We’re excited for the various things that make New Mexican holidays so special: Mariachi and Folklorico, biscochitos, and our own version of red and green. We here at edible wanted to wish all of our readers’ happy holidays. We’re hoping that the end of your year is wonderful and that next year is even better. Holidays also mean we have to start scrambling for gift ideas for friends and family. We here at edible wanted to make your life a little easier by hand-selecting some of our favorite local items in our 2nd Annual Holiday Gift Guide. Cranberry Almond Skillet Cake Joshua Hinte Serves 8
Cake 2 1/2 cups all-purpose flour 3 teaspoons Baking Powder 1/2 teaspoon cinnamon 1/4 teaspoon ginger 1/2 cup granulated sugar 1/4 cup light brown sugar 3 large eggs (room temp) 1 cup buttermilk (room temp) 1/2 cup unsalted butter (melted and cooled slightly) 1 teaspoon vanilla extract 1/2 teaspoon almond extract Zest one lemon Topping 2 cups fresh cranberries 1/2 cup sliced almonds 3 tablespoons light brown sugar
Preheat the oven to 375° F. Position a rack in the center of the oven. Grease and flour a 10-inch skillet or cake pan, set aside. In a mixing bowl, whisk: flour, baking powder, cinnamon, ginger, granulated sugar and light brown sugar. In a separate mixing bowl, whisk: eggs, buttermilk and butter. Incorporate extracts and lemon zest. Combine both mixtures until incorporated. Pour into prepared pan. Add cranberries, pressing in slightly. Sprinkle with sliced almonds and brown sugar. Bake for 50 - 60 minutes until a tester inserted in the cake comes out clean.

The designs are pulled from the artists’ original pottery, which is on display at the Starbucks owned and operated by Indian Pueblos Marketing, Inc. (IPMI), across the street from Shumakolowa Native Arts. The artists include Erik Fender of San Ildefonso Pueblo, who began learning pottery at the age of ten with his mother, Martha Appleleaf, and his grandmother, legendary potter Carmelita Dunlap. The stark matte black and angular geometry of Fender’s design is complemented by the vivid orange and biomorphic curves of the mug designed by Patricia Lowden, who hails from the Acoma Sun Clan. Natural and abstract imagery also features in earth tones on the remaining three mugs by Frederica Antonio (Acoma Pueblo), Elizabeth Medina (Jemez Pueblo), and Robin Teller (Isleta Pueblo). $25.00 (each)

BLOOD ORANGE PUNCH by Joshua Hinte Serves 6
1 cup spiced or Jamaican rum 1/4 cup falernum (a sweet syrup used in Caribbean) 1/4 cup Cointreau 1/2 cup spiced honey syrup 2 cups water 2 cups blood orange juice, fresh and strained 2 blood oranges, sliced into rinds Place all ingredients in a pitcher filled with ice. Stir to incorporate all ingredients and serve. If serving hot, let simmer 20 minutes on stove top and add two cups water. Spiced Honey Syrup 1 cup honey 1 cup water 4 cinnamon sticks 12 cloves 8 whole allspice 1 inch fresh peeled ginger Place all ingredients in a medium saucepan and bring to a simmer. Let simmer 15 minutes. Set aside and cool before using. *Will last refrigerated one month.
