Fresh Tuna Salad with Spicy Thai Herbs is an ideal local starter as recommended by the resident chef, followed by a healthy serving of Grilled Lobster with Cashew Nuts and Dried Chili - an ultimately sublime cuisine worthy of a special trip to Chaweng.

The delicious international dishes are equally arresting. Seared King Scallops with Red Pepper Coulis, a popular starter, seems to fit perfectly with the bright and breezy surroundings. The star of the show is the Tenderloin of Wagyu Beef MBS9+. With top marks on the Marbling Score, this is undoubtedly the best beef on the island and is unique in its velvety melt-in-the-mouth texture and juicy tenderness of meat. The Page also features a walk-in wine cellar displaying a wide range of excellent Old and New World choices to complete the evening. Indeed, the whole resort deserves a walk around with its sleek minimalist architecture, beautifully manicured gardens and old trees and tastefully arranged “Reader” sculptures – a signature of the location.

The Drink Gallery seems to have stepped out of an extremely cosmopolitan city to suddenly grace the beach road in Chaweng. Vibrant and modern, it’s more of a chilled-out venue rather than being a self-conscious one. Step in and be welcomed by staff who are friendly and truly professional; they quickly appear when you need them but don’t hover.

The atmosphere is most definitely laid-back.

Everything is spotlessly clean and the restaurant has a neat, uncluttered feel to it. The place is designed by The Library, which is situated next door and is known for its minimalism and chic interiors. The Drink Gallery is less minimal, though most visitors will be immediately aware of its spaciousness. It must have one of the highest ceilings of any bar in Thailand – two stories high! A glass wall, meanwhile, separates all the hustle and bustle in the street.

Outside there’s an enormous terrace where you can enjoy the night air.

The drinks menu is varied and strikingly original, thanks to Dhasan Prabhananda. He jokingly describes himself as a “mixultant” and says his inspiration comes mainly from the kitchen and from cooking. Many of his drinks are creative and uniquely blended. Try Jarhead – vodka mixed with mint, lime, apples and kiwi served in a mason jar, or Blushed – rum with watermelon, lime, vanilla caster sugar and fragrant Italian basil.

Drink Gallery opens from 1PM till 1AM. There’s nightly entertainment too with a special Jazz session every Saturday. Food, of course, is dependably good, tasty and portions are ample. Signatures include Samui Rangoon, Roasted Garlic Ravioli and Seared Australian Veal Steak among others

The View from the Top 9GEMS Lounge Restaurant

Easily one of the most sophisticated of Koh Samui’s venues for eating and drinking, 9GEMS Lounge Restaurant appears to be ahead of itself in time. It looks as if it’s stepped right out of an interior design magazine. The chic minimalism of the setting with to-die-for interior design gives 9GEMS both a relaxed and a spacious feel at the same time.

Thanks to its location, perched right on top of a hillside, you’ll experience some of the best views on the island. The whole of Chaweng is spread out before you, making this an ideal place to watch the sun go down while you enjoy a long drink or cocktail.

When it comes to dinner, you can expect the dishes to be every bit as sophisticated as the décor itself. Enjoy contemporary takes on Thai and European cuisine. For starters, try fusion chicken tandoori salad, with the dish subtly nuanced by soy sauce and balsamic vinegar.

Tagliatelle comes with pesto or tomato sauce but you can also try it with Thai-style massaman curry. The bread, by the way, is home made, as is most of what you’ll find at 9GEMS with very little in the way of any outside processing at all.

When it comes to main courses, enjoy a roasted aurora rack of lamb marinated in pesto and tandoori spices or if you’re a fish lover, try grilled tuna with pepper turmeric on

an asparagus bed with egg risotto. Tastes at the restaurant cross effortlessly between east and west, and have been created by the chefowner who grew up in Thailand but lived for years in Europe.

With its excellent food, décor and views, recently-opened 9GEMS Lounge Restaurant is definitely worth heading for.

FIRING UP YOUR APPETITE, Italian-style: Ciccio Ristorante & Pizzeria Want an Italian pizza that’s as close to perfection as you can get? Long for the great tastes of that only a wood-fired oven can provide? Well here it is - Chef Lorenzo Belloni serves up pizzas a-plenty, both traditional and with some new takes.

If you like your pizza base thin and crunchy, and topped with some amazing creations, Lorenzo provides them. Try Margharita di Bufala – a 400 year old recipe is enhanced by the ultra-delicious buffalo mozzarella. Naturally, if you would like a great-tasting calzone, you’ll find it here: try the misto funghi with porcini mushrooms and truffle cream. Lorenzo’s also come up with some special pizzas he’s named after Italian fashion designers. All sound mouth-watering.

Try the Gucci, which is goat cheese, for di latte mozzarella, wild boar sausage, broccoli and gruyere. An unusual mix, you’ll agree – but it works. If pizza isn’t your thing, there’s a whole gamut of other dishes: pasta, risotto, filet of beef,

pan-fried salmon, and of course, to round the evening off, some highly decadent desserts.

Waitstaff are wonderfully discreet yet friendly, and you can watch Lorenzo himself work in the open-plan kitchen. This is the kind of place that oozes unfussy attention to detail: you know that every square millimeter of the restaurant, every smidgen of taste has been thoughtfully and lovingly considered. The restaurant also features a procession by Thai dancers on Wednesdays, when the weekly night market is held in Choeng Mon, and crowds flock to the area.

Ciccio is blended in with Samui Sailor Grill & Restaurant, which offers excellent Royal Thai cuisine (the chef worked for the royal family and had her own TV show) so it’s ideal if you want to mix and match cuisines. Since there’s no real divisions between the restaurants, you can sit where you like, whether it’s a pizza you’re after or a Thai treat.

Samui Sailor has a landmark tower with two upper floors for dining, or you can eat inside on the ground floor. Ciccio is an outdoors kind of place with tables and chairs arranged underneath the trees of a patio. Children will also love it, thanks to the sense of space and freedom. They, and you, will soon be hankering for a second visit – even more so as Ciccio turns out to be extremely affordable given the superb quality of the food.

Full Moon Char Grill Sumptuous food by the sea

Full Moon Char Grill is beautifully set overlooking the Anantara’s swimming pool; there are further views out to the open sea and Koh Pha-ngan beyond. It’s decidedly romantic with the restaurant entirely open to the outside with cool breezes circulating at all times.

The food is mostly international and focuses on char grilling. Taste is everything, and with fish and meat choices aplenty, there’s something for everyone. Try the charcoal lamb rack or a sea-food skewer which has been finished in a tandoori oven. These are just a couple of examples amongst many. The vegetables and accompaniments that go with the mains are equally tasty, with everything both cooked and presented to perfection.

The ambience is relaxed, and you can be sure of a warm welcome from the staff, who remain on call, never obtrusive, making your dinner an intimate one. The restaurant has relatively few tables, so you’ll be guaranteed plenty of space.

Desserts are as excellent as all the other courses at Full Moon. Try the tiramisu, or the crème brulée or the Painter’s Palette, a home-style southern Italian gelato with tropical brush strokes – a patissier’s delight.

The restaurant has had a name for itself since its earliest days; the Anantara group see to it that it’s staffed by some of the region’s most dedicated chefs. Bernhard Koll, who is a savvy and affable maestro heads up the staff here providing extraordinarily mouth-watering dishes.

Nothing has been left to chance. There’s what’s called a wine guru as well as a salt guru; both of them are highly knowledgeable when it comes to their specialties, allowing you not just to pair your dishes with the best wines, but also to find the best salt to enhance the taste of the food.

Full Moon Char Grill deserves the name it’s made for itself; it provides an essential blend of wonderful food, a relaxed ambience, and a beautiful background. It’s one of those places where you’ll want to return time and time again.

Unique Countryside Dining at THE FARMER RESTAURANT & BAR The approach to The Farmer is down a long drive with a view of green-clad mountains and the surrounding countryside. It’s the only restaurant on Koh Samui that overlooks rice fields, and is a peaceful away-from-it-all setting for a meal whether shared as a couple, family or group of friends.

You can choose to sit in an air-con room, or in a large pavilion with a high roof, or right out in the open enjoying the breeze coming off the fields. Whatever you choose, The Farmer is definitely a stylish place, with contemporary architecture and laid-back ambience. It’s open for both lunch and dinner. Chef Adisorn Kwanthep knows exactly how to please

discerning diners, and guarantee tasty treats that are well-presented. Vegetarian dishes are also avialable at The Farmer.

There are two special sets for lunchtime promotion – Crispy fried duck and ‘Khantoke’ set. Crispy fried duck is a half duck which is beautifully presented on a square, white plate, along with a duo of herbal dipping sauces, rice, and gourd soup. This set also includes fresh tropical fruits and a bottle of water at only 290++ Bt. Many guests enjoy a ‘khantoke’ for lunch – the Thai word translates as ‘tray’ - which is a selection of delicious Thai dishes usually served

on a tray, but at The Farmer it’s a stylish rattan pannier that’s used. You’ll find two chicken satays, two spring rolls, Tom yam goong, Laab (minced Thai chicken salad with exotic herbs), a curry (either green, red, massaman or paneang) and stir-fry vegetables.

Naturally, it comes with rice and at The Farmer they have a unique way of presenting it: five different colors are packaged in banana leaves. Each portion has a slightly different taste, depending on the herbs that have been used. It adds a delicate touch to the dishes you choose. This is a highly recommended set in which you and your partner can enjoy different tasty Thai food in one order at only 990++ Bt. There are many other sumptuous dishes on the menu. If you like seafood, try grilled fish in banana leaf or whole sea bass with Thai herbs. Meat lovers meanwhile will love the lamb shank, done in a Massaman curry. There are plenty of appetizers, side dishes and salads, too. Highly recommended is the slightly spicy pomelo salad. And don’t forget to leave room for one of The Farmer’s great desserts. No matter what time of day you choose to visit, The Farmer guarantees a great meal in a unique setting.

The brunch offers a huge range of options, with different food zones placed carefully around the restaurant. The salad bar boasts everything from Greek numbers with olives and feta cheese

A barbecue and carving station offers succulent lamb and chicken, while in the kitchen the imported Italian pizza oven helps to create wood-fired pizzas that have to be tasted to be believed. A fine cheese and meat selection platter is another draw as is the mouth-watering dessert station.

Walk in through the small atrium at Poppies and you soon find yourself in one of Koh Samui’s lushest gardens, complete with a stream and wooden bridges. It has a magical, fairy-tale feel to it. Poppies restaurant is at the end of the garden – from where you can glimpse the sea. If you’d like a long drink or cocktail take a seat at the palm-fringed beach bar, where you can watch the sun go down then when you’re ready head for the restaurant itself. You have a choice between sitting out on a terrace or in one of the two pavilions.

It’s in fact a whole medley of dishes and is presented on a rattan tray. The dishes are: a duck curry, Tom Yum Goong, stir-fried chicken with pepper, stir-fried morning glory and barbeque chicken. There’s also both a sea-food version and a vegetarian version of the kantok.

If you’re more inclined for an international dish, try one of the excellent grilled Australian steaks (certified Black Angus) or the sumptuous roast duck breast, which comes with plum and strawberry sauce, feta cheese, rocket salad and a delicious potato croquette.

FLAVOURS OF SAMUI JEAN-FRANÇOIS BROUCK Jean-François graduated from the Ecole Hotelière Provinciale de Namur in Belgium and spent the next six years working with great chefs such as Freddy Van Decasserie in the 2-star Michelin restaurant, La Villa Lorraine, before going on to De Bijgaarden, and then refining his craft alongside Yves Mattagnes at Sea Grill.

Then, like many of today’s hot chefs, he decided to see the world and experience what other more exotic cuisines could teach him. Jean-Francois found himself at the world’s most luxurious hotel, the ‘7-star’ Burj Al Arab Hotel in Dubai. As Sous-Chef in charge of their signature restaurant, The Al Mahara Seafood Restaurant, he created their quarterly menus and embraced the excitement and knowledge of working in the most sumptuous hotel in the world.

Still in need to see the world he headed off to Singapore as Chef de Cuisine for the opening of a new cutting edge restaurant , The Cliff, awarded by the World Gourmet Summit. Then on a visit to Bali, he became enchanted with the island and its people and decided to make it his home. He spent 4 years there working in various restaurants and hotels such as CasCades Restaurant at The Viceroy Bali, which he decided to make his signature restaurant, creating an outstanding menu of fine imported produce with both Western and exotic Asian influences.

After a few years working at Kai Restaurant/Swissotel Moscow, ranked as one of the top 10 restaurants in Moscow, Jean-Francois decided to join the Zazen team in Samui in March 2014 in order to take over the remarkable work of Chef Stéphane Courtin.

He is known as a culinary trend setter from the Krua Indy TV Program. Recently, he had kept himself busy as an ingredients specialist for Iron Chef Thailand, which is aired on Channel 7.

In 2012, Chef Ik with Thailand’s gastronomic team, won the Silver Medal during the International Food Fair Korea which was held in South Korea. He was handpicked by Chef Willment Leong, the Founder Chairman of Thailand Culinary Academy together with other 10 very talented chefs for the said competition. Aside from this, he was also a part of the GASTRONOMIQUE 6 project 2012 of ShaSa Resort & Residences in Koh Samui. Whenever he visits ShaSa Resort & Residences during vacation, he acts as the consultant for BEYOND THE SEA, Siamese Brasserie. He is always very happy to return to the restaurant’s kitchen to cook for family and friends.

FLAVOURS OF SAMUI CHEF COCO Like all kitchen masters, there is no secret to Chef Coco’s ascent – he started at the bottom and honed his skills through hard work, arriving at an industry leader where he is given the scope and support needed to showcase his talent.

Thai-native Chef Coco came to AKARYN Samui with 13 years of experience behind him and instantly made a big impression as its Executive Sous Chef. His speciality is Thai and European cuisines. He uses the freshest ingredients and combines that with a highly fertile mind and great technique, allowing this humble man to create dishes that linger long on the palate and even longer in the mind.

Beginning his career in the food and beverage department, Chef Coco’s dedication and talent saw him transferred and promoted in the kitchen through spells at several hotels. He started as a Commis II at Centara Hotels & Resorts and was then elevated to Chef de Partie at Anantara Hotels & Resorts.

He was Thai Sous Chef on the pre-opening team at Anantara’s Qasr Al Sarab Desert Resort in Abu Dhabi.

At Anantara Lawana Koh Samui Resort & Spa he was responsible for the main kitchen.

This quote from Chef Coco encapsulates why he has been so successful, as he constantly takes himself outside his comfort zone to take his craft to the next level: “Always cook with your heart to perfect a great food creation. eating on samui Nick Hall Originating from Nottingham in the UK, Nick has been residing in Thailand for the past nine years. After completing a formal culinary training program in his native country, he went on to work for both country house hotels and stand alone gourmet modern British restaurants.

After taking a year to explore the world, Nick decided to make Thailand his home and headed to Phangan Island to create his very own fine dining restaurant called Me’nu, in partnership with wife Ann. After two years at the helm of this stunning eatery, he headed over to the island’s first five star resort,the Rasananda resort and spa.

A proud father of two beautiful girls, Nick decided to make a move over to Samui Island and take the helm of the kitchens at the prestigious SALA Samui Resort and Spa early in 2011.

He is known for his high standards and attention to detail; his style of cooking described as modern, using only the freshest and finest ingredients available. He always insists on everything being made by hand and from the heart.

FLAVOURS OF SAMUI Sathit Muangprom “The thing I most wanted to do was be an architect,” says chef Sathit Muangprom. “I always wanted to create something special, something that would stand out.” He then discovered he also loved cooking.

However, he didn’t choose one dream over another.

He combined both and the result is 9GEMS Lounge Restaurant. Both the architecture and design of the restaurant are all his creation and are impressive in their own right. And what you eat here is equally as good, making this a dining experience to remember.

Sathit has had plenty of cooking experience. He originally learned in Thailand, where he began providing dinners for his brothers and sisters, but then went to Europe. After spending two decades in Switzerland, where he learned European cuisine, plus traveling all over the world, it’s not surprising his tastes are very eclectic.

“My favorite dishes,” he says, “are fusion tandoori chicken salad and Home-made potato gnocchi. I also love Thai-style sea-bass with chili and basil. I make lots of Italian dishes as well as French patisserie. I’m not one for ready-made food from a shop – I prefer to make everything by myself.”

Sathit is a great believer in multi-culturalism and aims for his food to be like the restaurant he’s built and designed – a combination of both Thai and European.

With both quality design and food, he’s succeeded in combining very different creative dreams.

eating on samui sommai Duangchuay Born and grew up his career in Phuket for thirteen years before moving to Morocco as a Chef de Cuisine Thailandaise. He spent another six years in Marrakech, Morocco where he worked in a variety of famous restaurants. Then, he started working with Angsana Riads Collections, a sister brand of Banyan Tree where he won “Thai Select Premium Award” organized by Ministry of Commerce, Thailand.

A while later, Chef Sommai joined Six Senses Hideaway Yao Noi as a Chef de Partie before joining Banyan Tree Mayakoba in Mexico in May 2012 as a Thai Sous Chef.

He finally decided to move back to his home sweet home, and joining Banyan Tree Samui as a head Chef at Saffron Thai Restaurant. His signature dish is “Khong Wang Ruam”, a selection of freshly prepared Thai Appetizers including Crisp Rice Noodle Wrapped Prawn, Grilled Tender Beef Satay, Tender Chicken Wrapped in Pandan Leaf and Banana Blossom Prawn Salad.
