Nature’s Oasis Executive Chef, Charles Childers, is a culinary expert who is internationally trained in Jamaica, Fiji, Las Vegas and 100-plus kitchens, learning from as many chefs as possible. Childers moved to Durango in 1997 and worked as a sous chef for several well-known restaurants. He has made multiple television appearances for local stations and is a Cooking Matters (a national nonprofit with over 80 branches in the country) Hall of Famer. Childers attended Community College of Southern Nevada Culinary School.

The Brewer’s Showcase allows breweries to engage with the public and offer samples of classic brews and experimental recipes. The Showcase hosts five tasting sessions with 21 breweries. Following the Mountain Chile Cha Cha 5K and 10K race at Yamaguchi Park in Pagosa Springs is a cultural and culinary celebration. In addition to the maker’s market, art walk and free children’s activities at the Museum of Navajo Arts and Culture, the event includes an incredible chile cookoff along Main Street in downtown Farmington.

Oct. 12

The Apple Days festival celebrates our region’s abundance and appreciation of apples, helping to feed the community, reduce waste, and save the bears. The community apple harvest will take place from Oct. 5-10. After the apples are harvested, join the Good Food Collective at the Durango Farmers Market for its Apple Days event 9 a.m.-1 p.m. Oct. 12, where the organization will process the apples into products such as apple cider and chips. Foraged foods

wild gourmet ingredients

There’s no shortage of wild food here in the Four Corners, and foraging is a great way to connect with nature while tuning in to something ancient and primal within ourselves. Harvesting and consuming these native plants puts us in touch with our ancestors and allows us a glimpse into the flavors of the past.

Katrina Blair, founder of Durango’s Turtle Lake Refuge, a nonprofit focused on wild foods, education, sustainability and organic land stewardship, said wild foods have an important place in diets.

“The value of eating foods growing close to our home comes not only in the superior nutrition the wild provides but also in their ability to help us adapt to our local environment.” Blair said. “There is an intelligence in food growing in the wild, and when we ingest those foods, we gain that intelligence, which helps us to become better stewards of the land.”

Ethical foraging

It’s important to remember that foraging isn’t merely about taking; it’s about becoming part of the ecosystem. Ethical, sustainable foraging means never overharvesting, always leaving enough for wildlife, and ensuring that the plant can regenerate again. Take only what you need; a good rule is to leave at least 75% of a patch untouched.

When wild foraging, identify plants with absolute certainty to avoid picking endangered or toxic species. Orion Aon of Forage Colorado said, “I always teach people to be 100 percent confident in their identification before consuming any wild foods.”

Acorns

The Durango area is home to acres of scrub oak, and the acorns they drop each Fall were a staple food source for our indigenous tribes. This foraged food provided reliable nutrition even in hard times, and acorn flour was seen as a dietary staple. According to Blair, acorns can also be used to make nut milk and ice cream or added to any dish that requires nuts.

Cattails

Pass by any stream, pond or irrigation ditch in the area, and you’ll find an abundance of cattails. Their distinctive stalks and cylindrical, furry flowers make them easy to identify, but few people realize that cattails were a dietary staple of native tribes.

In the spring, the young shoots can be eaten by peeling back the outer leaves to access the inner “heart.” In early summer, the immature flower heads can be boiled or steamed and have a flavor similar to corn. The roots can be boiled or steamed during the fall and winter.

Chokecherries

Chokecherries, also known as wild cherry, can be found along many of our rivers and streams. According to The American Indian Health and Diet Project, the chokecherry fruit was so crucial to the Cheyenne and Blackfoot tribes that they referred to it simply as “the berry.”

While raw choke cherries are technically edible, one bite will tell you exactly why they are called chokecherries. However, a sweet and delicate flavor is released when cooked in syrups, jams and sauces.

Juniper

Not many people look at a juniper tree and think, hey, that looks good enough to eat. The tribes of the southwest, however, felt a little differently. Juniper berries often come to mind when people think of gin, but the little faux berries make an excellent seasoning, particularly for wild game. The real culinary secret is in the ash left over from burning the juniper. To this day, the Navajo use juniper ash as an ingredient in many traditional corn dishes.

Mushrooms

No conversation about wild foods would be complete without including mushrooms. Forest fungi have long been a staple in diets throughout history. Here in the Four Corners, the most common types are corals, morels,

Aside from adding valuable nutrients to the Navajo diet, according to Gastro Obscura, “Juniper ash is an alkaline substance, and exposing it to corn initiates a process called “nixtamalization.” Nixtamalization breaks down the outer shell of the corn, not only enhancing flavor, but increasing the amount of absorbable calcium, niacin and vitamin B3.”

chanterelles, hawks wings and porcini, also known as king boletes. Each mushroom has a specific season and habit, so be sure you know what you’re looking for and when. A note of caution: Many mushrooms are toxic, if not deadly. Never consume a mushroom you are not 100% certain of.

Perfect pairings

The craft beer boom has inspired millions of people to look at beer through a new lens. Once relegated to backyard barbecues and ball games, beer is now served alongside gourmet meals. Much like the right wine can make a meal taste even better, beer can bring out the flavors of any food, making it an ideal complement to everything from steak to seafood to salad.

The Brewers Association is an American trade group whose membership consists of more than 5,400 brewers, suppliers and retailers. The group recommends beer lovers follow a three-pronged approach to matching beer and food. It’s worth noting the BA does not view this approach as a 1-2-3 process, meaning beer lovers need not follow the steps in order to perfect their pairing skills.

1. Match strength with strength.

The BA recommends pairing strongly flavored foods with assertive beers and delicate foods with delicate beers. For example, a relatively low alcohol witbier should pair well with light seafood like steamed mussels. Beer lovers who enjoy strong barley wines, which are typically 10% alcohol by volume (ABV) or higher, should find that a strong cheese or dessert matches up well with this overpowering style.

2. Find harmonies.

The BA notes that beer-food combinations typically resonate most effectively when they share some common flavor or aroma element. For example, the deep, roasted flavors of an imperial stout often pair nicely with chocolate truffles.

3. Consider sweetness, bitterness, carbonation, heat (spice), and richness.

The BA recommends that beer lovers look to take advantage of the specific and predictable ways that certain qualities of food and beer interact with each other. For example, malty sweetness can cool the heat, making a hoppy beer with plenty of malt a good choice to pair with spicy food. Pairing the right beer with food can make any night out on the town that much better.
