Japan’s JR East and JR West rail companies will launch two new luxury trains in 2017. The Twilight Express Mizukaze (pictured), launching in spring 2017, will depart Kyoto, Osaka and Shimonoseki stations and explore the unspoiled landscapes of western Japan, with visits to Matsue, Izumo and Miyajima, and opportunities to take in the natural beauty of the Sea of Japan, Mt. Daisen, and the Seto Inland Sea islands. With an Art Deco design persona and the amenities of a five star hotel, the train will cater to just 30 passengers and will feature 10 cars, including an elegant dining room and lounge, six sleeper carriages and two sightseeing cars. INSIDER 53 What is water pairing? Water pairing is in fact similar to that of wine. The acidity, sapidity, structure, lightness, mouth feel, balance and finish that define the profile of the water can affect how well it complements a particular dish or wine. Perfect harmony is needed among the three features of food, wine and water in a dining experience.

We usually pair steak with red wine and fish with white wine; how do we pick the right water to go with these two distinctive pairings? It depends on the style of cuisine. A general rule of thumb would be to pair S.Pellegrino sparkling mineral water with steak and red wine, and Acqua Panna still mineral water with fish and a glass of crisp white. S.Pellegrino is slightly acidic and sapid with medium-sized bubbles, and is thus best matched to food and wines that are structured, complex, and have full persistent flavours. On the other hand, fish is usually prepared with less intense flavouring so it would go well with a still water like Acqua Panna, which is balanced, soft and smooth.

How about dessert? For bitter sweet desserts such as dark chocolate, Acqua Panna is the best match. S.Pellegrino pairs perfectly with juicy sweet desserts such as a summer fruit galette.

I

t’s easy to be enchanted in Porto. Perched on the cusp of the petulant Atlantic, at the mouth of the Douro River, Portugal’s ancient wine trading hub has always been a city that knows how to linger in the hearts of visitors. As late afternoon sun baths the 17th century Mosteiro da Serra de Pilar in honey-hued light, and dazzles off the intricate

ironwork of the Dom Luís I Bridge, the shadows of Porto’s ancient riverfront merchant houses lengthen below, their pastel facades aglow. The al fresco seafood restaurants that line both sides of the Douro – Porto proper to the north and Vila Nova de Gaia to the South – are packed with locals and travellers enjoying the late summer warmth, while on the timeless waters of the river, pleasure boats and ferries crisscross in our wake. It’s a postcard perfect beginning to my 500-kilometre 11-day journey up and down the Douro River valley, the heart and soul of northern Portugal and a historic trading route for the region’s world-renowned port wine industry. It was down the winding Douro that wine from its terraced vineyards would be shipped to Gaia on traditional rabelo sailing boats, thus evading the heavier taxes across the river. Many of the original wine merchants still have expansive operations on the south bank, narrow cobblestone lanes running down the steep slopes between the wineries’ towering, centuries-old walls. On the river front several rabelos, complete with prop casks, still ply the Douro, carrying camera-toting tourists rather than tawny or Tinta Roriz. Port helped put Porto on the map, and the Douro made it happen. The Romans planted the first vines in the valley’s shale-encrusted hills over 2,000 years ago, and by the 15th century English and Scottish merchants had begun shipping the robust, full bodied wines of the Upper Douro down its waters to the Atlantic and on to Britain.

In Salamanca, at the half way point of our journey, we sample Ibérico cured meats and locally-crafted cheeses at the cathedral-esque Abastos Markets, before exploring the Spanish city’s captivating Museo de Art Deco y Art

blue and white tiled facades at the cavernous São Bento railway station. By late afternoon we’re saying goodbye to Porto, cruising east under the guise of the expansive Episcopal Palace and dipping beneath the many bridges - the Ponte do Infante, Gustave Eiffel’s Ponte Maria, and the Ponte de São João railway arch - that leap the deep river valley. Sun worshipping tripeiros (as the locals like to call themselves) wave from the many beaches which line the river as the Unesco-listed city centre is replaced with bucolic riverscapes punctuated by weathered family estates. Our journey has begun. Each day on the river is different; at times we cruise, passing through towering river locks and between vertiginous, honeycombed cliff faces. At others we leave the ship to explore the region’s complex history. In Guimarães we venture down cobblestone streets to explore the beautifully-preserved halls of the 500year old Ducal Palace, the ancestral home of the first Dukes of Braganza. In Lamego we visit the stunning hilltop sanctuary of Nossa Senhora dos Remédios, a twin-towered 18th century church famed for its blue and white plaster interior, before walking the 600 ornamental steps down to the town’s vibrant main square. After berthing in Peso da Régua late one afternoon, we learn about the production of local wines at the beautiful, riverside Museu do Douro, before sipping tawny port-laced cocktails on the terrace to a backdrop of traditional Portuguese Fado guitar. With the sun dipping behind hills of endless vines, and the music flowing down to the bustling riverfront, it’s an enchanting way to end a day on this extraordinary waterway. Scenic’s varied excursions not only map the Douro Valley’s past, but also its future. We learn how Cistercian friars lived in the 12th century with a visit to the site of the Mosteiro de São João de Tarouca, www.jetsetter.hk

There’s a true sense of becoming part of the locale, rather than just enjoying a series of fleeting moments as a visitor. This immersion continues with the ship’s sensational dining opportunities. IceHotel Since 1989, IceHotel in the northern Swedish town of Jukkasjärvi has gathered international designers each winter to build an innovative hotel from Torne River ice, which melts upon the arrival of summer. Over four hours you’ll enjoy the best of Switzerland’s mountainous heart, from rushing alpine rivers and sheer rock faces to lush forests and man-made marvels like the majestic Brusio Circle Viaduct over the Poschiavo Valley. On one of the steepest adhesion railways in the world, travellers will pass through 55 tunnels and across 196 bridges as they climb to the Bernina Hospiz at 2,253 metres. Operated with modern carriages, this is a truly memorable day trip but true train buffs might like to book ahead for the historic Bernina Pullman train, pulled by the endearing ‘Crocodile’ locomotive.

Linking Lucerne with Locarno as it crosses the Swiss Alps, the line takes its name from the Swiss folk hero (an archer with a unique approach to childhood nutrition). If you’re travelling from Lucerne, you’ll travel the length of its namesake lake, a stunning patch of water wreathed on both sides by towering peaks, on a beautifullypreserved paddle steamer, which will stop at quaint waterside villages before arriving at Flüelen after just three hours. From there it’s on to a panoramic SBB train which takes the acclaimed Gotthard line, with its many spirals and tunnels, up the Reuss Valley and through the famed Gotthard Tunnel, emerging in the canton of Ticino. If heights aren’t your thing, travel on the ultramodern GoldenPass Panoramic Express through

Interkalen and Zweisimmen between Lucerne and Montreux. In addition to some of the best alpine and lake landscapes in Europe, this is especially good for travellers bound for Geneva or Zurich’s international airports. As well as the cities of Bern and Lausanne, both great for day excursions, the GoldenPass Panoramic Express meanders through the Brünig Pass, around the Giessbach waterfalls, and amongst the ancient villages of Interlaken. While you’ll need to change trains along the way, this is a route that has a little something for everyone and shouldn’t be rushed. For a real perk book one of the coveted seats in GoldenPass Super Panoramic Express, a glass bubble above the driver’s compartment. Last but not least, the Voralpen-Express connects Lucerne and St. Gallen, famed for its Unesco-listed abbey precinct. The route skirts Lake Zurich, cruises among the soaring peaks of the Schwyzer Mythen, makes its way through the deep valleys of the Pilatus Mountains, and across the high Rothenthurm moor, before chugging across the Sitter Viaduct, the highest in Switzerland. Travellers pass through the ‘rose town’ of Rapperswil, steam around the lakes of Zug and Lauerz and over the dam which separates the Obersee from Lake Zurich. With aspirations of shrugging off its low-cost carrier persona, Hong Kong Airlines is investing millions in its product, both on the ground and in the air, discovers Maggie Chooi on a recent trip to Bali. that’s well suited to both individual travellers and couples. My window seat had plenty of privacy, a large personal monitor, an oversized dining tray which folded down from the seatback in front, and plenty of space for personal items. At 20.5-inches wide, and with a pitch of 72-inches, the seat was able to convert into a 180-degree lie flat bed, and is on par with those found in the premium cabins of many leading airlines. Crew served juice and water, and dished out menus in preparation for our 5 hour 30 minute daytime flight. Unfortunately after boarding the captain announced a 45 minute delay.

The Flight

Background Based in its namesake city, Hong Kong Airlines, a Skytrax 4 star airline, currently flies to over 30 cities regionally, and recently expanded its network to Australia and New Zealand. The carrier operates a fleet of 16 A330 aircraft and 11 A320s, and has recently moved to compete head-on with fellow Hong Kong airline Cathay Pacific and its regional subsidiary Cathay Dragon.

Check-in/Lounge I checked in at Hong Kong International Airport’s Terminal 1, where the check-in process was remarkably efficient and professional. After passing through security I made for the airline’s signature lounge, Club Bauhinia, located adjacent to gate 23. This lounge is the spearhead of the airline’s efforts to attract more business and premium passengers; opened in 2014, it’s a modern, well-staffed and well-designed space spread over 500sqm. There are dedicated work stations and dining areas as well as lounges with views across the tarmac. I took a corner, ordered some made-to-order eggs and dim sum before my mid-day flight, and made myself a Bloody Mary from the full bar set up. The lounge is open to business class passengers as well as gold and silver members of the airline’s Fortune Wings Club. The lounge is also convenient for the transfer train to the airport’s Midfield Concourse Terminal, from where many Hong Kong Airlines flights depart.

After takeoff, crew served drinks among the ten passengers in business - I can only assume they’re not used to serving alcohol as my requested champagne took a few reminders until it arrived and then getting a refill proved challenging. However the airline does serve the iconic Hong Kong milk tea which is a plus. Lunch started with black and white sesame encrusted tuna with wasabi mayonnaise and a cucumber salad, which was beautifully presented on white china, followed by a choice of Coq au Vin with potatoes and seasonal vegetables; deep fried prawns in Chinese ‘capital’ sauce with egg fried rice; or braised bean curd and fungus in soy sauce with jade rice. The tuna was light and refreshing and the prawns were well cooked but a little heavy on the sauce (and the portion could have been a little larger). Although there was one white and one red wine on offer I stuck with the Gonet-Medeville Blanc de Noirs Premier Brut NV champagne. The flight time to Bali is perfect for a good meal and at least one good film. Although the seat features a large monitor and comfortable headphones are offered to business class passengers, the selection on Hong Kong Airlines’ entertainment system was very limited, with a rather curious selection of films in Chinese and English, so it might be worth bringing your own tablet or laptop, for which there is ample room. As the cabin was blissfully quite (read no kids) and I had plenty of room, I decided to get some work done as we crossed the South China Sea. We descended into Denpasar, slightly behind schedule, but I was refreshed, well rested, and very comfortable.

Summary Hong Kong Airlines has weathered some publicity storms over the years and is still struggling with consistency across its fleet as it invests in both staff and hardware, but this flight to Bali, with its cheerful crew, comfortable medium-haul cabin, and good value for money, promises great things in the airline’s future. Newly opened French deli and restaurant Cochin brings the essence of La Belle Époque to Central Hong Kong. By Nick Walton

I

t’s a rainy, moody evening when we visit Cochin, the city’s newest French enclave and the latest project by acclaimed chef Renaud Marin (formerly of Upper Modern Bistro and St. George). We couldn’t be more pleased. With bright, welcoming interiors in naked pine and blue tile, a humming, welcoming vibe from the packed dining room, and a menu that’s heavy on

comfort, the storm is the perfect backdrop for Cochin’s elegant yet unpretentious French cuisine. There’s something for everyone at Cochin, which serves three squares a day. At one end of the main dining room are ranks of fridges, part of Cochin’s delicatessen offering, which includes top-grade charcuterie, cheeses by the Marchand Brothers, breads and pastries by Gregoire Michaud, and a raft of imported pâtés, tarama, caviars, and homemade condiments. At the other end of the restaurant a pint-sized cocktail bar serves a menu heavy with vermouth and pastis-laced concoctions echoing the golden age of Parisian grandeur. But we skip both, and instead take a perch between floor-to-ceiling windows and the open kitchen, at the heart of the action. We kick off with easy grazing plates; the beef tartare with smoked sardines, pickled egg yolk and avocado, served with crisp bread, is a sizable starter that should come with a public health warning – “could be addictive”. It’s silky and yet has the firm bite of quality handchopped beef, the sardines adding a lingering saltiness that’s bound

A LENS TO THE PAST

T

he newest addition of the Smithsonian, the National Museum of African

American History and Culture (NMAAHC), has opened on Washington D.C.’s National Mall, revealing the rich history and culture of African Americans, and illustrating their role in shaping the nation. The nine-storey

museum features the Contemplative Court - a light-filled water feature wreathing a dramatic oculus; the Central Hall, exhibition galleries, and a series of “lenses” framing magnificent views of the Washington Monument, the White House and other Smithsonian museums within the area. A total of 11 inaugural exhibitions feature more than 34,000 artifacts that illustrate the most influential African American stories through American history, from a segregation-era Southern Railway car; and Nat Turner’s Bible; to Michael Jackson’s fedora; and a recreated slave cabin from Edisto Island, not to mention a multitude of artwork by African American artists like Charles Alston, Elizabeth Catlett, Romare Bearden and Henry O.
