CHAROLAIS Staying in the Game

It starts with seedstock production

A

nother tidbit of valuable information gained during our September 13 Listening & Learning Sessions came from Dr. Gretchen Mafi, Meat Sciences professor at Oklahoma State University. Mafi discussed ongoing research that continues to give meat processors, purveyors and wholesalers more pounds of quality beef to sell and, ultimately, the consumer plenty of choices in the meat case. The seedstock sector of food animal production has made incredible progress relative to developing tools to make genetic and phenotypic progress. And now, the ability to genomically test young animals, rather than wait years to develop their progeny, is accelerating the process beyond anyone’s expectation. If we compare seedstock production to other interdependent business

where we will have too much upper Choice or Prime. Industry analysts simply do not agree. Producing more high-quality beef is not resulting in a decreased demand for quality. In fact, the beef industry’s ability to produce more pounds is simply providing greater access to retailers, big box stores like Sam’s Club and Costco, to improve the overall quality of beef selections in their meat cases. The benefit for beef producers is sustaining or growing demand. More higher quality beef carcasses have motivated meat scientists and branded beef programs to invest in more research to discover “new” cuts. Obviously, the anatomy of a beef carcass isn’t going to yield new muscles. Researchers are skillfully fabricating the same muscles differently and the results are exciting and

While progressive seedstock producers embrace the science and technology necessary to continue to produce more pounds of higher quality beef, we risk being faced with unfavorable markets and downward trending prices without robust demand. That’s where it gets complicated. The U.S. beef industry is fortunate to have gigantic investments in research, at every land grant university, working to discover more uses for every muscle on a carcass. Dr. Mafi is just one of the brilliant meat animal scientists that work every day to find new ways to fabricate muscle. Dr. Mafi reminds us that the beef business, regardless of industry sector, is driven by pounds. Efficiency up the food chain, from seedstock to the meat case, is never about producing fewer pounds. She cautions producers to focus on increasing cutability and not just weight. In other words, dressing percentage and yield are key to delivering more pounds on up the supply chain. Marbling is still the best indicator of quality as well as a satisfactory eating experience. However, the “tail that wags the dog” is demand for our product. Some will argue that there’s a tipping point in the future

Newer cuts like flat iron, petite tender and the Vegas Strip® are fabricated from shoulder muscles or chuck—undervalued cuts of beef frequently ground into hamburger. Each of these cuts adds value to the beef carcass at the retail level. Robust demand for beef appears to be driven by a consumer’s recognition of quality at several levels. Certainly, as a population, our appetites for big burgers and all the trimmings isn’t diminishing at all. Even as fast food restaurants expand menus beyond beef, the anchor for those franchises is beef. At the end of the day, the circle comes back to seedstock production. While any cattle feeder can make a steer fat, research has proven the feeder can’t take a beef animal with little marbling potential and make him upper Choice or Prime. The supply chain starts with seedstock production. By continuing to embrace and implement genetic evaluation tools and technology, with the goal of adding value from beginning to the end of the supply chain as our mantra, we will deliver a product most any household can afford and enjoy. That’s how Charolais breeders, their commercial customers and the beef industry stay in the game.

AmericanInternational Charolais Association The AICA is the official registry for Charolais and Charbray cattle in the United States. Charolais cattle were first brought to the U.S. in 1936. In 1957, the American Charolais Breeders Association and the International Charolais Breeders Association merged forming the present AICA. Membership in the AICA is obtainable when the applicant has ownership in at least one animal, and has paid the initial membership fee of $125. AICA annual dues are $100. 18  

For a fee of $25.00, AICA will upload the animal picture to the their page on the AICA Online Registry System. Each time someone pulls up your animal on the website, the picture of the animal will appear. To have your herd bull or cow included, you must supply a picture in JPEG format. AI Sires used “out of herd” and all Donor Dams must be DNA tested before calves can be registered. AICA recommends collecting DNA samples during the donor’s initial flush. Check the animal’s record to make sure the DNA work has been done before submitting registration papers. DNA kits are specific to the animal being tested. Contact Marilou Wegner to request a kit. AICA rules require signatures on bulls and dams you do not own. Signatures can be submitted online, fax, mail or e-mail. Sales of Bred Females

Females sold bred must have all breeding information included to complete the transfer. Service date and appropriate sire signatures are necessary. Link Your Herd Management Package to AICA

AICA has launched a new service that provides the framework to allow on-farm herd management computer software to exchange data with the AICA office. By using this service, breeders can avoid entering data in to both their local software and AICA’s online system. The software package would send AICA the data. If you wish to take advantage of this new service, ask your software vendor to contact AICA. Dispose of Animals

AICA MEMBERSHIP Obituary

David Maurice Hebbert was born July 18, 1950, in Alliance, Nebraska, to R.M. ‘Mose’ and Merla (Rex) Hebbert. He graduated from Hyannis High School in 1968 and then attended junior college in North Platte before transferring to Casper College where he graduated in 1971. While at Casper, he was a member of the rodeo team and also attended Southern Colorado State College at Pueblo on a rodeo scholarship. On February 3, 1976, Dave was united in marriage to Mickie Wenzlick in Ogallala, Nebraska. They devoted the next several years to rodeo and worked for Cervi Championship Rodeo Company. In 1981 they returned to the family ranch at Hyannis, Nebraska, where he and Mickie raised their three boys, Matt, Jake, and Josh. Dave was a cowboy and ranching allowed him to do what he loved – ride good horses and raise good cattle in the Sandhills that he loved. Dave was a member of the Shepherd of the Hills Lutheran Church and served on various boards, including the Nebraska State Rodeo Association, Nebraska Charolais Association, American International Charolais

Producers Connect with Industry Leaders

At AICA’s First Listening & Learning Session

onnecting with others for the purpose of sharing goals, ideals and ideas for a value added market, Charolais breeders and commercial producers gathered with industry leaders recently for a day of Listening & Learning in Ardmore, Okla. Appropriately gathering at the Noble Research Institute, this group of forward thinking enthusiasts included participants from seven states, all looking at ways to increase revenue through the use of quality Charolais genetics. The Institute’s glass-encased and tree-shaded auditorium nestled in the midst of peaceful green pastures provided an inspirational setting for a day packed with helpful information for anyone interested in increasing their profits in the beef industry. Addressing everything from marketing alliances, genomics and production to merchandising and valueadded beef cuts, the sessions included discussion of timely and innovative practices useful to purebred and commercial livestock producers alike. AICA officials on hand to kick-off the event included Executive Vice President J. Neil Orth and Larry Ludeke, board president.

A Warm Welcome from Noble Research Institute

Attendees were welcomed to the Institute by Robert Wells, executive director for Integrity Beef Alliance and livestock consultant in the producer relations program at Noble Research Institute. In his opening remarks, Wells welcomed the group to the institute and then explained his role in assisting producers. Boasting the attributes of Integrity Beef, he explained the alliance focuses on negotiating pricing and contracts for ranch inputs of high quality, uniform, value-added and preconditioned feeder cattle. Citing the use of superior genetics, quality health protocols and a 60-day pre-sale vaccination program as some of the program’s criteria, Wells noted that Integrity Beef Alliance is a “value stacked” program aimed at providing producers with higher return on their investment. “We have economists who work to determine if country bids are profitable,” said Wells in explaining that the alliance is designed to create all types of marketing options for program participants. However, most alliance cattle are marketed through special sales at Oklahoma City Stockyards. The alliance added a heifer development program in 2016 to provide high

quality replacement females. Looking forward, Integrity Beef has implemented a twoyear pilot project focused on marketing sustainably produced beef that will make its way through the processing chain to McDonald’s. “We haven’t even scratched the surface yet on where sustainability is going to go,” said Wells, noting that sustainable production is more attractive to today’s “Millennial” consumers. Noble Research Institute also offers consultation services, agricultural events and educational opportunities in support of farmers, ranchers and land managers. Services are provided free of charge and provide plant and animal owners and managers with the benefit of extensive research and support from people with “hands-on experience”. Robin Peterson, public relations coordinator at the Institute also joined the group and provided insight into the history and current operations of the facility which encompasses 13,500 acres across farms in Carter and Love County, Oklahoma. “Forage based beef production is the key focus here,” said Peterson noting the institute collaborates with Oklahoma State University, Texas A & M, the University of Wisconsin and other educational entities in ongoing research programs.

Educational Program Draws Interest of Charolais Producers

Dense with Charolais producers, the Listening & Learning segments were successful in keeping the attention of attendees. “I thought it was a great event as far as it being very, very educational, covering bases from conception to consumption, on the cattle end.” said Chris Peuster, managing partner of Wright Charolais in Richmond, Mo. “The keynote speakers had a really good message and helped educate the crowd on their areas of emphasis.” “I think it was really well done,” said Mary Lou BradleyHenderson who made her way across the rolling plains of the Texas Panhandle to attend the session. “There were a lot of really

Michael Sturgess, Double S Cattle Company, LaRue, Texas “They walked us through what they were doing and why they were doing it. I enjoyed that,” said Bradley-Henderson of the Bradley 3 Ranch. “Having other cow/calf ranchers there, like Max Martin was informative. He did a really nice job of laying out the data – it was informative. Information was equally as good from other folks as well.” Martin led off the panel discussion that focused on positioning cow-calf operations for added profit and efficiency. His 520 cow herd at the JX Ranch calves spring and fall for a terminal marketing program that includes 50 percent retained ownership. Charolais bulls with terminal EPD genetics are used to maximize profits. When purchasing bulls he focuses on calving ease, yearling weight, rib eye and marbling. His presentation included detailed data from feedlot cattle, including marbling scores. Martin drew energetic response from the crowd when he paralleled selection for rib eye area to his grandmother’s saying, ‘Be careful watch you wish for, you might get it’.

“I’ve got it,” said Martin. “Now I have to figure out how to marble it.” He continued to share current marbling scores and goals for improving them. Additionally, he shared his mathematics on the value of a bull which allows him to pay premium prices for top bulls and pocket profits. Bulls on the JX Ranch produce about “a quarter of a million dollars” during their average five years of service. Targeting a three and a half percent premium on calves marketed through U.S. Premium Beef provides Martin with an extra $9,000 over the five-year life of a bull. When it comes time to replace a bull, he takes 25 percent of that amount and adds it to the average price of bulls, giving him extra dollars to attain targeted genetics.

Questions and Answers

All segments were concluded with Q-and-A sessions moderated by Rex Rickets, Ph.D. of Columbia, Mo., chairperson of the AICA’s Breed Improvement Committee. Following the 45-minute Cow-Calf segment which, in addition to Martin, included presentations by Barron Kidd and Rusty Daniels, the connectivity among those attending was evidenced as questions and discussion focused on replacement females, longevity and areas of improvement. When questioned on replacement females, Daniels said he would like to see more EPD information on reproductive traits. During his presentation, he recognized the terminal value of Charolais noting that Wood Ranch follows the Integrity Beef Alliance protocol and has sold to Cargill, Cactus Feeders, El Reno and Oklahoma City. Even though no white cows are used at the ranch, Daniels also credited the breed for its maternal attributes. “If you find a middle of the road 5.5 frame score bull, there’s nothing wrong with keeping a Charolais female,” said Daniels, referencing his father’s herd and personal experiences. “We talk about terminal traits, but they have other uses in the industry.

They’re not just something that we’re looking to cut their head off. They make really good cows also.” Touting that ten of his 13 bulls are Charolais, Kidd credited Robert Wells of Noble Research Institute for introducing him to Charolais bulls five or six years ago. “In spite of the fact I like to buy low birth weight bulls,” Kidd said he has increased his weaning weights by almost 100 pounds. He went on to note the recent purchase of a Charolais bull with a 71-pound birth weight, 796-pound weaning weight and 1351-pound yearling weight. “It’s amazing to me that you can have an animal, even if you feed it, do that. I thank the Charolais people for doing that.” Calves are pastured until yearlings on his 3,300 acre ranch south of Dallas, which is still in the rebuilding stage after a hard sell down during the drought. When questioned on longevity of bulls, Kidd noted a four- to five-year span, while maintaining a 25:1 cow to bull ratio.

Scott Milligan of the Rio Ranch west of Houston was among those who sat in on the sessions. He found the program to be “very educational” providing information he could use. The 1,200 head cow herd at Rio Ranch is comprised mainly of purebred Charolais and Brangus, along with some commercial cattle. From his standpoint as a Charolais breeder, Milligan said, “If anything I felt like we were preaching to the choir a little bit, mainly because we’re Charolais breeders. I think if we could have more commercial people there it would be beneficial. I learned some stuff. I thought it was positive and upbeat and reaffirmed what we are doing.” “I see it on facebook and that’s a good way to get it in front of people,” added Milligan, crediting the AICA staff for promotion of the event. “It would be fabulous if we could get that information to more commercial breeders.”

ey everyone, my name is Rylee Derrer and I am excited to be serving as your Area 7 Director this year! I am currently a junior at Iowa State University with a major in Agriculture and Society and a minor in Animal Science. I grew up on a small cow-calf operation near the town of Milan, Illinois. I have been a member of the AIJCA since 2011 and have been hooked not only on the breed, but also the great people I have met in that amount of time.

Q: What attracts you to the Charolais breed? A: First and foremost, the Charolais breeders are second

to none. I became involved in the Charolais breed a little over seven years ago, and the people within the industry instantly felt like a second family. Second, the breed itself is extremely versatile whether your operation is breeding for show cattle or commercial purposes.
