a sweet start

Blueberry Brie Grilled Cheese by Nick DiGiovanni

Ingredients

8 thick slices of sourdough bread

4 tbsp mayonnaise

4 tbsp blueberry jam or preserves

6oz (170g) sliced brie

1 cup (140g) fresh blueberries

2 cups (226g) grated sharp white cheddar

4 tbsp unsalted butter, divided

Method

1. Using a pastry brush, lightly coat one side of each slice of bread with mayonnaise, about 1/2 tablespoon per slice.

2. Place 4 slices of bread on a work surface, mayonnaise side down. On each of the 4 slices, spread a thin layer of blueberry jam, about 1 tablespoon per slice. Evenly distribute the brie, blueberries, and cheddar over the jam. Close each sandwich with a slice of bread, mayonnaise side up.

3. In a large nonstick pan, melt 2 tablespoons of butter over medium heat. Add 2 sandwiches and cook on one side for about 5 minutes. Use a weight, such as a small pan lid, to press down the sandwiches. Flip and cook for 5 minutes on the other side, until the exteriors of the sandwiches are browned and crisp and the cheese has melted.

4. Transfer the sandwiches to a serving platter. Repeat the cooking process for the remaining sandwiches. Serve immediately.

Nick’s Tip: It is important to go low and slow, not rushing with high heat, to prevent the bread browning faster than the cheese is able to melt.

2. Pour in 2 ounces (60 ml) of Aperol.

4. Add 1 ounce (30 ml) of sparkling wate.

5. Give the ingredients a gentle stir to blend them together harmoniously.

6. To garnish, slide an orange slice onto the rim of the glass, allowing its citrusy aroma to mingle with each sip.

A Taste of MALTA

In Simon Bajada’s new cookbook, Malta , he takes us on a culinary journey of this Mediterranean region and inspires us to create dishes inspired by a little slice of heaven located between Italy and the North African coast.

Fishcake recipes are always handy, featuring ingredients from the pantry. In Malta, similar patties are also made with corned beef. I like to serve these with plenty of lemon and a salad of iceberg lettuce. They are also nice eaten cold and can be added to a platt Malti.

Ingredients (serves 4)

MAKES 10 FISHCAKES

PREPARATION: 20 MINUTES COOKING: 30 MINUTES

600 g (1 lb 5 oz) potatoes, peeled and halved if large

2 eggs

2 medium tins tuna in oil (approximately 350 g/12½ oz), drained

1 tablespoon chopped mint

1 tablespoon chopped flat-leaf (Italian) parsley

2 tablespoons chopped spring onion (scallion)

salt and pepper

80 ml (2½ fl oz/⅓ cup) milk

75 g (2¾ oz/½ cup) plain (all-purpose) flour

100 g (3½ oz/1 cup) dry breadcrumbs

neutral oil for frying such as sunflower or canola

1 lemon, cut into wedges to serve

How To

Bring a large saucepan of well- salted water to the boil. Add the potatoes and cook until soft (about 15 minutes). Drain then place in a large bowl and allow to dry out and cool down until you are able to handle them.

Grate the potatoes into the bowl using a box grater.

Whisk 1 of the eggs and add to the potatoes along with the tuna, herbs, spring onions and some salt and pepper. Stir to combine.

Whisk the remaining egg and milk in a bowl. Put the flour and breadcrumbs onto separate plates. Shape the tuna and potato mixture into balls slightly larger than golf balls and flatten into patties. Roll in flour, then egg, then breadcrumbs.

Pour a generous layer of oil into a frying pan to use for shallow frying. Heat the pan, then fry the patties in a few batches until golden on each side. Drain on paper towel before serving with the lemon wedges.

ARJOLI TUNA (TOMATO DIP)

This dip is one of those recipes that gets tweaked and leveraged in many ways. Arjoli is a melting pot of classic Maltese flavours, but you can use what’s on hand in the fridge or pantry, omitting and

180 g (6½ oz) tinned tuna in oil, drained

3 anchovy fillets, chopped

200 g (7 oz) tomato paste (concentrated purée)

1 small onion, chopped

1 garlic clove, finely chopped

50 g (1¾ oz) kalamata olives, pitted

100 g (4½ oz) Galletti (page 74) or water crackers

3 tablespoons chopped flat-leaf (Italian) parsley

1 pinch of chilli flakes

180 ml (6 fl oz) extra-virgin olive oil

2 teaspoons red-wine vinegar, plus extra to taste

How To

First blitz the crackers in the food processor until they have broken down. Now add all ingredients and blitz to a paste. If it seems dry, add a splash of water. Taste the dip and add more vinegar if desired. Serve with slices of crusty bread or galletti.

FROĠA TAT-TARJA (VERMICELLI AND PARMESAN PIE)

This curious pie, made without dough and cooked on the stovetop, is thought to have been developed by home cooks with leftover pasta. Here is the classic version, but other ingredients such as roasted vegetables or flavour bombs like capers, sun-dried tomatoes and olives can be added to the mix – you may just need to include a bit more cheese and egg to bind. The pie on its own can be dry, so I have included a sharp tomato and red onion salad that I love to serve it with. Alternatively, you could spoon some pesto or warm passata (puréed tomatoes) over the top. Thin pasta works best in the pie as the fine strands bind together well.

Ingredients

220 g (8 oz) vermicelli, angel hair

pasta or spaghettini

2 large eggs

50 g (1¾ oz) parmesan, grated, plus extra to serve if desired

2 tablespoons chopped flat-leaf (Italian) parsley

1 garlic clove, crushed

100 ml (3½ fl oz) milk

salt and pepper

1 tablespoon olive oil

1 tablespoon butter chunks

TOMATO SALAD

Ingredients

4 large ripe tomatoes, sliced 1 cm (½ in) thick

½ red onion, thinly sliced salt and pepper

1 tablespoon extra-virgin olive oil

2 teaspoons red-wine vinegar

2 tablespoons roughly chopped flat-leaf (Italian) parsley

How To

Boil the pasta in well-salted water for a minute or so less than the packet recommends. Drain and rinse with cold water.

In a large bowl whisk the remaining ingredients except the oil and butter. Stir in the pasta until evenly combined.

Heat the oil and butter in a 25 cm (10 in) saucepan over a low– medium heat. Use a pastry brush to brush the oil up the sides of the pan. Tip in the pasta, then flatten and press it down (I do this with the bottom of a plate). Cook for around 3 minutes, then check to see if there is a golden crust developing on the base. (It’s important not to burn it here or it can become bitter.) When golden, place a large plate on top of the saucepan and carefully flip the pan and plate upside down, dropping the pasta onto the plate. Slide the pasta back into the pan. Continue to cook for another 3 minutes.

How To

While the pasta is cooking, lay the tomato slices over a plate or wide bowl and scatter on the onion. Season with salt and pepper, and drizzle with the oil and vinegar. Scatter with the parsley. Serve the vermicelli pie with the tomato salad and some extra parmesan if desired.

WHITE WINE SANGRIA WITH MELON AND RASPBERRIES (SERVES 4)

Ingredients

750ml Sauvignon Blanc or Pinot Grigio

Dash of citron vodka (optional)

Chilled soda water

Thin slices of cantaloupe melon or sliced fresh peaches

Fresh raspberries

Crushed ice (optional)

Method

1. In big wine glasses or a glass jug, pour the Sauvignon Blanc or Pinot Grigio until they are half full.

2. Add a dash of citron vodka for an extra kick (optional).

3. Top the glasses or jug with chilled soda water.

4. Pop in thin slices of cantaloupe melon or sliced fresh summer peaches into each glass or the jug.

5. Add four or more fresh raspberries to each glass, allowing them to infuse the sangria with their vibrant flavors.

6. If desired, add crushed ice to keep the sangria cool and refreshing.

7. Give the sangria a gentle stir to mix the flavors.

8. Serve the white wine sangria with melon and fresh raspberries in the prepared glasses or pour from the glass jug.

9. Sip and enjoy the delightful and refreshing flavors of this white wine sangria, perfect for warm summer day!

BAKED SARDINES WITH LEMON CRUMB AND GREEN PEPPERS (serves 4)

Perfect for shared dishes or tapas.

Ingredients

12-16 sardines (allow 3-4 per person), gutted, scaled, and heads removed

1 cup fresh breadcrumbs

Zest and juice of 1 lemon

Salt and pepper

1/2 teaspoon ground fennel seeds

2 cloves of garlic, minced finely

1 cup fresh chopped parsley

Olive oil

2 green capsicums (bell peppers)

Lemon wedges, for serving

Method

1. Preheat the oven to 180C (350F). Line a flat tray with baking paper and drizzle a little olive oil over the paper.

2. In a bowl, mix together the fresh breadcrumbs, minced garlic, lemon zest and juice, chopped parsley, ground fennel seeds, salt and pepper to make the lemon crumbs.

3. Cook the green capsicums over a flame until they blister. Remove the skin, discard the seeds and membranes, and slice the capsicums into strips.

4. Take each sardine and slightly open it. Stuff some of the lemon crumb mixture inside, pressing some onto both sides of the sardines. It doesn’t need to be neat.

5. Place the stuffed sardines flat on to the prepared tray, arranging them close together. Sprinkle any extra crumb mixture over the top of the sardines. Drizzle them generously with olive oil.

6. Bake the sardines in the preheated oven for approximately 10-15 minutes, or until the crumbs turn golden and the sardines are cooked through.

7. Once baked, transfer the sardines to a serving platter. Serve them with lemon wedges and the sautéed green peppers.

ROASTED LAMB STUFFED PEPPERS (Serves 4-6)

Whole succulent roasted peppers filled with a lamb and rice spiced mixture.

Ingredients

6 red capsicums (cooked whole in boiling water for 10 minutes)

2 cups of cooked white rice

2 cloves garlic, finely chopped

1 tablespoon olive oil

1 brown onion, finely diced

500 grams minced lamb

1 teaspoon Baharat or Moroccan spice.

1/2 teaspoon dried or fresh mint

1 teaspoon ground cumin seed

2 cups otomato passata

Salt & pepper

100 grams feta cheese

1 tablespoon of olive oil

1/2 cup white wine (red wine will work too)

Method

1. Pre-heat oven to 175C (345F).

2. Begin by cooling the cooked capsicums. Carefully remove the tops to create little lids, and gently remove the membranes and seeds from the inside.

3. In a pan, heat olive oil and fry onions and garlic until they turn golden. Add spices to the pan, followed by the lamb mince. Fry until the lamb changes browns.

4. Pour in the tomato passata and cook for a few minutes. Season with salt and pepper.

5. Stir in the cooked rice and combine.

6. Spoon the lamb rice mixture equally into the capsicum shells. Crumble feta cheese over the top. Place the capsicum lids back on top and arrange them in a baking dish.

7. Drizzle the capsicums with olive oil and pour the wine into the bottom of the baking dish.

8. Bake uncovered in a preheated oven for 35-40 minutes, or until the peppers turn deep red and are slightly shriveled.

9. Serve and enjoy!

Serve this salad alongside grilled lamb or fish.

GRILLED FENNEL WITH COURGETTE & PARMESAN (SERVES 4)

Serve warm or cooled as a salad this is a perfect accompaniment to seafood or chicken. I used a mandolin to slice but a knife will slice the vegetables fine enough. Use a BBQ or grill pan to cook the vegetables.

Ingredients

2 heads of fennel thinly sliced - trimmed of stems (retain some fronds for garnish)

2 courgettes, thinly sliced

1 lemon (zest and juice)

60 grams Parmesan cheese, shaved

Olive oil

Salt and pepper

Method

1. Brush sliced vegetables with olive oil and grill until charred on both sides.

2. Don’t overcook as both of these vegetables don’t require to be cooked too long.

3. Mix warm vegetables with Parmesan and lemon zest and juice and an extra drizzle of olive oil

4. Serve on a platter or bowl piled up and top with extra Parmesan and a garnish of fennel fronds.

SEASONAL VEGETABLE TART (SERVES 4)

Ingredients

2 sheets of frozen puff pastry, thawed

A variety of small tomatoes (different colors, if available)

Red and green bell peppers (capsicum)

Sliced courgette (zucchini)

Olives (optional)

100 grams of cream cheese

Salt and pepper

Pinch of dried thyme (or fresh, if available)

Sprig of fresh oregano (or 1/2 teaspoon dried oregano)

1/2 teaspoon of red pepper flakes

1 clove of finely chopped garlic

Olive oil

Basil leaves for garnishing (optional)

Method

1. Preheat the oven to 180C (350F).

2. Line a rectangular removable base tin (approximately 36cm long) with the thawed puff pastry sheets. You can either spray the tin with nonstick spray or brush it with olive oil.

3. In a bowl, mix the cream cheese with the herbs (dried thyme, oregano), seasonings (salt, pepper, red pepper flakes), and finely chopped garlic.

4. Spread the cream cheese mixture onto the puff pastry in the prepared baking tin.

5. Place the tomatoes (some halved, some whole), bell peppers, sliced courgette, and olives (if using) onto the cream cheese mixture. Arrange them to cover the entire tray. Drizzle a little olive oil over the vegetables and sprinkle with additional salt and pepper.

6. Bake the tart in the preheated oven until the pastry is puffed and golden, and the vegetables are cooked. This typically takes about 20-25 minutes.

7. To ensure proper cooking of the base, preheat a flat tray in the hot oven and place the tart tin on it while baking.

8. Once cooked, remove the tart from the oven and garnish with a few basil leaves, if desired.

9. Serve the vegetable tart with a green salad for a light lunch or as part of a shared meal during a long lunch.

LEMON BAKED CHEESECAKE (Serves 8)

Ingredients

200 grams of plain sweet biscuits

140 grams of melted butter

1 can (375 grams) of condensed milk

600 grams of cream cheese

Zest and juice from two lemons

2 tablespoons of lemon butter (store-bought or homemade)

1 tablespoon of cornflour

3 eggs

Whipped cream and raspberries for serving

Method

1. Crush the plain sweet biscuits in a food processor or by hand until they resemble sand. Mix the crushed biscuits with the melted butter.

2. Prepare a 23 cm springform cake tin by lining it with baking paper. Press the biscuit mixture evenly into the base of the tin and up the sides. Don’t worry about making it look perfect; a slightly rustic appearance is fine. Place the tin in the fridge until you’re ready with the filling.

3. Preheat the oven to 150°C (300C).

4. For the cheesecake filling, combine all the ingredients together in a mixing bowl. Mix until just combined using a hand-held or stand mixer, or simply by hand with a wooden spoon. Avoid overmixing.

5. Pour the cheesecake mixture into the prepared tin with the biscuit base.

6. Bake the cheesecake at 150 degrees Celsius. To add moisture, place a dish of water in the oven at the same time. Bake for approximately 40 minutes or until the top turns golden.

7. The cheesecake should have a slight wobble in the middle. Once baked, allow it to cool and then chill it well in the fridge for a couple of hours, preferably overnight, to enhance the flavor.

8. Once chilled, remove the cheesecake from the tin. If needed, gently run a sharp knife dipped in warm water between the side of the tin and the biscuit sides to help release it.

9. Spread whipped cream on top of the cheesecake and decorate with fresh raspberries. You can also add extra lemon curd for additional flavor, if desired.

Since landing on our screens in 2020, Melissa Leong has become a household name, winning the hearts of food lovers across the nation. With her warm presence, extensive knowledge, and infectious passion for food, this talented TV host, food critic and columnist has taken the Australian culinary scene by storm.

You have had a very interesting and inspiring career, tell us about your background and how you ended up as a judge on MasterChef. Thank you. To be honest with you, I don’t really know how I got there - it’s all a bit of good timing and building a skill set that makes sense to me. I came into journalism unconventionally via working in advertising, and through getting to know people in the industry, I ended up starting a marketing and PR consultancy, which consolidated my marketing background, and my love of food. I’ve worked in cookbook publishing as a ghost writer, sub editor, editor and in magazines as a publisher for MLA’s trade magazine Rare Medium, among many other things. I think on reflection, it’s good to work consistently in one area, but learning through doing multiple jobs in that one industry gives you a really comprehensive view - and respect - for the industry at large. TV happened as an extension of journalism, though I will always consider myself first and foremost a writer.

How has your role as a judge on MasterChef impacted your own cooking and approach to food?

Being immersed daily in the MasterChef kitchen is amazing for food knowledgeboth sharing and learning. Each season, we have contestants who share their knowledge and culture with us, and standing alongside two incredible chefs with their own unique stories, as well as our guest roster of the world’s best chefs, it’s a pressure cooker of information, and I bloody love it. I think it’s easy to get overwhelmed, but these days, the experience helps me feel comfortable in my own skill set, while always leaving room to expand my techniques and my culinary mind.

Can you share any behind the scenes secrets from the series that the audience may be surprised by?

Well that would be ruining the secrets and surprises, wouldn’t it?!

What has been the biggest challenge you have faced in your career and how did you overcome it?

It’s a pretty cut throat industry at large, and if you’re going to survive, you need to be hard working, resilient, humble and a fast learner. I have had doors shut to me because people didn’t believe an Asian woman would make it in mainstream TV in Australia, and more than once, I’ve felt doors close because maybe I was getting a bit too close to what someone else wanted to do. Run your own race, be proud of your achievements, be your own best motivatorleave the rest to the universe.

Being a public figure comes with its unique opportunities and challenges. How do you balance the complexity of being on TV and having a private life? Honestly, I don’t think I will ever feel comfortable with having my life be so public. Yes, there is so much kindness and generosity extended to you, but you must always ask yourself ‘what’s the price?”, because there is always a price. I share enough, then the rest is lived privately. You can’t take it back once you’ve put it out

there. Lessons for life in this social media age.

What would your last meal on earth be? It will always come back to soul food. Hainanese chicken rice with all the trimmings, a good bottle of Riesling.

What’s next on the horizon for you? There are some exciting projects in the works, including co-hosting MasterChef Australia: Dessert Masters coming to 10 later this year.

JAKARTAN CHICKEN NOODLES

Enjoyed any time of the day – breakfast, lunch or dinner – this iconic dish is served on every street corner of Jakarta (and hence its name). It’s prepared on the spot by the food vendor, an individual experience for each customer and an enjoyable ritual. Egg noodles are seasoned with garlic oil, soy and white pepper, then combined with tender morsels of chicken and flavoured with a delightful infusion of sweet soy and herbs.

Ingredients (serves 4)

Origin: Java/Preparation time: 30 minutes/ Cooking time: 35 minutes

For the garlic oil

100 ml/3½ fl oz (scant ½ cup) vegetable oil

6 cloves garlic, finely chopped

Salt, to taste

For the chicken and mushrooms

3 tablespoons sunflower oil

2 large chicken breasts, cut into ½-cm/¼-inch cubes

Salt and white pepper, to taste

1 banana shallot, thinly sliced

4 cloves garlic, finely chopped

100 g/3½ oz (1 cup) straw or button (white) mushrooms, quartered

3 makrut lime leaves, torn

2 salam leaves or bay leaves

1 stalk lemongrass, crushed and tied into a knot

10 g/¼ oz galangal, finely grated

100 ml/3½ fl oz (scant ½ cup) chicken stock

5 tablespoons sweet soy sauce

2 tablespoons light soy sauce

For the wonton crisps

300 ml/10 fl oz (1¼ cups) sunflower oil

8 wonton skins, each cut into triangles

For the noodles

400 g/14 oz fresh egg noodles or 300 g/10½ oz dried noodles

2 large pak choy, cut into 1-cm/½-inch-thick slices

4 teaspoons light soy sauce

2 tablespoons finely chopped spring onions (scallions) Vinegar sambal (optional)

1. To make the garlic oil, combine the oil and garlic in a frying pan and sauté for 5 minutes over medium-low heat. Season with salt and let cool.

2. To prepare the chicken and mushrooms, heat 2 tablespoons of oil in a frying pan or wok over medium-high heat. Add the chicken, season with salt and sauté for 6–7 minutes until slightly golden. Transfer the chicken to a plate.

3. Heat the remaining oil in the same frying pan over medium heat. Add the shallot and garlic and sauté for 3–4 minutes. Add the mushrooms, lime leaves, salam leaves, lemongrass and galangal and sauté for 5 minutes or until the mushrooms have softened.

4. Return the chicken to the pan. Add the stock and both soy sauces and cook for another 10 minutes over low heat. Season with salt and pepper. Set aside. Remove the lemongrass and lime and salam leaves. To make the wonton crisps, heat the oil in a small saucepan over medium heat. The oil is ready when a cube of bread dropped in sizzles on contact and turns golden in 10–15 seconds. (Alternatively, use a thermometer and heat to 180°C/350°F.)

5. Add the wonton skins and deep-fry for 1–2 minutes until golden brown. Using a slotted spoon, transfer the wonton skins to a plate lined with paper towels to drain.

6. To cook the noodles, bring a large saucepan of water to a boil. Add fresh noodles to the pan and cook for 1 minute. Drain, reserving the cooking water. (Alternatively, prepare the dried noodles according to the package directions.)

7. Cook the pak choy for 30 seconds in the reserved hot noodle water, then drain.

8. In a large bowl, combine the noodles, 4 teaspoons garlic oil and soy sauce and mix. Divide among the serving bowls. Top each with chicken, mushrooms and pak choy. Garnish with spring onions (scallions). Add 1–2 wonton crisps and serve with sambal, if you wish.

BEEF RENDANG

Beef rendang requires no introduction. This iconic Indonesian dish originated in Minangkabau, West Sumatra and the provincial capital of Padang, a hub and settlement for traders from China and the Middle East and a rich trading past dating back to the 17th century. If only the crumbling buildings in the old part of the city could talk, what tales they could share from this colourful period in Indonesian history!

The term rendang signifies a specific technique where a dish is boiled for an extended time to reduce the coconut milk, then slowcooked for over an hour to tenderize the meat. This stage creates a stewed curry known as kalio. To make a classic rendang, the braising liquid must be further reduced. It is then fried over high heat to create rich caramelization and intensified flavour. This luscious and succulent dish is unlike anything you’ve ever tasted.

Rendang is usually made with beef (in the past, people of Minangkabau used buffalo meat), but it can be substituted with goat, lamb, chicken, tempeh or jackfruit. Across West Sumatra, there are many variations on the rendang theme, with baby potatoes and even ferns as the main ingredients. I learned of a meatball rendang from a 70-yearold lady in Payakumbuh, Uni Emi, who keeps local culinary traditions alive. I also sampled eel rendang further north in Lintau, which is prepared with up to 20 types of local leaves.

In the rare event that you have any rendang left-over, you’ll discover a greater intensity of flavour the following day. It would be perfect with fresh rice or even in a sandwich. The key to a delectable rendang is the use of coconut milk with at least 19 per cent fat content, which is vital to create the right consistency.

Ingredients

Preparation time: 15 minutes

Cooking time: 2 hours 15 minutes

Serves 6–8

1.2 litres/40 fl oz (5 cups) coconut milk

1 quantity red spice paste

2 tablespoons tamarind paste

7 makrut lime leaves, torn

2 star anise

2 stalks lemongrass, crushed and tied into a knot

1 (3-cm/1¼-inch) cinnamon stick

1 turmeric leaf (optional)

1 teaspoon salt

1 teaspoon black pepper

1.2 kg/2 lb 12 oz topside (top round) beef, cut into 2.5-cm/1-inch cubes

Steamed rice, to serve

To prepare the base, combine all the ingredients, except the beef, in a large saucepan or wok and mix well. Add the beef and mix well. Boil for 1 hour, stirring occasionally to prevent the mixture from sticking, until the liquid has reduced by half. Reduce the heat to medium-low and simmer for another hour until the meat is tender.

Increase the heat to high. Cook for 12–15 minutes, stirring constantly to prevent the mixture from sticking to the pan, until the liquid has evaporated and the rendang is dark brown and caramelized. Season to taste. Serve with steamed rice.

Variation

Meatball Rendang (Rendang Bulat)

Replace the beef with an equal amount of minced (ground) beef. Finely grind 100 g/3½ oz (1¼ cups) roasted desiccated coconut, then combine with 4 finely grated garlic cloves. Combine the beef, coconut and garlic in a food processor and process until smooth. Shape the mixture into 20-g/¾oz meatballs. Cook the spices and coconut milk over medium-high heat until the liquid has reduced by three-quarters. Add the meatballs and cook for 20 minutes until the liquid has completely evaporated and the rendang is dark brown.

MIXED SALAD WITH SPICY AND TANGY PEANUT SAUCE

Although very much a traditional Betawi dish, gado-gado is a signature Indonesian salad and a meal in itself. I first tasted gado-gado in my early teens from a Jakartan street vendor. Thanks to her incredible performance in assembling the dish, the experience was as much visual entertainment as enjoyment of flavours and textures. She placed a fresh chilli on a large stone mortar and, with a rhythmic rocking motion to her pestle, she ground it with garlic and deep-fried peanuts. She continued to add grated palm sugar, roasted shrimp paste and tamarind water to create a thick, creamy paste. She then tossed together boiled vegetables, tofu, tempeh and compressed rice cakes (lontong) with the sauce. The final dish was topped with a boiled egg, crispy shallots and prawn crackers and wrapped in a banana leaf. I paid for my first takeaway meal and enjoyed it on my walk home.

This recipe captures gado-gado’s authentic flavours but I’ve added dryroasted (rather than deep-fried) peanuts. I also combined a medley of blanched and fresh vegetables to add vibrancy, colour and texture.

Ingredients (makes 8)

Cooking time: 25-30 minutes

Serves 4

For the sauce:

2–3 red bird’s eye chillies, finely chopped

2 cloves garlic, finely chopped

100 g/3½ oz (scant ½ cup) peanut-cashew butter

3–4 tablespoons tamarind paste

2 tablespoons coconut sugar

Salt, to taste

For the salad:

12 new potatoes

2 eggs

50 g/1¾ oz long beans or green beans (optional)

50 g/1¾ oz (2⁄3 cup) shredded white or red cabbage

1 carrot, grated

60 g/2¼ oz (1¼ cups) baby spinach

20 g/¾ oz (scant ½ cup) bean sprouts

1 cob sweetcorn, kernels only

For the tempeh and tofu:

3 cloves garlic, finely chopped

2 teaspoons ground coriander

1 teaspoon salt

100 g/3½ oz tempeh, cut into 1-cm/½-inch cubes

150 g/5½ oz tofu, cut into 1-cm/½-inch cubes

200 ml/ 7 fl oz (generous ¾ cup) sunflower oil, for deep-frying

To serve:

2 tablespoons crispy shallots

4–8 rice crackers, cassava crackers or prawn crackers (optional)

1. To prepare the sauce, combine all the ingredients and mix well. Gradually add 150 ml/5 fl oz (2⁄3 cup) of water and mix until smooth. It should be creamy, tangy, spicy and sweet. Season with salt and set aside.

2. For the salad, boil the new potatoes in salted water for 15–18 minutes until softened. Drain, then set aside to cool. Halve the potatoes.

3. Meanwhile, put the eggs into a small saucepan of water. Bring to a boil and boil for 8 minutes. Drain, then transfer to a bowl of cold water to stop the cooking process. When cool enough to handle, peel the eggs and cut them in half.

4. Bring another saucepan of water to a boil. Fill a large bowl with iced water. Add the long beans to the saucepan, if using, and cook for 3–4 minutes, then immediately transfer to the bowl of iced water and cool for 2–3 minutes (to preserve the vivid green colour). Drain, then cut the beans into 1-cm/½-inch lengths. Add the cabbage to the water and blanch for 30 seconds. Drain.

5. Combine the cooked vegetables in a large bowl and toss. Add the carrot, baby spinach and bean sprouts and toss again.

6. For the tempeh and tofu, combine the garlic, coriander, salt and 100 ml/3½ fl oz (scant ½ cup) of water in a large bowl and mix well. Divide the marinade equally between two bowls, then add tempeh to one and tofu to the other.

7. Heat the oil in a small saucepan over mediumhigh heat. The oil is ready when a cube of bread dropped in sizzles on contact and turns golden in 10–15 seconds. (Alternatively, use a thermometer and heat to 180ºC/350ºF.) Carefully lower the tempeh into the oil and deep-fry for 2–3 minutes until golden. Using a slotted spoon, transfer the tempeh to a plate lined with paper towels. Repeat with the tofu for 3–4 minutes.

8. Spread the sauce onto four plates, then add the mixed vegetables. Add the tempeh, tofu and eggs. Sprinkle with crispy shallots and serve with the extra sauce and rice crackers on the side.

CHICKEN SOTO WITH TURMERIC AND LEMONGRASS

This is my ultimate comfort food, especially on a grey day in England. The explosion of flavours and textures brings a smile to my world. Nearly every community around the archipelago, and the world for that matter, has its version of chicken soup and chicken noodle soup. Layered with flavour, this light dish captures both. Here, we have a clear broth with turmeric, lemongrass and glass noodles or rice vermicelli, making this dish gluten-free and dairy-free! Additional toppings, a touch of lime juice and spoons of sambal make it even more flavoursome. In some regions, coconut milk is added.

Preparation time: 20 minutes

Cooking time: 55 minutes

Serves 8

Ingredients

For the soto:

1 tablespoon sunflower oil

1 quantity yellow spice paste

1 (1.2-kg/2 lb 12-oz) chicken, cut into 8 pieces and skin removed

4 makrut lime leaves, torn

2 stalks lemongrass, crushed

Salt, to taste

200 g/7 oz dried rice vermicelli or

glass noodles

For the toppings:

4 eggs (optional)

2 large tomatoes, seeded and cut into ½-cm/¼-inch cubes

150 g/5½ oz (1½ cups) shredded cabbage

3 tablespoons bean sprouts

3 tablespoons chopped

Chinese celery or celery leaves

4 tablespoons koya

8 slices lime, halved

To serve:

8 lime slices

1 quantity boiled sambal

Melinjo crackers or prawn crackers

To make the soto, heat the oil in a large saucepan over medium heat. Add the spice paste and sauté for 3–4 minutes. Add the chicken and cook for 5 minutes, stirring occasionally. Add the lime leaves, lemongrass and 1.5 litres/50 fl oz (6¼ cups) of water. Season with salt. Bring to a boil, then cover and reduce the heat to medium-low. Simmer for 45 minutes, skimming any scum from the surface with a ladle.

Meanwhile, prepare the dried noodles according to the package directions. Drain, then transfer to a bowl of cold water. Drain again, then set aside. Put the eggs, if using, into a small saucepan of water. Bring to

a boil and boil for 10 minutes. Drain, then transfer to a bowl of cold water to stop the cooking process. When cool enough to handle, peel the eggs and cut them in half.

Transfer the chicken to a chopping (cutting) board and let cool. When cool enough to handle, pull the meat away from the bone and cut into slices. Set aside.

Put the noodles into bowls. Add the tomatoes, cabbage, bean sprouts and chicken. Ladle 2–3 spoons of hot broth into the bowls. Sprinkle with Chinese celery and koya. Add half an egg and a lime slice to each bowl. Serve with sambal and melinjo crackers on the side.

Variations

•Chicken Soto Banjar (Soto Banjar)

Replace the yellow spice paste with white spice paste. When frying the paste, add 3 green cardamom pods, 2 star anise, 1 (5-cm/2-inch) stick of cinnamon and 1 teaspoon each of ground nutmeg and clove. Omit the koya.

•Jakartan Soto with Noodles (Soto Mie Jakarta)

Replace the yellow spice paste with white spice paste. Replace the chicken with beef topside (top round) or cheeks and cook for 1½ hours, or until the beef is tender. Replace the rice noodles with egg noodles. Omit the koya and egg. Serve with boiled sambal and spring rolls as well.

First Harvest Extra Virgin Olive Oil embodies the pinnacle of the season’s olives. We carefully monitor the weather conditions and the development of the different varieties throughout the growing season to determine which olives we are going to pick super early for our First Harvest.

The result is a truly great Australian extra virgin olive oil that has both excellent flavour and incredible health benefits. Production is highly limited and only 5,000 bottles are made each year.

How do you recommend First Harvest EVOO is used in the kitchen?

Simply pour and enjoy! From simple grilled vegetables to seafood and meat, it’s the perfect accompaniment and will transform and elevate any dish.

My favourite is dishes would be those were the oil is the hero such as a simple homemade pasta with plenty of oil, a bit of garlic, parsley, and some black truffle if you can get your hands on one. Interestingly, black truffle season in Tassie or Southern Victoria matches the timing of release of our First Harvest. Another alternative would be simply on toasted sourdough with some crushed tomatoes and chopped basil on top. Delicious!

It’s important to enjoy the First Harvest Extra Virgin Olive Oil at its

peak. Don’t save it for good. Use it while it’s fresh, ideally within four to six weeks of opening the bottle. The fresher it is, the better it will taste and the healthier it will be for you.

Can you share an interesting fact about First Harvest EVOO?

Our First Harvest Extra Virgin Olive Oil is made from a blend of fruit from our finest Hojiblanca, Picual and Coratina trees. We pick the fruit really early while it’s just starting to ripen, and the process of oil accumulation hasn’t been completed. Then, we gently cold press that fresh green fruit within four hours of picking it to lock in those unique flavours and healthy antioxidants.

The sites have panoramic views of the ocean, looking back towards the South Australian mainland. The guests can expect an indoor private sauna, indoor and outdoor full-size baths and king-sized beds. We catch up with Jana Kachel, founder of Australian fashion label KACHEL and find out how she has maintained success and longevity in the fickle fashion industry.

Tell us about Kachel and your business journey.

In 2007 KACHEL was born as a result of my background in children’s fashion and passion for combining art and fashion. Although I enjoyed working with childrenswear, I had a strong desire to transition into designing womenswear. I was drawn to the bright, colourful and playful nature ofchildrenswear and believed there was a gap in the market for feminine, vibrant prints in women’s fashion. Since the inception of the label in 2007, KACHEL has been successfully filling a void in the contemporary market. In 2013 Kachel expanded internationally firstly to the US market and has now expanded into the European market with its presence in Anthropologie globally. KACHEL provides original and exclusive print designs on beautiful silk fabrics at an affordable price. It embraces the idea that all pieces are versatile from day to night and constructed of the highest quality. Now in its 15th year, the KACHEL dream continues on embodying the spirit, energy and flavour of all the girls that love to wear it.

Where do you find your creative inspiration?

I base my designs off my overseas travels – discovering inspirations from past worlds found in museums, art galleries and vintage stores. Vintage prints and original artworks are sourced from all over the globe. This collection is a celebration of a simpler life, where the things we hold dear and cherish are at the forefront of ourminds. You have run a successful business for many years now, how do you maintain longevity in a changing fashion landscape?

KACHEL has always been about print from the very beginning. Exclusive print designs on quality fabrications . KACHEL has its

own handwriting and I have also stuck this handwriting We are passionately committed to expanding our business in Australia and internationally. We currently have a strong international presence with Anthropologie in the US and Europe. It’s super important to me that KACHEL is recognised and embraced globally as well as back home in Australia. Our team is always looking for ways to build and strengthen our business processes and adapt to the ever changing retail environment. We are committed to building new relationships and working with our incredible agents to expand KACHEL into new boutiques across the country, discovering new communities to adore KACHEL.

4. What do you attribute the success of KACHEL to?

My goal is to instill confidence in those who wear KACHEL. To achieve this, I strive to create timeless pieces that reflect a unique style rather than fleeting trends. I aspire to design wardrobe favourites that will withstand the test of time and continue to be cherished for years to come. In doing this I believe that we are providing affordable high quality items that you can continue to pull from your wardrobe time and time again, which our community responds so well to.

What has been the most challenging aspect of running your own business?

My answer is likely to be similar to most business owners, I know we all feel it! You are always ‘on’ and constantly thinking about all aspects of the business, because the business is so important and something you have built and developed into what it is today. I know personally I have so much passion and love for the brand, it feels like an extension of myself so I tend to be protective over it which means I am always trying to work to ensure it is the best itcan be! I love what I do and find my job incredibly rewarding, however it is important to switch offand find time to relax outside of work without becoming totally burnt out.

Do you have any tips for budding entrepreneurs?

My one piece of advice would be to just give it a go! You can only learn from your failures, and you can’t fail without trying. I truly believe that if you have enough

passion and determination, this will always outweigh the obstacles that come your way.

What’s next on the horizon for you and the brand?

We are currently moving into accessories in the US market which is very exciting The next big project for KACHEL is a move into the accessory market in the US which as a team, we are working tirelessly on at the moment. I am so excited to inject the KACHEL brand into a new product line and give our community more options to express their individual personality and style.
