Spice Cake with Cardamom Whip Cream by Joshua Hinte Serves 8
Cake 2 cups sugar 1/2 cup butter 3 eggs 1 cup heavy cream 2 1/2 cups flour 3 teaspoons baking powder 1/2 teaspoon clove 1/2 teaspoon cinnamon 1/2 teaspoon nutmeg 1/2 teaspoon ginger 2/3 cup raisin 1/2 cup pecans Cardamom Whip Cream 1 cup heavy cream 2 tablespoons powdered sugar 1 teaspoon cardamom
Preheat the oven to 350° F. Position a rack in the center of the oven. Grease a 9-inch cake pan and set aside. In a large mixing bowl, cream sugar and butter. Incorporate eggs one at a time. Set mixture aside. Mix dry ingredients together (setting raisins and pecans aside). Slowly incorporate dry mixture and heavy cream to the original batter switching off. Fold in nuts and raisins. Pour mixture into prepared baking pan. Bake for 40-45 minutes until a tester inserted in the cake comes out clean. For whip cream, place all ingredients in a chilled mixing bowl and whip at medium speed until stiff peaks begin to form (roughly 1 – 2 minutes)

NEW YEAR’S EVE COCKTAIL by Joshua Hinte Serves 6
Strawberry Vanilla Shrub 1/4 cup honey simple syrup 1/4 cup apple cider vinegar 1/2 cup sliced strawberries 1 vanilla bean
2 ounces Strawberry Vanilla Shrub 2 ounces vodka splash Elderflower Liqueur Champagne Pour first three ingredients into a champagne flute and gently stir. Top with champagne and serve in a flute. Honey Simple Syrup 3 parts Mesquite Honey 1 part water
Cut enough strawberries to fill half of an 8 ounce mason jar (roughly 1/2 – 1/3 cup strawberries). Pour honey simple syrup and apple cider vinegar over strawberries. Slice vanilla bean lengthwise and scrape out seeds. Place seeds and vanilla bean pod into mixture and cover with lid. Give a gentle shake and set aside in a cool dark place for at least 24 hours before using.
Mix ingredients in a saucepan and bring to a simmer while stirring occasionally. Set aside and cool to room temperature.
