COOK BOOK: RECIPES USING ALMOND MILK 1. Main dishes


Oat Flakes and Nuts Pancakes

INGREDIENTS FOR 4 PEOPLE: 100 g nuts, 200 g oat flakes, 2 eggs, 50 g grated cheese, 30 g EcoMil Almond dissolved in 250 ml of water, grated dry bread, 1 onion. PREPARATION: Grate the nuts and mix them with oat flakes, eggs and EcoMil Almond drink. Let it soak during 15 – 20 minutes. In the meantime, fry the chopped onion. When the oat flakes are soft and there is not too much liquid left, add the onion, cheese, salt and grated bread. Form small, flat dough-cakes and fry them in oil at medium temperature.


Leek Quiche

INGREDIENTS FOR 4 PEOPLE: - For the pastry: 250 g flour, 125 g butter, 2 eggs, 2 tablespoons of water, salt. - For the filling: 3 leeks, 150 g vegetal meat, 30 g EcoMil Almond dissolved in 250 ml of water, 100 g grated cheese, ½ vegetal stock cube, 2 eggs. PREPARATION: To prepare the pastry, add the eggs, salt, water and butter to the flour, and knead with the hands until it becomes a homogeneous mass. Let it rest during 30 minutes in the refrigerator, wrapped up in plastic film. Meanwhile, cut the leeks in slices and fry it in some oil with a little bit of salt. Beat EcoMil Almond with the vegetal stock cube and the eggs. Spread the mass in a greased pan and pour the leeks and vegetal meat. Then add the mixture of eggs, EcoMil Almond and stock cube. Bake in the oven at 200º C for about 40 minutes.


Multicolour SoufflĂŠ

INGREDIENTS FOR 4 PEOPLE: 300 g pumpkin, 300 g cauliflower, 300 g green beans, 300 g potatoes, 3 eggs, grated cheese, 30 g EcoMil Almond dissolved in 250 ml of water, butter, salt. PREPARATION: Cook all the vegetables separately. Beat the eggs and add EcoMil Almond, salt and cheese. Add a fourth part of this mixture to the potatoes and mash it all with a fork. Do the same with another fourth part and the pumpkin. Grease a pan with butter and put one layer with the potatoes mass, another layer with the beans together with another fourth part of the mixture, a further layer with the pumpkin, and finally the cauliflower mixed with the rest of the egg-EcoMil-mass. Bake in the oven at medium temperature until it gets solid.


Mushroom Cake

INGREDIENTS FOR 4 PEOPLE: 500 g mushrooms, 2 onions, ready-to-use paff pastry, grated cheese, béchamel sauce (see EcoMil Almond Béchamel sauce, next page). PREPARATION: Chop the onion and fry it with a little bit of salt. When it is fried golden, add the champignons and fry it all together. Grease a pan with butter, lay out the paff-pastry, put the mixture of onions and champignons on it, and finally the béchamel sauce and the grated cheese. Bake in the oven at medium temperature until the pastry is crunchy.


BĂŠchamel Sauce

INGREDIENTS FOR 4 PEOPLE: 45 g of EcoMil Almond dissolved in 375 ml of water, white pepper, 1 onion, 3 bay leaves, 2 tablespoons of butter, 1 tablespoon of flour. PREPARATION: Cook dissolved EcoMil Almond with the white pepper, the onion cut into quarters, and the bay leaves during 10 minutes, pour it off and keep the liquid. Melt the butter in a pan and add the flour until it becomes golden-coloured, withdraw it from the stove and add the EcoMil liquid slowly, always stiring, until it becomes a fine and smooth bĂŠchamel sauce. If you want the sauce to become thicker, let it cook for some more time. Add salt, according to taste.


Swiss Chard Greek Style

INGREDIENTS FOR 4 PEOPLE: 500 g Swiss chard, 30 g EcoMil Almond dissolved in 250 ml of water, 50 g sultanas (raisins), 100 g feta cheese, 100 g chopped meet or vegetal meat, 2 eggs. PREPARATION: Cook the Swiss chard, and meanwhile fry the chopped meat in a pan with little butter and salt. Mix it all together with the Swiss chard, adding also the beaten eggs, sultanas (raisins), feta cheese (cut in small cubes) and EcoMil Almond. Pour this mixture into a greased baking tin and bake in the oven during 20 minutes at 180 ยบC.
