Award-winning Italian guest Chef Omar Ugoletti regaled guests in a sumptuous 6-course dinner with
his popular signature dishes as Pan-fried Turbot Stuffed with Lard and Dill, Crust of Flavored Bread
and Clam Parsley Sauce, Braised Beef Cheek Served
with Jerusalem Artichoke Soup and Parsley Sauce, and
a Braised Wagyu Short Rib Served with Endive, Vanilla Mashed Potato and Tomato Confit. The stellar menu
was paired with a selection of eight of the finest Banfi wines from Tuscany, and guests were serenaded with
Italian operatic classics by the Opera Duo, Lionel Santos

Earth Hour 2014
Edsa Shangri-La, Manila recently joined the world in celebration of Earth Hour with a “Parade of Lights” at its newly-renovated
Lobby Lounge. One hundred children from Isla de Cocomo, the hotel’s adopted nursery in
Barangay Mauway, Mandaluyong City, made
their way to the Lobby Lounge from the hotel’s
second level with lit candles that symbolize how even the smallest act of conservation could help create a brighter tomorrow for all.
The New Lobby Lounge Edsa Shangri-La, Manila recently opened its Lobby Lounge after undergoing refurbishments in the last
quarter of the previous year. Inspired by Filipino culture,
materials and textures, and mixed with modern touches,
the Lobby Lounge’s new design theme follows the
newly renovated guestrooms at the hotel’s Tower Wing. A mixture of distinct local textures such as woven fibres
and smooth wooden panels are evident in the various
pieces found at the Lobby Lounge. Inspired by nature,
the colour scheme of the grand hall are a medley of golden yellows, reds and blues, that not only reflect the
colours and hues of nature, but also complement the lush greenery of the hotel’s garden area that is visible
through the grand lounge’s floor-to-ceiling glass windows.
Executive Appointments Martin Frowd has been named Executive Pastry Chef at Edsa Shangri-La, Manila. With over twenty-five years of experience in the world of fine pastry making in both international luxury hotels and restaurants, Chef Martin has wowed guests with his sweet culinary touch across the UK, South Africa, the United States and the Middle East.
Cristina del Carmen has been appointed Director of Communications at the Edsa Shangri-La, Manila. Ms. del Carmen brings with her over ten years of combined work experience in 5-star luxury properties locally and abroad, as well as in multinational creative agencies.
