Blueberry Muffins

Gluten Free, Dairy Free, and Naturally Sweet

Makes 12 Muffins Total Time: 46 mins, Prep Time: 20 mins, Bake Time: 26 mins

2 cups almond flour 2 cups oat flour (blend oats in blender to make!) 1.5 tsp baking soda ½ tsp salt 1 cup blueberries 2 tsps vanilla 2/3 cup pure maple syrup 1/2 cup coconut oil, melted 4 eggs (or vegan egg)

Mix together wet ingredients, then add in dry ingredients and stir until smooth. Add in blueberries and lightly mix the batter. Scoop batter into a lined muffin pan, then bake at 350°F for 26 minutes. Let cool for 15 minutes, then enjoy!

Crust: 1 c cashews ¼ c almond flour 6 dates 2 tbsp pure maple syrup ¼ tsp salt Filling: 2 c cashews, soaked in boiled water for 1 hour ¾ c coconut milk, in can ⅓ c pure maple syrup 2 tbsp lemon juice 1 tbsp vanilla

Summer Berry Bars

Gluten Free, Vegan, and Naturally Sweet

Makes 16 Pieces Total Time: 3 hrs and 20 mins, Prep Time: 1 hr 20 mins

Add crust ingredients to food processor and mix until dough is formed. Press crust into a 8x8 pan lined with parchment paper. Add filling ingredients to blender and blend until smooth, pour over crust. Then, add fresh berries on top and freeze for 2 hours, slice, and enjoy!
