have the personality that stays sane when things get done; when I start a project, I like to work at it until its completion. I don’t like starting another project while there is one still lingering. I have always been this way and after 40 years I don’t think I am going to change. This is usually a positive trait unless your spouse is the complete opposite. My husband and I are complete opposite personalities; you know what they say, “opposites attract”. This summer however has pushed me to the realization that all future projects are going to be off of my husband’s to-do list. Yes, I may have overloaded him with honey dos but, my mentality would be more stable if one project was completed before the next one is started. My visions for our ranch never stop; with every project however, come a lot of time, money and dedication. This summer’s projects included a hardscape, finishing off the interior of an existing shed to become the new JDA headquarters, turn the existing JDA offices into a boujee new space for brides who utilize our ranch, solar for the property, a fence in front of the orchard/garden, replace existing landscaping here and there and on and on and on. Are you feeling sorry for my husband yet…well don’t! I have initiated all of these projects with my mom and our dear friend and helper, Fernando. If you need a contractor team, we do a pretty darn good job. Another part of the puzzle that’s making things hard to complete projects is the delay of shipments and materials. I am sure you all know what I am talking about; the effects of COVID and the supply chain. Also, to try to take the load off of my husband, I’ve tried to hire some of the work out. Again, another struggle; workers are hard to come by and if you can find a company, they’re booked out because they’re short on help. These were supposed to be summer projects but the completion is looking more like fall at this point. All in all…this is all just tugging at my sanity. In the end, I have been forced to learn how to do new parts of these projects which will only broaden my skill set and make the next project even easier; knowledge is power. Also, the less I have to rely on the husband for things the better it will be to maintain a good marriage.

Hard to believe that 2021 is more than half over, and it won’t be long before we’re thinking about pumpkin spice and where to spend the holidays. On the Wagyu calendar there are a few things coming up that you most definitely need to get penciled in. Right out of the chute you have the Elite Wagyu Sale from with some pioneers of the breed participating; it will be in August at Salado, TX. Then all Wagyu breeders should make plans to be in attendance at the 2021 Wagyu Conference being held in Fort Collins Colorado. As we enter October do not forget to make your travel arrangements for the Vermont Wagyu 3rd Production sale taking place on October 23rd. This promises to have some amazing genetic opportunities. Then we have a new sale, it is the Fall Harvest Texas Wagyu Association sale taking place November 6th, 2021 in Luling, Texas. Entries are online for this event right now. Spring of 2022 is shaping up to also have some very incredible Wagyu events that we will be telling you about soon. Here in California we are just trying to get through one summer heat wave after another. Hope to see you all soon.

an and Leticia Arnold are part of four generations of the Arnold family who live on a ranch in Montgomery, Texas. Married for 30 years, the couple earned their living as entrepreneurs building innovative and successful companies in retail, electronics, beauty and entertainment. The Arnolds’ most recent venture was Jurassic Quest, a touring family dinosaur show with more than more than 200 true-to-life size animatronic dinosaurs between two shows, educational exhibits and games. “We built the business with our three kids and travelled the country together until we sold a majority stake to a private equity investor a couple years ago. Today, we stay involved as part owners, but our primary focus is DL Texas Ranch,” Dan says. He and Leticia started running a small herd of Beefmaster cattle six years ago, before they got a taste for Wagyu. “We had horses, goats, chickens, dogs, and some registered Beefmasters we bought from a neighbor,” Dan says. “Then we bought another parcel of land and started expanding into some higher-end genetics – first with Beefmasters and eventually with Wagyu.” Dan and Leticia approach their DL Texas Ranch operation with the same commitment to excellence that led to the success of their previous ventures. “After we retired, we were looking for a new project and decided to invest more in our cattle,” says Leticia. “We became very interested in Wagyu after tasting it for the first time at a restaurant in Australia. We read up on these cattle and bought our first Fullblood Wagyu from Marble Genetics a little over two years ago,” Dan adds. They sold their company, bought extra land, and got into Wagyu all within the span of a few months. Since then, they have been expanding the Wagyu herd and investing in high-quality infrastructure for their farm. “We bought most of our current Wagyu herd at the JDA sales, along with a few private treaty purchases,” Dan says. DL Texas Ranch now has over 120 head of Wagyu on site, including registered Full-Blood Japanese Black Wagyu and registered Purebred Polled Wagyu in addition to their registered Beefmaster herd. “We started some polled bloodlines shortly after we got into Wagyu, and invested in our herd bull Able, who is a homozygous polled Bar R Zurutani D64 son. Able has produced several homozygous daughters and a few bulls. We also purchased some homozygous heifers from the Bar V sale and have been flushing these and some Full-Bloods to first generation and high EBV bulls. “We purchased daughters, embryos and semen from Mayura L0010, Itoshigenami JNR, Michifuku F154, Itozuru Doi, World K’s Sanjirou, Sanjiro 3, Shigeshigetani, Itomichi and more.” “We just did a large round of AI using a number of really outstanding bulls, focusing heavily on the high EBVAustralian bulls, Arubial United and Arubial Anticipated. And we have about 30 recip cows off-site that are carrying some very impressive matings,” Dan says. Most of their customers want breeding stock for seedstock operations and the ranch currently has a few FullBlood and polled bulls for sale that are near breeding age. “Most people come to us looking for Fullbloods or the polled genetics. We are starting to sell some cows, heifers, bulls, and genetics, but mostly we’ve been building our herd,” Dan explains. They are feeding out nine Fullblood steers to harvest and market the meat next year, with several more that will be banded soon. “Our cattle are finished or supplemented on Jimmy Horner’s Protocol Naturals program, which emphasizes high-quality, all-natural feed,” he says. Leticia adds that their herd includes a lot of first generation and high EBV Japanese Black Wagyu. “We are collecting more, as we can,” she says. One thing they really like about this breed is the fact that everyone is so helpful. “There are no stupid questions,” says Leticia. “The more experienced breeders have been very willing to help us newcomers learn the business and to share their trade secrets and breeding philosophies.”

We want the best and that’s what we are trying for. We aim to produce high-marbling, recessive-free, healthy, docile, and marketable cattle. There are some very exciting things happening with our new purchases and breedings, and we can’t wait to see what the future holds,” Dan added. “We don’t stress the cattle, and we try to raise docile animals with a lot of touching and contact. We put a lot of emphasis on this,” Dan says. “These cattle are very smart and friendly, if handled right. We have some real puppy-dogs out there. They get very personable.”{ “We are following the Japanese rotational breeding plan and mimic the folks who have been successful,” Dan adds “We’re doing the right things to ultimately produce great meat.”

The third ever Bar R Cattle Company production sale was a huge success. Not one seat was open during the auction and the online attendance was also very large. The hospitality from the entire Reeves family was tremendous with a Friday night event and of course, a sale day lunch. Records were shattered as the auction sold the highest selling bull and female to date in open auction for the Wagyu breed. The 5th Annual Passion for Prime event was a huge success. The day before the Midwest Wagyu Meeting had a large crowd in attendance and some of the industry’s best speakers. That evening, the party was even more exciting and was an evening of not only great company but amazing food that highlighted Wagyu beef. The auction itself was tremendous; the best on record and not only was there a nice crowd in attendance, the online registered buyer list was a whopping 97! In the News 2021-2031 AUSTRALIAN WAGYU ASSOCIATION PROGENY TEST PROGRAM
The Australian Wagyu Association’s international members can nominate sires for the new 10-year Fullblood Progeny Test Program. The Australian Wagyu Association‘s 10-year Progeny Test Program (PTP) will breed 40 sires (Australian and International) across 2,000 females per year, making it the world’s largest Japanese Black progeny test program to be run outside of Japan. The purpose of the 2021-2031 Australian Wagyu Association-PTP is to leverage the existing highly successful global Wagyu BREEDPLAN genetic analysis. This will be achieved by testing progeny from the maximum number of emerging industry sires from around the world for high-value Wagyu sector traits. It will also develop new Wagyu-specific traits for reproduction, structure, carcase and meat quality. Formal progeny test programs have been the backbone of the global beef industry’s genetic improvement for the past 30 years. To date, the Australian Wagyu Association has built its genetic database and reference population from the high-quality genotype and performance data submitted by domestic and international Australian Wagyu Association members into the Wagyu BREEDPLAN genetic evaluation. The Australian Wagyu Association has members from more than 20 countries who register animals with the Association, making its genetic evaluation a global service. The Australian Wagyu Association-PTP aims to consolidate existing data and provide a formal progeny test program through large-scale testing of progeny from diverse sire genetics sourced from the global Wagyu sector. United States members make up 10% of Australian Wagyu Association full membership, the highest proportion outside of Australia. Over the past five years (2015 – 2020) the Association has seen a significant increase in US animal registrations. In 2020 the total number of new US registrations with the Australian Wagyu Association exceeded 1000 animals, a 375% increase on the average number of animal registrations from the USA compared to the previous five years. US members are also able to provide performance data on their animals to Wagyu BREEDPLAN along with genomics, to obtain high accuracy EBVs. The Australian Wagyu Association values the phenotype and genotype contributions of its USA and international members into the global Wagyu BREEDPLAN genetic analysis. With the implementation of the Progeny Test Program, the Australian Wagyu Association is encouraging the participation of US and other international-bred sires in the Progeny Test Program. This will allow our international members to benchmark their sires within the largest and most complete globally available genetic evaluation for Japanese Black Wagyu cattle. BENEFITS TO SIRE OWNERS o A minimum of 12 steer progeny and 12 female progeny will be performance recorded in large contemporary groups for existing and new traits. o Nominated sires will receive improved BREEDPLAN EBVs 20

with high accuracies, especially for hard to measure traits and new traits including whole-of-life growth, female fertility, maternal performance, structural soundness and high-value carcase and meat quality traits. o Receive progeny average values and sire benchmarking against Australian and other international AWA-PTP sires. o Add value to the performance data you record within your own herd through genetic linkage to the core global reference population for Wagyu, driving improvement of BREEDPLAN EBVs and accuracies in your own herd. o Involvement in the largest formal progeny test program for Wagyu cattle outside of Japan. ENTRY FEES Members can nominate sires under two categories: o Project standard sire: (AUD $7,500). 260 semen straws to be supplied to the Project. • 60 straws to be retained and used by the project. • 200 straws will be offered for public tender as part of 20 semen packages (10 straws from each sire (max. 20 sires) chosen by purchaser). • 30 sires will be accepted as Project standard sires each year. o Project link sire: (AUD $15,000). 200 semen straws to be supplied to the project. • 100 straws to be used across two years, creating double the progeny numbers and enabling genetic linkage between years of the project within the analysis. • Semen from these sires will not be offered for tender, with residual straws (100) held by the Australian Wagyu Association for use in future genetic projects as Link Sires. • In the first year of the project, a maximum of 10 sires will be accepted as ‘Link Sires’, with subsequent years calling for five new ‘Link Sires’ to join the existing pool of sires. NOMINATION OF SEMEN SIRES The Wagyu sires that enter the AWA-PTP must be: - Australian Wagyu Association Herdbook-registered, Fullblood Japanese Black Wagyu sires. - Nominated by Australian Wagyu Association members and Wagyu BREEDPLAN members (including international members). 3 Tbsp Olive Oil or Avocado Oil 2 yellow onions sliced thin 2 Tbsp minced fresh ginger 2 Tbsp minced fresh garlic 8 oz Sake Wine 8 oz Tamari 4 oz Mirin 2 oz Rice Vinegar seasoned 1/8 tsp Xanthan Gum
- Heat oil in a Sauce pot over medium heat. - Add thin sliced onions cooking until deep caramel color stirring frequently/do not burn - Add Garlic and ginger cook 3- 4 minutes - Add Sake Wine cooking 6-7 min until cooked down by half - Add Tamari, Mirin, and vinegar cooking 4-5 min. - Turn off heat pour into a blender and add Xanthan Gum Blend until smooth - Store in air tight container cool completely before serving

- Set up standard breading station in individual bowls or pans for egg wash & panko bread crumbs - Cut steaks in half and press lightly or pound with mallet to make size of bread - Season nicely with salt as highly marbled wagyu beef needs a touch more with all the fat - Dredge in flour shaking off excess - Dredge in egg wash - Dredge in panko pressing bread crumbs to steak until completely coated - Set aside in freezer or refrigerator until ready to fry - Pan fry on medium high heat in avocado oil for1 to 2 minutes per side finishing with internal temperature of steak at 100 degrees

R
einhard Holtmann continues a legacy on their family farm in the beautiful Munsterland of Germany in the outskirts of the city of Munster. The farm is steeped in history having been passed from one generation to the next. Reinhard was born and raised in the business and inherited the farm at 19 years old when his father passed away. He currently resides on and operates the farm, called Wagyu Munsterland, with his wife and children. Having started as a dairy, Wagyu Munsterland has evolved and now hosts a herd of 200 Wagyu cattle and 1,000 Cerdo Iberico pigs. Reinhard made his first Wagyu purchase and imported embryos from the United States in 2009 in an effort to make better beef. Since that time, Wagyu Munsterland’s herd has grown significantly and proudly includes both a small number of Akaushi as well as a substantial number of black Wagyu. Only fullblood and purebred Wagyu are raised on the farm. Reinhard mentioned that with Europe’s continued concentration on animal welfare, polled Wagyu are becoming quite popular because they eliminate the need for dehorning. The farm raises not only cattle for beef production but also have a hand in seedstock production and genetics. The farm is located on 100 hectares of land which is the equivalent of around 250 acres. Around 95% of that acreage is cultivated for arable farming of maize (corn), wheat, barley, triticale and grass silage. The other 5% is kept in permanent pasture for grazing. All feed produced on the farm is fed to the animals that reside there in various mixtures. They also feed spent brewer’s grains from an organic brewery in Munster. Reinhard shared Page 28 >>

that farming practices are quite different in Europe because farms there are smaller than in the United States or Australia. They keep about 50% of their cattle on pasture while the other 50% are housed in open air barns with paddocks. Concentration is on quality, not quantity of meat so added comforts are provided for Wagyu Munsterland’s cattle beyond their grazing. Fresh straw bedding is provided in paddocks so no cattle ever stand on slatted floors. They also enjoy automated roller brushes, heated drinking troughs and relaxing music. Reinhold uses a 60/40 approach to producing fine Wagyu beef. He relies on a 60% genetic potential of the animal he is working with and 40% feeding and husbandry to achieve his goal. The herd is kept extensively on pasture for the first few years. Females are reserved exclusively for replacements and seedstock sales. Bulls not suited for breeding are castrated and those steers, called oxen in Germany, are selected from the herd at 2 – 2 1/2 years old and moved to a well ventilated open stable for the next, and final, phase in feeding. The extensive grazing early in production supports the fine grain of the meat with slow growth. The final, more intensive feeding stage with high energy feed aids in the impressive marbling that Reinhold aims to achieve. Meat is sold around two fixed harvest times at Easter and Christmas. Customers order their beef prior to those harvest dates and orders are filled accordingly. Customers pick up their packaged beef at the farm where they are encouraged to tour the facilities and understand the fine husbandry practices and extraordinary care Reinhard’s team uses. Wagyu Munsterland’s beef is not only sold to individual customers but is also featured at several fine hotels and restaurants in the region. Breeding is another important part of Wagyu Munsterland’s agricultural business. They maintain a herd of only purebred Wagyu. All animals are registered with the American Wagyu Association to provide DNA proof of lineage. Reinhold’s breeding goal is to maintain a diverse a herd line, free of genetic defects so they can provide their customers healthy genetic diversity going forward. The farm sells breeding stock, semen, embryos and pregnancies. The farm also offers a new program they are calling “Rent A Wagyu” for customers that aren’t farmers or don’t have property but would like to experience this growing/feeding process either alone or together with relatives, neighbors, friends or colleagues. The customer purchases a Wagyu calf then partners with Wagyu Munsterland for the rest of the calf’s time on the farm. The customer isn’t obligated but can visit the farm to be involved in the growing, feeding and processing of their animal. Soon, a “Wagyu Camera” is being added so customers can visit the farm virtually anytime, from anywhere! The wagyu breed is beginning to boom in Europe with a substantial number of registered cattle in Germany itself. Germany boasts over 250 breeders with breeders also popping up Austria, Switzerland, Lithuania, Spain, Great Britain and Poland. In 2016, Wagyu Munsterland hosted the first Wagyu Gala. The gala is a weekend of demonstrations and educational talks that culminates in a live animal and genetic auction. The gala has grown into a very important forum for Wagyu breeders from all over Europe to convene and learn from one another. To date, more than 15 countries are represented. This year’s gala is set to occur at Wagyu Munsterland on August 21 and 22. Wagyu Munsterland also offers two apartments for vacations at the farm that can be booked either directly or through an online travel site. would like to first thank the wonderful folks at Wagyu World for their understanding and continued moral support while allowing me an extended leave of absence from writing over the past several months. I would also like to say a big thank you to all those Wagyu breeders and industry personnel for their patience, prayers, and words of encouragement. My family and I have been challenged greatly this past year on numerous levels especially with significant health issues. The host of friends and those who genuinely care has made all the difference in the world to us. Lastly, I appreciate Wagyu World providing me with an opportunity to share about a new and extremely exciting project our team has been working on diligently this year in the opening of the new and highly unique Protocol Farms Feeding and Research Center near Bowie, Texas. This new exclusively Wagyu-focused venture should be going strong by the time you read this article and be assured the entire Protocol team is both excited and thankful to be able to demonstrate our long-term commitment to the ever-growing and very dynamic U.S. Wagyu industry.

It was almost nine years ago that long-time Wagyu breeder and industry pioneer, Bob Estrin of Lone Mountain Ranch, first approached me with the idea of a premier commercial facility to house and feed cattle for the U.S. Wagyu industry. Many other breeders have put forth the same basic idea since that time and in December 2020, the idea came to life in the form of an engineering and construction contract with the highly regarded Settje Agri-Services & Engineering firm of Raymond, Nebraska. Our new facility incorporates much of the knowledge and practices of progressive Wagyu operations in both the U.S. and southern Japan combined with a distinct Texas flare. My next trip to Japan will be my 50th since 1994 and I have been very fortunate to have gained invaluable appreciation and insight into the most amazing cattle breed on earth. Through our new facility we will be emphasizing two primary objectives. We will be conducting ongoing nutrition and management research focused primarily on Wagyu cattle and intended to benefit all Wagyu producers in very practical and easily applied ways. Our new facility will also provide breeders desiring to produce the very best and most consistent Wagyu beef possible with a viable alternative to other established commercial feedlots some of which are doing outstanding jobs of feeding Wagyu-influenced cattle. However, in our experience, those commercial firms doing the best job of feeding Wagyu tend to operate at or near full capacity often turning potential customers away. Many commercial feeding operations also have difficulty servicing small to mid-size customers which we will welcome and gladly serve. Every facet of our new feeding operation prioritizes utmost cattle comfort throughout since premier beef Multiple bulk grain bins for a variety of formulas quality and maximum efficiency simply cannot be attained otherwise. For years, I have been a proponent of reducing days on feed required for high-grading Wagyu with most of our top fullblood clients now harvesting their cattle at 24-28 months of age and top F-1 WagyuXAngus clients harvesting at 18-24 months of age. Fewer days on feed without sacrificing carcass quality is only possible with excellent management, quality genetics, consistent care and nutrition, and minimal stress. Page 36 >>
