INGREDIENTS

Wraps

▪ Pork Gigot Roast, sliced thinly or

▪ Irish Rack of Lamb, deboned and sliced thinly

▪ Wholemeal Wraps

▪ Tzatziki

▪ Red Pepper and Jalapeño Hummus

▪ Baby Gem Lettuce

Tomato cucumber salad

▪ 2 Tomatoes, chopped

▪ 1 Red onion, sliced

▪ 1/2 Cucumber, diced

▪ 10 g Fresh Dill, chopped

▪ Juice of 1/2 Lemon

METHOD

▪ Mix the salad ingredients together

▪ Heat the wraps under grill or in microwave

▪ Smear 2 tbs of hummus on the wrap, top with leaves, meat, tzatziki and tomato cucumber salad and fold over to serve.

▪ 1 tbsp Olive Oil

▪ Salt and Pepper to taste
