Designing food products S

howroom Finland brings the design approach to food products. The first design collection of berry and rye products has already gained a foothold in the Japanese market. Showroom Finland is a Finnish company riding on the wave of trends and developing, selling and marketing Finnish design products abroad. “Our basic philosophy is strongly connected with Finnish design, which we have now wanted to bring also in the food products,” Tuula Hocksell explains. “Our food collection represents the Design Food approach, which means that a food product should be aesthetically beautiful and, in addition to the looks of the packaging, we should consider in its design also the way the product’s going to be presented, sold and bought. Our food collection is a natural continuum from our other lifestyle products,” Leena Liedenpohja adds.

Wild berries and rye form the essence of the food collection The core of Showroom Finland’s first food collection consists of the Finnish superfoods: berries and rye. “In our collection we have at

the moment organic, dried wild berries and rye chips made of ingredients from the Finnish nature. These are clean, healthy and versatile products that can be used innovatively. It has been studied that hundred grams of dried wild berries contain more vitamins than the same amount of fresh berries. They also taste great, since the dried berries’ flavors get really intensified. The crispy rye chips taste good as they are, but they are available also for instance with rosemary,” Hocksell continues.

First to Japan Showroom Finland has first set out to conquer the Japanese market. “We have working cooperation relationships in Japan, so we did what they wished from us and brought the Finnish superfoods to Japan, combined with the Moomins­. The products have been welcomed really well, which makes us believe strongly in the future of our food collection, and we have some new ideas in our back pocket, too,” Liedenpoh­ja says. www.showroomfinland.fi TEXT: MH

Superfood from Finland The long light nights of the Finnish summer and a temperate climate ripen the vitamins and aromas of the forest berries, grain and herbs to their fullest. Pure ingredients combined with certified production technology ensure delicious high quality food and drinks.

brilliant example of this is the Finnish Kyrö Distillery Company’s gin, that was elected as the world’s best gin in the International Wine & Spirits Competition. The ingredients of Kyrö Distillery Company’s gin include rye and fresh Finnish herbs, such as cranberries, sea buckthorn berries, meadowsweet and birch leaves.

Nurture your health New studies find always more and more substances good for your health in forest berries, such as bilberry, lingonberry, cranberry and cloudberry. Wild blueberry, bilberry, is one of the best berries providing health benefits. Bilberries contain flavonoids, including anthocyans, substances proven good for the heart and memory and widely used in medicines used to treat eye conditions. The Finnish Government strongly supports export of high quality products made of Finnish berries, grain, meat and milk. These pure products are soon made available in countries,

where food scandals have aroused consumers’ interest in the origin and safety of their food. “The goal is to double the total food export value into three billion euros in a bit more than five years and to create 5,000 new jobs in the industry,” says Esa Wrang, Director of Food from Finland growth program. Right things have been done and the program has already brought forward over a hundred companies. The food exporting (excluding to Russia) has grown ten per cent in the past year. Food from Finland focuses especially on increasing exports to China, Japan, Korea and the Middle East, in addition to the traditional export market of Scandinavia and Central Europe. “Finnish food industry has invested in R&D. The outcomes serve the conscious consumers. Many Finnish products have been awarded in international innovation competitions, “Program Manager Annaleena Soult points out. Full flavors made of pure ingredients Huhtahyvät, founded in 1988, is renowned for its high quality cold cuts of sliced full meat, various sorts of salami, meat jellies and gourmet salads. The company’s factory in Kankaanpää produces over five million kilos of meat products and salads in a year.

H

uhtahyvät invests in efficient production and uncompromised quality. Clean ingredients and own well-developed recipes are the foundation and core of functioning even though the company also knows how to use the latest technology. “According to our slogan, our strength is that we create natural delicacies. This means high quality certified by the standard ISO FSSC22000 and clean ingredients and production methods. The raw material we purchase from Finland, always when possible, says the CEO of Huhtahyvät Oy,” Jukka Vilska. Jukka Vilska became an entrepreneur in 1988 by buying Huhtahyvät together with his father. Also his sister and nephew work at Huhtahyvät, which means the family enterprise has given a job already to the third generation. Also his own children work in the company in summer time.

Forerunner in packaging technology Huhtahyvät and Jukka Vilska have since the

very beginning invested in modern production and efficiency. Thanks to successful investments and flexible approaches, the company has been able to maintain its market share and expand the business in a market full of competitors. In year 2014 the production capacity of salami and salad was doubled by renewing the production and packaging lines keeping the number of permanently employed staff in around 65 throughout the process. In addition to the new machines and devices, Huhtahyvät has invested in consumer-friendly and ecological resealable packaging. “We decided already in early 2000s to leave the packaging gas era behind and chose as one of the first companies in Finland to use boxes that can be reopened. These were later awarded as the World’s best packaging in 2003,” Vilska tells. He used to work also in packaging industry. “In the latest version of our salad pack-

age, we have removed the inner lid containing metall, which both makes the box easier to open and more environmentally friendly since it’s now made of less material.”

Efficiency and taste The popularity of Huhtahyvät gourmet salads with mayonnaise is based on company’s own recipies which are constantly developed further. “Through our website we get good feedback of our resealable packages but also of the full flavor of our salads. It is a result of not being cheap in the ingredients,” Vilska points out. Huhtahyvät salads sold both under the company’s own brand and the several chain stores’ brands generate around one third of the company’s turnover. ust like everyone of us, our pets enjoy a high quality gourmet meal, too. Cats and dogs can’t resist the salmon risotto, reindeer stew, boney meats and various treats made by the Finnish company Best-In Oy.

The fully preservative-free fresh meals keep good in the fridge for three months,” he ensures. All pets of different sizes and even with different allergies find delicious choices in the balanced and natural selection of meals. Chipsters brings Finnish rainbow trout abroad hipsters is known for excellent fresh and frozen fish and fish products. The newest hit is rainbow trout grown in water recirculation systems. Chipsters is among the companies representing Finnish food industry in the international Anuga Trade Fair in Cologne. “Our goal is to find new customers in the Central European market. We believe, that there is demand for clean Finnish fish products,” Chipsters CEO Timo Vetriö says. Chipsters is at the fair to present its fish products and the rainbow trout grown in water recirculation system. In the beginning of 2016, the company will launch a new recirculation system fish plant in Aland Islands producing fish to be sold and used as an ingredient in its various fish products. Straight after the launch plant aim to achieve ASC certification.

Pure and better rainbow trout The water recirculation system enables growing first class rainbow trout more ecologically. The fish is kept in large tanks on dry soil, water is pumped in from the Baltic Sea and all the bacteria are removed. “Water is continuously being recycled and cleaned, thus optimizing the growing environment for the fish. 98% of the water will be reused and the rest cleaned and put back into the sea. This is what makes rainbow trout an exquisite food to serve.” Fresh salmon all year round Chipsters delivers responsibly grown quality salmonids year-round every day of the week. “We draw out the rainbow trout as ordered, so the catch is always the right size and suitable for the purpose: whether it is for filets, portion-sized fish for one or a whole fully grown fish.” TEXT: MH www.chipsters.fi

Research making art more valuable Everyone investing in fine art can now find scientific answers to the questions of their artwork’s dating, place of originand its authenticity. Forensic studies offered internationally by RECENART make sure that the art collectors really get what they wish to buy.

R

ECENART – Research Centre for Art is a part of the University of Jyväskylä striving to become Europe’s leading private scientific research centre for art. Its interdisciplinary team of scientists comprises experts of art history, natural sciences and IT. The team uses the most diverse collection of scientific devices in Europe to study art in 17 techniques. For example, an artwork’s elemental composition can be accurately analyzed. Optical methods enable understanding the creative process of the artist and makes it possible to image underneath the paintlayers to reveal the possible underdrawings and hidden signatures. – We found Claude Monet’s signature with the year -[18]91 in the painting “Haystack in the Evening Sun” owned by Gösta Serlachius Fine Arts Foundation. We also analyzed the pigments. The painting has been assumed to be Monet’s and now this spring we confirmed it, Commercial Advisor Laura Aineslahti tells. – We don’t just research the authenticity of the pieces of art—we can also help our customers to solve various other mysteries behind their artworks. In addition to paintings we study sculptures and archaeological items made of different materials, such as ceramics, minerals and metals. For example pigments in the artworks are innovations of their time and have been used in different times in different places, explains RECENART’s Project Manager art historian Tiina Koivulahti. She also points out that RECENART’s comprehensive mobile device solutions enable studying the art anywhere in the world. The customer receives always a scientific report on the findings of a study.

Nanorecognition to valuable art RECENART has developed a new art authenticity certification method that can’t be forged. This is a nanotechnologically created composition that can’t be copied. – The certification signature doesn’t harm a work of art in any way and it can be applied to almost any luxury item, whose authenticity or origin we want to have confirmed, Aineslahti assures. RECENART has received development funding from Tekes – the Finnish Funding Agency for Innovation. Also the pigments in the painting correspond to those in other Haystack paintings by Monet. The image illustrates the measured spectrum of vermillion red. This scientific study increased the painting’s value significantly.

nnopeda stands for innovation pedagogy, which is an approach developed and applied by the Turku University of Applied Sciences. In this approach everyone wins: students get better jobs, companies more effective and innovative workers, and the society well-educated tax payers and successful companies. “Innopeda is founded on several cornerstones, including all-round learning, innovative methods, internationality and entrepreneurship. It’s not just some new method, but a holistic learning approach comprising accumulation of student’s knowledge, interaction in the social environment, networking and plenty of the individual’s own work,” explains Dean Liisa Kairisto-Mertanen. Innovation pedagogy combines learning, producing new know­ ledge and applying it in solutions to problems.

“Businesses require all the time more and more interdisciplinary know-how.” During learning process, students acquire skills that enable them to innovate or at least participate in innovation processes when they’ve moved on to working life. Innopeda also applies flexible interdisciplinary curriculums giving students a chance to choose their areas of personal development. Working-life orientation is very important, which is why the studies include real cooperation projects with companies. “Companies are important cooperation partners,” emphasizes Kairisto-Mertanen.

Estonia’s e-Residency is reshaping the world O

ne and a half years ago Silicon Valley entrepreneur Balaji Srinivasan predicted in Wired that thousands of people who manage to find each other on the internet will soon start coming physically together for longer periods of time. “We may begin to see cloud towns, then cloud cities, and ultimately cloud countries materialize out of thin air,” he concluded.

First Country to Offer e-Residency Estonia recently made a huge step towards this vision by becoming the first country in the world offering e-Residency – a platform of advanced government and business services that is open to virtually everyone on the planet. eResidency will attract a cloud of business entrepreneurs, freelancers and fans of the digital society around Estonia in a way that can turn the whole idea of being a small country on its head. States can become bigger than the sum of their physical residents. Estonia has already seen hundreds of early birds flocking to sign up for its e-Residency platform although the service itself is still in beta. So what are the first e-residents really after? Note that people joining e-Residency will not become physical citizens of Estonia, nor would they necessarily reside in Estonia. They will not have tax benefits either. Instead, e-Residency offers access to one of the world’s most advanced set of government and business services that Estonia has developed since the 1990s.

Tuomainen also believes that people from all over the world who live in unstable countries with dysfunctional business registration systems will be obvious candidates for Estonian e-Residency in the future. Developments on the Way The current list of basic services is growing rapidly, but the very success of Estonia’s e-Residency program depends on government and private sector cooperation in creating new applications, pretty fast. Currently several banks and start-ups are working on innovations that will make their services available to e-Residents. enter the scene. Taavi Kotka, the CIO of Estonia compares the development of the e-Residency platform to many developers working on apps in Apple’s app store. “Estonia is the world leader in e-Residency solutions and thus we have a 1–2 year advantage to attract the first million e-residents and best developers,” says Kotka. He has a bold vision of 10 million Estonian e-residents, but he is also confident that soon some countries may follow with eResidency programs of their own. According to Kotka, technology is not the only key to a successful e-Residency programme. He believes that certain values will influence how people will bond digitally with countries. “As to us, we build our e-Residency around Nordic values such as egalitarianism, transparency, accountability and responsibility,” he explains. If Kotka and Srinivasan are right, then in the new digital world of the 2030s, physical states will also become states of mind.
