On June 21, the Summer Solstice arrives to mark the beginning of summer from the astronomical perspective. It is defined on www.britannica. com as the “two moments during the year when the path of the sun in the sky is farthest north in the Northern Hemisphere or farthest south in the Southern Hemisphere. At the summer solstice, the sun travels the longest path through the sky and that day therefore has the most daylight.” Beyond the science, the Summer Solstice is also celebrated in many cultures around the world. The pagan origins evolved to having religious significance commemorating saint’s day, but now there are also many secular festivities. Wikipedia provides some particularly interesting examples: • In Austria, it is celebrated each year with a spectacular procession of up to 30 ships down the Danube River as it flows through the winegrowing Wachau Valley just north of Vienna, accompanied by fireworks along the banks and from the hills. • In Brazil, this day represents a celebration of rural life coinciding with the corn harvest incorporating typical clothing, foods commonly made of corn and dancing. • Many towns and cities in Ireland host fairs, concerts and fireworks. • It became the secular National Holiday of Quebec, Canada. • In both large and small cities across Poland, people dress in traditional Polka dress and girls throw wreaths made of flowers into the Baltic Sea or lakes or rivers and the party lasts all night until sunrise. • It is one of the most important civil holidays of the year in modern Sweden – with dancing around a maypole, folk costumes including crowns made of wildflowers and traditional foods. The immigrants arriving to the United States brought their midsummer cultural traditions with them and the summer solstice merriment now occurs in many cities. Here in southern California, Santa Barbara holds a huge event (www.solsticeparade.com) including a festival and parade that draws thousands of revelers. A common theme in Summer Solstice customs is the lighting of a ceremonial bonfire. Sounds a lot like our local summer custom of fires along our beautiful local beaches! As we are all becoming aware of the need to take better care of Earth, it seems very right to celebrate one of the natural cycles of our planet. Teaching Young Children to Save, Spend and Share BY DR. DUSTINE REY
WHEN SHOULD YOUNG children learn to save, to spend and to use money as a form of helping others? Research indicates that children as young as age three can begin to understand the value of saving and spending. By age seven, many children have already developed habits and mindsets for how money is earned and what to do with it. Currently, thirty-five percent of adults in America have debt in collections. Therefore teaching our younger generation how to be mindful consumers, savers, givers and investors is imperative if we are to reduce the amount of debt our future generation creates. Parents are the most influential teachers for their children’s financial behaviors. We can begin creating a healthy mindset by reading books with our young children about the adventure of saving, spending and giving. The book Three Cups, written by Mark St. Germain, details a heartfelt story of a young boy who learns to split his allowance into three cups – Saving, Spending and Charity. Deciding how to use the three cups details the adventures in life. This is a great book for children between ages four and seven. Young children also need to learn that if they really want something, they should wait and save to buy it. This valuable lesson creates a framework for later spending habits and self-regulation. Give your child opportunities to hear the word “no” when it comes to wanting something in a store. Parents can provide simple statements such as, “We are here for groceries and not candy or toys today” or “Do you have your spending cup? Is this how you would like to spend your money? Make sure you have enough.” These repeated confirmations of financial boundaries give children experience in making decisions and waiting- both are lessons of paramount importance.
Additionally, learning about money can be fun. Just like Three Cups suggests, create three artful jars – each labeled “Saving,” “Spending” or “Sharing.” Each time your child receives money for doing chores or as a gift, divide the money equally among the jars (also a great math lesson). Deciding how the money in each jar is spent becomes a meaningful family discussion and sets a tone for independence and the importance of giving back to our community. Most children love to help community causes such as food drives, toys for other children and animal shelters. Let them choose a cause that is important to them and use their “Sharing Jar” money to contribute to something for it. Lastly, make sure you are always consistent. This is a life-long lesson that when taught well early on, it can have impactful outcomes of personal well-being and financial responsibility. “But my teeth are STRAIGHT, why would I need braces?” MANY PEOPLE THINK orthodontic treatment focuses mostly on crooked teeth. While straight teeth are definitely one of our goals, there is much more to your smile than simply well aligned teeth. For comparison, let’s consider a car. An automobile may be beautiful on the outside – nicely detailed, a gorgeous paint job & a shiny coat of wax. But if the engine is faulty,
then the car doesn’t work very well as a means of transportation. Conversely, a beater car may not appear well groomed externally, but with a brand new engine it can function at a very high level. Both parts – the body and the engine – are essential to making what’s in your garage a good car. Just as with cars, your smile and bite are much more complex than just straight teeth. The primary function of your teeth, after all, is to facilitate eating. Even with straight teeth, a bad bite functions poorly and can result in long-term damage to your teeth and your gums. The function of your bite (and your car) is equally if not more important than how everything looks. Summer Sensitive Therapies BY BECKY LARSON
IF YOU ARE looking into some age-
defying treatments and regimens this summer, we would like to shine the light on a few procedures that require a little more caution and planning during these sunny months. Superficial therapies like chemical exfoliation and microdermabrasion provide improvement in skin texture and pigmentation. The exfoliation that they provide can also make your skin sensitive to the sun. So, stay out of direct sunlight for one week after the treatment and wear an SPF 30+ every day. If you have a sunburn
or extra sensitive skin, either of these treatments should be postponed. For treatments like photo rejuvenation and partially ablative lasers like the fractional CO2, it’s in your best interest to avoid these treatments if you plan on lots of outdoor summer activities. These treatments are intended to improve the appearance of sun damaged and aged skin, as well as reducing redness and flushing, even overall texture – resulting in more youthful appearing skin. If you have recent suntanned skin or burned skin, these are not recommended for you.
When planning ahead, make sure you allow for a good couple of weeks out of direct sunlight (especially after the fractional CO2 treatment). Sorry to you beach and golf lovers, the cooler seasons are looking better for you. Common ingredients to have on your radar are retinols – which help exfoliate skin, reduce fine lines, retexture skin and reduce breakouts. Products containing retinol can make your skin photosensitive so it’s best to use those products at night. If you do apply them in the morning, be sure to use a sunscreen of SPF 30+ and be cautious of your sun exposure. Stop using retinols at least one week prior to any chemical peel or microdermabrasion because the results can be more aggressive than beneficial in those circumstances. Some great alternatives for an overall refreshed look include injectable fillers – to reduce fine to moderate lines and volume loss – and advanced radiofrequency technologies that induce collagen contraction without damaging the epidermis for tighter, firmer skin. If your skin is too sensitive for retinols this time of year, then try transitioning to azelaic acid based products; they’ll still provide you with some exfoliation, but will be gentler on your skin when enjoying the outdoors. A Father's Day Tale BY BARBARA MCCARTHY DID YOU KNOW that the latest 2008 figures from the U.S. Census Bureau counted 70.1 million fathers in the United States?* There were an estimated 24.7 million married fathers with children under the age of 18 years old in 2013.** And let’s not forget about the 2.0 million single fathers counted that same year. While single fathers make up only 17% of single parents according to the 2013 census, it’s a single father who is responsible for bringing about Father’s Day. Like Mother’s Day, Father’s Day has an old, rich history with a memorable story behind its inception. More than 100 years ago, in the early 1900s, a little girl named Sonora Dodd was sitting through a sermon in her local Spokane, Washington, church. The sermon was no ordinary sermon though, because it happened to be Mother’s Day. At that time, Mother’s Day had been regularly celebrated for about 10 years, but not yet made into a national holiday.

Sonora Dodd patiently sat through the Mother’s Day sermon but could only think about her father. You see, it was Sonora’s father who had lovingly cared for her and her siblings since her mother had passed away during childbirth. During that sermon Sonora decided fathers deserved a dedicated day as well as mothers. Since her own father’s birthday was in June, she decided to ask local churches to help her spread the word about a day dedicated to fathers. That same year in 1910, the very first Father’s Day was celebrated. Fast forward six years, during which the idea of Father’s Day spread like wildfire, causing people to petition for a formal holiday to be declared. President Woodrow Wilson, the same president who declared Mother’s Day a national holiday, gave the declaration the green light, but somehow forgot to sign the proclamation. It wasn’t until eight years later, in 1924, that President Calvin Coolidge was inspired to finally take the holiday national in order to “establish more intimate relations between fathers and their children and to impress upon fathers the full measure of their obligations.” Although Coolidge’s intention behind making Father’s Day a national holiday seems very revealing on his part, I think we should remember Sonora Dodd’s intention behind memorializing fathers and celebrating the other half of our ancestry. oth Mark and Michele are grandchildren of Polish immigrants. Mark’s family settled in coal mining towns of West Virginia. He is the youngest of three children with one sister and one brother. Michele’s family landed in southeastern Michigan. She is the youngest of eight kids, with six sisters and one brother. Their stories, from humble beginnings to battlefields and boardrooms, serve as shining examples of the American Dream at its best. According to Michele Parrish, “We are ‘that’ reunion story you sometimes hear about, but with a twist. Mark and I originally met in 1993 as graduate students in a challenging dual masters degree program at the Massachusetts Institute of Technology called Leaders for Global Operations.” Their paths first crossed at the orientation in June of 1993. It was a small and close-knit
group of students, but they really didn’t get to know one another well during that time. In fact, Mark knew Michele’s roommate much better as they partnered on several class projects. Mark adds, “Now, roll the clock forward through nearly a decade of distance. In 2002, MIT’s Sloan School of Management invited all graduates to attend the celebration of its 50th anniversary. Independently, we both decided to go to the event. Those in attendance sought familiar faces, and we were no exception. We enjoyed one another’s company throughout the conference’s sessions.” This milestone event was the beginning of a personal and professional partnership dedicated to improving businesses across the globe. Following that Sloan reunion, Mark and Michele kept in touch despite the miles – Mark living in Atlanta and Michele in Phoenix. As their relationship
developed, they continued to discover more and more in common. After declaring his intentions of courting Michele to her father, Mark made a leap of faith and moved to Phoenix the next year. Later that same year, he proposed to Michele at the altar of their church. Michele searched for the perfect wedding gown, but nothing in the stores was anything like what she had in mind. Instead, she decided she would have one made and was determined to locate the local designer who was known for replicating spectacular dresses from the Oscars. Without more than a first name, Michele eventually tracked the designer down and co-designed her dream gown. The couple was wed on February 8 of 2004. The festivities were held on a cruise ship in the port of Honolulu. Michele said, “Mark actually planned every detail of the wedding. It was perfect in every way!” Although Mark and

Michele wanted to have a very private and intimate event, things evolved somewhat differently. It turned out that six weddings were being held on the boat that day. They decided to expand their celebration by hosting a party for all of the newlywed couples in their spacious stateroom. In addition, the wedding dress designer was so pleased with the outcome of their work together that Michele and the wedding dress became featured on her website. She also asked them to share their experience and photos for a local news feature on destination weddings. So, their wedding eventually became a very public affair! During their honeymoon, Mark and Michele decided to craft a Mission and Vision Statement as a foundation for their life together. “We felt so blessed to find each other and become life partners that understood each other at a deep level. The intent of the Statement was to build our relationship with purpose,” shared Michele.“It was important

his Bachelor of Science in Mechanical Engineering from West Point as well. After graduation, Mark was commissioned into Army Aviation. During his ten years of uniformed service, Mark was deployed in five countries on three continents. As an AH-64 Apache pilot, he served in Operations Desert Shield/ Storm where he was awarded the Bronze Star and Air Medal for Valor. After leaving the Army, Mark entered the Leaders for Global Operations Program, earning his Masters of Science in Management and Masters of Science in Mechanical Engineering. Following his graduate studies, Mark’s civilian career started with HarleyDavidson, where he quickly rose to the position of Corporate Director of Vehicle Assembly. Next, Mark joined Interface (a floor covering manufacturer) as the Vice President of Global Manufacturing Strategy. He then accepted a position with Fenway Partners (a private equity firm) as Director and Chief Operating Officer for MW Manufacturers (a manufacturer of residential windows and doors). Mark transferred within Fenway’s portfolio to the position of Executive Vice President and Chief Operations Officer of The Simmons Companies based in Atlanta, Georgia. While there, Mark had the opportunity to meet with President George H.W. Bush. As a result, he was charged with overseeing the installation of Simmons mattresses at the White House and on Air Force One. Mark was given a rare White House tour – including visits to the Lincoln Room, the Queen’s Room, and the presidential elevator. He’ll never forget seeing a stunning mural of West Point in the Rotunda Room. In 2003, Mark left Atlanta for Phoenix to be with Michele. There he founded Parrish Partners, consulting for a number of companies requiring operational improvements or assistance in organizational development. Additionally, he advised Goldman Sachs, doing financial analysis and research. A wonderful opportunity prompted the couple to relocate to Ohio, where Mark accepted
the position of President and CEO of Deceuninck North America (a subsidiary of a Belgian-based company). Mark next served as President, CEO and Director of the 82-year-old and family-owned Stuart Dean (the country’s preeminent restoration and preservation company headquartered in Manhattan, New York). Given its numerous North American metropolitan locations, Mark and Michele were able to choose their residential location. They chose Orange County, California – and Talega in particular. Today, Mark is President of Igloo Products Corporation (manufacturer of the world’s leading brand of consumer and commercial coolers) with
full responsibility for the operations of Igloo and its newly acquired subsidiary, Cool Gear International. Michele graduated from the University of Michigan with a Bachelor of Science degree in Industrial and Operations Engineering. One of the most difficult life decisions for Michele was choosing her first job out of college. In addition to an offer from Intel where she had been a summer intern, Michele had offers from two major consulting firms in Los Angeles. Ultimately, she chose Intel because she could sense that this company was going to change the world. Michele says, “I grew up professionally, so to speak, at Intel and stayed for

15 years. The opportunities were amazing. Those were exciting times and I felt fortunate to be at the center of the tech world during the Internet boom years.” During this time, Michele served in a number of critical engineering and manufacturing leadership roles for the company. She became a sponsored Intel fellow for the Leaders for Global Operations Program, and simultaneously with Mark completed graduate studies at MIT resulting in both a Masters of Science in Management and a Masters of Science in Material Science. After graduation, Michele took an international assignment with Intel and lived in Malaysia for six months to lead a key technology transfer. She observes, “This was a great life experience and gave me the opportunity to travel throughout Asia.” Intel’s global operations also enabled Michele to work with a number of different country locations over time and she often led large multi-site forums. One of her favorite memories is representing Intel at the President’s Economic Forum in Waco, Texas. At that event, she had the honor of meeting a President – George W. Bush – along with several Fortune 500 CEOs. During her last four years at Intel, she led a 1,000+ person manufacturing organization responsible for making cutting-edge microprocessors. She also led a large team during the rapid and successful conversion of a factory to state-of-the art production facility. Michele reflects with a smile, “It was a beautiful way to cap my fifteenyear corporate career.” Michele has always been passionate about personal development and human potential. From the age of 13, she started reading self-help books. By her early 20’s, she was routinely immersed in business books and seminars of one kind or another. Michele always enjoyed leading people, particularly developing her teams and their managers. At a course in San Francisco, she became enamored with the field of coaching and the transformational impact it has for individuals and teams. She decided
to pursue her corporate coaching certification and began applying the concepts. After the move to Ohio, Michele decided to pursue her new passion and satisfy her entrepreneurial bug. Parrish Partners was reinvented. She started coaching executives independently and began developing her own leadership models, tools and resources. During her time in Cincinnati, Michele was recruited to be an SBI SCORE counselor. In this non-profit role, she coached small businesses to start-up and be successful and said, “I also enjoyed partnering with fellow SCORE counselors, who were most often very successful, retired small business people.” She also started an alumna group for the MIT Leaders for Global Operations program. The group has now been running for eight years. Michele has grown Parrish Partners in both size and scope, with clients including a number of Fortune 100 companies and leading privately held companies. She has integrated executive coaching, business consulting, executive search and leadership training into the service offerings – resulting in a full suite of services to grow businesses, teams and individuals. It’s clear that Michele feels a purpose and passion for her work and is honored to be a trusted advisor and coach for executives across the country. She is a speaker on the topics of leadership and
entrepreneurship, serving as a guest lecturer at several universities across the country. Coming full circle now, Michele has integrated lessons learned from industry with decades of studying and practicing leadership. One of her colleagues observed, “It seems like you are working in your wheelhouse.” Michele agrees. Mark’s experiences provide the backdrop for speaking engagements on the topic of Building Cultures of Commitment®. He describes, “It’s a study of the art and science of leadership. Based on very specific execution principles, the goal is to inspire leaders to release untapped potential. Michele coaches cultures of excellence and instills that mindset with companies of all sizes. What I present is a set of disciplines leading to successful execution.” Michele is also passionate about the Casa Romantica Cultural Center and Garden and has been on the Board of Directors for over two years now. She discovered Casa Romantica shortly after the family moved to Talega, falling in love with the mystique and beauty of this historical treasure. Michele and Mark recently attended a black tie event at the Casa with a performance by world-class pianist Garrett Olsson. It was a remarkable evening of fine music, fine dining and fun with friends. a few of their favorite annual Casa events. Michele said, “I think the Casa is such a special treat to have right in our backyard, and I hope more Talega residents will come see all that the Casa has to offer.” Savannah attends kindergarten at St. Anne School in Laguna Niguel. She loves art, math and science. She says she wants to be an artist who lives in Paris when she grows up. Savannah is enamored with big numbers, like Googol and infinity, talking about them every day. She is always planning parties and sleepovers. “Like her mother, Savannah loves to entertain and is usually focused on planning and decorating for the next holiday,” shares Mark. In the warmer days, Savannah enjoys spending time at the Talega pools (the Saluda pool is her favorite). She enjoys playing with her multitude of friends – here in Talega, in other neighborhoods of San Clemente and at St. Anne. The Parrish family shares their home with two “dids”, their hybrid word for dog-kids. Puff is a 10-pound Maltese and his little sister Coco is a 5-pound Teacup Yorkshire Terrier. Michele offers, “One of their favorite activities is to walk down Del Mar, lapping up attention in the shops and from people passing by.” “Of all the places we traveled in the world, we chose San Clemente to live,” reflects Michele. “I used to visit family here in Orange County during my teenage years. Although the journey took a windy path through many places along the way, I always knew I
would end up living here – it was destiny.” Michele cherishes the diversity of the places that she has lived, but resonates best with southern California and especially San Clemente. Mark chimes in, “San Clemente seems a lot like my home town. The scenery may be very different but the small town feel is much the same!” After six years in Ohio, the couple rented in Careyes for over a year. Mark points out,“We wanted to make sure we knew San Clemente well before making a purchase commitment and indeed we fell in love with it. In December 2012, we moved into our current home in Alta. Michele likes to tell people that we bought a master bedroom closet, and the rest of a house came with it! If the large closet was our primary reason for purchasing our Talega home, then certainly the views are a close second.” Michele observes, “The connection to nature is truly astounding. Being in Alta we feel we are fortunate to face the trails and a natural preserve, which has amazing ocean views. The arc of the sun year round fuels the most amazing sunrises and sunsets.” “We cherish our community in Talega – with our wonderful, fun and sincere neighbors, the amazing pools and parks and so much more to mention,” Michele emphasized. Michele has enjoyed the Talega Mom’s Club – which she describes as “an amazing network of talented, giving and gracious women.” Savannah has enjoyed Singer Dance classes held at the club. Mark enjoys an occasional round of
golf at the Talega Club. Mark contributes, “Mostly though, we all enjoy casual dinners and get-togethers with friends and neighbors. We are a very patriotic family, and it makes us proud that our community so strongly supports the men and women in uniform at Camp Pendleton. They give special thanks to their next-door neighbor and sitter, Angie. Michele attests, “Angie lives up to the angelic meaning behind her name. She is Savannah’s favorite sitter and has helped the family out in a number of pinches. Angie and her family are the epitome of perfect neighbors!” The Parrish family travels each year during the days between the couple’s birthdays. This year, they are considering a return to a favorite spot – Aruba – because the climate makes it the Caribbean equivalent of being at home. Other favorites include Florence, Italy and Paris, France. When they want to get away for a few days at a time, Sedona and La Jolla are the top local choices. They also visit family in Michigan and West Virginia, with a gathering for the Army-Navy football classic being an annual tradition for Mark’s family. Mark and Michele also enjoy visiting Boston and MIT each year. Michele explains, “This reconnects us with our alma mater and those magical moments when our relationship first began to blossom. Given Mark’s new role with Igloo, Houston is our new place to explore. But coming home to San Clemente is always the best – there is no place we would rather live!”

Strawberries are among the most valued fruits. They are delicious, healthful and add a splash of color to any recipe. Sure to please the taste buds, these beauties are thought by many to be a sort of super-fruit. Health Benefits In a recent scientific study, strawberries were ranked third for the amount of antioxidants per typical serving. It is, therefore, no wonder that strawberries have a number of health benefits for those who consume them on a regular basis.
Almond Crusted Chicken with Strawberry Spinach Salad & Balsamic Reduction
Serves 2 | Calories 450

1/4 cup panko 3 Tbsp sliced almonds chicken breast halves 2 1 shallot 1/6 cup chicken broth 2.5 Tbsp strawberry preserves 3.5 Tbsp balsamic vinegar sprig rosemary 1 2 cups spinach 4 strawberries 1/8 cup feta cheese 1 garlic clove 1/2 tsp brown sugar
PREPARE YOUR INGREDIENTS 1. Wash and dry your produce. 2. F inely chop or grind all but ¼ of the almonds, and place in a large bowl with the panko breadcrumbs, season with salt and pepper, and toss. 3. S mall dice the shallot. 4. R emove rosemary leaves from stem and mince to make ½ Tbsp. 5. Thinly slice the strawberries. 6. Mince the garlic. 7. Pat the chicken dry with a paper towel.
COOK THE CHICKEN: Heat 1 tsp olive oil in a medium pan over medium heat.Coat chicken with a little olive oil and place in bread crumb mixture coating evenly. Shake lightly to remove excess bread crumbs. Cook chicken 5-7 minutes per side or until cooked through (add 1 tsp additional olive oil when you flip sides). Set aside and cover to keep warm. MAKE THE VINAIGRETTE AND SALAD: In a bowl, whisk together ½ Tbsp. of balsamic vinegar, brown sugar and garlic. Taste and adjust to your liking with salt and pepper. Finish by whisking in 2 Tbsp olive oil. In a bowl, toss together the spinach, sliced strawberries, remaining sliced almonds and crumbled feta. MAKE BALSAMIC GLAZE: When the chicken is done cooking, heat 1 tsp olive oil in the same pan and cook the shallots until tender, about 2 minutes. Stir in the broth, preserves, remaining balsamic vinegar and the rosemary. Bring to a boil and then reduce heat to a simmer for 5-6 minutes or until thickened. Taste and adjust to your liking with salt. PLATING: Serve an even amount of salad on each plate and drizzle with balsamic vinaigrette. Place a bit of the balsamic glaze on each plate and top with the chicken. Pour remaining glaze over the top from the pan and enjoy!

Ingredients: 1 can garbanzo beans, drained & liquid reserved 2 TBS tahini (sesame seed paste) 1 clove garlic 2.5-3 TBS fresh lime juice 1/2 tsp liquid sweetener (agave, maple syrup, etc.) 1 tsp smoked paprika 1 tsp sea salt 1/2 tsp cumin 1/8-1/4 tsp cayenne pepper Reserved bean liquid (from garbanzo beans) Directions: Add all ingredients to blender or food processor.*

This is a wonderfully flavorful hummus, much lower in fat than store-bought varieties since there is no oil, and less tahini. I listed ranges for a few ingredients so use what you think would suit your tastes best (i.e. for more heat, use 1/4 tsp cayenne; it’s pretty mild with 1/8 tsp). If you don’t have smoked paprika, use regular and add 1/4-1/2 tsp liquid smoke.
Start with 1 TBS reserved liquid, and add more depending on how thick you like your hummus. *I find the end result is creamier when using a high-powered blender that comes with a tamper (i.e. Vitamix), but a food processor will work too; just be sure to stop several times to scrape the sides.
