Here comes yet another issue of Durrah, packed with exciting and interesting findings from the world of luxury! In this issue, we interview Bayan School Chairperson, Dr. May Al Otaibi, who is one of the education sector’s pioneers in the Kingdom of Bahrain. She discusses the school’s commitment to environmental sustainability and shares with us the latest news about their upcoming kindergarten. We also explore the Kingdom’s cultural growth with Bahrain Authority for Culture and Antiquities Director of Culture and Arts, HE Sheikha Hala bint Mohammed Al Khalifa. An artist in her own right, she shares with us her insights on how to maintain Bahrain’s legacy by bridging its past and future cultures. And we have the pleasure of interviewing Karl-Friedrich Scheufele, the Co-President of Chopard. He reveals the passion and technical prowess that has made the Chopard name a leader and innovator in its field. We give art its rightful place in Durrah with two other artists in the magazine, Russian artist Alexander Alexandrovich Shilov who made history

by having his art on the International Space Station, and the extremely talented Diaa Allam, whose modern approach to Arabic calligraphy has not only graced many spaces in UAE, but is also contributing to a revival in the art of calligraphy by introducing it to a new generation. This is just a small taste of what the issue has in store for our dear readers. Durrah would be incomplete without its usual offerings of gorgeous destinations to visit, fine dining establishments to live unforgettable gastronomic experiences, the best of international hotels and spas to truly indulge yourself, and a generous amount of designer brands to enhance your luxury lifestyle. We hope that you are just as delighted in reading our magazine as we were delighted in making it.

Cover Image Diyar Al Muharraq. Rich past. Bright future. With a core focus on the colourful fusion of both traditional and modern elements that make up the Arabian identity, Durrah aims to promote and preserve all of the elements that make the Arabian Gulf so unique. Durrah adopts international standards, however also remains closely connected to Middle Eastern heritage, culture and achievements, all of which are prominently featured.

“More than just an accomplishment

for the school, this is a national achievement for Bahrain.”

Congratulations on winning the 2018 Zayed Future Energy Prize. Can you tell us a little about the project your students created that won them the competition?

There were more than 2,000 submissions from over 100 countries for this edition of the prize. What do you believe are the factors that gave BBS students the edge to win it?

It is a sustainable energy project called Eco Lab 360 that involves installing a 50kW solar photovoltaic system, a 1kW wind turbine, a 25kW/192kWh battery storage system, a greywater recycling system (25,000-30,000 litres/month) and a food waste recycling system (six tonnes/ year) at the school campus. The platform also aims to educate students on sustainable practices and technology, which revolve around five key pillars — reduce, reuse, recycle, raise awareness, and renewable energy. Winning was a very pleasant surprise because we were competing against so many countries. More than just an accomplishment for the school, this is a national achievement for Bahrain. We are looking forward to using the project as a platform to build awareness about environmental and sustainability issues.

I think passion, motivation, and dedication were the biggest factors. The students worked tirelessly on this project; they even came in after school and on weekends. What makes their achievement even more incredible is that they worked on the project during Ramadan while they were fasting. I believe they put in so much effort because they genuinely care about the project and the issues that surround it.

The win demonstrates that your students care passionately about the environment. What steps does BBS take to be more environmentally friendly? In February this year, we built a greenhouse on campus where students of all ages can learn more about agriculture and horticulture. Taking care of

02

000-000. Sh. Mai Al Otaibi D41.indd 15

the plants teaches them responsibility and allows them to see the results of their hard work blossom. The greenhouse, which is 7x12.5 metres, is filled with a variety of fruits, and vegetables as well as, shrubs, trees, and plants. Some of the plants include Ixora, golden ficus, aloe vera, neem, Indian jasmine, caesalpinia, and jatropha.

What other achievements have BBS students accomplished over the years? Can you give us a few notable examples? Many schools have Model United Nations (MUN) programmes, which teach students about diplomacy, international relations, and the United Nations. After many years of hard work, BayMUN became the first THIMUN (The Hague International Model United Nations) affiliated MUN in the country and we hosted the Kingdom’s first THIMUN conference in 2014. The conference has grown to become the school’s biggest event of the year and it attracts students from schools across the island and beyond. Another achievement

was winning the Formula One in Schools Technology Challenge in Bahrain. Our students designed and manufactured miniature race cars out of balsa wood using computer-aided 3D design software. F1 in Schools has helped change perceptions of technology, science, mathematics, and engineering by creating a fun and exciting learning environment for students.

BBS has educated thousands of students since its establishment in 1982. What motivated you to open it back then? My friend Kathleen Acher Kaiksow and I noticed there were no private, non-profit, bilingual, national schools in Bahrain at the time, which is why we decided to start our own. We just wanted to open a nursery that taught both English and Arabic, we had no idea it would grow to become one of the Kingdom’s most prestigious schools. Initially, it was a pre-school for KG1 and KG2 and we only had 40 students. Kathleen left after a year but the school’s success continued to grow, which lead to a gradual expansion of the curriculum and grade levels. The school was a labour of love, built with passion and a strong sense of community, which remains unchanged to this day. Our goal is to develop internationally minded students with confidence in their abilities and a desire to embrace their responsibilities as national and global citizens.

Would you say that your ambitions for the education sector in the Kingdom have been fulfilled? Or is there more to be done? I think the Kingdom’s education sector has come a very long way but there is always room

000-000. Sh. Mai Al Otaibi D41.indd 16

for improvement. By developing curriculums, modernising schools, and improving the quality of teachers, we can ensure that students excel and realise their full potential. In addition, I believe we need to work on developing a stronger sense of Bahraini identity and citizenship. We are incredibly fortunate that His Royal Highness Prince Salman bin Hamad Al Khalifa, Crown Prince, Deputy Supreme Commander and First Deputy Prime Minister, and the Economic Development Board (EDB) are working hard to achieve these goals.

How would you describe the evolution of BBS students from the school’s early days to today? Are there major differences between students back then and now? And are they positive changes? I don’t think the students have changed, but the country’s needs certainly have. In the past, Bahrain’s prominent industries were business, medicine, and finance but the focus has recently shifted to other areas such as engineering, technology, and tourism. The school’s aim remains the same – to prepare students for the jobs of the future by equipping them with the skills they need to excel.

What would you identify as the main obstacle standing in the way of students achieving their full potential today? I think motivation is often the biggest obstacle because students who are unmotivated won’t participate in class, retain information, or learn effectively. At Bahrain Bayan School, all of our students are highly motivated, passionate, and

competitive, which are important qualities both academically and in life.

Can you tell us about the upcoming kindergarten? Is there any unique concept behind it? What should we expect in terms of programmes, architecture, etc.? I’m proud to say it is a state-of-the-art green building, built to the highest standards. There is a garden on the roof where kids can learn about the environment and take daily gardening classes. We are also creating a space where students can learn more about Bahrain’s history, which is painted on the walls in acrylic. We will teach a broad variety of subjects, including theatre, which we encourage from pre-school until high school. We will also teach presentation skills and public speaking, which build confidence and life-long communication skills.

What are the school’s plans going forward? Are there any future plans you can share with us? The school is steering away from traditional learning methods and ‘cookie cutter’ applications, which is why we are implementing an Innovation Hub. The state-of-the-art facility will provide hands-on learning opportunities and technology integration. It will house CNC machines and 3D printers, as well as a fully equipped robotics lab and a Vex Lab. The Innovation Hub will also include a digital Research Centre, which will be open for public membership in 2019. bayanschool.edu.bh

Preserving a Legacy Exploring the growth of cultural mediums with Bahrain Authority for Culture and Antiquities (BACA) Director of Culture and Arts, HE Sheikha Hala bint Mohammed Al Khalifa.

What do you believe can be done to further boost the culture scene in Bahrain? We are lucky to see an evolving art scene in the Kingdom of Bahrain. Art and culture are the backbone of any thriving society, and we in Bahrain have an extensive cultural agenda, both in the government and the private sector. I believe what would allow more growth and structured progress is opening more educational programs that specialise in formal art education. Allowing our youth to obtain degrees in different fields like, art, archaeology, and museum studies would create an immediate positive impact. For me, personally, I am always looking out for young graduates who can join our cultural inclination and help with the progress of our diverse projects and programs. It’s vital to have many fields of the art to be taken as a serious educational path, and later to support, maintain, and progress the cultural and historic fabric of our country.

You are an artist at heart. Do you still dedicate time to your craft amid the busy schedule? Are there any artwork projects you can share with us?

018-020 UCP Sh. Hala D41.indd 18

Art for me is a passion, and I consider myself to be extremely lucky to be able to work in an institution that plays a major role in the development of the art scene in Bahrain. Personally, I feel that my work feeds into my progress as an artist, as I am constantly involved in exhibitions, and publications that focus on art. This line of work allows my growth and exposure to be constant, and it definitely feeds into my personal creative expression. My days could get very hectic, and my work obligations can be very time consuming, but I have maintained a habit to keep an art journal with me everywhere I go. This allows me to write, sketch, and think of new projects and themes that I wish to explore. For any creative person, writing and sketching on a daily basis allows the hand and mind to be always alert. I do make sure that I commit myself to participate in group exhibitions, and to always set a target to work on a solo show. My last solo was at Athr Gallery in Jeddah in 2016, the title of the exhibition was “She wore her scars like wings”. In that body, I explored themes that focused of healing and self-growth. I’m now working on a new body of work, for my upcoming solo exhibition in December at Bin Mattar House in Muharraq. The exhibition is titled “Fate”, and it looks into themes of escape, and the struggle to find a safe

haven particularly highlighting the struggles of migrants by sea. I’m challenging myself to work on a very large scale this time. The exhibition will have paintings and an installation art work that explores this harsh topic.

What has influenced you the most as an artist? What inspires you? I am influenced in many of the topics I chose to work on themes that relate to emotions, particularly struggle and pain. I am not a happy artist, and most of my themes may have tones of sorrow and heaviness, but I am a firm believer that without pain, we cannot understand happiness, and for us to grow there needs to be struggle of some sort. I feel that art is a tool to express, and for us to give out our message and share it with others, we have to touch on topics that could resonate and allow audiences to reflect and interpret. I am inspired by many things. It’s life experiences that allow us growth. I’m inspired by beauty, struggles, by stories of courage and by so many things that we are blessed with. It’s hard to name what inspires me the most, but I’m thankful that I have a medium which allows me to share and highlight my thoughts. Words and art are two powerful means of expression.

Do you think Bahrain has a thriving art community today? And how do we encourage this community to grow? I mentioned previously the important role of education. This element plays a major role in the development of the scene, allowing it to grow and thrive. I’m a believer that there is always room for improvement. Growth comes with exposure and allowing creative minds to share - dialogue and critique is key. Openness towards listening to how to improve ideas is a million times more beneficial than praise. I would love to see more curators working alongside artists to help them achieve their goals.

BACA’s main interest is preserving our heritage, but some would argue that a country can’t reconcile its past and future without losing its identity. What do you say to those people? Can a country embrace the changes of the future while still being true to its original identity? We are blessed to be on a land that holds a rich legacy of our ancient history. We are surrounded by historic sites that map the wealth of our lands. Excavation teams, until our present day, unfold treasures that tell the story of so many ancient civilizations that have left memorable and priceless marks. History and heritage are the main elements that create the identity of a nation. We at Bahrain Authority for Culture and Antiquity hold this value as the main pillar of our institution’s mission. Preservation is key, but we also work on the development of this legacy. Working on listing important historic sites under the UNESCO World Heritage, like the Bahrain Fort, and the Pearling Path which is due to open in November this year, marks a huge achievement for the Kingdom of Bahrain. Next year, Aali Mounts’ nomination file will be presented to the WHC, and we are hopeful and looking forward to receiving the third inscription on the world heritage sites list.

018-020 UCP Sh. Hala D41.indd 20

03

Having said that, there is also the constant challenge to bring heritage to a contemporary audience, and this month, through the Paris Design Week, we have an exciting participation which highlights the ancient craft of pottery. Pottery where young designers works with the potters in Aali to work on new designs, combining the clay with metal and copper. This experiment took place two years ago during the Dubai Design Week and have also involved the community by creating an online platform, allowing people to design their own pots, and be part of this project. The Design Week Paris participation falls under a special exhibition called 1000 Vases, which highlights many participations from different art and culture institutions and designers.

If you had to identify the biggest challenge in your role at BACA so far, what would it be? Challenge is a part of any life, and to achieve any project whether big or small, we are always faced with challenges. I can’t share one particular or biggest challenge. I’m able to say that any challenge creates a dimension of creativity to solve, and get over any hurdle that we face. I believe there is a solution to any problem, and it’s important to stay true to one’s own objectives and goals. As for one challenge that we all face in our current time, it is to find creative ways to receive the desired sponsorship to help create programs and projects. We are lucky to be working under the guidance of HE Sheikha Mai bint Mohammed Al Khalifa, President of the Authority for Culture and Antiquities, who created and launched the Invest in Culture Initiative, allowing the patrons of the arts and culture, as well as the private sector, to support a wide range of projects with our institution. HE Sheikha Mai is a firm believer that there is always a solution. She is always aiming towards excellence to showcase the wealth of our Kingdom with culture as a strong tool that promotes Bahrain on both a local and international scale.

What would you consider to be the proudest achievement of your career? I cannot assess myself or state a certain achievement. This can be valued by others, not myself. I know that my professional role is a passion, and my career path falls under what I love to do. Being part of BACA and working to support the growth of our cultural scene. It’s a beautiful thing when a career and a passion come together. It’s not a job that fills time, or an obligation. It’s an important part of my life.

What should we look forward to next from BACA? Are there more programs or festivals planned? And are there any particular areas BACA wants to focus on? The opening of the Pearling Path, as I mentioned previously, is the main highlight of this year. This project is a testimony of the pearling trade, and it carries within it the huge importance of the preservation of history and heritage. Also, we will soon be approaching the International Music Festival in October. This year, as Muharraq is Capital of Islamic Culture, the music festival will host a wide range of performances from Arab and Islamic countries, allowing us share with all our audience the rich and diverse music styles, from Al Maqam – which is a distinctive song and music performance from Iraq – to Syrian songs from the heart of Aleppo, and passing through other nations, exploring the wealth of music from Arab and Islamic countries. In addition to this, there is all our annual programs and festivals and exhibitions that will explore new themes and open new mediums for a cultural exchange through intellectual, educational, and creative dialogue. culture.gov.bh

The Contemporary Calligrapher Diaa Allam, Founder of Na7t Designs, the First Emirati Brand for Arabic Calligraphy Lifestyle bridges generational gaps.

What is it about calligraphy that interests you the most? To me, Arabic calligraphy is directly related to who I am. It’s my culture, my origin, my character. I’ve been passionate about calligraphy since I was a kid. It was the reason why I decided to learn it. My calligraphy work represents my part of that.

You’ve participated in many exhibitions and events. Which one would you say was the highlight of your career?

02

022-025 Ajman Artist 2 D41.indd 23

I would say one of the major highlights of my career was when I won the Arabic calligraphy art competition that was organized by Al Dar in Abu Dhabi. It was a special occasion for me as I was competing next to very well-established artists and won 1st place. That was definitely one of my favorite achievements.

Do you think calligraphy still holds its important place in the Arab world today or should more be done to bring it into the modern culture? I actually think a lot should be done. However, we shouldn’t force people to love their own language. Instead, we have to know how to motivate them and encourage them to love it through other means. From my side, it was art. That is how I can contribute in making Arabs go back to, and appreciate, their language. Using my art, I try to make it more approachable for the current generation. This is especially the case with Arabic calligraphy, because it somehow became some kind of mystery for them. You won’t get them to appreciate it until you present it to them in a way that makes them feel connected to it.

08/09/2018 21:08

Where do you find the inspiration for a calligraphy project? Do you always draw it from Emirati culture? I can find inspiration anywhere. Anything in life can inspire you. The more you see, the more likely you are to be inspired. It’s all about imagination. How you can imagine something in combination with your art. From there, you can come up with new and creative ideas.

What messages do you often convey through your work? What do you want people to think about when they see your calligraphy? I tend to mostly focus on motivation quotes.

I like to write inspiring thing. It can be a way to inspire others to work hard. I’ve used a lot of quotes by HH Sheikh Mohammed bin Rashid Al Maktoom. They were also mostly of the motivational type.

How does Na7t Designs set itself apart from the competition? This can only be achieved by knowing how to improve yourself more and more each day. You have to always come up with innovative and creative ideas, and then keep at it. You will always succeed in standing out this way. You become something unexpected and make people go ‘wow’ every time. This is what motivates me to make Na7t Designs unique.

September 2018

What was the most difficult project of your career so far? And how long did it take you to complete it? I would have to say that it was that Calligraphy competition that I mentioned earlier. It was the first time I’ve ever worked for 8 days straight on a single canvas!

Is there a new project that you can share with our readers? I’m currently working on a number of projects outside the UAE, including a new calligraphy mural. Hopefully, it will be announced very soon. na7tdesigns.com

Innovative Artisans Chopard Co-President Karl-Friedrich Scheufele reveals how the Maison keeps leading the race in exceptional craftsmanship.

How would you describe Chopard’s market performance recently? There are signals from various markets that things are still looking up this year. It is a little early to start celebrating but I think if this trend persists for a few more months, we will then be able to say that we are on a positive track. In general, our watch and jewellery part increased at a healthy rate in the first semester of 2018. Regarding the Middle East, which is a wellestablished market for Chopard, we are amongst the top selling brands in the region with a more stable growth than other emerging markets.

Is there a specific profile associated with Chopard’s customers? How would you define your clientele? All Chopard clients appreciate our quality, fine craftsmanship, exclusivity (Chopard’s yearly production of timepieces is limited) and of course contemporary yet classic designs. They are knowledgeable and discerning, not just followers of mainstream brands. This stands true for all collections within the Chopard range, whether

you look at our sports or dress watches. Different collections target specific customer age profiles, for example “Happy Sport” which focuses on the younger, trendy ladies or “L.U.C” for the modern gentleman.

01 Chopard Co-President KarlFriedrich Scheufele

The L.U.C Full Strike featured several firsts, particularly with its use of sapphire as an amplifier. How long did it take to develop such an exceptional watch? Can you take us through the process and the type of challenges you faced before it became a reality? The L.U.C Full Strike was launched as a crowning point of the celebrations marking the 20th anniversary of the Chopard Manufacture. For more than six years, we have been working on this model, which is the most sophisticated chiming watch to date. Obviously, the challenges involved the materials that should be used to improve the sound quality and volume. We had to put the sapphire gong through one and a half million knocks by steel hammer to ensure that it did not give way.

and run businesses in the Fine Watchmaking and High Jewelery field, we can pursue long-term visions without having to please investors who are looking for short-term profit. While we put a lot of emphasis on innovation and creativity, we strongly believe that tradition, respect of heritage, and exceptional artisanship are also key to our success.

In this age of online connectivity, where does a traditionally brickand-mortar brand like Chopard stand? Are there plans to be more involved online in terms of sales, publicity, etc. or does that conflict with Chopard’s image of exclusivity?

Even more difficult is working with such a hard material. Machining a tiny set of its parts, without breaking the connection between the gongs and the watch glass, called for tools that are powerful and precise. Machining the gongs/glass set alone took more than three years of development, representing a technical and human feat. Besides, it was of course costly. 17,000 hours of development, plus all the experimental parts we had to make, plus our collaboration with a university in Lyon, France. But after all, it is worth it. It was a success and the entire series of 20 is already sold out.

In your opinion, what has been the most exceptional product from Chopard so far? As mentioned before, the L.U.C Full Strike which won the 2017 “Aiguille d’Or” Grand Prix at the Grand Prix d’Horlogerie de Genève. I knew that we had created a truly unique model, but I did not anticipate such a great honor. We are very proud of this achievement.

Chopard has made numerous partnerships throughout its history. Which of these partnerships would you say has come to be synonymous with Chopard? And are there any events or high-profile names we should expect to see wearing Chopard soon? We strongly believe in partnership as the way to amplify positive change we can make in the world. Therefore, we build alliances with whom we share common values and those whose

026-028 UCP Carl Fredrich D41.indd 28

competencies complement our own efforts. Chopard notably share common values with classic racing and this year marked our 30-year partnership anniversary with the Mille Miglia, the most important and prestigious historical regularity race. Our love for cinema is also expressed in the Cannes Film Festival. As official partner of the Cannes Film Festival, not only do we craft the Palme d’Or which, since 2014 is made of Fairmined gold, but we also create the Chopard Trophy in order to reward young acting talents each year. Recently, we believe that we have reached one of our greatest achievements with our in-house program The Journey to Sustainable Luxury, which started in 2013 to achieve sustainable luxury in partnership with the company Eco-Age managed by Livia Firth and the influential South American mining NGO Alliance for Responsible Mining “ARM”. We are proud to announce that as of July 2018, all of Chopard creations of watches and jewelry are made of 100% ethical gold. To answer your second part of the question, we always have celebrities and high-profile names wearing our pieces on the global scene. So just keep an eye on upcoming appearances!

With many global competitors offering luxury, what qualities does Chopard focus on to stand out from the competition? Chopard is acknowledged to be amongst the best Fine Watchmaking and High Jewelery Maison with a very deep vertical integration in production as well as in distribution. Our strength is our independence. As one of the last family owned

Online retailing still represents a relatively small percentage of the Chopard Group’s business and there is definitely potential for growth in some parts of the world. So far, we operate two Chopard e-boutiques, one in the USA and one in Great Britain, and we are evaluating further opportunities. A selection of creations are also available on the high-end exclusive websites JD.com, NET-A-PORTER and Farfetch. We value online communication as an essential tool. As a leading luxury brand, Chopard needs to have a strong presence there in particular to reach millennials. However, the experience of going to a store, touching and feeling a product, especially watches and jewellery, cannot be reproduced online. Therefore, we do not believe that internet retailing will entirely change our business, but rather complement the brick-and-mortar sales. This being said, today, many clients or potential customers use the internet to inform themselves before visiting a store. For the moment, we have our global website and we are also focusing more on online advertising.

Do you remember your first ever watch? Is there a story behind it? It was a Heuer Autavia chronograph that was offered to me by my father when I was 15. It had special functions for sailing.

Are there markets or demographics that Chopard is hoping to focus on in the near future? We always keep focused on traditional market places but we also aim to expand our presence in the new emerging markets. chopard.com

Driven by a universal curiosity, the Maison investigates creative diversity, uniting the four corners of the globe and blending the variety of vast continents alongside their local traditions. The correlations between past and present, the connections between cultures and generations all viewed through the human values of celebration, sharing and joy. The diversity of the world offers

a rich palette. Colours combine, horizons meet. Artisanal Synergy For the first time, Chopard jewellery models adorn Giambattista Valli’s models during his Haute Couture runway show. 01 Necklace in 18ct white gold set with an octagonal step-cut emerald of 22cts and pearshaped diamonds (61cts), necklace in 18ct white gold set with pear-shaped (23cts) and round brilliant-cut diamonds (17cts) and brilliants, and long necklace in 18ct white gold set with ashoka-cut diamonds for a total of 43cts

The Haute Joaillerie models selected by Giambattista Valli include several exceptional creations. Having fallen under the spell of a set of incredibly rare 17 non-oil Colombian emeralds, ardent gem-lover Caroline Scheufele designed a stunning necklace alternating these emeralds with equally pure D-flawless diamonds – the largest of which is an over 20-carat pear-shaped gem. This collection piece testifies to Chopard’s and its artistic director’s devotion to rare stones. In the same majestic vein, one notes 18-carat white gold rings topped by splendid white and yellow diamonds, with light bouncing endless of their facets, like an enchanted kaleidoscope. Finally, emerald and diamond necklaces pay tribute to traditional gemsetting techniques, combining a dainty diamond lacework with exceptional emeralds. chopard.com 01

‘One of Not Many’

02

In January 2018, Vacheron Constantin unveiled its Fiftysix collection in the form of three new models (Self-winding, Day-Date and Complete Calendar), representing the first notes of a new musical score. The cadence is now picking up with a new reference: Fiftysix® Tourbillon.

02

03

034-037 Vacheron Constantine D41.indd 35

Beautifully slender at less than 6 mm thick and equipped with a 22-carat gold peripheral rotor, the calibre of this model may be observed through a transparent caseback revealing all the beauty of the mechanism with its refined ornamentation. The tourbillon alone called for over a dozen hours of chamfering and other hand-crafted finishing operations. Like a metronome, its 2.5 Hz frequency provides a chance to follow its steady beat, framed by a 41 mm-diameter case. The style of the Fiftysix is a direct tribute to a watch created in 1956: reference 6073. The distinctive design of this iconic model embodies the creativity of the Maison during the 1950s – a period representing the golden age of watchmaking refinement, as well as the heyday of musical creativity. Round, slim and effortlessly elegant, reference 6073 is distinguished by its four lugs each representing a branch of the Maltese cross, and was one of the first watches from the Manufacture to

be equipped with a self-winding movement and a water-resistant case. The most prestigious composition in the collection to date, the Fiftysix Tourbillon will be available exclusively from Vacheron Constantin boutiques as of April 2019. Its September 11th launch at London’s famous Abbey Road Studios is an opportunity for the Maison to announce an exclusive partnership with this legendary location in music history, where English song-artist Benjamin Clementine, one of the faces of the Maison’s new advertising campaign, is giving a private concert to mark this occasion. ‘One of Not Many’, the signature of the new Vacheron Constantin communications campaign, defines the exceptional universe it has embodied for more than 260 years. In the prestigious realm of Fine Watchmaking, this is a Maison for connoisseurs, profoundly attached to human values and enriched by expertise passed on across generations of master watchmakers and artisans.

Through their understated elegance, Vacheron Constantin watches carry within them this identity forged from a subtle balance between technical expertise and aesthetic refinement, between tradition and innovation. To embody this spirit, the Maison has chosen to cooperate with talented artists whose personality and work express a constant quest for excellence, openness to the world as well as a spirit of innovation and creativity characterizing Vacheron Constantin. Musicians Benjamin Clementine and James Bay, designer Ora Ito, and seasoned photographer and explorer Cory Richards, represent the relevant territories where Vacheron Constantin has long been present: music, design, exploration, and photography.

Offering access to those worlds is Vacheron Constantin’s Heritage department. Serving as a bridge between the past and future of the Maison, the Vacheron Constantin Heritage department has a place of its own within the Manufacture. Spanning an exceptional timeline that began in 1755, and overseeing a unique collection, it is anything but a dusty museum. The research and expertise of the teams working there on a daily basis are an inexhaustible source of inspiration for the creation of new collections and a masterful reference for the Customer Service and the Restoration department. The inventory currently comprises around 1,500 timepieces dating from the 18th century to the present day, 800 machine tools, numerous items

of furniture, paintings, watchmaking workbenches and tools, as well as an impressive set of printed, iconographic and audio-visual archive collections. No less than 420 linear metres are taken up by an infinite wealth of production and accounting registers comprising foreign sales, correspondence between associates, suppliers and clients, various documents and photographs. All contribute to shedding both historical and artistic light on Vacheron Constantin’s activity through the years and centuries, recalling the styles and talents of bygone eras, and inspiring those to come. vacheron-constantin.com

01 Portrait of Edouard Bovet 02 The Edouard Bovet Tourbillon 03 Edouard Bovet Tourbillon pocket watch 04 The Tourbillon has a triple time zone with hemispherical maps of the Earth

For a long time, the Chinese were fond of decorative and ornamental clocks in a diverse range of forms. Their interest evolved with the arrival of pocket watches. With their “Chinese watches,” the BOVET brothers established a form of watchmaking that took the horological arts to new heights. The movements were more richly decorated and the cases were gold or gold-plated. Their bezels and occasionally the bows were often set with half pearls. The cover could be decorated with miniature painting, sometimes an enameled motif. To commemorate the bicentenary of Edouard Bovet’s arrival in China, Pascal Raffy and the

Manufactures’ artisans naturally chose to develop a timepiece dedicated to the world of travel. The Edouard Bovet Tourbillon presents a triple time zone with hemispherical maps of the Earth, reversefitted hands to display the time on both sides of the movement, and a power reserve of ten days. This manufacture caliber is housed in the emblematic Amadéo convertible case. Patented in 2010, the Amadéo system transforms a timepiece into a reversible wristwatch, table clock, or pocket watch without the need for tools. bovet.com 01

Working Class Hero OMEGA releases a denim-inspired Railmaster.

042-043. Omega D41.indd 42

08/09/2018 21:15

Thanks to its reliable design and superb anti-magnetic properties, the original OMEGA Railmaster of 1957 was perfectly suited to a role in working-class life. Today, the updated collection is proudly paying tribute to that industrial past with a new denim-inspired model. Although they are now a fashion item, denim jeans were once manufactured purely for the benefit of hard-working labourers in the American West. For a long time, the robust cloth was the choice of miners, factory workers, farmers, and those on the railroads. And their sturdy trousers or overalls would have gone hand-in-hand with the watch on their wrist. To link the iconic material with this new Railmaster, OMEGA has created a verticallybrushed “blue jeans” dial that features indexes and hands with light-grey Super-LumiNova. There is also a beige lollipop central seconds hand and transferred Railmaster indication that

042-043. Omega D41.indd 43

are both reminiscent of the coloured stitching found in denim jeans. Most uniquely, the model is beautifully presented on a genuine blue denim NATO strap with brown leather used on the underside and for the keepers. The same model is alternatively available on a stainless-steel bracelet. Following the design of the Railmaster’s modern facelift, the 40 mm brushed symmetrical case is made from stainless steel and features a conical crown and a wave-edged caseback with a NAIAD LOCK system to keep the wording in perfect position. More than 60 years on, OMEGA is still one of the industry’s leading names in anti-magnetic innovation and, inside this new watch, the brand has included a Master Chronometer Calibre 8806 which is 15 times more resistant than the original Railmaster models. omegawatches.com

Bell & Ross Diver Blue Symbolizing the sea, blue was chosen as the color of this new version of the BR03-92 Diver. Beyond its blue dial, rubber strap and aluminum insert on the bezel, this BR03-92 Diver Blue version aims to achieve maximum legibility with indices coated in White SuperLuminova and a yellow hour hand. Underwater, the colors vanish one after the other due to the loss of light intensity. The yellow hour hand will therefore fade away to give precedence to the minute hand, which must be visible to ensure the diver’s safety. This new color combination, paired with the emblematic square shape of the BR collections, gives the BR03-92 Diver Blue a sporty yet attractive aesthetic. bellross.com

Roman numerals add a touch of elegance and the titanium case ensures durability. ulysse-nardin.com

Panerai Power Reserve The very long running time is part of the technical history of Panerai that originally used a caliber from the Swiss Angelus® Company, a movement with a power reserve of 8 days, for its military production. The caliber P.2002, the first movement developed by Panerai manufacture in Neuchatel, has brought Panerai up-to-date as well as expressing its past, introducing a power train of highly complex construction. To achieve an extended power reserve, this innovative power train is based on three barrels in series to provide excellent time-measuring performance throughout the whole period of 8 days. This collection includes 3-day power reserve models such as Radiomir 1940 3 Days GMT Automatic Acciaio - 45mm, 8-day power reserve models such as Luminor 1950 8 Days GMT Acciaio - 44mm, 10-day power reserve models such as Luminor 1950 10 Days GMT Automatic Ceramica - 44mm, and Luminor 1950 Chrono Monopulsante 8 Days GMT Ceramica - 44mm. panerai.com

Richard Mille RM 11-03 Le Mans Classi Dedicated to endurance racing, the RM 11-03 Le Mans Classic timepiece is inspired by automotive history, and sporting accents of legendary British racing green that are entirely in keeping with the style of Le Mans Classic. This numbered limited edition of only 150 pieces is the first RM 11-03 to have a case made of white ceramic and Carbon TPT. This material possesses an unchangeable colour and after diamond, it is one of the hardest materials in the world. Details that evoke motorsport abound in the RM 11-03, from the crown design inspired by competition wheel rims and tyre treads to the ribbed pushers which take inspiration from the grooves on pedals fashioned from the same material. The Calibre RMAC3 is made of Grade 5 titanium. The glossy bevelled rims marked with intermediate times surrounding the coloured counters of the flyback chronograph and seconds window give an impression of depth. This sense of volume is further accentuated by an upper bridge in satin-brushed grade 5 titanium that contrasts with the movement, also crafted of titanium but with a PVD coating. The 24-hour flyback chronograph display highlights the number ‘16’, referring to the start time of the race. richardmille.com

Corum Djibril Cisse Big Magical A skull, exclusively designed for former footballer, artist, and entrepreneur Djibril Cisse by Corum, can be found at the center of his Bubble 52. Made out of gold and modelled on the artist’s personal watch, the number “9” is visible on its jaw. It is the only reference to his past as a top athlete, the number on his striker jersey which he wore in all his matches. The dial has no hands – a deliberate choice to give the skull the fiercest possible traits, occupying almost the entire dial. Instead, Corum used an off-center hour display called “Magical”. It rests on a flange with a complete timer and two red circles sweeping over it. The biggest one indicates the hours and the other indicates the minutes. The watch will be released in a limited edition of 88 pieces and powered by an automatic calibre offering 65 hours of power reserve. corum-watches.com

The blue dial with white counters, rhodiumplated hands and the red second hand of the chronograph produce an overall look that’s deliberately casual. The 89361 manufacture caliber with flyback function indicates the measured hours and minutes together on a subdial at 12 o’clock, while the quartersecond scale that surrounds the dial allows for precise measurement of shorter time periods. Hermes Medor Rock With its new cabochon liked a pyramid-shaped stud, mirror-polished lacquered or lacquered and cross-set, the new Médor Rock watch combines a rebellious sprit with elegant style. Originally developed to reinforce hunting dog collars, pyramid-shaped studs appeared on belts from the 1930s onwards. They then inspired the Hermès dog collar bracelet, before appearing in the Médor secret watch, which conceals the hours and minutes beneath its cabochon, or reveals them with a press on the crown. This year, the Médor Rock watch features three new versions fitted with a triple tour strap: Mirror-polished, lacquered or lacquered and discreetly cross-set, the pyramid-shaped stud with its four domed facets forms a cabochon housing an understated silver-toned or lacquered dial swept over by slender facetted hands. Identical to the dial, the white, black, red or blue lacquer on the cabochon is finely applied over the various facets of the stud. It is then heated and polished to achieve the deep and intense radiance that lights up this watch creation. hermes.com

Roger Dubuis Excalibur Knights of the Round Table III This forceful new interpretation of the legend of King Arthur’s Excalibur is inspired by the fabled island of Avalon, regarded as the place where the mighty sword was forged. Vigorous, valiant and virile, each highly detailed, low poly-sculpted, engraved and hand-finished knight has been entirely redesigned; each points his sword at the Avalon-inspired table sculpted from solid blue enamel blocks, a process requiring considerable dexterity and many patient hours of craftsmanship. Framed by an imposing Excalibur 45mm case with a solid caseback, fluted 18K pink gold bezel and matching crown, each dial takes a full 45 hours to create. This mechanical marvel is teamed with a matching blue alligator strap. Ensuring both precision and reliability, self-winding Calibre RD 821 – an exclusive in-house movement such as those equipping all Roger Dubuis timepieces – drives the hour and minute functions while delivering a 48-hour power reserve. Like the knights, every detail of the movement is hand-finished according to the traditional criteria governing the prestigious Hallmark of Geneva. rogerdubuis.com

Louis Moinet Skydance This timepiece has now become a celebration of sidereal space, endowed with a radiant dial in Magic Blue, the precise composition of which is a closely-guarded secret, known to Louis Moinet alone. At 6 o’clock the small seconds display features a sun with the rays pointing to the second, driven by an automatic caliber boasting a 42hour power reserve. In the centre sit the hours and minutes hands, with their dewdrop tips – one of Louis Moinet’s signature symbols – here filled with a luminous substance. The timepiece features two distinctive levels of diamonds: a first set of six on the bezel, and twelve more marking the hours on the dial. The Skydance case is a combination of titanium and engraved steel – a more recent Louis Moinet hallmark. And in a final distinctive touch, each of the lugs to hold the strap is topped by a diamond – another first for Louis Moinet, and probably a first in watchmaking, too. louismoinet.com

Jaeger-LeCoultre Rendez-Vous Three original new models are joining the elegant and timeless Rendez-Vous collection to present another communion between fine watchmaking and high jewellery. The new Rendez-Vous Tourbillon casts a spell on dynamic women who love to surround themselves with refined pieces that glitter with understated confidence. At 6 o’clock, the tourbillon reveals its spectacularly complex system of predominantly hand-decorated gears. Seemingly suspended in mid-air, its balance wheel oscillates within the carriage to perform one revolution every 60 seconds, setting the beat of its highprecision automatic movement, the Jaeger-LeCoultre Calibre 978. While the two new interpretations of the Rendez-Vous Celestial, fitted with the Jaeger-LeCoultre Calibre 809/1, showcase an iconic function that truly expresses the collection’s name. As it marks out its constant course, the mysterious star serves as a reminder of the time of a future rendezvous. jaeger-lecoultre.com

Mystical Renaissance Five years after unveiling Ahton, his now legendary sculpture, master jeweller Andreas Altmann is applying his creativity and expertise to watches suffused with Haute Horlogerie

These timepieces appeal not only for their style, but also for their watchmaking mechanisms. Like an extension of the Giberg Swiss Noble Forge, the new Giberg Haute Horlogerie brand is an elegant demonstration of its mastery of time, just as Ahton was proof of its artistic dexterity, and is a worthy guardian of unique expertise. Andreas Altmann’s exceptional and original watches will be unveiled at the forthcoming Baselworld show. Ahton is a masterpiece of the most exceptional craftsmanship imaginable, and a unique sculpture entirely hand-crafted by the artist and his Giberg Swiss Noble Forge team over a period of almost five years. Five kilograms of solid gold were required to produce

the mystical beast, which is studded with 7739 diamonds weighing a total of 108 carats. As if captured in action, the dragon exudes the full power of his ferocity, with the eye drawn to his gleaming armour, his outspread wings, and the phantasmagoric fire he breathes from his savage mouth. Such power in Ahton’s artistic expression is due to the painstaking attention to detail, the strict use of materials and the undeniable expertise of Andreas Altmann’s team. The mythical beast Ahton is a worthy representative of Giberg Swiss Noble Forge, which strives to create unique pieces of the highest quality. giberg.com

Life IMITATING ART Amouage Creative Director, Christopher Chong reveals the inspiration behind his latest masterpiece, ‘Imitation’ for Man and Woman.

This launch is taking place in New York City. Why New York City in particular? This is the fourth chapter of the second cycle of the Amouage narrative. The second cycle tends to be autobiographical and New York City is where I spent my childhood and teenage years. I wanted to reveal the truth of who I am and how this environment influenced me when I was in my formative years. It shaped the way I think and how I perceive the world. It was the neighborhood that we lived in when we immigrated to the United States. I still draw inspiration from it to this day. There’s beauty in its truth, even if its truth is flawed.

Would you say it’s New York that made you what you are now? I would say that it’s the lower East Side specifically

054-056 Amouage D41.indd 54

that shaped me. It has been gentrified over the past 10 years but before that, it was a tough place to live in. It was most commonly known as a ghetto. If you came there, you had to be prepared to fight. That neighborhood taught me how to defend myself and prepared me to face the real world when I left New York. I learned how to embrace changes no matter how difficult or challenging they are. It gave me my survival instincts.

So, you drew your ingredients from the place itself? It’s not just about the buildings or street art. You have to translate the cultural element of the period. You have to ask yourself: “what was the popular olfactory style back then? What did people wear? What spices did they use?” You also have to understand their lifestyle. The 1970’s were so

decadent! People back then had a sensual quality to their lifestyle. So, the inspiration comes from translating those elements into an olfactory one.

The word ‘Imitation’ might have a negative connotation for some. Why Imitation? Because everything is imitated. Even Andy Warhol imitated. Imitation was a big movement in the art world, and he became an iconic artist for turning normal boring objects into subjects. Imitation has always been there, even back in the days of Oscar Wilde who famously said: “life imitates art”. I personally don’t believe in the concept of originality. Everything already pre-exists. What we do is imitate.

Can you tell us about the inspiration behind Imitation for Woman?

UP CLOSE AND PERSONAL

I was inspired by the fragrances women wore in the 1970’s. The woman of that era was always sensual. Even if she was having a bad day or spent the whole night partying, the next morning she would still look beautiful and amazing. I was also inspired by the opening of Studio 54 in the late 70’s. All the major celebrities were there. I asked myself, what would a celebrity like Bianca Jagger wear in those times? So, I created this strong floral aldehyde of a very sensual tone. It opens with strong white floral, goes into blackcurrant buds called Cassis, which were popular in those days, and then dries down to this sensual incense evoking the end of the night or the end of the party kind of tone.

Is Amouage considered a GCC brand? Amouage has always been an international brand, ever since it was founded in 1983. Even though it’s based in Oman, nothing local is used for its products. The focus was always on employing advanced technology and experimenting with styles before selling it to the Western world. To me, I don’t see the

056

September 2018

need to limit its image as strictly a GCC brand. This process is more about human taste. However, I would say that it’s the first and only successful perfumery brand to originate from the GCC and succeed on an international level. We are also the only brand using genuine oud in our ingredients.

I do have a tendency to keep wanting to change things, and it ends up damaging the formation instead of improving it! The only way to know is to let the formula tell you. It’s just like editing a book or writing music. The composition of it will tell you when it’s time to stop.

Would you ever consider making the leap from perfumes to fashion?

Is Amouage being taken to new geographical areas, saleswise?

No, I wouldn’t. People have already tried that and it seems to never work. We did explore something similar to that with accessories, but that was different. With accessories, you’re offering something extra for your loyal customers. It’s a connection that dates back many centuries, for example, when people who wore leather gloves took them to the perfumers to get them scented. That’s the relationship we try to form with accessories.

Designing a new perfume is a meticulous process. How do you know when to stop and say: ‘this is it’?

We have covered most regions and are now slowly delving deeper into the Asian market. It’s a real challenge because fragrances are not part of the Asian culture. For example, while in the Middle East, people historically have considered some scents to be spiritual cleansers, the Chinese see it as something else completely. And in Japan, people don’t have a fragrance culture, but they do have it as part of gift giving. However, the world is evolving, so the fragrance market may be more embraced in those regions in the near future. amouage.com

Bottega Veneta Parco Palladiano X Olivo Parco Palladiano X Olivo conjures the powerful presence of the olive tree. Known as the Tree of Life, it is strongly rooted in the depths of the soil, with branches that ascend swiftly toward the sun. Olivo is a woody green composition—strong and charismatic, grounded on the earth and rising to the air. From the bottom of its roots, climbing over the center of its trunk to the top of its leaves, it liberates its green strength. The olive-colored juice, green and woody in composition with a green olive accord, captures the vibrant hue of this tree’s silvery leaves glistening under the sun in spring. bottegaveneta.com

Deep Expressions The Chloé Fall/Winter 2018-2019 collection is robust and sensual with tremendous French allure.

Allure is a unique and individual expression emerging from deep within. These latest accessories act as beacons, directing allure outward. They further the vision that Natacha RamsayLevi established with her debut collection while reflecting an expanded field of inspiration. As first seen on the runway, each new bag design enhances the season’s silhouettes through a varying proposition in texture, colors and recurring Chloé signatures such as the small horses embroidered onto leather. New features include the quilted leather or the spazzolato sfumato smoked treatment, and the baroque C emblem arranged as a decorative motif. Rounded shapes –a hallmark of the house –create a coherent message; and, as always, the versatility of each style remains essential. Making its debut this season, Tess is a rounded day bag that is resolutely Chloé. Standout features include two straps of varying widths, and the

signature O – a recurring House reference to infinite femininity – in gold and silver finishes. Sophisticated and compact, Tess is available in smooth leather with shimmering highlights, as bi-material leather and suede, or encrusted with small horses on earth-toned leather inspired by the collection’s prints. Wear the bag cross-body to highlight its timeless design. Conceived as a day bag embellished with special detailing, Roy features two large O rings in perfect balance as an updated Chloé signature. Material contrast is another defining aspect, with suede, smooth leather, glossy lambskin, and a gradation effect among the options. The Roy Bucket transposes these elements into a roomy, wearable style with broad appeal. Exclusively at Saks Fifth Avenue, City Centre Bahrain

Elements confront each other in every silhouette of this collection, which showcases a new attitude. There are contrasts between daytime and evening, colour and black, rigidity and softness, flatness and volume. References and universes combined. Everywhere, the details put forth a look, a movement: on a parka, woven striped satin is applied onto a cotton veil. A suit with an almost military appearance incorporates the feeling of a tuxedo. A simple strip of fabric sewn between the outside and inside of a bomber jacket inflates the garment and gives it volume: it’s a constant game between fullness and emptiness. As for the blazers, they disrupt the evening feel: on a model in grain de poudre, an offbeat satin yoke is placed on the shoulder. On another tailcoat, this time the satin appears on the sleeve. On the same design, the satin hangs towards the front. Underneath a jacket the collar is gathered giving the appearance of a hood. The look is versatile, hybridization reigns: tops are constructed by taking the back of a shirt and the front of a T-shirt in cotton crepe. Due to the craftsmanship of the cut, they can be worn on both sides. In turn, a mesh fisherman’s waistcoat or a quilted cotton vest lined with satin is placed on

top, recalling protective clothing. Once worn, these pieces mix and lines become blurred. Yet although an impression of softness and gentleness is given, the silhouette is nevertheless controlled, sophisticated: poetry is in contrast with graphic effects, where stripes subtly stand alongside floral prints and metal rose necklaces. Both colours and materials confront each other: wool and velvet; mint green, brown, and blue violet; lavender and bright red. This season, a tattoo artist has imagined prehistoric animal drawings, mystical symbols, where stars and insects form an imaginary encyclopedia, printed on silk or viscose shirts. Trainers with vulcanized soles, pieces in velvet or striped canvas, a tuxedo belt designed as a belt bag or hand-painted with flowers. The accessory collection is also complemented by these contrasts. Garments mingle with giant pieces, like huge moving bags draping asymmetrically. More than ever, the jewellery are like talismans, bracelets with hammered and varnished finish, then or necklaces which hide secrets and constellations within metal balls or on the back of reversible medallions. lanvin.com

Elegant Tribute For the Givenchy Haute Couture Fall-Winter 2018-2019 collection, Artistic Director Clare Waight Keller creates a homage to the innate elegance, grace, and timeless creations of Monsieur Hubert de Givenchy.

With refinement and restraint, the Fall-Winter 2018-2019 Givenchy Haute Couture collection mirrors the personality of the house’s founder. Sleek, graphic and slightly futuristic shapes echo those of Monsieur de Givenchy in the Sixties and Seventies, renewing the purist’s vision of effortlessness. Men’s tailoring techniques inform capes and coats, contrasting with the poise of flou in draped silk cady or georgette and crystalline shades of aquamarine, coral, verdigris, or deeper, subterranean shades of blue, purple and faux black. Mysterious, monolithic embroideries recall cave formations and slices of minerals, infusing silhouettes with frost, shine and the modern attitude that is Clare Waight Keller’s signature. For women, bijoux de corps crystal and metallic elements enhance duality, while supple, embroidered leather, velvet and the sheen of goose, ostrich and coq feathers are worked with the ease of faux fur, infusing looks with a mystical sensuality. In homage to his beloved muse, M. de Givenchy’s iconic little

084-085 D41 - Fashion - Givenchy.indd 84

black dress nods to timeless glamour with an of-themoment twist. Interspersed throughout the collection, men’s looks feature chiseled shoulders, an icy elegance and silhouettes inspired by the looks that M. de Givenchy favored for himself, including a classic double-breasted jacket, a red cape, polished slim-cut suits and the turtleneck. To this lexicon, Clare Waight Keller brings her own vision of effortless elegance in a modern evening tail coat, and sharp coats with cascades of mineral or agate-inspired embroideries. As a salute to the founding couturier’s agile wit, each look in the Givenchy Haute Couture Fall-Winter 2018-2019 collection is named with an adjective M. de Givenchy once used to refer to his runway looks and, by extension, his loyal clients, women who won his admiration for their audacity, frivolity and smarts. givenchy.com

REDEFINING ROLES Inspired by a history of subculture so synonymous with British style, the Paul Smith Spring-Summer ’19 collection challenges familiar sartorial codes.

Informed by his personal experience of softening the stiffness of tailoring in the early 1980’s, Paul reinvigorates the suit. Tailoring remains at the core of the Paul Smith world and with rare independence the designer confidently contradicts the zeitgeist. An exaggerated shape is reminiscent of trends gone-by, but contemporary relevance is delivered in construction and styling. Where once 500-gram tailoring cloths prevailed, now the same shapes appear in lightweight 200-gram wool, allowing for the versatility required for today. Ease and function is deeply entrenched in the Paul Smith ethos and is celebrated with the looseness of silhouettes and the nuance of sportswear inspired by Paul’s own love of cycling. The palette of pastels in bright and dreamy shades are often mismatched in suits and on leather trousers and outerwear.

086-087 D41 - Fashion - Paul Smith.indd 87

Women’s tailoring echoes the men’s in cut and cloth but a distinct identity comes through in the confidence of the Paul Smith woman, who takes on a fresh, strong attitude. Suits are broken into separates and hand-drawn prints dance across light but formfitting dress shapes and skirts with structures that strike a utilitarian theme. Checkerboard socks and intarsia knits are inspired by races to the finish-line and deliver a touch of humor in signature Paul Smith style. In footwear, typically British designs are embraced and then exaggerated. For women, a new lace-up ankle boot is introduced in snakeskin and handbags interpret the finish-line flag in a woven leather checkerboard. paulsmith.com

Fighting Spirit The Rani Zakhem Couture Fall Winter 2018-2019 collection is a vibrant and sparkling tribute to the combating and combative woman.

The camouflage spirit dominates the graphic scene of this Couture collection. This never-ending motif on military combat clothing, depending on whether they are fighting in urban areas, in deserts, forests or snowy planes, tells the tale of human fragility and highlights the need to blend into the environment to escape the enemy. Rani Zakhem redesigns it and transforms it into a manifesto, as an embossed sumptuous ornament embroidered in new tonalities: glittering emerald, bronze and gold on a pencil skirt; red, black and gold crystals in clusters on an incendiary sheath or on the sleeves of a black spencer jacket; or in a single element, gold, iridescent crystal and silver, wrapping the waist of a white silk crepe cocktail dress vertiginously slit on the bias. Elsewhere, we find the motif in an almost crude state, treated in a falsely literal way, as a serigraph in shades of khaki on a precious silk crepe sablĂŠ, for a tailleur composed of an ultra-feminine “Vâ€? neck Spencer with structured

shoulders, and sharp cigarette pants. The very idea of invisibility inherent to camouflage is here reinterpreted into hyper visibility. Another recurring motif is the oversized military insignia, which adorn the sleeves of a jacket or coat as giant gold glittering embroidered chevrons. A large chunk of this collection, an explosion of white, a value rather than a color, considered fragile but luminous, bold, a symbol of renewal and resilience. The new Amazone stands out from the crowd and appears, strong and sensual, exposed but invulnerable, ready for all fights. Subtle references from Yves Saint Laurent, Marc Bohan and Azzedine AlaĂŻa punctuate the couture vocabulary of Rani Zakhem, between a Saharienne detail, a draped moulage, the powerful minimalism of a white dress enhanced by a slight ornament, all brilliantly inserted in a personal interpretation. ranizakhem.com

Boutique Experience

The most luxurious shopping destinations from around the world.

Delvaux Brussels Delvaux, the oldest luxury leather goods house in the world, founded in Belgium in 1829, has inaugurated a new store in the heart of Brussels: “Le 27”. Housed in a majestic Mansion on Boulevard de Waterloo, a high-end luxury shopping area, “Le 27” is much more than a boutique: it is a unique environment, combining the savoir-faire of the Delvaux collections with the beauty of the greatest items of Belgian design, paintings and ceramics, giving life to an art gallery in continuous evolution. An entrance arcade welcomes visitors into what was once an imposing private villa. Set out on two floors, the store has retained its original structure, with the walls enriched with nineteenth-century mouldings, mirrors, medallions and frescoes that once decorated the reception rooms. Four-metrehigh ceilings give a broader scope and brightness to an environment where materials such as marble, wood and wrought iron stand out. The grand staircase at the entrance leads to the spacious upper floor which is immersed in surreal light projected through the windows of the Art Deco skylight. Between the ground and the first floor what appears to be a collection of ancient paintings turns out to be a series of photographs, archival pigment prints by the Argentine artist Romina Ressia in which her post-neo-Flemish portraits are combined with daily and kitsch artifacts. A collection of twentiethcentury Belgian ceramics appears here and there on a wall, stacked high, embodying the fantastic, endless creativity of Belgian artists. delvaux.com

Dolce & Gabbana Miami Two of Italy’s most famous exports — opera and Dolce & Gabbana clothing — now sing under the same roof in the brand’s new Miami Design District boutique. Architect Gwenael Nicolas of Curiosity designed the store to invoke the world-famous opera house, the Teatro alla Scala in Milan. Waves in the glass façade of the two-story building recall a theater curtain, and spotlights in the ceiling illuminate the fiberglass sculptures and busts of actors dotting the store. The space is furnished with Baroque mirrors and walnut furniture embellished with polished steel and gold velvet. The opera house is reportedly one of Domenico Dolce and Stefano Gabbana’s favorite places, and the store is laid out like the set design of a

theatrical play. To pay homage to the classical Italian landmark, the store’s interior is a mix of polished and raw travertine and Veselve marble with a stucco ceiling on the ground floor. Five perforations on the upper level look down onto the artwork and designer clothing below, as if peering from a gallery box. Dolce & Gabbana has begun experimenting with concept stores, as the brand recently opened a boldly designed outpost catering to millennials in New York City — complete with graffiti murals perfect for Instagram selfies. www.dolcegabbana.com

Egalite Milan The smell of freshly baked bread from Égalité hovers over Via Melzo 22. A brand new concept for a France bakery that has the potential to become a format, born from an idea of the architect and food entrepreneur Tiziano Vudafieri. Égalité is built around Master Boulanger Thierry Loy, who after setting new standards in high-end bread making with his boulangerie outlets in the French Alps, has decided to move to Milan to engage with the city’s art de vivre. Égalité sets the stage on the savoir-faire of the French boulangère tradition in a place that welcomes you for a meal or to drink an aperitif, but also aspires to be an enclave celebrating the mélange of Italian and French culture. With its great laboratory in full view, Égalité is several things in one: a bakery, a shop selling fresh and packaged products, the ideal place for a quick coffee, lunch, a French afternoon snack or an unusual aperitif. A place that also favours the encounter between different delicacies of

092-099 Shops D41.indd 97

Italian and French gastronomic culture. All at an affordable price. The premises – 215 sq m - located at the corner of Via Melzo and Via Lambro – have seven windows on the street. Bright and intimate at the same time - also thanks to the original plan layout of islands with small and large tables, highs and lows, benches or stools. A Parisian style dehors in the colours of Égalité, with wrought iron tables and chairs, welcomes the clientele - it already has the flavour of a lived-in place: as if it had always been part of the neighbourhood scene. Égalité is a place with a strong eclectic modern and colourful imprint that interprets in graphics, through a playful approach, the founding principles of French popular culture, the revolution, the French courts and their characters in which kings, emperors, revolutionaries and peasants proudly indulge a baguette or croissant. egalitemilano.it

Sonia Rykiel Madrid With its first boutique, located in the heart of Madrid, Sonia Rykiel celebrates its arrival on the Spanish market. The interior design project is by Vudafieri-Saverino Partners, architectural studio based in Milan and Shanghai, which has been taking care of the development of Sonia Rykiel stores worldwide since 2013. The boutique occupies a 165 sqm surface and is situated among the nineteenth century buildings on the calle Coello, a privileged luxury shopping destination, home to the great names of Spanish and international fashion. In order to reflect the iconic characteristics of the historical, anti-conventional Parisian fashion brand, the store is inspired by the modern Rive Gauche atmosphere with its cafÊ literaire and glamour/intellectual spirit. The result is an elegant, yet at the same time informal space, hinged in a succession of refined ambiences with an intriguing atmosphere. A climate which we breathe from the entrance, where the walls are completely covered by a fulllength bookcase, inside of which are works of the historical French Gallimard collection. Passing through the wide red portals we arrive in the rooms in which are housed the main collection and the Salon, designed as a modern boudoir: intimate and cosy. Externally, the façade immediately stands out due to the contrast between the shiny black covering and the white back-lit logo, with the striped curtain textile curtains which refer to the celebrated iconic Sonia Rykiel pattern. soniarykiel.com

Timeless Inspiration Reflecting the compelling universal spiritual contribution that he made and continues to make to the world, KAHLIL GIBRAN: A Guide for Our Times is an exhibition that shows how Gibran can be a guiding spirit for our times.

106-108 Khalil Gibran Artist 2 D41.indd 107

Featuring over 38 acclaimed contemporary artists from the Middle East inspired by the universal message of peace and harmony found in Kahlil Gibran’s poetry, writing and art, such as in his best-selling book The Prophet, which celebrates its 95th publishing anniversary this year, this CARAVAN peacebuilding touring exhibition culminated at Sotheby’s in London. The exhibition visually highlighted how Kahlil Gibran, a supreme East-West figure, can be an unparalleled guide for our times, related to peace, harmony and the building of bridges between the creeds and cultures of the Middle East and West.

Gibran’s work focuses on the themes that unite all peoples and religions, leading the reader or viewer on a journey towards peace and harmony, reconnecting us with humanity. Kahlil Gibran, the Lebanese born poet-artist, who immigrated from Lebanon to the US in the late 1800s, and who came into worldwide renown in the 1920s, visited London in 1910 at the end of a two-year period of art studies in Paris. While in London, he was profoundly influenced by the mystical work of the poet-painter William Blake and deeply impressed with the paintings of William Turner. During Gibran’s short visit to London with

The exhibition ran from 6 – 10 August 2018

01 The Venetian Macao Casino and Hotel in Macau, China 02 Gorgeous view of The Venetian Macao San Luca Canal, a luxury hotel and casino resort in Macau

Located on the western side of the Pearl River estuary in East Asia, Macau is a Special Administrative Region of the People’s Republic of China. With a population of 650,900 in an area of 30.5 km2, it is the most densely populated region in the world, and is home to many historical and commercial sites. The ruins of St. Paul’s Cathedral, once considered the finest Christian building in the Far East, is the most visited tourist spot in Macau. Its imposing Renaissance façade is a Macau landmark, standing at the top of a broad flight of granite steps. After the destruction of the first church by fire in 1601, a new one was completed in 1637, modeled on the church of the Gesù in Rome and constructed by Christians driven out of Japan. The church was destroyed by a typhoon

Another must-see is The Historic Centre of Macao, which is a collection of over twenty locations that display the unique assimilation and co-existence of Chinese and Portuguese cultures in Macau, a former Portuguese colony. It represents the architectural legacies of the city’s cultural heritage, including monuments such as urban squares, streetscapes, churches and temples. In 2005, the Historic Centre of Macau was inscribed on the UNESCO World Heritage List, making it the 31st designated World Heritage site in China. It was praised by UNESCO for its historic street, residential, religious, and public Portuguese and Chinese buildings, which provide a unique testimony to the meeting of aesthetic, cultural, architectural, and technological influences from East and

West. It also bears witness to one of the earliest and longest-lasting encounters between China and the West, based on the vibrancy of international trade. The Venetian Macao, at 1,050 square meters, is Asia’s largest hotel resort and is the second largest building in the world. It contains a casino, exhibition facilities, hotel, entertainment facilities, a shopping center and international restaurants. The Venetian Macao’s architectural design was inspired by The Venetian hotel in Las Vegas. Both resorts are themed around Venice, and their shopping centers contain many elements from the city, including canals, stone bridges, and cobblestone streets. Underneath a blue-sky ceiling, Macau’s largest indoor mall has a variety of brands, from luxury goods to fast fashion. Venetian Gothic architecture add to the charm.

Macau is renowned for its Giant Pandas. The Giant Panda Pavilion, located at the Macao Zoo which is a place with a variety of animals, was built especially for the two Pandas. Admission is free at The Panda Pavilion, and there is a good range of animals in this small park, including monkeys, gorillas, flamingos and many plants inside a herb garden. Travelling by ferry is a popular mode of transport in Macau and it boasts excellent services from its two ports. There is a large number of high-speed crossings to many destinations in China, all operated by some of the region’s leading ferry companies, such as Cotai Water Jet, a premium high-speed ferry service between Hong Kong and Macao. Whether you’re interested in shopping, reliving history, or connecting with nature, Macau has something for you.

Ritz-Carlton Hong Kong The Ritz-Carlton, Hong Kong offers design and style that are taken to new heights by LTW Designworks. The overall design theme of the hotel is inspired by the city’s dynamic culture – a global metropolis at the crossroads of East and West and at the same time rich in entrancing local flavor. Guests first experience the hotel and the city by arriving at the hotel entrance on the 9th floor. The porte cochere features the magnificent Hong Kong skyline as backdrop. A cool ocean of Palissandro blue marble stretches across the entire space and throughout the hotel. A dark wood entryway then leads guests through to the lift lobby that is counterbalanced with vivid orange onyx walls. Throughout the hotel, modern interpretations of traditional Chinese fittings and art convey a distinctive style that is both familiar and inviting and that give the hotel a true sense of place in this magnificent city. To instill a sense of warmth and intimacy, and to demarcate areas in the larger public spaces, handtufted wool and silk ‘cartographic pattern’ carpets are used. With their jeweled blue-grey and earthy brownyellow tones, the carpeted areas resemble parterres.

In just 52 seconds, guests are transferred to the Lobby on 103rd floor. They are amazed by an artwork that is an abstract depiction of a classic Chinese watercolor of running horses. The image is dissected into fragmented strips offering varied views of the artwork from different angles. Occupying floors 106 to 117, the 312 guest rooms and suites are styled with tailor-made precision to embrace the magnificent harbour and city view. Telescopes are available in all the suites for guests to enjoy the breathtaking views to their fullest. Behind the generous-sized bed is a silk-paneled wall and a leather headboard with metallic accents. Similarly, the TV wall is outfitted in leather and metal, featuring ‘baseball stitching’ as a design element. The room is tastefully decorated with Oriental accents – as seen in the floral motif of the carpet and the bright tangerine silk-lined interior of the ‘Chinese jewel box’ closet. The spacious bathrooms feature travertine marble floors and walls, and onyx countertops with double basins. The Club Lounge located on the 116th floor possesses an intimate, homey feel with the use of soft lighting, modern classic furniture, and shelves

that resemble suit cases. The dark Brazilian marble floor with its bold quartz inserts is juxtaposed by the gleaming white marble countertops delicately streaked with orange and grey. Other striking elements include the mirrored columns near the windows that are etched with a metallic-finished fretwork pattern. At night, the result is a subtle, glittering reflection of the dynamic city. With its scintillating ‘diamond’ theme, the Diamond Ballroom located on the 3rd floor is a true gem. Radiating glamour, the ballroom is one of the largest in the city and is graced by a dazzling sea of chandeliers with crystals that seem to drip from the ceiling. Some of the wall panels feature cut-mirror effects that give sparkle to complement the theme of the ballroom. The color palette is an ephemeral glow of champagne and amber. To infuse this lavish space with chic comfort, some of the accent walls are clad in a lush cream fabric or textured leather, and outlined in dark marble. The grand lacewood doors that are fitted with cut crystal handles complete the setting. ritzcarlton.com

Spirit of Adventure Sunseeker’s largest Predator model is back with a 40-knot vengeance.

Sporty and sleek, the brand new Sunseeker Predator 74 is crafted to perfectly balance style with practicality. Epitomising the latest Sunseeker design cues, the exterior boasts sleek, yet oversized pillarless’ windows down to the side deck which floods the interior with light and provides uninterrupted views from the saloon. Central to its appeal, the cleverly engineered cockpit door mechanism allows it to open conventionally, but also lower itself into the sole of the yacht. Depending on the owner’s wishes, the Predator 74 can be transformed into an ‘open’ yacht in warmer regions or a ‘closed’ yacht in cooler climates.

124-127 Yacht D41.indd 124

The generous saloon includes a sumptuous seating area, ample storage and comprehensive port side bar console; all below an extraordinary glass sliding roof. Below deck from the saloon, there is a generous galley and three spacious en-suite cabins, comprising an aft master, starboard twin, and forward VIP. The master cabin benefits from an optional walk-in wardrobe or office area. The below deck configuration offers complete flexibility for owners with an option to have an extended galley arrangement complete with lounge and breakfast bar seating or an additional twin guest cabin which would allow the yacht to accommodate up to eight guests in a four-cabin arrangement.

The Rare Ingredient Why truffles are one of the world’s most expensive foods.

01

134-136 Truffles D41.indd 135

In 2016, a 4.16 pound white truffle—the so-called “World’s Largest”—sold at a Sotheby’s auction for $61,250 to a phone bidder in China. It was actually a bargain price for the over-sized fungus. But what makes it so expensive? Truffle is a wild product and natural product. It is not something you can cultivate or control. This unpredictability contributes to the extreme prices truffles can fetch. People have tried for generations, to no avail, to farm truffles. And while recent attempts in the U.S. and Australia to recreate truffleconducive habitats by planting chestnut, oak, and hazelnut trees have shown modest success, the crop has been insubstantial and rarely are full truffles salvageable. Truffles are only found with the aid of a trained dog, hunting in the woods, meadows, and mountains of Umbria and Tuscany. Professionals and amateurs alike train dogs when they are puppies to properly hunt truffles.

There are three varieties of truffle. The white variety is pungent with notes of shallot, the black is earthy and robust, and burgundy tends toward the delicate and aromatic. Truffles cannot be planted or tamed, so each variety is only available a few months during the year. These fragrant fungi taste best fresh, so plan to enjoy white and burgundy truffles from September to December, winter black truffles from December to early March, bianchetti truffles in February and March, and summer black and white truffles from May to August. White truffles grown in northern Italy are the most expensive of all and their fragrance is deeper and more dizzying. Acqualagna, in the northern part of Le Marche, Italy, hosts an annual truffle festival where rows of stalls line the market square all selling whole truffles and truffle-related products, leaving the whole

The taste is not dissimilar to white but their perfume is less intense and musky, so you may find them more versatile in cooking. Ancient Romans believed that the truffle was created when lightning struck damp earth. Today, we know that the small tuber grows underground in the wild forests of northern and central Italy. Even so, modern Italians maintain the magic of the truffle, referring to the earthy and aromatic ingredient as “a fairy apple”, “a diamond of the kitchen”, and “the gem of poor lands.”

Refined TASTE Experience a culinary journey with award-winning and critically acclaimed restaurants from around the world. Kanpai Milan A corner of contemporary Japan appears in the heart of Milan. Named Kanpai, it proposes the Izakaya rites and atmosphere, accompanied by dishes from popular Japanese cuisine. Kanpai brings to Milan a mix of food, sakè and Japanese culture, no sushi and an oriental-style cocktail list: a place to eat and drink late into the night. With an interior design by the Milanese studio Vudafieri-Saverino Partners, Kanpai could inhabit one of the many lively side streets in one of the Japanese metropolitan cities, with installed screens which transmit pop images typical of today’s technological, urban Japan. Open only in the evening, from 7.00 p.m. until late - the kitchen does not close before midnight the project reassumes the passion for Japan of the 28-, 32- and 33-year old Italian business partners who have brought together food, culture and sakè, with the idea of presenting the most metropolitan image of Japanese cuisine: “not a stereotype of the traditional Japanese rice paper, but of what can be seen in Tokyo today, reconciling the local street soul tradition with an approach attentive to detail and to some gourmet proposals”. The dishes are simple, yet at the same time the fruit of complex, never banal, techniques and

138-147 Dining D41.indd 138

preparation for recipes which have been reinvented for a more refined taste. No sushi, and only one item dedicated to sashimi, the only raw dish on a menu which instead contemplates many different cooking techniques: fried chicken marinated in ginger (Karaage nanban lime), Kakuni (stewed pork belly), beef Tataki, pickled vegetables, black cod (marinated in miso cream for five days) and home-made side sauces. Kanpai’s 150 sqm are structured over three rooms, having diverse colour schemes and aesthetic atmospheres to interpret the different styles of conviviality and comfort. The bar area welcomes customers with a large counter built with radical simplicity: the metal elements fuse with bamboo wood in a natural, geometric way, with a wide selection of sakè and spirits on show, at the centre a peculiar lampshade stands out, made from an antique French bottle rack used by wine makers to wash out the wine bottles. A kind of zinc-plated corset, into which magnums of sakè have been inserted, which become diffusers of light filtered by the bottles and the labels’ ideograms; an installation which celebrates the best of Japanese sakè. kanpaimilano.it

Il Ristorante by Niko Romito, Dubai Open for lunch and dinner, the 105-seat restaurant offers spectacular views over the Bvlgari Marina. The concept, created by the Michelin-starred chef, Niko Romito, is a celebration of ‘Made In Italy’. Working from his headquarters in Italy and regularly counselling his personallytrained resident chef Giacomo Amicucci, Chef Niko Romito brings to Il Ristorante a menu that optimally expresses the culture, elegance and vitality of everything that is quintessentially Italian. Hailing from the Italian region of Abruzzo, chef Niko Romito established a true ‘canon’ of contemporary Italian cooking by designing

a concept which preserves his fundamental philosophy of simplicity, synthesis and a quest for the quintessence of flavour. Premium ingredients are sourced from Italy, locally and internationally, for a gastronomic approach based on quality and simplicity. The best extra virgin Carma oil, an award-winning organic olive oil produced in Italy, a venture partnered by the Bvlgari family, is the only one used by the chef. On this theme of simplicity and Italian authenticity, bread is always the protagonist at the centre of the table, a key element of Romito’s philosophy and the mainstay of the Italian food culture. With broths and the Antipasto all’Italiana

that encapsulate a grand tour of all the regions of Italy to recodified versions of marinated beef carpaccio, Linguine with basil pesto and hazelnuts, braised chicken, tiramisù and many more, there is no doubting the roots of Romito’s inspiration. Different menu options are available: à la carte and sharing menu, with a curated grape pairing selection, of which there are over 500 Italian and international offerings. An exclusive private dining room is adjacent to Il Ristorante which opens up to a private terrace overlooking the marina. bulgarihotels.com

Ristorante Berton Milan Set in a glass tower in Porta Nuova Varesine in Milan, Ristorante Berton stands out from the rest with its modern, elegant design and incredibly inventive dishes, and its breathtaking interior design, which was made by the Milanese studio VudafieriSaverino Partners. The kitchen is the heart and soul of the restaurant, custom designed with large windows to let as much natural light in as possible. The menu is made up of dishes using traditional Italian ingredients, but Andrea always puts his own modern spin on dishes, whether it be in the presentation or the cooking method, and always tries to extract the maximum amount of flavour from every ingredient on the plate. Chef Andrea Berton was born in Friuli in 1970. His culinary journey started in Milan as a member of Gualtiero Marchesi brigade in Via Bonvesin della Riva. His training continued in the best restaurants of the world: first from Mossiman’s in London, then at the Enoteca Pinchiorri is Florence, and finally at the Louis XV in Monaco under the guidance of Alain

Ducasse. From 1997 to 2001, he worked as Chef of the Taverna di Colloredo in Monte Albano, gaining his first Michelin star. After this important achievement he went back to Marchesi group as Executive Chef. In 2005, he began a collaboration with the Restaurant of Piazza della Scala in Milan where he obtains several awards such as the first Michelin star in 2008, the second one in 2009, three forks from Gambero Rosso in 2010 and three hats of L’Espresso guide in 2011. In 2012, he decided to dedicate himself to consulting in the positioning, design and development of quality restaurants projects. In September 2012, together with a group of partners, he opened Pisacco Restaurant and Bar, and, in July 2013, DRY Cocktail&Pizza. The return to “his” cuisine took place with the opening of Ristorante Berton where the Chef presents “modern dishes” enhancing the basic ingredients and featuring some ingredients that are not well known. ristoranteberton.com

Beefbar Dubai Originating from the heart of Monte Carlo, Beefbar Dubai prides itself on serving the world’s finest meat origins and cuts that are carefully selected and cooked to satisfaction to Dubai. Located in DIFC’s Al Fattan Currency House, Beefbar is a modern interpretation of a restaurant and now also a butcher shop that is specialized in beef. Offering takeaway and phone-order delivery options, The Beefbar Butcher Shop serves all kinds of meat - filets, entrecote, steak, ribs and tenderloin of exclusive meat, including the certified Japanese Kobe Beef, hand-selected by the restaurant’s Executive Chef, Alain Regnault, straight to your door, along with a selection of his recommended recipes. A rib cut of meat is arguably one of the finest cuts of meat. It’s here you’ll find the best cuts such as prime rib, short ribs and rib eye steaks, all of which are prized for their juiciness, tenderness, marbling, and superb flavor. A rib cut is best cooked over dry heat, such as on the barbecue, with a gourmet sauce and plenty of resting to let the juices sit. Considering the height of richness and perfection in both tenderness and presentation, the Tenderloin fillet is the cut of beef all others aspire to match. It’s not necessarily the most flavorful cut on its own, but its enhanced preparation generally compensates for that. Because the cuts of tenderloin tend to be thick, the best way to cook it is to sear the outside until browned, then finish the cooking in the gentle, even heat of an oven. The T-bone steaks come from the front of the short loin. These steaks are cut from the rear of the short loin where the tenderloin is thicker. For that rich, “beefy” taste, look for marbling in the sirloin. This hefty piece of tasty meat belongs on the grill or barbecue. The presence of the bone makes it difficult to connect properly to the hot surface in a frying pan. This cut of meat looks the most impressive on a plate. The tomahawk steak is a ribeye steak with the whole bone still attached. The frenched bones (all the meat and tissue is removed from them) extend a good 8-10 inches or more beyond the steak. This succulent rib cut already has all the flavour of onthe-bone rib, but when you cook it by pan-to-oven roasting, or on the barbecue, the extra flavours will come out of the bone and boost the rich mellow sweetness of this cut to a whole other level. dubai.beefbar.com

Gastronomic Delights One&Only The Palm Executive Chef, Yannick Alléno on the magic of cuisine.

Artists, despite their wide range, have preference for certain tools that they keep using again and again in their art. What are some of the ingredients or sauces that are consistently your favorite in the kitchen? I would say sauce, because it’s truly the verb of French cuisine. It makes eighty per cent of a dish because it brings together the different elements on the plate and creates coherence and harmony. It has always been part of French cuisine’s DNA but had fallen out of favour in the last decade. We decided to reintegrate it in our cuisine, modernizing it with the Extraction® process that really concentrates all the taste of the product with an incredible strength and intensity. From there, you can blend many different Extractions® to create new modern sauces, that would be less fat or salty but tastier.

“Being recognized as a chef and rewarded

by three Michelin stars twice is truly a dream come true, because we believe these distinctions represent a real enthusiasm towards Modern Cuisine.”

What would you consider to be your signature dish? Something that you feel has come to define your crafting method? I don’t think we have a signature dish in particular, as we try to create new dishes and offer our client new experiences. Maybe our signature is our modern cuisine that starts with the traditional basis of French cuisine and then innovates to propose something new, something coherent with the world we live in. At STAY by Yannick Alléno at One&Only The Palm, I embrace this signature style with a focus on imaginative cuisine. I present dishes that showcase classic cooking methods, reinterpreted in a contemporary fashion.

Parisian cuisine has always been renowned for its simplicity and elegance. Would you say that STAY by Yannick Alléno at One&Only The Palm offers classic French fine dining or is it more of a modern and contemporary approach? At STAY by Yannick Alléno at One&Only The Palm we hope to bring a modern vision of a finedining restaurant, one that offers a true French and modern culinary treat based on great food, creativity, and generosity. As always, our focus is the taste, and our challenge is to deliver an affordable, refined, and sharp cuisine through a wide selection of iconic or modern French dishes in order to please a demanding international clientele in a stylish, comfortable environment.

When was it that you were certain you wanted to be a chef? Has it been a life-long passion? From the age of eight, I knew that I wanted to be a chef. Food is a family tradition. My grandmother was a great inspiration to me and my parents used to manage small bistros in the Parisian suburbs. They clearly passed on their passion to me. At the Age of 15, I started to work

148-152 Bon Appetit D41.indd 149

in the kitchen – my father wanted to check if I really was made for this profession, so he asked Gabriel Biscay to find me a job at the Relais Louis XIII with Manuel Martinez. Gabriel Biscay told my father: “If he perseveres, you can shelve your doubts”. I persevered.

Who did you meet or work with that had a long-lasting impact on your career as a chef? One of my finest professional encounters was with Louis Grondard, when I worked at Drouant. He taught me almost everything I know today. But all of the chefs with whom I learned my trade – six MOF – Best Craftsmen in France – had a real impact on my career: Manuel Martinez, Gabriel Biscaye, Roland Durand, Martial Henguehard, Jacky Fréon, and again Louis Grondard. They taught me perfection in my work. There are also those who have supported me a lot. Paul Bocuse, in particular, has always been extremely kind to me since our meeting at the Bocuse d’Or in 1999. He has also helped me and encouraged me many times. He really was the greatest chef.

What was the most pleasant dining experience you have had at another restaurant? And what defines a perfect dining experience for you? I feel very lucky, because I eat in great restaurants quite often. And the best experiences for me, are when I’m discovering new tastes, when chefs offer new experiences. But if I had to choose, it would be Jamin, the former 3-star restaurant of Joel Robuchon. I ate his soupe chaude de foie gras à la gelée de poule (hot foie gras soup with poultry aspic). It has closed more than 20 years ago but the memory I have of this dish is so powerful. It is the magic of cuisine!

What advice would you give someone who wants to become a chef? Is a formal training necessary or can it be self-taught?

Being a Chef is all about gesture, perseverance and hard work. It is essentially a very repetitive work. You can only acquire the right, flawless move when you’ve done it a thousand times at least. So, If I had one tip, it would be to follow your passion and not be afraid to work. Of course, you need to have instinct and creativity, but your brain, your inventiveness is like a muscle that one can develop and that again is work. It is all about practicing, improving yourself, and finding new solutions, always. For me, talent is 90% of hard work and I think that 100% of those who succeeded are those who kept trying.

Having secured your reputation as one of the world’s most highly regarded chefs, how do you build on this success? What should we expect next from Chef Yannick Alléno? Being recognized as a chef and rewarded by three Michelin stars twice is truly a dream come true, because we believe these distinctions represent a real enthusiasm towards Modern Cuisine. So, it really encourages us to keep on exploring further and further in this modernity and most importantly, to satisfy our clients by sharing moments of gastronomic happiness with them. I am currently planning a trip to Dubai in October to visit One&Only The Palm where I curate the culinary experience for guests and oversee all three restaurants. I’ll be spending time with the chefs and of course, guests of the resort, as well as hosting exclusive Legend Dinners at STAY by Yannick Alléno at One&Only The Palm. Charlotte norvégienne moderne aux pommes Ingredients • 400 g Royal Gala apples • 10 g caster sugar • 4 g Tahitian vanilla pod • 5 g lemon juice • 15 g fresh apple juice • 460 g mineral water • 220 g caster sugar • 90 g atomised glucose • 5 g stabiliser • 1 kg Granny Smith apples • 15 g Roger Groult calvados • 50 g apple cider • Ascorbic acid • 150 g egg whites • 120 g caster sugar • 75 g icing sugar • 1 large brioche loaf • Butter • Caster sugar • Calvados Method 1. Cut the apples into 2-cm cubes. Cook them in a saucepan with the sugar, the split and grated vanilla pod, lemon juice and apple juice. Cook the compote on high heat to keep the apples slightly firm. Set aside in the refrigerator. 2. Heat the water with half the sugar. At 45°C, sprinkle on the remaining sugar after first mixing with the glucose and stabiliser. Bring the syrup to the boil, then cool to 4°C. Blend the peeled apples very finely. Add a little ascorbic acid to avoid oxidisation. Add the cider and the calvados, then the cold syrup to the apple puree. Mix well and leave to mature for 24 hours. Freeze and put in a cooling unit at -20°C for 2 hours. 3. Whisk the tempered egg whites in the beater at medium speed. Once foamy, switch to high speed and sprinkle the sugar on to stiffen the whites. Add in the sifted icing sugar using a rubber spatula. 4. Cut 4-mm slices in the brioche loaf, then cut rectangles 13 cm long by 4 cm wide, along with discs 3.5 cm in diameter. Dab the rectangles and discs with melted butter on both sides. Grease moulds 4 cm high and 4.5 cm wide and dust with sugar. Arrange the brioche rectangle so it sticks to the mould, then place the brioche disc at the bottom. Fill with apple compote (allow for 40 g per dessert). Cook in a ventilated oven at 170°C for 30 min. Once out of the oven, do not leave the charlottes in their grease, to ensure that the brioche stays crispy. Unmould the charlottes. Finish cooking in the oven for 5 minutes to finish drying them out. 5. Pipe the apple-calvados sorbet onto the charlotte and smooth into peaks using a spatula. Put the charlotte in the freezer for 3 min. Whisk the French meringue, dip the whole charlotte in it, then remove, creating an attractive “drop” shape. Create raised meringue patterns on a plate, then place the charlotte in the centre. Lightly flambé the charlotte with a blowtorch. Decorate with gold leaf. Serve a sauceboat of flambéed calvados separately. Flambé the dessert in front of the customer.

Aston Martin Rapide AMR Following hot on the heels of the DB11 AMR, Aston Martin has revealed the limited edition Rapide AMR. This production version of the concept shown at Geneva last year is limited to just 210 cars. The design of the new 205mph Rapide AMR has changed little from the concept that was shown at the Geneva motorshow in 2017, with a large and aggressive front grille that is reminiscent of the extreme track-only Vantage AMR Pro. Meanwhile the circular daytime running lights recall the recent Zagato models. The Rapide AMR’s aerodynamics have been tuned to reduce lift while retaining a neutral balance and the extra aerodynamic bodywork such as the splitter, sills, rear diffuser and boot lid lip spoiler are all carbon fibre. The new bonnet with large ventilation inserts is also made from carbon fibre to minimise weight. At the heart of the Rapide AMR is a naturally aspirated drivetrain that draws much of its technology and character from the potent Aston Martin Vantage GT12. Larger inlet manifolds with tuned length dual inlet runners enhance the airflow into the 6.0-litre V12 engine and, combined with new engine and gearbox calibration, this results in an increase in power. The legendary V12 now puts out 603PS and 630NM of torque, while a new quad exhaust ensures a raucous sound befitting of the AMR badge. To help harness all of this power and to launch from 0-100km/h in just 4.4 seconds, the Rapide

AMR has 21-inch wheels – a first for any Aston Martin – paired with ultra-high performance Michelin Super Sport tyres. The large, forged wheels have a multi spoke design that is not only very stiff but also aids brake cooling. To further aid thermal management of the brakes, the Rapide AMR utilises an evolution of the cooling system on the Vanquish S, with modified brake ducts and dust shields. The Rapide AMR will be available in three different design schemes. The Standard and Silhouette schemes offer four colours – Mariana Blue, Scintilla Silver, Lightning Silver and Onyx Black – with the Standard scheme adding AMR Lime accents to the splitter, sills and rear diffuser. The Silhouette scheme eschews the Lime accents and instead adds a full-length contrasting stripe in China Grey or Clubsport White. The interior of each Rapide AMR reflects the design scheme chosen for the exterior, with either AMR Lime or Galena Silver welting and stitching. There is a full-length carbon fibre centre console and the seats are trimmed in Alcantara - both firsts for a Rapide. Also available for the first time as an option is a One-77 style steering wheel. Every car has discrete AMR logos stitched into the seats in Galena Silver and each car will come with a limited-edition AMR inspection plaque as well as AMR branding on the carbon sill plaques. global.astonmartin.com

Bentley Mulliner Mulsanne W.O. Edition As Bentley enters its 100th year, the Mulliner division is marking the occasion in a way of which W.O. Bentley would most surely have approved: by creating an extremely rare and exquisitely crafted car. The Mulsanne W.O. Edition by Mulliner pays tribute to Bentley’s founder, and even contains part of his very own car. With a production run limited to just 100 cars, it provides an opportunity to own a priceless piece of Bentley’s story. The Mulsanne W.O. Edition by Mulliner is inspired by W.O. Bentley’s own car, the Bentley 8 Litre. Launched in 1930, it was W.O. Bentley’s final creation – and it is widely considered to be his finest. His largest and most luxurious ‘town carriage’, it was guaranteed to be capable of at least 100 mph, whatever kind of body the customer chose. The Mulsanne W.O. Edition by Mulliner isn’t just inspired by W.O. Bentley’s own 8 Litre – it even contains a part of it. 20 years ago, the crankshaft

154-161 Automotive D41.indd 160

of W.O.’s car reached the end of its natural life and had to be replaced. The Mulliner engineers were amazed to discover that it used incredibly similar materials, engineering and production processes to the Bentley crankshafts made today. To commemorate Bentley’s Centenary, this defining piece of the company’s engineering heritage was carefully cut into 100 sections for display in the new Mulliner cars. Each finished piece is proudly displayed between the two rear seats, visible through a window in the veneered tray of the bespoke drinks cabinet. With no two sections the same, every car is truly unique. To give this invaluable section of crankshaft the spectacular setting it deserves, the veneered surface around it contains an exquisite piece of marquetry showing a finely detailed view of W.O. Bentley’s 8 Litre. Designed by Mulliner in the Art Deco style popular in 1930, it takes five

full days to create. In total, 419 individual pieces of veneer are arranged by hand, including Tay, Birch, Eucalyptus and Dark Stain Burr Walnut veneers to enhance contrast and depth, with further shading effects achieved by burning the edges with hot sand. Aluminium is used to add gleaming highlights, a distinctly modern touch, while diamond-like borders infuse the Art Deco design with a contemporary edge. The Mulsanne W.O. Edition by Mulliner is infused with the spirit of the exhilarating 1920’s and 30’s era, with elements such as a metallic bonnet strip, heritage hides and a carefully curated selection of deep, rich colours. But it also delivers all the advantages of the 21st century Mulsanne, providing phenomenal power alongside the very last word in comfort. bentleymotors.com

For that price, collectors can aspire to get one of only 250 Art edition copies, which feature a sculptural steel and chrome bookstand and a copy of the book enclosed in an aluminum display case, both designed by Marc Newson. Together, the case and the bookstand are meant to replicate the essential shapes of a Ferrari 12-cylinder engine. Newson, one of the world’s most influential industrial designers, has created everything from sneakers to speedboats and is also a car enthusiast who often races one of his vintage sports cars in the Mille Miglia, a classic four-day race between Brescia and Rome in Italy.
