat service in Ireland depends on the public for their generosity. When their assistance is requested they never say “No”. As a charity they survive on bequests, fundraising events and donations. Their crewmembers are volunteers, gladly giving up their free time, but it costs several thousand Euro each time a lifeboat is launched. Technology is constantly changing and funds are needed to keep on top of this, to make the boat as safe as possible for the volunteer crew and the persons they are launching to rescue. A table quiz is being held in Wallis’ Bar, Midleton, on Monday, 7 December, at 8:15pm. The organisers recognise the difficulties facing the RNLI, like so many other charities, at present. Ballycotton lifeboat fundraising committee would like to thank Wallis’ Bar and ask that as many people as possible come out in support. The €40 for each team of four will be going to Ballycotton lifeboat station and you are invited to have a fun night out in aid of a good cause. The quiz is due to start at 8:15 pm sharp and Wallis’ Bar, Midleton, will be the place rocking on 7 December in aid of Ballycotton lifeboat.

For lazy people like me there are plenty of alternatives in the Garden Centres. For the dedicated, as usual we try to give you a few ideas on what might need doing in your garden this week. Not everything in this article may apply to your garden - but there might be something, if not this week maybe next week.
Dig a deep trench for runner beans, and part fill gradually with waste organic material; cover with soil and leave to compost. Check over fruit and vegetables in store; dig a supply of roots for the festive season and store cool. Protect hardy trench celery with straw or several layers of fleece in severe weather.

In a very mild winter, mow the lawn if necessary, only when dry and with the blades set high.
Prepare new beds and smaller areas for spring planting. Clear dead fronds from hardy ferns, and use to protect tender bulbs and other dormant plants. Rake up fallen leaves from roses, especially where mildew or black spot was a problem, and burn. 52% of Munster adults can have difficulty understanding medical terms New Booklet To Address The Gap In Understanding Of Medical Terms Over 50% of adults in Munster can have difficulty understanding the medical terms used when speaking to a healthcare professional such as a doctor, nurse or pharmacist - according to a recent nationwide survey1 conducted by Merck Sharp & Dohme Ireland (Human Health) Ltd. 'Arthritis-Key words in plain language', supported by Arthritis Ireland, is the first in a series of Plain Language patient information booklets launched by MSD, to help give the everyday meaning of some of the medical words used when talking about Arthritis. More than half of the Irish population is affected in some way by literacy difficulties2. It is important to recognise that 'Health Literacy' is not just about someone’s ability to read or understand a piece of information. Anyone can find health information difficult to understand if the information provided is not communicated in clear and simple language. Arthritis is a chronic disease affecting one in every six people in Ireland.3 Arthritis –Key words in plain language is the first in a series of plain language booklets developed by MSD Ireland (Human Health) Ltd. with the support of Arthritis Ireland and a team of healthcare professionals, as part of their continuous efforts to improve health literacy. The booklet addresses the facts about arthritis, the common questions asked by people living with the condition and also presents an A to Z meaning of words often found in patient leaflets. Each word is defined using plain English and also placed in the context of a sentence for further ease of understanding

"The 'Arthritis- Key words in plain language' booklet is a very effective tool that a patient can use to better understand the written and spoken information they will come across over the life time of their condition. Using plain language is a key strategy for making health information easier to understand and improving health literacy. It is easy to think a patient understands the medical words used to discuss a relatively well known condition such as arthritis so this booklet will be a very useful guide said Dr Eamonn Shanahan, Kerry based GP. A chronic disease, such as arthritis, is a disease that cannot be cured and will be with a person all of their life. The research also revealed that 45% of those interviewed nationally thought the word chronic, meant simply just ‘bad or ‘terrible’.1 In Munster 60 % of adults were unable to define the meaning of ‘chronic’ correctly, compared to Leinster and Connacht both at 39%.1 However, the high percentage in Munster could be accredited to the colloquial use of the word ‘chronic’ in everyday language. 'There are over 100 different types of arthritis and in turn an array of new words a person with arthritis will need to understand the meaning of. If they better understand the words used when speaking or reading about arthritis, they will be able to communicate more effectively with their healthcare professional. We welcome any initiative that helps people living with arthritis take more control over the management and understanding of their condition”, commented Mr John Church, CEO Arthritis Ireland. The spirit of community is alive and well in Cork as proven by the community efforts as a result of the recent horrific flooding. Hopefully by now the water has been restored to the thousands of people who were left without it, a commodity which we take so much for granted. The Christmas party at the Rochestown park hotel was enjoyed by all. Floods and NAMA were forgotten about for a few hours as Santa made an appearance and cheered everyone up. We would like to thank everyone who donated spot prizes and Michael Mc Grath T.D for the monster hamper. A special thanks to Elaine Cronin assistant manager of the Rochestown Park for her help in the party, Elaine is a local girl and should “take a bow”. The remembrance tree in Douglas Village shopping centre is up in all its glory. This year the proceeds go to the Cork Alzheimer’s group. If anyone can spare an hour or two right up to Christmas can fill in the time sheets at the tree. All the monies collected stay in Cork. You can light up a life for your loved one whether deceased or living, write a card and place it on the tree. You also write the name of the loved one in a book which will be placed on the altar at St Columbus church. Another event to look forward to is the annual Christmas concert at St Patrick’s church in Rochestown. Performing there this year are the cork tenors, soprano Jill Cogan, St Patricks church choir and of course the girls choir of St columbas school. Tickets are €20 and available from both churches and also from Pro Musica or myself on 4363867. Tickets make wonderful Christmas presents. Happy birthday to our good friend Delia Geary who is celebrating her 80th birthday.

Multiple Sclerosis Ireland Appeals for Help To ‘Support Our Services’ this Christmas as €400,000 is needed to maintain services delivered to people affected by MS. MS Ireland has been severely affected by government cuts and reduced fundraising income, which is now impacting the Society’s ability to provide services to those living with MS, a progressive neurological condition affecting 7,000 people and families in Ireland. To help prevent service cuts MS Ireland is asking the ever-generous people of Cork to support this years Christmas Appeal. Members, friends and supporters can buy packs of Christmas cards, enter the Christmas raffle to win a cruise in the Mediterranean, or support their local MS Branch. Christmas Cards and raffle tickets can be bought from various shops throughout the country, online at www.ms-society.ie and by calling 01 678 1600. Sold in packs of 10 cards, there are a variety of beautiful Christmas cards on sale for €6.00. A bargain! The Christmas raffle is running until the 15th of December and prizes include a cruise in the Mediterranean, a weekend break in Ireland and a luxury hamper. Tickets are €2 each. Our Christmas Corporate Stars encourage companies to sponsor a star on the MS Christmas tree at Blanchardstown Centre instead of sending corporate gifts or cards. Each supporting company will be included in a special feature in the Business Plus Magazine, The Irish Times, The Gazette and MS Ireland’s own website. MS Ireland has 41 voluntary Branches around the county, providing local support and socialising opportunities for people with MS and their families. The sum raised so far is based on money donated over the weekend with the support of Vodafone and Superquinn, and follows the decision of the Irish Red Cross to undertake an emergency appeal to meet the urgent needs of the flood victims. “I would like to thank the people all over Ireland who have donated to our Floods Appeal. It is a credit to the generosity of the Irish people that this appeal has received such a positive response, particularly in these difficult times,” said the Chairman of the Irish Red Cross, David Andrews. Teenagers in Passage West ! Teenagers in Passage West can look forward to less boring weekends if plans for a youth club in the town come to pass. Passage West Town Council is working with youth group Foroige in an effort to set up a club early in 2010. Foroige is a leading national voluntary youth organisation engaged in youth development and education. The organisation provides opportunities for young people - under the guidance of voluntary adult leaders and Foroige professional staff - to develop through Foroige Clubs, Local Youth Services, Local Youth Development Projects and Youth Information Centres. The town council help a meeting last month with a number of young people from the town. Those in attendance expressed real interest in the proposed club. There are a few hurdles to overcome in order to get the club off the ground. A venue for club meetings and adults who are willing to get involved are required. from Millies Baking Water shortages are causing havoc in many kitchens this week, I never realised until now how we take water for granted for cooking vegetables, pasta, rice and of course washing up.
Decorating Christmas Cakes Most of us have our Christmas cakes made by now, however, it’s never too late to make your cake, closer to December 25th I’ll be posting recipes for last minute cakes. When it comes to decorating Christmas cakes everyone has their personal choice, some like the commercial yellow marzipan, others (like me) love homemade almond paste. White icing is also contentious – royal icing is easy to make up and decorate, soft fondant icing is available in the shops in blocks or ready rolled and can be made from scratch (not recommended!) For decorating the cake itself I believe simple is best; If using royal icing, whip the top into peaks for a snow like effect and wrap the sides with coloured ribbon Simply pipe Merry Christmas or similar on the top of the cake, if you don’t have piping equipment writing icing in tubes can be found in all major supermarkets Shapes such as holly and Santa Claus figures can be made using fondant icing coloured and shaped. Many of us may find a few bendy carrots or wrinkly peppers lurking in the salad drawer and want to use them up but can’t face making soup - again, so I’ve added a recipe below and some tips.

75g butter , melted 2 oranges , juiced 100g sultanas or raisins 1 egg , beaten 100g carrots , peeled and grated 300g plain flour 2 tsp baking powder 100g caster sugar ½ tsp cinnamon
Soak the dried fruit in the orange juice for a minimum of 30 mins (overnight is best). Heat the oven to 190C/fan 170C/ gas 5. Line a 12-hole muffin tin with muffin cases. Mix the dry ingredients together in a large bowl Whisk together the wet ingredients with the carrots then stir into the dry ingredients with the soaked fruit and leftover juice, take care not to overmix - it's better if it's a bit lumpy. Spoon into the muffin tin and bake for 20-25 minutes until risen. Tips of the Week Throw 2 peeled tired satsumas and kiwis into the blender with a glug of apple juice for a delicious easy fruit smoothie, grapes are also nice if you have a handful. For a quick dinner get a square pyrex dish and throw in the following chopped into chunks; 1 onion, 1-2 peppers, 6 tomatoes, 3 minced garlic cloves, 1 tsp dried oregano and a good glug of olive oil. Bake in a hot oven (190210oC) for 30-40 min. Serve with pasta or couscous to accompany sausages or chicken or on its own with grated fresh parmesan. This dish keeps for up to 4 days in the fridge and can be blended for a delicious soup. Courgettes, aubergines and squash also work well. So the big one this week has to be Florence and the Machine playing the Opera House on Sat night. Here in John O’Sullivan’s we find our vegetable soup is very popular. This recipe is very veg soup with added goodness of tomatoes thrown. It’s easy once you have the ingredients.
Tomato and Basil Soup • • • • • • • • • • • • • •
White Onion --- Medium Chopped Red Pepper --- Medium Chopped 3 Carrots --Medium Chopped 3 Celery Sticks--Medium Chopped Garlic -- 1 Large Clove 1 Tin Tomatoes Chopped 1 Tomato Paste Tin Water about the same as tomatoes Knorr Veg stock cube Black pepper a pinch – cracked Salt – to your taste Basil - fresh bunch – keep back leaves Wosten Sauce – Lea Perrins 2 teaspoons Brown Sugar - Cream lightly whipped
1. Place all ingredients in a pot except the Basil and Cream and boil; for half an hour until veg is cooked. 2. Liquidize with Basil and serve with lightly whipped cream. 3. Enjoy with some nice fresh Sour Dough Bread. P.S If you find you like it with more garlic or more veg don’t be afraid to vary the amounts. College Corinthians AFC Schoolboy Section A mixed weekend on the schoolboy front with the Under thirteen and Under fifteen Premier squads maintaining their challenge for league honours with important victories and our Under fifteen A side were in spectacular form as they hit seven past Strand Utd. However our Under Twelve Premier lost out to Mayfield and our Under fourteen A side found Avondale too strong.
Under 15 Innishvilla 2 Corinthian Boys 4 Corinthian’s remained unbeaten and very much in the running for the Under 15 Premier Division title after this exciting away victory over Innishvilla. With out a game for several weeks, they were rusty early on and fell behind before finding their feet. With Jamie Cronin and Brian Lenihan getting a grip in midfield, Jamie Davis and Conor Horgan very strong at the back and Olan Hanley very lively up front they gradually got on top and they grabbed a deserved equalizer from Brian Lenihan. They were dominant now throughout the pitch and further goals followed from Brian again, the excellent Conor Cannon and Ian Tobin. To their credit Inishvilla never gave up and they scored another fine goal midway through the second half. Best for Corinthians on the day were Brian Lenihan, it is fantastic to see Brian back to his best after suffering so badly with injuries for the last 12 months, Conor Cannon, Ryan O’ Brien and Michael martin. Corinthian Boys “A” 7 Strand Utd. 1 Corinthian Boys “A” eased through to the next round of the National Cup with a comfortable victory over Strand Utd. David Barrett was the star of the show with a superb hat trick; Andreas O’ Regan (2), Philip Kavanagh and James O’ Shea were also on the score sheet. Best for Corinthian’s were Conor Deasy, Kevin Sheehan and Eoin Baldwin. Well done to all concerned on a fine performance.
Winter Street Leagues – Underage Section. Starting next Saturday the Club will be organizing Winter Street Leagues for the Under Seven (2002) and under Eight (2001) age groups, the matches will take place at the normal training times on Saturdays and will run for the months of December and January. The Under Ten Winter Leagues have already started on Tuesday nights Soccer coaching, training and Street Leagues take place every Saturday and Sunday in Corinthians, the sessions are open to schoolboys and girls between the ages of five and ten. Schoolboys are coached in the basic skills of the game with the emphasis very much on fun and enjoyment. Douglas Gymnastics Club – Closed this Weekend - Friday 4th & Saturday 5th. Due to recent flooding and lack of water supply forcing schools to close. Douglas Community School has had to postpone its school play till this weekend which has a knock on effect to our weekly classes. There will be no classes this Friday 4th & Sat 5th. G.A.A. FOCUS Snippets from the Local and National Scene By Pat Harrington Disappointment The silence was palpable and the suspensions seemed to groan under the weight of depression being carried by the car. The atmosphere within, told the story in relation to the final result of the Munster intermediate hurling championship final played out at Mallow. Another telling incident was that of the young lad (the 9/10 year old mentioned in last week’s article) who broke down in sobs at the final whistle. One Moment in Time On any final day you will always experience moments that stand out. The incidents I would like to relate concern two individuals; one who was involved in a big way with Douglas prior to moving to Cloughduv; the other a new kid on the block (though one would hardly call him a kid). Tomás Twomey was a member of the team that won the 2000 county intermediate hurling championship. This man stood at the exit from the pitch after the game at Mallow and applauded the players for their efforts as they headed for the dressing room. Tomás is now a popular coach at his new home parish of

Cloughduv. The other story features Brendan Black who organised the underage players to greet the intermediate team as they alighted from the bus on their arrival back in Douglas. Well done to Brendan and everyone who was present and got involved at the homecoming reception. It’s timely to mention here that the support at the game was tremendous. A favourable outcome was not to be on the day. I am sure the individual opinions are as many as they are varied. I bet there was hardly a sole Douglas follower who thought at the interval that Douglas could be defeated. Ah well, let’s look forward to next year and the senior hurling championship – surely the ultimate goal. Think of how the hype shortened the winter – well done lads. Cork’s Position I have been advocating for some time that county championships in Cork be discontinued. Sadly here it is all about winning rather than cultivating skills and developing players. Winds of Change Back at adult level there appears to be a sea change sweeping through the organisation of the county championships. Perhaps people are beginning to realize that the club player has a major role to play in the organisation. My understanding is that the football championship will commence in May and the hurling in June. Sixteen clubs will compete in the opening round. The eight losers will play in round two and the remaining four losers get one further chance to stay in the championship. The two losers
from round three will face a regulation battle. The only difficulty I see is that there will be a long gap for the winners in round 1 before their next game. There will be extra time if needed in rounds 1, 2 & 3. Condolences Regrettably last week there was a glitch at my end of communications which meant the following failed to reach the office of the Douglas Post: In the course of the game at Mallow we received the sad news of the death of club stalwart and true gentleman Pat Walsh snr. Pat has been a great supporter and friend of Douglas G.A.A. and will be greatly missed at the club. Our sincere sympathy goes out to Pat’s beloved wife Betty and family, his sister Bridie and brother-in-law Liam. Our sincere sympathy also to our club colleague Finbarr Kearney on the death of his mother. Ar dheis Dé go raibh a n-anamacha. Hibernation My minder Billy Mac tells me that we have shattered our previous record of 47 articles in any season by two so it’s time now to take a break and go into hibernation for a short while.
