AFTERNOON TEA IS NOT THE SAME AS HIGH TEA. Afternoon tea or low tea was a social affair enjoyed by the upper crust, and was intended to fill the gap between morning and evening meals. High tea, on the other hand, was celebrated in the late afternoon by commoners and was comprised of more substantial meals that replaced late dinner. “High” and “low” refer to the height of tables used for the occasions, with high tea being served at the dinner table.

The Summer Palace Tasting Menu by Executive Chinese Chef Tony Sum is a play of contrasting textures and tastes, a delightful selection of the different flavor profiles Summer Palace is well-known for. To kick things off, you begin with a medley of playful appetizers- chilled, citrusy-sweet pomelo fruit drizzled with spicy wasabi sauce, fried soft shell crab tossed in light and fluffy pork floss, smoky barbecued pork covered in honey sauce and fried king prawns coated with crispy cornflakes.
Next up is the Thai style braised supreme seafood soup, a thick, savory soup to warm up those taste buds. For the main course, you have a choice between a perfectly pan-fried beef steak in rich black pepper sauce or a delicious stir-fried U.S. Kurobuta pork with seasonal vegetables. You definitely have to make room for the half lobster with noodles in superior stock, scrumptious lobster in a bed of noodles and “shang tang�, a creamy, flavorful seafood sauce. A holistic therapy that originated from Japan, Shiatsu, literally means “finger pressure”. FAN Hand fans have a long history dating back to at least three thousand years. Originating from the Greeks, these hand fans made it to the Philippines during the Spanish regime. The abaniko became a mainstay in women’s attire, complementing the baro’t saya. The abaniko (traditional hand fan) possesses unparalleled craftsmanship. More than its design, novelty, and original purpose of cooling us down, the fan played a big role in our own history as it acted as a secret communication device.

During the Spanish era, women were expected to maintain a modest decorum. Fortunately, women were resourceful enough to cleverly use fans to convey words and emotions they were supposed to keep to themselves. It was an unspoken and widely understood language that women would use to interact with suitors. While the secret language is no longer practiced, the abaniko still remains a precious relic from that era. Here’s what a few fan actions meant, back in the day.
