From our management and staff, I would like to thank all our customers who have supported us through the years, and welcome you to the first edition of our magazine. With better weather on its way, this issue is full of ideas to make the most of outdoors with delectable food and wine. Our expert chefs, butchers and fishmongers have been busy preparing new creations and our old classics, perfect for the barbecue and feasts to share this summer. Find out how to make the most of this season’s local ingredients with Dublin bay prawns and new season lamb. With upcoming events such as Vegetarian Week and Coeliac Awareness Week we have also featured some vegetarian and gluten free options available in our stores. We hope you enjoy the read!

The finest ingredients are sourced from the best local suppliers and prepared daily to deliver our extensive range of fresh homemade products to our stores.

Everything that you will find on our deli counter is created fresh every day by our team of 75 skilled chefs and prepared by hand using only fresh ingredients, ensuring unmistakable flavour and quality. Our New Product Development Chef, ensures that our delicatessen offers a wide range of fresh and seasonal dishes: salads, quiches, savoury foods and speciality meats including a mouthwatering olive bar. We make a selection of our own pestos and also sell aged Parmesan cheese, continental meats, freshly cut and available pre-packed, ideal for creating the perfect charcuterie. Our cheese counter boasts a large selection of quality cheese with a strong emphasis on Irish artisan cheese, as well as a selection of carefully selected continental options from all over Europe. Fishmongers At Donnybrook Fair, we have fresh seafood delivered to all our stores twice daily, in the morning and in the afternoon. new season Lamb New season lamb is when lamb is at its most tender, succulent and sweetest. Every cut, from the lap to the shank, to favourites such as the rack and leg, can only be described as absolutely delicious. When preparing new season spring lamb, keep it simple; forget about sauces and marinades that may over-power the flavour, and let the meat speak for itself. A perfect centrepiece for a Sunday roast.
Butchers Tip When cooking cutlets, chops or even a rack of lamb, sprinkle with a little table salt, place the fat side on the hot pan for 2-3 minutes to render the fat, before roasting in the oven. This will cause the skin to be wonderfully crispy while keeping the meat pink and tender. donnybrook fair’s
dry aged beef Did you know...
Our Malahide store has its own dry aged fridge. Dry aging is the traditional technique used to produce tender meat and an intense refined flavour, ensuring that the beef is at its highest possible quality. The beef is exposed to a steady humidity and optimal air quality for 32 days. The secret ingredient is oxygen, which teases the natural enzymes of the meat over time. The longer the meat spends in the dry ager maturing, the more its flavour intensifies. Unlike many other steaks a dry aged steak requires no further preparation.

Fresh Tomato & Prawn Pasta An easy and delicious summer dinner Ingredients •
445g cooked Dublin Bay prawns - peeled and de-veined
•
230g dry penne pasta
•
8 baby tomatoes, chopped
•
1/2 sweet onion, cut into wedges
•
3 cloves garlic
•
225g spinach leaves
•
225g diced mozzarella cheese
•
3 tbsp. fresh oregano leaves
•
4 tbsp. olive oil
•
3 tbsp. chopped fresh basil
•
salt and pepper, to taste
Method 1. Bring a large pot of lightly salted water to a boil. Add the pasta, and cook for 8 minutes until tender, and then drain. 2. In a food processor, blend the garlic, onion and oregano. Heat the olive oil in a large pan over medium heat. Add the onion mixture; cook and stir until almost golden. Add the tomatoes, basil,

salt and pepper. Simmer for about 5 minutes while the pasta is cooking, stirring occasionally. 3. Mix in spinach until it wilts, then just before the pasta is done, stir in the prawns. Cook until heated through. Toss with pasta in a large serving bowl, and mix in mozzarella cheese.

He keeps things simple and fun - all the while imparting a vast knowledge to his students. We offer a range of classes, from basic cooking techniques to advanced culinary skills. Our classes include pasta workshops, baking courses, ethnic cuisine and vegetarian cooking, plus we have guest tutors who teach bespoke classes such as sushi making or gluten free cooking. Students can choose from evening courses or full day weekend workshops, and class sizes are kept small so that the experience is intimate and relaxed.

Any advice on herbs and spices? It is important to have a good selection of spices in your cupboard and learn how to combine them to ingredients. For example carrots and cumin are a Moroccan match made in heaven, Spanish smoked paprika can enhance an otherwise bland veggie rice and chopped fresh herbs or spring onion bring an aromatic, spicy or tangy taste to a meal. What is the best way to cook vegetables? Roasting food removes the amount of water that food contains, making it a great way to intensify the flavour and change the texture of vegetables. Roasting seeds also brings out their flavour and greatly adds to a dish as they give nuttiness and texture and they are packed with omega 3 and 6. I miss the texture of meat. How can I add texture to vegetarian meals? Add texture to vegetarian dishes by experimenting with a variety of ‘meaty’ vegetables. There are lots of veggies that can take the place of meat, such as Portobello mushrooms, jackfruit, lentils, beans, legumes, cauliflower, potatoes, beetroot and nuts. I’m worried if I follow a vegetarian diet, that I won’t have enough protein in my diet? Nuts, seeds, grains, soy products, cereal, eggs and dairy are all a great source of protein. These groups of food each contain different amino acids (the building blocks of proteins) and varying amounts of protein. When your diet includes a variety of each of these types of foods, you should be consuming all the amino acids you need for muscle growth and cell repair.
niall’s Warm Roasted cauliflower Salad Serves 6 people ingredients •
1 large cauliflower prepared into florets

1 tbsp. vegetable oil
•
3 garlic cloves finely grated
•
3 tsp. of ground cumin
•
1 ½ tsp. ground coriander
•
2 tsp. chilli flakes
•
1 tsp. turmeric
•
1 packet of mixed baby leaf salad
•
a handful of coriander, leaves only, chopped
•
1 lime
Method 1. Preheat the oven to 180°C. 2. Place the oil and spices in a bowl and mix well. Add the cauliflower florets and mix to coat.

Method 1. Rosemary Simple Syrup: Add 1 cup of water and 1 cup sugar to a pot. Add 2 sprigs of rosemary. Bring to a simmer and cook until all sugar is dissolved. About 5 minutes. Let cool completely

285g strawberries, hulled & quartered

85ml gin
•
1 tbsp agave nectar
15ml fresh lime juice
•
ice cubes
club soda
•
lime wedges, for garnish
Method 2. Salt the rim of a glass by rubbing a slice of lime along the rim and dipping into salt. Fill the glass with ice. 3. Add all ingredients and stir. Garnish with a sprig of rosemary and a slice of grapefruit.
1. Place the strawberries and agave nectar in a blender, and puree until smooth.
3. Divide the gin, lime juice and strawberry puree between the two glasses. Stir with a long spoon.
2. Using two glasses, place a few ice cubes in each glass.
4. Fill the glasses to the top with club soda. Stir again and garnish with lime wedges. Serve.
