We explore the work of two interior designers who are on our radar, Sarah Neil from Lior Interiors and Stephanie Astri from Arlen Interiors. fter a gruelling couple of years indoors across most of the country, many of us have started looking to incorporate a sense of lightness and joy into our surroundings. Many bold stylistic choices that we previously turned our backs on are now coming to the forefront, as we all look for fun, freedom and chance to try new things. We are all becoming much more interested in cultivating a living space that not only highlights our own personality, but that provides a way to get our creative juices flowing after a time of very little stimulation.

Nicole's Tips Choose a colour scheme that speaks to your personality and creativity, rather than opting for what is ‘on trend.’ With our recent dining room makeover, I stuck to the vibrant and playful Revive palette from the 2023 Dulux Colour Forecast, because it spoke to my client’s sense of boldness and joyous personality- so it was a match made in heaven. It can always be tricky to take the leap of faith into embracing bursts of vibrant colour in your home, particularly if you have always stuck true to white, black, grey and neutral tones. I say, just go for it! You won’t regret it, and it is important to remember that paint colours can always be changed. There are so many creative ways that people can integrate colour into their homes, and it is an incredibly personal choice. Some of my own favourite additions alongside a splash of paint include a colourful rug, bright and bold accessories, a striking statement piece of furniture or introducing a single eye-catching paint colour to your space. If you aren’t ready to jump into repainting your home, consider the importance of layering through different textures and patterns in your home. Introducing a variety of fun elements through soft touches such as cushions, rugs and colourful vessels, may be the first step to revamping your entire home. A great way to gain some colour confidence and embrace the idea of painting is to spend the time to create a mood board with all of your ideas in one space. This can be a great source of inspiration creatively further down your painting journey, and gives you a chance to get excited about the new journey of your space! Once your mood board has been created, for colour surety I suggest ordering A4 Colour Stickers or Sample Pots from dulux.com.au in your chosen colour(s) for your space so that you can view these colours in your home’s natural lighting conditions. A fantastic tip once you have some sample pots handy, is to get some rolls of butcher’s paper and paint a few lengths, and then hang them up in your space. You can let these settle for a week so that you can get a complete sense of whether the colour works with your own personal style and space and has a positive impact on the room. If you are someone who is interested in injecting bold and bright colours into your home, my number one tip is to not be afraid of colour! Q&A

Tell us about your background and your career journey. I was born and raised in the Alpine area on farmland just out of Myrtleford. After 12 years living across Brisbane and more predominantly Melbourne I moved back to the area and now reside in Bright. I have always worked in hospitality wearing many career hats over the years, but the best years were spent at Mantra Group Hotels, which was the main push behind creating my own business as an accommodation manager when I moved back to Bright. There was a gap in the market at the time for a more personalise approach with guests and owners particularly, for the high end more premium or bespoke properties. As the business grew, requests started to grow to project manage many of my owner’s new builds or renovations, taking them from the design stage to build stage to fitting out and holiday letting. During COVID when travel was down, I found myself doing more and more styling jobs and really enjoying the change in style and concepts from home to home. Welcoming guests back into our holiday homes, we had many of our guests fall in love with our bed linens and homewares or wanting to take their bathroom amenities home with them so a store seemed like a natural progression and complement to what we were already doing. In September 2022 I launched Bright Boutique Homewares, my very own homeware store in the centre of Bright. How would you describe your style ethos? My style ethos are fairly simple, to work with what’s in your hand, I think it’s important to stay true to a properties bones and original style. I get really excited when I am presented with a property that has existing key features or style and continue to work the style from this.

Visit Where do you draw your inspiration from? I really love seeing some of the beautiful American styles coming through from Studio McGee and Chip & Joanna Gaines, I find their styling really suits out Alpine Country feel. But again, I love letting the key features or existing pieces inspire me and dictate the rest of the design. What have been the most challenging aspects of starting your own business? Many would say I welcome a challenge and try to find the positive in any situation, Naturally the main challenge I faced was COVID, unfortunately not being able welcome guests into our beautiful homes was devastating, but it did give me the opportunity to embrace the design and style side of things, working alongside McPhails Furniture and evolving the business. What can guests expect when they book a Bright Boutique Accommodation property? We are all about experience and abundance, all of our properties are unique and different creating a very special experience for guests, We are a small portfolio which allows us to be very hands on. How does your natural environment (Bright) influence your styling and design? I try my best to stay true to our Region and the properties individual surrounds. Using local products or artists where we can, whether it be artwork or books and a lot of the current ranges from our suppliers are very Alpine and Country style so it’s been great to use many of these on recent projects. Do you have any tips you can share on how to bring warmth and comfort into a space? I really enjoy layering and textures that create warmth and comfort, from beautiful bed linens and layering throws. The use of rugs and warm tones and textures. What's next on the horizon for you? I have a few new exiting new building projects commencing over the next few months. I am really excited to create really unique and creative spaces different to anything else in the area at the moment.

A Design Life Stephanie Astri is the founder of Arlen Interiors and is passionate about creating warm and inviting residential and commercial interiors. With a niche in coastal styling, she loves to create a holiday oasis that everyone can come home to. We catch up with Stephanie and find out about her latest project.

Q&A Can you tell us about yourself and your design business? I’m Steph, the mummy of my 3 year old twin girls (Baylah and Mikahli) and founder of Arlen Interiors. I’ve always loved decorating from a really young age. When I was younger, my Mum and I would constantly be re-shuffling or re-decorating things in our home as we loved everything to feel ‘fresh’ again! Now I’m doing the same in my own home, much to my husband’s dismay! She taught pottery to the children of the convent school. On our visits I remember a large wooden table 20 meters long, exploding with florals, colours, tools and clay. I was endlessly fascinated with it all and touched everything, exploring the clay with my little hands. How did you start your career? It all started when we moved into our current home. While I was on maternity leave with my 9 month old twin girls, my girlfriends gave me a little bit of the push I needed. I started posting spaces in our home on Instagram, this led to friends and family hiring me, which then led to breaking out into the commercial world one year later. Now we’ve styled over 16 homes and 2 beauty salons in two years.

The Interior Stylist

How would you describe your creative aesthetic? I am all about warm interiors, soft colours and a whole lot of texture! I love the cosy, 'lived in' feeling. My style has stayed consistent for many, many moons now. I enjoy using neutrals, browns, terracotta pinks and showing some fun through feature artworks. I lean towards Coastal styling as there are so many variations of coastal. I love creating coastal homes as clients get to walk into their own little holiday sanctuary every day. You are known for bringing warmth into the spaces you create, what are some tips you can share to create cosy and warm interiors? My top 5 tips to create cosy and warm interiors include: 1. 2. 3. 4. 5.

Add a textured rug. Include some plants (make sure you know how much sun the space gets before you choose, there’s nothing cute about a dying plant). Sheers have a huge impact. Don’t be afraid of colour or to add your personality! There’s nothing fun about a cookie cutter home. Add a candle. There’s nothing like a sea salt scent to really incorporate that cosy feeling.

Tell us about your latest project and what you were hoping to achieve? The brief was pretty simple, cohesively complete my client's new build with some Boho Coastal elements. I was engaged as the build was nearing complete, which meant all finishes had already been chosen and installed. As the finishes were quite ‘cool’, I wanted to add in a whole lot of warmth and texture through the furniture and soft furnishing selections to balance it all out.

Were there any challenges you had to overcome to create the look for your client? Delays, delays, delays! Need I say more! I couldn’t be more grateful when I get to work with clients that trust the process as well as appreciate and understand shipping delays are out of my control. Where did you draw your inspiration from? The artwork was a big motivation, as I wanted to create an inviting, holiday oasis for my clients. Travel is usually a huge inspiration for me, but being tied down with lockdowns and twin toddlers, I’ve resorted to travelling the world for inspiration on Pinterest. What are your favourite elements in this space? One of my favourite elements in this home is the open plan living and dining space, especially as the sheers have completely transformed this entertaining level. Some of my other favourite elements is the feature artwork in the master bedroom. It’s a beautiful canvas print from a local artist in Wollongong. This really added a wow factor into the bedroom. What is next on the horizon for you? I’m currently focusing on all things business! There's a bit happening behind the scenes. We also have a commercial space we are in the process of designing, except it's still hush hush for now. he ideal location for a holiday home? It doesn’t get much better than the picturesque village of Deià, on the sea’s edge among the beautiful landscape of Mallorca’s Tramuntana mountains. Petite and discreet, Deià plays host each summer to a glamorous visiting cast of celebrities and power players – most of whom stay in private villas that belong either to the stars themselves, or to their close friends. But even in a place as exclusive and seductive as this, some properties are inevitably even more enviable than others. As demonstrated by this hidden gem of a house, which combines a completely private position with easy on-foot access to village and beach alike. Purchased a few years back from its original owner by a family from the UK, the house is one of a select few built during the late 1990s and early 2000s, when permission was given for the development of some properties off the winding road en route to Cala Deià. The cala is a tiny bay and beach that is perfectly suited to dips in the sea – as well as offering the possibility of relaxed summer lunches at its pair of charmingly rustic and ever-popular seaside restaurants. The new owners were faced with a spacious but very 1990s-style house, which included “glossy wall paint, dated direct light sources and heavy dark wood beams, doors and windows”, says Oro del Negro from Deià-based architecture firm More Design, which was appointed by the owners to renovate the property. There were also quite a lot of “smaller, segregated spaces”, adds Oro, and some slightly ostentatious fittings, such as gold-plated taps. Briefed to create “the Mediterranean dream home”, More Design set about “opening up spaces, generating more flow and connectivity in the common areas, refreshing all the tactile elements and of course, adding some magic to the outdoor spaces,” says Oro. The practice has extensive experience in reworking and updating homes in the area, and over the years has developed an aesthetic that feels refreshingly contemporary, yet also reflects a considered, uniquely Mallorquin

heritage in terms of style, design and locally handmade craftsmanship. As a result of restrictions imposed by the island’s planning authorities, the core envelope of the structure had to be respected, Oro says, with no changes to either its volume or footprint being permitted. Central to the success of More Design’s spatial reorganisation of the interior was the firm’s core design dictum, “Flow Forms”. The layout was opened up and altered, with a new entrance hall added to decisively separate this space from the kitchen. The latter is now positioned to function in oldschool heart of the home style by being linked in open plan to a previous enclosed porch, which has become a dining area that in turn, opens onto a wraparound veranda overlooking the pool area and lush garden. In addition to the spatial alterations, and just as important to the final feel of the house, is the use of finishes and fixtures that are appropriate to, and authentically reflect , the property’s Mallorquin location. These include the natural clay and stone, traditional Albarracín plaster, and lime renders that are used in combination as the main interior surfaces. As Oro says, these finishes “embrace longevity in the truest sense”. Likewise, More Design’s selection of lighting fixtures, taps and other hardware seamlessly blends in with the timeless aesthetic. Currently used by the owners for relaxed family vacations and frequent shorter breaks too, regular twohour flights from the UK make getting here a breeze, the house enables its occupants to completely relax and unwind without ever leaving its environs. redeveloped pool area and the surrounding garden are so spacious and inviting, it’s difficult to imagine ever wanting to go anywhere else once ensconced here. That said, however, the property’s perfect location also makes for an easy walk – via a charming boardwalk path – into the centre of the village for dinner, or a quick stroll down to the cala beach for lunch or a swim in the Mediterranean. Its position and superb southwesterly orientation means it also has wonderful views, which include vistas of the Tramuntana mountains, a peek or two at the sea, and even a glimpse of the village church tower. Aptly described by Oro as “so complete and well put together”, this is a substantial and sizable home that nevertheless feels both welcoming and cosy. Q&A Can you tell us about yourself? I am a Brisbane based Interior Designer, servicing South East Queensland and bringing a touch of North American charm into light and bright Australian homes. I was raised in North America where I found myself drawn to high-end and highly detailed craftsmanship style homes. Where are you based? I just opened the doors to our own brick and mortar Design Studio in Samford Valley. A quaint little white cottage nestled amongst a Lifestyle centre with a cafe, garden centre, book shop, farm animals and a whole host of wonderful small businesses. How did you start your career? While wrapping up my design studies I contacted a local designer and asked for a job. I was offered a position and worked alongside her, learning about the ins and outs of the industry and I have been in it ever since. I have learnt a lot through the various roles and businesses I worked within, all while honing in on my own signature style. How would you describe your creative style and aesthetic? Creating spaces that not only function but find beauty through textures and a layered lived-in design. The addition of antique and artisan pieces nestled amongst soft linens, crisp cottons and contemporary lines is a true reflection of my signature style. From the very beginnings of my Design career I have always loved incorporating a touch of black, through iron, ash timbers, linens and trims, yet working for Queensland based companies where everything seems to be about bright white coastal homes, it never settled well. I felt like I had hit the ceiling to my design capability. I knew the only way I could try to harness my creativity and express my design style would be to do it for myself. I want that beautiful USA aesthetic people know and love to be accessible here.

Tell us about the Ascot project and the design process you undertook. This beautiful family are near and dear to me, so when they reached out for me to take on this whole home renovation and design, I jumped at it. I had a newborn and wasn't looking for work, yet couldn't pass up the opportunity to be creative and design their forever home. I worked closely with the clients, listening to their wishlists and must haves for the home. It was peak Covid, so throughout the construction and the whole way through the design phase I was having to pivot constantly to find stock we could physically get here on a ship, and in time. The 1930's Federation home based in Ascot had previously undergone a renovation and modern extension out the back, creating a stunning 600+ sq/meter family home. I knew the home needed to be taken out the 90's and rather than completely modernise it, I leant into its classic origin. The home was taken from a deep red to crisp white, which alongside the new landscaping, instantly gave it beautiful street appeal. Internally the home was painted predominantly white with the exception of a few feature rooms, allowing the interior design elements to stand out as if applied to a fresh canvas. The kitchen, bathroom, and laundry were gutted and I designed spaces that utilised the same layout, yet created this fresh oasis for the family to enjoy. We stone wrapped the central fireplace which is nestled right in the heart of the home. Where do you begin when you are conceptualising a project? It all starts with the colour palette. Once I know what the client leans towards I can begin layering textures, tones, patterns and finishes within that palette. Something that is important is making sure you capture how the client wants to feel in the space. This can be a more important question than ‘how do you want the space to look’?. Once people begin to know and understand your aesthetic, then designing spaces that you ele HOME

love also in part becomes spaces they love. Designing a lot of homes for families, means I lean heavily into design longevity. I want the space to be timeless and not something that has to be replaced in 3-5 years. You can easily freshen up a room if the initial bones of the design are timeless. Where do you draw your inspiration from? Given my upbringing and my keen eye for North American design, I am striving to bring this layered living into Australian homes. Creating classic-contemporary designs that won't date in a few years time is key. I don't want to follow trends and fads, I want my designs to be versatile, fitting not only classic and period homes but new builds or modern homes as well. My inspiration truly is drawn from my upbringing. Watching my father work tirelessly alongside a finishing carpenter on our home in Vancouver, he added detailed wainscoting, new paint, new flooring and had beautiful furniture brought in alongside full and lush drapery, turning our humble home into somewhat of a work of art for its time. The finished product was so beautiful our neighbour came over and said "I want exactly that in my home", and so they did...down to the minute detail. From this young age I would constantly be up late rearranging my bedroom to re-work the design. Every few years I would do an overhaul and start a-fresh bringing in new colours and designs into my little space within the home. This is what made me turn to studying Interior Design long before it was in vogue and before the industry was made popular. I had never heard of an Interior Designer when I handed in my application to begin studying to ultimately become one. What are your favourite elements in the Ascot space? The front half of the home is set within this stunning Federation home with original walls, trims, and vast ceiling heights with ceiling roses and I think seeing touches of contemporary design fitting so seamlessly into these spaces would have to be my favourite part. What is next on the horizon for you? I am a 'dream big' kind of girl, so even though I am mere months into operating my physical studio, I am always thinking of the next step. Our Studio is not only where I host client meetings, and work from when I am not on-site, it has a beautiful shopfront where the general public can come in and shop my look. The response, so far, has been great with people saying "I didn't know I could get pieces like this in Australia", "I am so glad I found you", and this is exactly why I opened the shop element of the business. Not everyone can afford a Designer, but they can come in, shop in person, and take Designer curated pieces back to their space to make it feel like home. From here, we are working behind the scenes to create an online shopping experience for customers and clients.

With a missing roof and crumbling walls, Block alumni Josh and Jenna Densten had their work cut out for them to create a warm and inviting kid's bedroom for their daughters, Freddie and Story in their renovators dream home in Rutherglen, Victoria. The talented duo shres their tips on how to embrace colour and bring a touch of modern vintage a space. 1.Don’t 1. Don’t be afraid of moody colours Moving towards moodier paint colours such as Dulux Sea Kelp, Nephrite or Deep Garnett from the 2023 Dulux Colour Forecast Balance palette may seem daunting at first, but the risk is worth the reward. Experimenting with different shades to set the perfect mood for each room was our favourite aspect of this project, and really allowed us to step out of our comfort zone. 2. Curate as many objects as you can We have been slowly collecting ceramics, vintage art and furniture for over ten years now as we truly believe each unique piece brings something special to a space. We’re huge fans of rehoming old objects that can add new colours and textures to our spaces and can also be a fantastic conversation starter amongst guests. Pairing carefully selected vintage or unique pieces with the right paint scheme, can add both texture and colour, plus an extra sense of togetherness to your space. 3. Don’t compromise on window furnishings Window furnishings are often overlooked by homeowners and budding renovators when project planning commences, but they can make a huge impression on the overall finish of a room. By taking your time and selecting the right window furnishing for your space, it can assist with not only privacy, but heating, cooling and acoustics. 4. Embrace nostalgia Our mood board was all about embracing soft pastels for our girl's room and capturing the balance between playful and modern to evoke a sense of nostalgia for the entire family. Most households will have taller, cylindrical vases however this shape isn’t suitable for most flower varieties but work wonderfully for taller foliages or branches. A great starting point is to invest in a collection of shorter, wider vases with a smaller opening to really showcase the flowers in their natural form.If you want to get creative and attempt a complex arrangement, the next step is deciding the shape of the arrangement you wish to create. This is done by matching the space in which the florals will sit. For example, round tables look great with a 360 degree, abundant arrangement into a circular or a sculptural vase, whereas a long dining table will come to life when there are either a collection of small vases running down the length of the table or a rectangular squat vase that can carry the flowers in a linear form. When arranging, ensure all stems are cut on a sharp angle, allowing maximum surface area for water to be absorbed by the flower. For longevity you can replace the water daily and this will aid in maintaining the life of your cut flowers. When adding florals for the purpose of entertaining, don't forget to give yourself ample time. I always opt to create all my arrangements ahead of time so I’m able to enjoy the process and don’t feel rushed. ’m totally obsessed by the desire to understand how gardens work and how they make me feel. No matter where I am in the world visiting gardens - no matter the climate, culture or the consequent style of garden - I’m forever trying to comprehend (and even better, articulate, for I’m usually with a group) what it is about the design and/or the planting that is making me feel introspective or expansive, quietened or stimulated, cosily contained or riskily and excitingly exposed. It’s not that I want to disempower or demystify gardens. For I love that sense of joy or wonder that can creep up on you in a garden - it’s one of my favourite things about them - and I don’t want to undermine it. I just need to understand more of how gardens work so I can create or replicate similar experiences in gardens of my own design or creation. Hosting ABC TV’s Dream Gardens has been one of the greatest privileges of my working life. It has given me access to the wildly diverse work of some of Australia’s greatest garden designers, with a chance to see the site before any work begins, then to revisit several times during the construction of the garden. I’ve had the opportunity to talk to the designers about their approach at each point in the process and discover how they’re planning to bring the garden owner’s dreams to life. With the exception of the work of celebrated Australian garden designer Edna Walling, who created her own ‘village’ in order to control both the architecture and the gardens, every creation of a garden designer is what a painter would call a ‘commission’ - one ordered, and to some extent pre-envisaged, by the owner. Indeed, the ‘canvas’ belongs to the client, and they’re usually there to watch, observe (and often evaluate and criticise) every brushstroke as it emerges. Consequently, one of the most valid ways to judge the success of any garden design is how well it matches the needs or desires of its owner, regardless of how photogenic or televisual it is. Of course, if the designer is to have any professional future, it also needs to be magically beautiful. That’s quite a challenge - and one for which the designers on ABC TV’s Dream Gardens were more than a match. Another way of evaluating a garden is how well it engages with its site; how effectively it amplifies the natural beauties or advantages provided by it, and how well it minimises the evidence of the physical or visual challenges that all sites present. These two inputs are so multifaceted and so intricately intertwined that there’s no chance of any two ‘canvasses’ being identical, and therefore of no two gardens being exactly alike. Amongst the pages of this book are gardens built on slopes initially considered too steep for any of the machinery required for their construction and others so low lying, and with such a high water table, that swimming pool shells in the vicinity had been known to float up out of the ground. There are gardens so small that a car-stacker was installed and planted over in order to appropriate every square centimetre of available space, and others with such a huge outlook that they had to be treated primarily as a visual plinth for the grand view beyond. There are gardens made on thin, starved, sandy soils and others on poorly-drained, puggy clay. But time and time again, I was reminded that no matter how great the physical challenge, garden design is never a purely problem-solving exercise. Every art form confronts challenges of execution and it’s the larger creative drive and vision that keeps these hurdles in perspective.

ong-regarded as one of the prettiest spots on Australia’s Sapphire Coast, the small township of Bermagui can now boast of being home to the 2023 Grand Designs Australia Magazine House of the Year. The stunning two-storey, multipavilion house that claimed the crown in this year’s Large Residence category is a contemporary reimagining of the classic Aussie beach shack. The vision, led by Melbourne-based Winter Architecture, was for a home that nestles into the surrounding natural landscape and preserves a seamless connection with the outside world. For this they called on the talents of leading landscape architect and green infrastructure expert Kelly Royle. ‘This project provided the opportunity to blend my love of coastal landscapes with my passion for designing outdoor spaces that expand how people live in their home,’ says Kelly. Kelly’s creative process starts with investigating the indigenous surrounds of a location – the native flora and fauna plus the local weather patterns, which here included expected rainfalls and coastal winds. ‘I needed to consider what plants could survive exposure to the elements, sitting on top of an ocean cliff,’ says Kelly, ‘and thrive on only rainfall since the family won’t be there to tend to the plants all year round.’ The colour palette was important too, making sure that the planting scheme and built materials would complement the weathered coastal tones used for the house.Central to all of Kelly’s designs, though, is the lifestyle of the residents and how they connect to nature in their own individual ways. ‘I try to visualise how a person would move through the landscape,’ says Kelly, ‘how they would sit in or use the space, and how they might feel in that space.’ For this project, there was a history spanning three generations with a deep connection to the rugged coastline and wild seas. A favourite pastime is swimming in Bermagui’s famous Blue Pool, so Kelly created a rolling landscape of constructed dunes with soft borders of textural grasses, ground cover and shrubs to provide a gentle transition from the beach to the house. Kelly says, ‘The sand dunes serve a dual purpose of situating the house within the natural landscape but also providing a wind break for the house and a stable, erosion-resistant base for the grasses to grow on.’ A Spotted Gum boardwalk extends this connection between the landscape and the house by forming an axis leading from the front of the property, through a portico that opens into the main pavilion and then beyond, where it connects with a neighbouring family property. The extended family enjoy spending time with each other, so Kelly’s design includes flexible outdoor gathering and entertainment spaces, with courtyards that extend the indoor spaces and strategic lighting that allows the outdoor spaces to be used at nighttime. Kelly envisaged landscaped elements being visible from every room, ensuring people feel connected to nature wherever they are in the house, so her design includes two internal courtyards and a rooftop garden. ‘The rooftop garden posed some unique engineering challenges,’ says Kelly. ‘We had to calculate what structure we needed to support the combined maximum weight of the soil, plants and rainwater.’ Kelly’s thoughtful and purposeful design has been recognised as key to creating the balanced integration of the Bermagui Beach House’s indoor and outdoor living spaces. Jean Graham, director at Winter Architecture, says, ‘The Bermagui Beach House is a refined example of how building and landscape can work together to create an atmosphere of calmness, inspired by the natural surroundings. Landscape architecture is becoming increasingly important as we look for ways to live more fully in our homes. Cheeky Chickpea Stew

Chicken, Lemon and Olive Tray Bake

Serves 2

This recipe is a winner. While most stews are time-consuming to cook, this community favourite can be whipped up in about 10 minutes with very little prep. You could add a handful of spinach just before the end of cooking time, or serve it with a fried or poached egg on top and a slice of sourdough. You can keep it in the fridge for up to four days.

There are some meals that are so simple, classic and tasty, they deserve a spot on every weekly glucose-steady menu.

Ingredients: 1/2 onion, roughly chopped 2 garlic cloves, roughly chopped 3 tomtoes, roughly chopped 1 x 400g tin of chickpeas, drained 1/2 teaspoon hot sweet paprika (or any kind) Dollop of full-fat Greek yoghurt, to serve 9optional) Olive oil Salt + Pepper

Ingredients: 2 skin-on, bone-in chicken thighs 1 lemon, cut into wedges and pips removed 100g pittedmixed olives 1 red chilli, roughly chopped (optional) 100g broccolini, tough ends trimmed + 2 tablespoons olive oil + salt and pepper

Method: Heat a splash of olive oil in a medium saucepan on a medium heat and add the chopped onion. Fry for 1 1/2 minutes, stirring occasionally, until the onion has softened, then add the chopped garlic and fry for 30 seconds more. Add the chopped tomatoes, add the chickpeas, paprika and 150ml of water to the pan. Increase the heat o high, cover the pan with a lid and simmer the mixture for 7 minutes, until the tomatoes and beginning to break down. Season generously with salt and pepper and serve.

Prep time: 7 mins / Total cook time: 35 mins GLUTEN-FREE

Method: Preheat the oven to 200°C/180°C fan. Place the chicken thighs, lemon wedges, olives and chopped red chilli (if using) in a roasting tin. Sprinkle the olive oil and some salt and pepper over the top, then roast in the oven for 30 minutes, until the chicken thighs are cooked through. Remove the roasting tin from the oven and add the broccolini, then return it to the oven for a further 5 minutes, by which time the broccolini should have softened and charred a little. Divide the chicken and broccolini between two serving plates and serve.

Mixed Berry and Pistachio Crumble Juicy berries with a nutty toppingg - a match made in heaven. Any frozen berries will work, and you can swap the pistachios for hazelnuts or almonds. Serves 4 Ingredients: 60g plain flour 150g caster sugar 50g unsalted butter 100g shelled pistachios 350g frozen mixed berries creme fraiche, full-fat Greek yoghurt or ice cream to serve (optional) Method: Preheat the oven to 200C/180 C fan. Place the plain flour, 100g of the caster sugar and all of the unalted butter in a food processor and blitz until the mixture resembles breadcrumbs. Add the shelled pistachios and blitz again until the nuts are roughly chopped and the crumble has a light green hue. Tip the frozen mixed berries into a mediumsized round or square baking ish (you want a snug fit) and toss them with the remaining 50g of caster sugar. Scatter the crumble mixture on top and bake for 20-25 minutes, or until the berries are bubbling and the crumble is golden and crispy. Serve with creme fraiche, Greek yoghurt or ice cream, if you wish.

History The recent history of Hobart is its origins as a penal colony. In 1803, the British established Hobart Town (now Hobart) as a penal settlement, primarily intended for convicts from the overcrowded prison system in Sydney. It served as a punishment and rehabilitation center for convicts, who were put to work in various industries to help develop the settlement. The early years were marked by harsh conditions and conflicts with indigenous First Nations people, who had inhabited the land (nipaluna) for thousands of years. Over time, Hobart evolved from a penal colony into a thriving city, with the convict past gradually giving way to a vibrant community and a rich cultural heritage.

How to Get There Getting to Hobart is relatively straightforward with multiple transportation options. If you're coming from within Australia, the most common way is to fly directly to Hobart International Airport. Several domestic airlines operate regular flights from major cities like Melbourne, Sydney, and Brisbane. Alternatively, you can choose to fly into Launceston Airport and take a scenic drive of approximately two and a half hours to Hobart. If you prefer a leisurely journey, you can embark on a picturesque ferry ride from Melbourne to Devonport, followed by a scenic drive down to Hobart, which takes around three and a half hours. If you're already in Tasmania, you can make use of the reliable bus services that connect Hobart with various towns and cities across the island.

When to V isit The best time to visit Hobart is during the summer months (December to February) when the weather is mild, and a plethora of festivals and events take place, including the vibrant Sydney to Hobart Yacht Race. We also love winter for cosy nights by the fire, a range of winter festivals and the cosy atmosphere of the city.
