Beatrice Perez, RN Chief Clinical Services Officer

Ms. Perez has worked for UHC since 1988, beginning her career path as a bilingual LVN at the Orange Cove health center, where she fell in love with patient care. She was recognized early for her great nursing skills and enthusiastic attitude toward her patients, so she was rapidly promoted to Nursing Supervisor in 1993 and to Associate Director of Nursing Service, and then in 2006 to the Director of Nursing Service. In 2017, Ms. Perez was promoted to her current position as Clinical Services Officer. Beatrice now oversees clinical services at all 25 UHC health centers, as well as specialty referral services and CPSP operations. Bea was raised to be strong and vocal in her pursuits, aiming high and working hard. She is very appreciative to have worked for an organization that embodies and rewards these ideals. During a wonderful childhood, she was reminded often that the measure of a woman was determined by her persistence and her ability to obtain the respect that she had shown to others. Her leadership style has always been to help others develop their strengths and improve upon their weaknesses. As an accomplished leader, she is proud to have inspired many women along her path to seek strength within themselves and to understand that their place in this world is largely determined by their work ethic and personal goals.

Eliane Saed, RN, BSN Director of Clinical Operations

Eliane brings with her over 20 years of healthcare experience, a majority of those years having worked in the Emergency Department. Her clinical background includes emergency, school, ambulatory, and public health nursing. She has functioned in multiple roles in nursing, including direct clinical care, leadership, and education. She holds a Bachelor of Science in Nursing from California State University, Fresno. Currently, she is Director of Clinical Operations at UHC and has served in this capacity for the past four years. Eliane has worked with the medical leadership team and helped ensure that patients, as well as staff members, remain safe during the COVID-19 pandemic by helping to organize over 130 mobile testing events with various county health departments and at each UHC health center. She worked beside her team of dedicated nurses and medical assistants to COVID test over 300,000 patients during this time. During her time with UHC, she has assisted in the organization and implementation of 13 new health centers. These health centers are located in both medically underserved and low-income neighborhoods.

The Modern Woman “It isn’t enough to talk about peace. One must believe in it. And it isn’t enough to believe in it. One must work at it.” –Eleanor Roosevelt In 1946, former First Lady of the United States Eleanor Roosevelt, was appointed by her husband’s predecessor, President Harry S. Truman, as a delegate to the United Nations General Assembly. Widely considered a prestigious yet honorary position, Eleanor actually took the opportunity by the horns (as she often did) and decided to make her time at the UN matter. She formed and served as the first Chairperson on the Commission of Human Rights. In fact, she helped draft the Universal Declaration of Human Rights, which serves as the council’s bylaws to this very day. Adopted in 1948, this declaration outlines a common standard for all people and nations who make up the general assembly of the UN. Within its articles, it sets out to protect fundamental human

rights for all global citizens. It is extremely easy to read and understand. It’s not shrouded in riddles and doesn’t contain any hidden loopholes—you can even access it online. It was the United States that led the way for this council. It was an American woman who had the foresight to draft such an important document in history. For women have helped weave some of the most influential parts of our American and global fabric. It’s alarming how quickly we choose to forget our history and place in the world... So let us celebrate all the accomplishments of the modern woman and pay tribute to those who have sacrificed and forged the way for the good of our society.

Michael Maher Location The Darling Hotel

Michael Maher is in the race for United States Congress, California District 21 because “It’s time to grow our Valley.” A Tulare native, this multifaceted family man, veteran, and serial entrepreneur returned to his hometown roots for a simpler life after serving in the Navy and Federal Bureau of Investigation (FBI). Now, he’s ready to make a new kind of difference here.

orn into a military family, Maher’s parents met and married in the Air Force and later settled in Tulare, where his father is a pastor. The September 11th terrorist attacks happened the same year he graduated from Tulare Union High School—just two months after the attacks, he joined the Navy, having been inspired by meeting Admiral Elmo Zumwalt, Chief of Naval Operations retired, a graduate of Tulare Union High School and the US Naval Academy.

There he received multiple awards for his investigative work with the FBI, including the ODNI Award presented by the Director of National Intelligence. For the Los Angeles Field Office, Maher was the Counterproliferation Coordinator, which included responsibility in supervision of Chemical Weapons Inspections from OPCW. He also worked temporarily with the Fresno FBI resident agency and participated in a multi-agency gang sweep through Fresno, which resulted in 36 arrests with warrants served on 23 locations in the Fresno metro area.

Maher, too, went on to graduate from the US Naval Academy’s Preparatory School. He then attended Fresno Pacific University, Oxford University, where he rowed crew for The Queen’s College First VIII, and Harvard University’s John F. Kennedy School of Government, where he completed the Senior Executive Fellows program. The veteran is also a graduate of the FBI Academy in Quantico, Virginia and the US Navy’s Nuclear Power School. After a diverse career in the US military, Maher was medically retired from the Navy in December of 2005.

Despite an amazing FBI career, Maher recognized a need to reprioritize his life. During the last three years with the Bureau, he averaged a mere 52 days annual with his family. “I’m a Christian and that’s really central to who I am. As a Christian, God’s first, then your family, and then everything else, and my priorities were not aligned with my faith. Nor was it fair for my wife to basically be a single mother, and at that time we then had our second son,” and even when he was home, he couldn’t discuss his day-to-day with Anne. “I was able to serve under three directors, Mueller, Comey, and Wray, and my work was in Obama’s presidential daily briefings as well as Trump’s, and it was really nice to work at that level, but my wife is more important than that, and our kids, and getting back to the Valley.”

Michael’s wife Anne is the reason he then became an FBI agent. “We were newly married, and he was working in construction management, doing great, but I could tell the job wasn’t fulfilling,” explains Anne. “We were hooked on watching Criminal Minds at night after work, and just off the cuff I said, ‘You’d make a really good FBI agent.’ And he’s like, ‘Yeah, I probably would.’” Within a week, he’d started the application process. Maher went on to serve in the US Department of Justice as a Special Agent of the FBI working in the National Security Division.

Maher’s leadership style won’t let politics get in the way of progress. Having made it on the ballot as a candidate for US Congress, CD22 Special Election on April 5th, he’s staying put in the same place to run in the new CD21 Election on June 7th and November 8th.


STRONG CENTRAL VALLEY ROOTS Maher’s career has taken him and his wife Anne all over the county. “Why we wanted to come back,” to the Central Valley, he explains, “is because this is where we wanted to raise our kids. Being in LA with our first son and having to deal with some of the craziness down there, we quickly realized we wanted to be back with family.” The couple has two children, Gabe (11) and Jude (5). Anne comes from a multigenerational Valley farming family. She attended San Joaquin Memorial and graduated from Immanuel High School before going on to Fresno Pacific University as a business major. Anne now works in her family’s business. BUILDING A FOUNDATION IN KINGSBURG The Maher’s bought a historical Mid-Century home in Kingsburg, which Michael actually remolded himself during the transition from leaving Los Angeles. With the exception of the drywall, “I built the cabinets, I ripped it to the studs, we moved walls, rewired the whole house, plumbing,” with the help of a few friends. “It was a house that was designed for my wife and my son. Since then, I left the Bureau, and we just always kind of kept the house, and so we’re still in that. It’s a great corner lot. Beautiful oak trees. Just a fun little house.” A LIFELONG LOVE OF AVIATION Considering that Maher’s parents were both Air Force veterans, his lifelong affinity for aviation is no surprise. “When I was in the Bureau, I did a little bit of flying. That’s when I actually started getting my pilot’s license, and I ended up leaving the Bureau to take over as a CEO of an ultra-luxury aviation company.” Maher has since diversified his aviation career by forming his own company and getting involved in the private aviation space, which even involved working through an acquisition with Wheels Up—and exited shortly after the company went public, “I left and I’ve been building my company, focusing on aviation management, sustainable fuels, future flight technologies, and medical services.” ON A PERSONAL NOTE Michael and Anne are a power couple who’re always on the go with their family, but when they do take time for themselves, they “Eat Ben & Jerry’s and watch a lot of YouTube,” Michael chuckles, “and play Nintendo with the kids!” That is, when they aren’t preparing for a triathlon. “Anne and I spend a lot of time doing the Ironmans,” Michael shares. The bike component really made it a team effort since “I didn’t want to learn how to change a flat tire or do anything with the bike, and Michael full-on supported me,” by completely taking on that part of the races, admits Anne. In the last year alone, they have competed in four Ironman 70.3 races. Michael and Anne give everything their everything. The teamwork involved in these triathlons mirrors not only their own partnership, but the partnership Michael seeks to strengthen and expand with veterans, businessmen, and law enforcement in the Central Valley. Though Maher has been asked to run for office before, the timing and circumstances were never quite right, but that changed with the maps when Devin Nunes resigned a few months ago. “If I were going to do this, I’m not going to sit and do it for a little bit,” Maher recalled of his thought process. “If I get into something, we’re going to do it 100 percent,” and with good reasons that actually work for a greater purpose. “I want to be a good steward of everything that I have and leave things better than I found them. And that’s with politics, it’s in business, in everything—I want to be here in the Valley and make changes for the benefit of our entire community, not just one party or one group of people. When you “hit the mother lode” it’s loosely defined as “to produce or find something that will make you very rich, happy, or successful.” When you “unload” on someone, that essentially means you’re pouring your feelings and thoughts out to them (good, bad, or anything in between). I vividly remember brainstorming ideas for what the name of my new working moms group would be called, with my fellow working mom friend and colleague Cece F. Quinn—the ultimate wordsmith herself! Mother lode…mother unload…mother download…MOTHER UPLOAD! That’s it! The name really speaks for itself. The Mother Upload is a place where working moms can positively share their experiences with one another, a place where they can connect with those that are so aligned with their challenges and season of life, a place that brings you richness and happiness through these relationships I had the idea for this concept, group, club, whatever you want to call it, after I had my firstborn Gwenyth. She was brand new and so was my company! I remember bringing Gwenyth to the office with me when she was just weeks old, nursing or pumping in between meetings, and having my team help me out when I needed it most.

After having her and trying to figure out my new norm, I constantly thought: How do moms do it all? How do they have dinner on the table at a decent time after a long day of work? How do they stay on top of laundry? What happens if your child is sick and you have a work deadline? How do they make time for themselves? (ha!) I wondered if other working moms felt this way, too. So I decided to text some of my closest working mom friends and take a pulse on if they’d be interested in attending a monthly moms group meeting. A (working) moms’ group without kids—what a concept! LOL. So on June 14th, 2018, Mother Upload was born. We met at The Tasting Room on Palm & Nees (in Fresno) and went around the table and introduced ourselves—what we do, how many kiddos we have, and then discussed a timely topic. Since its inception, that’s still the case. It’s casual, it’s non-committal, and if you can’t make it, it’s okay! Of all people, we understand! I send out an email every month for ladies to save the date. There’s a small fee to RSVP (to cover the cost of food/ drink) and that’s it. It’s usually every second Thursday evening of the month at a fun location. Over the years, I’ve met so many amazing women through this group, many that have become what I think will be lifelong friends. So many new faces have taught me, and the other women, new ways to get things done, how to make the most of our time, and great childcare recommendations—because as working moms, we know that’s so important. s the President and CEO of United Health Centers of the San Joaquin Valley, I currently lead a core staff of over 1,000 employees in the operations of 25 health centers in Fresno, Kings, and Tulare Counties. As an essential workforce in the wake of the coronavirus pandemic and the ever-increasing medical needs in the Valley, we remained committed to caring for our 165,000 patients in visits that topped 900,000 in 2021. Today we expect those numbers to increase as four new UHC health centers will open this year with comprehensive primary medical care, as well as numerous specialty care services and ancillary services including pharmacy, imaging, lab, and free patient transportation. In this electronic driven world of email and social media, it is the human interaction that will be the key component of any new technology that drives success or failure. Livia De Paolis has been on-set since birth. Yet her immersion in the industry and understanding of what it means to be a filmmaker is as practical as it is poetic. Born and raised in Rome, Livia literally took her first steps on a movie set, which isn’t surprising considering that her grandfather founded I.N.C.I.R, the only privately-owned studio structure in Italy. Even at a young age, this Italian-born powerhouse always knew she was meant to tell stories. And now, her mastery in the art of storytelling can be seen in theaters and on home screens come June. Understanding how The Lost Girls film—a modern-day feminist Peter Pan spin-off—came to be will leave you thoughtfully provoked.

The journey to being a multi-talented director, actress, filmmaker, and writer started in her childhood. Livia fondly remembers her dad taking her and her sister to the studios on the weekends, where they’d play and peddle around on bicycles. Her family was more business-oriented than creative. “I grew up with the idea, knowing, that in order to make a film, that it’s not real. It’s not real, and that it’s built up, and you need a director of photography, and then it’s gonna get edited, and then there’s costumes and makeup, and, you know, all of that,” she reminisces. Though it wasn’t exactly a normal upbringing, she never questioned it or was consciously aware of how unique her circumstances were until maybe high school.

An avid reader even as a child, she became quite passionate about philosophy while in high school, leading Livia to obtain her master’s degree in philosophy from the Sapienza University of Rome. However, she admits with a chuckle, “I didn’t really think about the practical aspects of studying philosophy. I think, originally, there was this idea of doing an

academic career. And then by the time I finished studying, I was like, ‘I don’t want to study all the time. I want to go to New York and like, be an actress and live life.” Which is exactly what Livia did—she was in her early twenties then. “I kind of had this very liberating thing where I left everything and went to New York. I wanted to make it on my own. And I had a lot of fun, and a lot of struggle—like that artists’ struggle.” She was determined and more than willing to be entrenched in what the Big Apple had to offer despite the fact that getting established took a minute. “It took a few years, actually. When I started, I got a modeling visa, and then I started taking some acting classes, and then I started to just look around and see ‘What can I do?’ Like, I was very focused on wanting to work in the theater, but obviously, you know, having grown up in Italy, I had a very strong Italian accent,” Livia acknowledges. Living the theater life was only a dream until she found Richard Foreman. Though now retired, “he was considered the king of philosophical theater in New York City.” Obviously, this was a perfect fit for the former academic, but she recalls that “it was strange theater. It was weird theater.” It was artsy, avant-garde, “political by its own existence.” Above all, it was a golden opportunity and “a good season.” Interning with Foreman brought Livia a new network and countless fruitful relationships. “Through that internship, I met my co-writer for my first feature film [Emoticon]. I met a guy that then became my roommate and then we started doing theater together,” recounts Livia.




“That was the beginning of the whole New York City theater time, which was a time in which I was completely immersed in it.” If she wasn’t making a show, she was going to see a show, or assistant directing on another show. “I was just living and breathing the theater life and making no money,” she laughs. “But I was kind of moving forward, right? I was starting to work with people that I really wanted to work with, and my English was getting better. I felt like things were moving.” She had obtained an artist’s visa at that point and it just felt like things were going her way. “And then 2008 happened.” “Everybody had to take a step back, right? So I feel that that was a time where TV, the theater really changed. Like there were more stars, or big television actors wanting to do theater,” explains Livia. “The theater dynamic really changed. Because before, a lot of these companies were funded by just donors—just rich people that would just donate money. After 2008, there was a time where people didn’t want to donate money, like they didn’t have any money to donate.”

B

efore then, Livia always had two or three jobs. Fortunately, by then, Livia had gotten “an actual job” working for a documentary filmmaker who needed help producing a play. “So I had only one job. And then I was writing,” she shares, referring to Emoticon. “And then after that, I moved to Los Angeles,” where her circumstances changed yet again. “I had a death in the family—my aunt and my uncle died, and they had no children. It was very sad, but I actually inherited a little bit of money—I’m gonna be very honest here! And that kind of helped.” It allowed Livia to take another step forward. “I was pretty much burned out with the whole theater scenario,” at that point. She was itching to experience California. “I was like, okay, I’m gonna make a movie. Let me try LA. So I moved to Los Angeles for a while. I knew already how to make a film. I just didn’t know how to finance it. Like, the economics. I had no clue of that.” Never one to idle, Livia took a course on how to make an independent film. “And I figured that out, and then I really just used friends and family, some of my own money. I made it with whatever money I had,” finally manifesting Emoticon, her first feature film. Livia had come to the West Coast to forge something new. “But the cast that I got for that, and even the crew or the collaborators, were

all spilling over from the theater,” including the casting director, one of the producers, the writer, to name a few. “So the New York theater scene was really where it all began, right? And then these connections, these relationships fell over into making my first feature film … like all the cast was a New York cast. And it was, except from the young actors, everybody else was connected with the theater community. So that helped.”

T

hough Livia had come to LA with the admittedly naïve notion that she’d be able to just make her movie there, she says, “Then I moved back to New York, because the movie was actually shot in New York … Like all my connections are in New York. My illusion to be an overnight success had ended and I was like, ‘Okay, if I’m gonna have to continue, I’m not gonna get a job here. Nobody’s gonna hire me. If I have to continue generating my own stuff, then I’d rather be living in New York, which is where I feel the most at home and where I’m surrounded by a community of artists.’” To pay the bills, Livia started selling real estate, which she very much enjoyed, yet she couldn’t get away from the writing bug. She had always been an avid reader. Approximately a decade earlier, back in 2003, Livia had read Laurie Fox’s The Lost Girls novel. “Right away I thought, ‘Oh this should be a movie!’ But I didn’t think I was going to make that movie. I was, you know, doing theater.” However, the manner in which it resonated with her was undeniable. “I read the book. I loved the book. I gave it to some girlfriends…it stayed there as one of my favorite books.” Yet she couldn’t help but wonder, “Maybe someday, who knows.” After Emoticon, when she moved back to New York in 2014, Livia met Laurie Fox and got the rights to make the film. “I thought, ‘What am I doing next?’ I think I’m gonna do that book.” The story chronicles four generations of the Darling women as they struggle in the aftermath of their adventures with Peter Pan. But as fate would have it, life threw her another curve ball in the summer of 2017. “My mother got cancer, and so, basically, I kind of dropped everything and moved back to Rome.” Livia was her mother’s primary caregiver until she passed away in 2018. “So through that time, when I was looking after my mother, my obsession of making this film had not gone away. I still wanted to make the film. I hadn’t just dropped the film—I dropped everything else, but not the film,” going so far as to try casting it even while overseas. “I started researching film financing in Europe, because it’s a different model. Now I know that there’s different ways to make a movie!” Livia giggles. “I was in contact with a Belgian film fund originally—I was investigating this whole scenario. So when my mom eventually passed away, I kind of followed through with the research that I was doing before,

and through a friend of a friend…you know, like years of relationships, years of keeping in touch with people, eventually brought me to this company called Ingenious, which is in London,” who has a structure to help finance films. It turned out to be a very fortunate encounter—Livia went into the meeting with low expectations of what she’d get out of it, but she was pleasantly surprised. “The guy was like, I love this idea!” Soon, development of the film began. It was great news, indeed, but it came with mixed emotions. Livia was still mourning the loss of her mom and wasn’t sure where she wanted to live after such an emotionally taxing chapter. “I didn’t move to London then. But somebody wanted to give me money, and that was in London. Also, I was definitely not ready to go back to New York and start hustling and working.” She allowed herself the time to figure it out, and spent about a year bouncing around from Italy, New York, and London. “By the end of the year, I said, ‘I’m gonna give London a try.’ And it went well, so I’m still here!” At the time that Livia got the green light for The Lost Girls, financiers were beginning to become more aware of funding women-led films. The feminist nature of the story perfectly fit within this growing collective consciousness. An art house drama, The Lost Girls is primarily comprised of a female cast and presents a defiantly independent take on J.M Barrie’s Peter Pan. Livia not only wrote, directed, and stars in The Lost Girls, she even hand-picked its star-studded cast. Opposite screen legends Vanessa Redgrave and Joely Richardson, the film also stars Julian Ovenden, Parker Sawyers, Emily Carey, Louis Partridge, Ella Rae Smith, and Iain Glen.

L

ivia’s journey with The Lost Girls illustrates the full breadth of how most things don’t just happen overnight. There are more than just strategic parts to organize—there are emotional components that go into it. Where we are in our personal lives influences what brings us to where we are currently, what we are ready to act on. “The Lost Girls is a book that stayed with me for a very long time,” something that doesn’t happen often with contemporary literature. While the Peter Pan story is very familiar to us, as a society, we love its retellings. “Peter Pan and the magic flight that Wendy takes with him to the Neverland continues to resonate for generations, not just with women, with everybody, because it really champions the power of imagination.” Whether that is a coping mechanism or purely creative, the power of perspective is evident. Livia’s journey to The Lost Girls embodies what it means to play the hand you are dealt to the best of your ability—it’s a lesson in self-acceptance, reflection, forgiveness, and evolution. She is, without a doubt, an extraordinary filmmaker on the rise.

During this time, this power couple put their business senses, contracting and stylists’ experiences together and ended up opening Prestige Salon and Boutique on the corner of Bullard and West. This salon has many different features that have not really been seen in the salon industry until now. Prestige offers eight private studio rooms and can fit up to 12 renters. Prestige is also unique because of the diversity that has been brought into the salon. Prestige offers not only stylists, but many other services such as an amazing masseuse, lash technician, an esthetician, microblading and a gorgeous boutique to browse through as you wait. Wine, chocolate, and pasta. Admittedly, these tend to stereotypically be women’s favorite foods, but let’s be real... They’re universally loved and always a good idea! Following are baseline recipes that are great on their own while being endlessly adaptable to reflect the individual tastes, preferences, cooking flair, and lifestyles of the hands who prepare them. A full line-up is on the menu here—we’ve got you covered with drinks, dinner, and dessert this time.

Creamy Mushroom Linguine with Shrimp SERVES 4

This mushroom sauce will make your homemade dinner feel like restaurant quality. Though this recipe calls for cooking the shrimp in the sauce, you can omit it altogether or swap out the protein for pre-grilled chicken, sliced steak, pork medallions—you get the idea. Feel free to change the vegetables, too. White button en lieu of cremini mushrooms work great, as will shallots instead of onion. Try a sautéed veggie medley for a summertime primavera spin. Use butternut squash chucks with wilted spinach in the cooler months. Alternate herbs. Let the cream sauce act as an edible vehicle—simple yet highly diverse, it’s just equal parts wine and cream reduced. Also, don’t get stuck in a noodle rut because variety is the spice of pasta life! 20 shrimp (peeled and deveined) 8 oz. dry linguine ¼ cup parmesan cheese (plus more for garnish) 1 cup heavy whipping cream 1 cup white wine 1 white or yellow onion 8 oz. cremini mushrooms 3 cloves of garlic 1 tbs. capers 2 tbs. salted sweet cream butter Avocado or olive oil ½ tsp. nutmeg Seasoned salt Black pepper

Instructions Begin by setting a large pot of salted water to boil. Next, set a large saucepan to medium heat. Add the butter and some oil into the pan. Prepare the vegetables. Remove the onion skin, slice it in half, then cut into ¼ inch-wide slivers. Wash and pat dry the mushrooms, cut off the stem tips, then slice into ½ inch-wide pieces. Minch the garlic. Once the butter has melted in the saucepan, add in the onions, sprinkle with seasoned salt, cover with the lid, and allow them to soften. Once the onions become fragrant, add in the mushrooms and minced garlic, sprinkle with a bit more seasoned salt as well as black pepper, stir the veggie mixture to incorporate, then cover it again to wilt the mushrooms. The mushrooms will sweat—release water—which will help create the sauce base, so refrain from lifting the lid often, as this act will start to evaporate the liquid prematurely. When the mushrooms become soft and shrink, add in the white wine and deglaze the pan if there’s a need. Next, pour in the heavy whipping cream, followed by the capers. Stir until they’re fully mixed and then cover the saucepan again, allowing the mixture to simmer. Sprinkle in the nutmeg. Toss the shrimp in seasoned salt and black pepper. Once the sauce comes to a simmer, remove the lid, arrange the seasoned shrimp on top, and cover again. Make sure the heat stays at a low simmer point. Allow the shrimp to start cooking through (about 5 minutes). Once the shrimp turns pink, remove the lid and let the sauce reduce by about one-third to a half—it’ll thicken and have a glassy finish. While the sauce reduces, boil the linguine to an al dente state. Add the cooked linguine directly to the sauce along with the parmesan cheese and mix it together. Allow the pasta and sauce to marry (about 5 minutes). Serve the Creamy Mushroom Linguine with Shrimp with parmesan cheese on top, if desired.

Chocolate Mousse SERVES 8

Chocolate mousse is effortlessly decadent yet easily adjustable. Don’t be intimidated by the concept—this’ll quickly become a go-to dessert once you realize how simple it is to make. Plus, there are a ton of variations you can try with this base. Let yourself get creative! Add a tablespoon of mint extract to the chocolate mixture, garnish with crushed peppermint or a sprig of mint. Use chocolate hazelnut spread instead of chips, then sprinkle with crushed nuts. Zest an orange into the recipe and atop a dollop of whipped cream for a Danish twist. Create a chocolate fruit situation with seasonal berries. Stick a pirouette cookie off to the side. Keep it simple with coco curls, chips, or powder on top. Remember, it’s chocolate—it’s all good! 4 eggs ¼ cup sugar 2½ cups heavy whipping cream 1 cup semisweet chocolate chips 2 tbs. vanilla extract

Instructions Note: You will need 8 ramekins or parfait cups for serving. This dessert can be made up to three days ahead of time and kept covered in the refrigerator until ready to serve—just press plastic wrap against the surface to prevent a film from forming. To begin, separate the eggs—keep only the yolks, discard the whites. In a medium-size mixing bowl, beat the egg yolks with an electric mixer until they become light yellow. Next, add in the sugar and continue to beat until it becomes pale yellow and silky to create the yolk mixture. Set a medium-size saucepan to medium heat, then warm half of the heavy whipping cream. Allow it to reach a steaming point, but don’t let it boil. Once hot, slowly pour the heavy whipping cream into the mixing bowl containing the yolk mixture while constantly whisking. This will cook the yolks without scrabbling them, yielding a custard base. Once fully incorporated, return the custard base to the saucepan and continue cooking on medium-low heat until it begins to thicken (about 3 minutes). At this point, reduce the heat to low and add in the chocolate chips. Stir until the chocolate has melted completely and the mixture is smooth. Next, turn off the heat, then stir in 1 tablespoon of the vanilla extract. Allow the chocolate mixture to cool completely (this could take approximately an hour). While the chocolate mixture cools, make the whipped cream. In a large mixing bowl, beat the remaining heavy whipping cream with the remaining tablespoon of vanilla extract until it’s stiff. You can keep the whipped cream in the refrigerator while waiting for the chocolate mixture to reach room temperature, if needed. Fold the cooled chocolate mixture into the whipped cream in three parts to create the mousse. Do not overmix! To serve, pipe or spoon the Chocolate Mousse into the ramekins or parfait cups, then top it with your choice of garnish.



Sparkling Berry Red Sangria SERVING SIZE IS DEPENDENT UPON THIRST! Sangria is one of the most versatile cocktails you can prepare ahead of time. Seasonal variations can be made no matter the temp, time, or date. There are three key elements in this wine cocktail: wine (obviously), fruit, and triple sec. Both fresh and frozen fruits can be used—consider their textural properties first. For example, berries and peaches tend to break down quickly in liquid, so frozen fruit will maintain its shape better. Apples and nectarines have stiff flesh, so fresh fruit should hold up nicely. The citrus notes of triple sec bridge the fruity and alcohol flavors, allowing the wine to blend with the fruits in a more harmonious way. An easy sipper alone, you can always add a shot of your preferred poison to up the ante—just an idea! 1 bottle of red wine 1 bottle of Champagne Triple sec 2 cups frozen mixed berries Rosemary sprigs (for garnish) Instructions Note: You will need a large pitcher, drink dispenser, punch bowl, some kind of pouring/serving vessel to house the sangria base. Clear glass is preferable so you can see the beautiful contents of the drink. To a small mixing bowl, add the frozen mixed berries. Pour in enough triple sec to cover the frozen mixed berries. This will create the macerated fruit. Do not stir the contents. Cover the mixing bowl with either a secure lid or plastic wrap. Refrigerate the macerated fruit for at least two hours and preferably overnight. Ladle the macerated fruit into the bottom of your chosen pouring/serving vessel. Pour in the triple sec that was used to macerate the fruit, followed by the red wine. Gently stir this sangria base. To assemble the Sparkling Berry Red Sangria, pour the sangria base into glasses, top it with a Champagne float, and garnish with a rosemary sprig.
