Lemon Chicken with Tabbouleh Serves 4
Ready in 45 minutes
This is a great way to turn simple and very economical chicken portions into a delicious Mediterranean-style supper. If you have time, make the tabbouleh a few hours in advance to let the flavours fully develop.
Ingredients: • 1 lemon, thinly sliced • 4 large chicken thigh portions (or 8 small thigh portions) • 4 tbsp olive oil • 3 tbsp lemon juice • 2 tbsp clear honey, warmed • 225g bulgar wheat (see tip) • ½ cucumber, finely diced • 4 spring onions, trimmed and finely chopped • 2 tbsp fresh chopped mint • 2 tbsp fresh chopped coriander • Salt and freshly ground black pepper Tip: Bulgar wheat is a type of wheat grain that has been parboiled, dried then finely crushed. It is similar to couscous but has more texture and bite. You’ll find it in most large supermarkets or health food shops.

Preheat the oven to 190C, 375F, Gas 5. Push a lemon slice under the skin of each chicken thigh. Heat 1 tbsp of the oil in a frying pan and fry the chicken over a medium-high heat until golden brown all over. Transfer to a shallow roasting tin and arrange the rest of the lemon slices around the chicken.

Mix together 1 tbsp of the lemon juice with the honey and pour over the chicken. Roast for 20-25 minutes until cooked through.

Meanwhile, place the bulgar wheat into a bowl and pour over enough boiling water to cover. Leave for 30 minutes until grains are soft. Stir well and drain off any excess water.

Stir in the rest of the olive oil and lemon juice and season with plenty of salt and freshly ground black pepper. Add the cucumber, spring onions, mint and coriander and mix well. Serve the hot roast chicken on the tabbouleh with any juices from the roasting tin poured over.

Tunis
Where Europe meets Africa. Tunis greets you with scenes straight out of the Arabian Nights, plenty of Mediterranean charm and elegant French-style boulevards. Winters are mild, summers sunny and hot but cooled by sea breezes which sweep across the lakes glistening between the capital and its sandy coastline. Fifteen miles of beaches fringe the upmarket suburbs, dotted with open spaces and clusters of pines andmimosa. You can ride a horse or a camel on the sand, swim, sail, shop for souvenirs and squeeze in a little sightseeing but the ultimate indulgence is joining the locals in a hammam, to be scrubbed lobster red from head to toe, or unwinding in a glamorous spa with the latest beauty treatment or sea water therapy, tailored to your needs. Thalassotherapy is a French legacy but comes at a fraction of the cost across the water. Tunisia has been independent since 1956 but the New Town designed by the French retains its Parisian feel. by. There are trendy stores and boutiques, traditional ‘pâtisseries’ and a free-standing clock tower mirrored in the fountains. The stylish Avenue de France leads to the Sea Gate, no longer lapped by the receding waters of the lake, but marking the meeting point of two cultures, Europe on one side, Africa on the other. Step through and within seconds, you are swept off your feet, lured relentlessly into the medina and a head-spinning maze of colours and scents. In the cool alleyways of the souks, men chisel silver and gold, embroider slippers, carve wood and brass, and every stall brings new temptation. Perfumes, carpets, spices, leather belts, pottery, silk, toy camels or aphrodisiacs, you’re sure to find anything you ever wanted and more. The air smells of couscous and mint tea and the bubbling of hookah pipes follows you along
the way. With its medieval bazar, its secluded mansions and minarets peeping above the rooftops, this Old Town is a World Heritage Site, claiming over 700 monuments. Visitors make their way to the Great Mosque, the Museum of Popular Arts and Tourbet el Bey, the mausoleum of last dynasty. Meanwhile, across the lake, history lovers gather around the ruins of ancient Carthage, scattered like blossom in the wind from the Roman Baths to the remains of the Punic city on Byrsa Hill. For others, the Bardo Museum is the top attraction, with its stunning collection of Roman mosaics and classical statues, but artists prefer to seek inspiration in Sidi Bou Said, a pretty blue and white village with wrought iron balconies as delicate as lace. Up there on a breezy clifftop, little disturbs the peace but birds twittering in the trees. Far below, fishermen cast their nets in the Gulf of Tunis while in the distance the city stretches as far as you can see, familiar and exotic all in one, flourishing at the crossroads of Europe and Africa.

Seed Sowing on the Cheap By Pippa Greenwood
If you want your garden full of colour, interest, perfume and perhaps even tasty crops, there’s no doubt that the least expensive way to do it is to raise your plants from seed. But what can be done to ensure the results in the garden are just as impressive? Start with a little self-restraint. It’s all too easy to buy enough seed to fill a tennis court when you have an average-sized garden. Make a list of what you actually need and put a limit on how many un-planned purchases you’ll allow yourself.

Many herbaceous perennials can successfully be divided into several new plants. Indeed most herbaceous plants do better when occasionally divided as the plant does not become so congested and you can dispose of the grotty bits and plant the good sections into fresh soil. Many plants are also easily propagated from cuttings, and over the next few weeks, you could get some great cuttings from summer favourites such as fuchsias for virtually no cost at all. The Fly Lady If we didn’t have paper clutter, our homes would be clean! Oh yes I know you will all agree with me on this one! Paper has multiplie d like rabbits and is hopping from one flat surface to the next. How can we stop this invasion from taking over our homes? Have you ever gotten the call that your mother was coming to visit and you catch yours elf raking all the piles of paper into bags a nd stuffi ng them into t he bottom of your closets ? Out of si ght out of mind; we don’t remember they are hiding in the closet till we have searched all over the house for the phone bill to pay because you just picked up your phone to make a call and it has been disconnected. We all hate that feeling. I have know n people w ho hav e moved across country and put those garbage bags of paper in the moving van because they didn’t have time to sort through four huge bags of paper clutter. Those bags alone are enough to overwhelm us at the thought of openi ng up the guilt and fear that is associated with that paper clutter! Let’s look at what happens w hen we get that call from our mother. Our brains shut dow n and we can’t think! All we know is that we have to stas h and dash! We don’t think about w hat is goi ng to happen whe n we hide thi ngs from ourselve s. We just know that it has to be done a nd we will deal with the conseque nces later. What problems could stuffing all those piles int o a bag cause us anyway? We know that answ er too; lost utility bills, checks and other important things we might need.

Many years ago I listened to a story by Rita Davenport. She had been on vacation for a couple of weeks. While she was gone all the mail was just piled on her desk. When s he got back to work; she could not function for the piles on her desk. She took a garbage bag and raked all the mail into it and placed it on the credenza acros s the room. All day she was busy returning phone calls and forgot about the bag of mail. That night the cleaning service came in and disposed of the bag. T he next morning s he went int o a panic. What was she goi ng t o do! What had she missed ? Over the next few weeks and months she real ized that there were only three items of importance in that bag of mail; One check that needed to be replaced, an invitation that needed an RS VP, and they called her to ask why s he had not responded and a letter that needed a reply. So I dare you to throw those bags away or just happily shred them! I also know that you will not take my dare! The fear still has you held hostage! I am goi ng to set you free once and for all time!

It was all in the garage a nd not piled on a table cluttering up her home! Stop yourself t he next time you feel the ne ed to put somethi ng down on a flat surface in y our home. You are creating a hotspot! Nip it in the bud before it gets started by using the DO IT NOW principle! It will only take a few seconds to take care of it now! We all know that later never comes!
