ith a theme of “Innovative Food Science and Technology for Mankind: Empowering Research for Health And Ageing Society”, the Food Innovation Asia Conference commenced yesterday. Gracing the opening ceremony was Privy Councilor General Surayud Chulanont; Dr Pavinee Chinachoti, president of Food Science and Technology Association of Thailand (FoSTAT); Dr Tanaboon Sajjaanantakul, president of Agro-Industry Academic Council Association; Dr Suchatvee Suwansawat, president of King Mongkut’s Institute of Technology Ladkrabang; Dr Sakarindr Bhumiratana, president of King Mongkut’s University of Technology Thonburi; Dr Chanasak Baitiang, advisor to the rector of Academic Affairs and representative for the president of King Mongkut’s University of Technology North Bangkok; and Justin Pau, general manager of UBM BES. The Thai population is ageing rapidly, and the declining numbers of the working class will affect economic growth. Research and development are the key success factors to prevent such a demise, and food innovation and research in this area will therefore be critical, said Privy Councilor General Surayud Chulanont. The Food Innovation Asia Conference has become an important platform to bring together academic and industry professionals from all sectors related to food, and has created an effective learning environment for all learners, including the many young scientists who participate every year in the conference and contest that is held alongside, he said. “In the current and coming decades, building partnerships

between academia and the industry will bridge the innovation gap of the opportunities and challenges. The knowledge of Food Science and Technology will position Thailand as a provider of food and food services to the growing elderly population across the region,” he said. The conference is being held over two days, and split into four different divisions for the first day. These included the themes of: food chemistry, nutrition and analysis; food processing and engineering; food product development, sensory, and consumer research, that was held in conjunction with the Sensory and Consumer Research Joint Symposium; and food microbiology, food biotechnology and fermentation. Speakers for yesterday’s sessions came from all over the region including Australia, Indonesia, Japan, Singapore and Thailand, and even from further abroad such as France and the US. They addressed possible new foods that could be used for senior nutrition such as tempeh, or monascus fermented rice products, and discussed their research findings on the antioxidant effects of Yacon tea leaves, the effect of high pressure homogenisation on properties of nanofibrillated cellulose from cabbage outer leaves, or even the efficacy of acidified nitrite on the contamination reduction of Salmonella. The conference will resume tomorrow and attendees can expect to learn about how beverage colours and flavours interact with sweetness and aftertastes and consumer liking, the future of food security in developing countries, and the difference in sorting aroma of cooked rice by regular and visually-impaired people.
