Grease a 9 x 9 x 2-inch pan with a nonstick cooking spray. Pour the batter into the pan and bake for about 50 minutes or until a toothpick comes out clean. Allow to cool, and use a fork to crumble the cake. This will be your middle layer.
Combine oat milk, cornstarch (or arrowroot) and sugar in a medium saucepan on low to medium heat. Bring to a simmer, dissolving all the sugar and let the mixture cook and thicken for 15 minutes. Whisk every few minutes to ensure it does not stick to the pan.

First, make the glazed pecans. These are great to have on hand for sprinkling on salads, so I make a little extra. For this recipe, 1 cup is enough. In a medium skillet over low to medium heat, add the pecans. Toast the pecans, tossing every minute for about 3 minutes to ensure they are toasted on all sides. Add in 2 tablespoons of maple syrup and a pinch of salt to completely coat them for another 2 minutes.

Spread them on a pan with parchment paper and allow to cool. Preheat the oven to 450°. Shred Brussels sprouts using a mandolin or grater, or finely chop them. Cut the fennel bulb in half, remove the fronds and then slice into U-shapes. Toss the Brussels sprouts and fennel in a bowl with 2 tablespoons olive oil, salt and pepper. Spread on a baking sheet and roast for 15 minutes or until tender.
