COOK BOOK: RECIPES USING ALMOND MILK 2. Desserts and smoothies


Cold Melon Cake

INGREDIENTS FOR 4 PEOPLE: 200 g of butter cookies (shortbread), 100 g of butter or margarine, 40 g of sugar, 2 slices of melon, 45 g of EcoMil Almond Instant dissolved in 375 ml of water, 2 tablespoons of gelatine or agar-agar. PREPARATION: Crush well the butter cookies with a mortar or mixer. Heat the butter in a double boiler and add the crushed cookies and the sugar. Make a pastry and lay out a baking tin with it, put it into the oven and bake it during 12 minutes. Heat the almond milk together with the gelatine or agaragar, always stirring until it gets ticker. Pour the mixture on the pastry when it has cooled down and decorate with pieces of melon and other fruits. Put it in the refrigerator and serve cold.


Wholemeal Cake with Vanilla Cream

INGREDIENTS FOR 4 PEOPLE: - For the pastry: 3 eggs, 15 g EcoMil Almond dissolved in 125 ml of water, 2 measures of raw cane sugar, 3 measures of wholemeal flour, 1 measure of oil, lemon juice, 1 sachet of baking powder. - For the cream: 60 g of EcoMil Almond dissolved in 0,5 L of water, 4 egg yolks, 2 tablespoons of sugar, vanilla powder. PREPARATION: Mix all the ingredients for the pastry until it gets a homogeneous mass. Pour it into a baking tin, prepared with a little bit of butter and flour, put it into the hot oven at medium temperature during 20 minutes. Heat the ingredients for the cream without boiling them, always stirring, until it becomes a thick cream, let it cool down and put it into the refrigerator.


Lemon Pudding Cake

INGREDIENTS FOR 4 PEOPLE: 1 tablespoon of lemon zest, 1/3 cup of lemons juice, 1/4 cup of all-purpose flour, 1/4 teaspoon of salt, 3/4 cup plus 2 tablespoons of sugar, 3 large eggs (separated), and 1/3 cups of almond milk. PREPARATION: Preheat oven to 350째F. Beat together flour, salt, and 1/2 cup + 2 Tbsp sugar in a large bowl. Beat together yolks, almond milk, zest and juice in a small bowl and add to flour mixture, whisking just until combined. Beat egg whites in another bowl with an electric mixer until they hold soft peaks. Beat in remaining 1/4 cup sugar, a little at a time, and continue to beat until whites hold stiff, glossy peaks. Beat about 1/4 of whites into batter to lighten, then fold in remaining whites gently but thoroughly (batter will be thin). Pour into buttered 1 1/2 qt ceramic gratin or other shallow baking dish and bake in a hot water bath until puffed and golden, 45-50 minutes. Transfer to a rack. Sprinkle chopped or ground almonds. Serve warm or at room temperature.


Fruits Ice Cream

INGREDIENTS FOR 4 PEOPLE: 60 g of EcoMil Almond dissolved in 500 ml of water, 3 tablespoons of sugar, 2 eggs, 2 egg yolks, 200 ml of cream (to whip), 500 ml of fruit juice (strawberry, banana, melon, watermelon, etc.) PREPARATION: Whip the eggs with sugar and add milk and fruit juice. Heat this mixture without boiling. Let it cool down. Then add the whipped cream and put in the fridge, stirring it from time to time.


Fruits Milk

INGREDIENTS FOR 4 PEOPLE: 60g of EcoMil Almond dissolved in 500 ml of water, 1 apple, sugar, a tablespoon of cream. PREPARATION: Mix all the ingredients with a mixer and cool it in the refrigerator. SUGGESTIONS: You can use any other fruit or combination of fruits! Banana, mango, watermelon, strawberries, raspberries‌
