ugar Factory Bar & Grill at Paris Las Vegas, has a hot executive chef in the house. Matthew Piekarski was recently declared Las Vegas’ Hottest Chef in a local publication’s Hot Chef competition. This distinction has not gone to the Wisconsin-bred chef’s head: Piekarski is busy in the front and the back of the house at the popular American eatery on Las Vegas Blvd. “I’m a steakhouse guy. I’m simple and solid,” says Piekarski, who was involved with the openings of high-profile restaurants like Stack Steakhouse at the Mirage and Eva Longoria’s Beso Steakhouse. “I was asked to come in and help with reorganizing the back of the house at Sugar Factory. Then they made me executive chef. What sets us apart from other chain restaurants is we prepare fresh food. No chemicals. We know exactly where VEGASANYWHERE

everything is coming from because we make it fresh in the house. I’ll mash my own potatoes not buy them in a bag.” Piekarski’s philosophy is to give customers what they want while also being creative. Three of his latest menu additions are Banana Bread French Toast, the Fat Elvis Waffle and Carrot Cake Pancakes. “Vegas has always been at the top of excesses. What better place than breakfast to represent that? French toast is kind of run of the mill but when you grill banana bread it gets that bit of char and smoky flavor. “The Fat Elvis Waffle is so Vegas. We took a peanut butter sandwich and deep fried it, then put bacon and peanut butter mousse on it. I don’t serve syrup with my pancakes or waffles although it’s readily available. I like each dish to stand on its own so you can taste the essence of the dish.” Another signature dish is the house hamburger that’s served on a white chocolate bun. “It’s delicious! Some are hesitant to try it but the vast majority who do really enjoy it.” Sugar Factory Bar & Grill is open 24-hours a day, seven days a week. “We never stop,” says Piekarski. “On a busy day we serve about 3,000 people. We run pretty much the same menu at night as in the daytime for people who want to eat at 3 a.m. We want people to come back. There’s no room for complacency and I don’t like to be stagnant. We’re moving food forward here.” Another innovation at Sugar Factory is the liquid nitrogen cocktail cart. “The cart is a lot of fun,” says beverage manager, Greg Waters. “It adds more personal service at the customer’s table. I opened my Sugar Factory Bar & Grill entire specialty cocktail list to it.” 3655 S Las Vegas Blvd, Waters has been in the cocktail busi702) 331-5100 ness for over 22 years in a variety of vensugarfactorylv.com ues; nightclubs, country clubs, stadiums and restaurants. “I have the best job on the planet here at Sugar Factory,” he claims. “I get to play with cocktails all day and watch the expressions on people’s faces when they drink them.” While many of the cocktails, including the renowned Sugar Factory goblet cocktails, are generally sweet, Waters has a variety of infusions that are popular as well. “We infuse vodka with garlic, jalapeños and cilantro. Another one that I do is a pineapple vodka that we put into a simple Cosmopolitan. It’s one of my top sellers. I like to think we also make one of the best Bloody Marys on the Strip.” According to Waters, a new trend in the cocktail industry is craft cocktail mixology and personal service. “We’re thinking about opening a mixology bar. One of the ideas for that is the Lab Assistant: you name your liquor and the flavors you want and the mixologist behind the bar will craft a cocktail around that. It’s just more personalized service.” The innovative beverage manager has crafted a personal cocktail favorite. “I’m a big whiskey drinker. I’m not a fan of the popular Fireball drink, which is cinnamon schnapps with cinnamon infused whiskey. But I took a 1910 rye and infused it with cinnamon and it’s amazing! It’s not on the menu. It’s an in-house specialty for those in the know.”
