松 STEAKS 阪 ARE HIGH 牛 MATSUSAKA BEEF
Matsusaka beef is a brand of Wagyu that comes from the Mie Prefecture. It ranks as one of the top three Wagyu beef (among Kobe and Ohmi beef) and is famous
for its tender and heavily marbled beef. Due to its low melting point, the beef has a superb “melt in your mouth” quality. Only beef that meet strict grading criteria can be marketed and sold as Matsusaka beef. To become Matsusaka beef, 12-month-old female black cattle of excellent pedigree
are gathered from across the country and fed a special diet of soy, wheat, barley and rice for up to three years. The diet dramatically increases the animal’s weight, resulting in an incredible amount of marbling. Some farmers also feed their cattle beer and massage with Shochu (Japanese sake), but is not a requirement for Matsusaka grading.
Ready to sample soft, succulent and absolutely delicious Matsusaka beef? Enjoy it in different forms – seared, thinly sliced beef with sour soy wasabi and radish, torched Wagyu beef sushi, deep-fried, breaded beef cutlet with tonkatsu sauce, and Japanese-style beef burger with special Japanese tomato sauce, to name a few. Available from July 15 to September 15, 2019.

Mid-Autumn Bounty MOO NCAKES BY CHEF ANDY LIEW
The Mid-Autumn Festival is considered the second most important
and grandest festival in China after the Chinese New Year. It is celebrated on the 15th day of the 8th month according to the Chinese lunar calendar, the middle of the autumn season. The day
is also known as the Moon Festival, the time of the year when the moon is at its fullest and brightest. To the Chinese, a full moon is a symbol of reunion, harmony and happiness. One way to celebrate the festival is by eating mooncakes – delicious, moon-shaped sweet cakes that’s baked or steamed. Mooncakes are cut into small wedges and shared with a group over tea. Most are filled with lotus paste and salted egg yolk while others contain red bean, date paste, fruit, nuts and seeds.

The Abhyanga is a choreographed full body Ayurvedic massage that uses rhythmic strokes in warm oil designed to regulate the circulation of the nervous system and bring deep relaxation to the muscles and calmness to the mind. The Shirodhara, from the Sanskrit words shiro (head) and dhara (flow), involves a constant, gentle stream of oil poured over the forehead, which immediately relaxes the nerves, normalizes sleeping patterns and addresses other stress-induced conditions, creating a profound state of bliss and mental clarity.

SECRETS of the TANDOOR Working with a tandoor takes great experience to get it right. First things first, what is a tandoor? A traditional tandoor is a clay oven shaped like a pit. Its bottom is lined with hot coals. Skewers of meat are cooked by lowering it into the tandoor. Too low in will overcook the meat and too high up will cook only the meat’s outside, leaving the inside raw. As the meat cooks, it absorbs the earthy flavors released by the clay and the smoke created from the drops of marinade on hot coals. Different meats have different temperatures and time for cooking. Chicken can cook in 12 minutes, while fish can cook in 10 minutes. Red meat requires more time and a tenderizer such as ginger, garlic, yogurt and lemon. The best way to gauge the heat inside the pit is to feel the inside with your bare hand. So, what is the secret to the tandoor? There is no secret. It takes practice and patience to perfect the tandoor.
Craving for something that's extra hearty? Chef Raghu Singh brings to you a selection of authentic Indian fare cooked in the tandoor. Choose from the tandoori chicken, chicken tikka, lamb seekh kebab, lahsuni malai jhinga, mustard machi tikka, and kesari paneer tikka.
AfternoonTea E T I Q U E T T E
Afternoon tea is a ritual steeped in tradition, and originated in Great Britain in the 1840s. Today, it continues to be one of the most pleasurable ways to spend an afternoon. Let’s take a moment to know more and brush up on our tea-time etiquette.
AFTERNOON TEA IS NOT THE SAME AS HIGH TEA. Afternoon tea or low tea was a social affair enjoyed by the upper crust, and was intended to fill the gap between morning and evening meals. High tea, on the other hand, was celebrated in the late afternoon by commoners and was comprised of more substantial meals that replaced late dinner. “High” and “low” refer to the height of tables used for the occasions, with high tea being served at the dinner table.
For low tables, pick up your cup and saucer together. Hold the saucer in one hand and cup in the other.

A Dewazakura sake dinner
It was a beautiful and intimate 6-course sake-pairing dinner at Edsa Shangri-La, Manila’s Senju, as Japanese Chef Hiromi Yokenawa shared the versatility of Hotate (scallop) and Kaki (oyster) accompanied by the finest sake selections from Dewazakura Brewery. Dewazakura is one of the most prestigious brewers situated in Yamagata prefecture in the mountainous are of Tendo, Japan, silently brewing some of Japan’s well-loved sake since 1892. Light, fragrant and delicious, the brewery’s renowned ginjo labels have made their way to the Philippines. Senju is open daily from 11:30 a.m. to 2:30 p.m. for lunch and 6 p.m. to 10:30 p.m. for dinner. For inquiries and reservations, call 633 8888 ext. 2952.

The abaniko (traditional hand fan) possesses unparalleled craftsmanship. More than its design, novelty, and original purpose of cooling us down, the fan played a big role in our own history as it acted as a secret communication device. During the Spanish era, women were expected to maintain a modest decorum. Fortunately, women were resourceful enough to cleverly use fans to convey words and emotions they were supposed to keep to themselves. It was an unspoken and widely understood language that women would use to interact with suitors. While the secret language is no longer practiced, the abaniko still remains a precious relic from that era. Here’s what a few fan actions meant, back in the day.
