The area of Estonia is small, but its cuisine is great. And it has become so very quickly. During the last decade or so, the restaurant landscape has been enriched by many unique eateries. Our location and past have made Estonian cuisine very unique – we are on a frontier not only geographically, but also gastronomically. Like other Nordic people, we also prefer pure and crisp flavours. Our food culture has much in common with the Germans, with whom we shared our cultural space for centuries, as well as with the cuisine of our close neighbours the Slavs, and the Swedes and Finns across the sea. Together we have created the basis for modern Estonian cuisine. The greatest concentration of excellent restaurants is in Tallinn’s Old Town, but places worth discovering can also be found in other city districts, in the vicinity of the city, and even further afield. Cru Restaurant at the Bocuse d’Or level The Cru kitchen is managed by head chef Dmitri Haljukov, whose achievements include a fourteenth-place finish at the 2015 finals of the Bocuse d’Or in Lyon, which has been called the Olympics for chefs. From time to time, the master himself introduces the dishes in the dining room. The Cru menu is classically elegant, as well as creative and original, as befits a restaurant on the main street of the Old Town. The beverage menu provides surprises related to both wines and various other drinks. The restaurant is in a building that dates back to the 15th century and has been renovated with a sense of piety, by combining the atmosphere of the late Middle Ages with contemporary cosiness.

Dominic Wine restaurant in a medieval merchant’s house The wine selection, which is among the best in the city, gives Dominic every right to call itself a wine restaurant. Konrad A fresh approach to the classical Due to its classical atmosphere and excellent location, Konrad is the perfect place for lunch on a busy day or for spending an enjoyable evening. The large windows provide a view of Freedom Square, one of the city’s central spaces. Monaco Business lunches during the day, a signature menu in the evening Monaco, the restaurant in the Nordic Forum Hotel, has won visitors’ hearts with its business lunches, as well as its signature menu for a formal dinner prepared by head chef Virko Tugevus. The restaurant cultivates modern fusion cuisine, that is, updated versions of classical international dishes. During the business lunch, an efficient atmosphere prevails. The service is quick and a selection of healthy dishes are on offer, made of local organic products and the latest healthy ingredients from around the world. Moon Modern Russian cuisine Moon combines the age-old with the modern, by approaching traditional Russian cuisine in a new way. It was one of the first restaurants that dared to establish itself in Kalamaja, which was just starting its gentrification process. Today, Moon is a cosy well-established place with a very special atmosphere, where the food, drink, interior design and service comprise a whole, and which is almost always filled with customers. Roman Zaštšerinski, the master chef is the soul of Moon, and both he and his cousin, who is also a chef, tired of fine dining, tossed their tall chef ’s hats in the corner and returned to their roots. And Roman’s wife Jana is the long-time secretary-general of the Estonian Sommelier Association.

MEKK Modern Estonian Cuisine MEKK, an acronym for ‘modern Estonian cuisine’ in Estonian, was among the first restaurant that start valuing local foods and traditional means of preparation. For almost ten years, it has been one of the outstanding developers and promoters of Estonian cuisine, and official foreign visitors to our country are often taken to dine there. The head chef Rene Uusmees knows how to rediscover and rethink the local traditional cuisine so that the results surprise even Estonians. ‘Aha, that’s also possible!’ is the reaction of many to the interpretations given by MEKK to the dishes prepared by our grandmothers.

NOA Between the land and the sea NOA is located on the border between Tallinn and Viimsi, right on the seaside. Here the sea is visible from every table. The à la carte restaurant is located right next to, but separate from, the Chef ’s Hall with its degustation menu. The two sides of this restaurant, which differ in appearance, but have an integrated approach, combine to form a perfect whole – a world unto itself on the border between the city and the country, the land and the sea. The raw ingredients, which are mostly very simple, is not the only thing that makes the food at NOA special. It is the preparation, side dishes and presentation that are surprising, beautiful, and break with tradition. The beverage menu is also substantial, and is a worthy partner for the kitchen.

Pull Meat eaters paradise As its name indicates, Pull (or Bull in English) is primarily a meat restaurant. Its creators and owners are three of the most authoritative and professional meat specialists and grill masters in Estonia. Along with the meat dishes, the menu also includes fish and vegan entrées, but the extremely varied and high-quality meat selection is still the most impressive of the menu. As is the skill of the specialists that prepare the meat. The steaks at Pull, the slow cooked dishes and grilled meat are undoubtedly among the best in the city. Most of them are prepared over an open fire – grilled above, or even in, the charcoal. One of the specialities of the house is Enn Tobreluts’s famous ‘dirty steak’, i.e. a steak cooked in charcoal. The side dishes include fresh salads and a large selection of wine is on offer. All the wines are available by the glass, and most are served using the Coravin method.

Veinirestoran R14 A union of food and wine The wine racks at Restoran R14 have been filled by Rein Kasela, the grand old man of Estonian wine culture. Without his knowledge and dedication not only would the abundant wine card at R14 not exist, but Estonia’s nascent wine culture would be far less developed. Typically of a wine restaurant, the beverages at R14 don’t just complement the food, but are its equal partners – the taste combinations are produced as a collaboration between the head chef and sommelier. The menu exudes Mediterranean accents; the wine selection tends toward ‘good old’ Europe, and the Veinituba, which is partnering with the restaurant, will sell you the wines or stronger alcohol you’ve enjoyed to take home with you.

Rae Meierei Estonia’s only dairy restaurant Estonia’s first and only dairy restaurant continues a tradition that was once very popular here. When cheesemaking is underway, the master’s activities can be observed without leaving one’s table in the restaurant. The cheeses that are made on site arrive on the table in their freshest and most authentic form. In addition to the inhouse products, the dishes also contain various other cheeses. However, there is no reason to classify the Rae Meierei as a cheese restaurant – the menu also includes dishes that have nothing to do with cheese. And the Art Deco inspired interior design is a sight to see. The gigantic restaurant that seats 250 with its industrial-style interior, open kitchen and dairy looks like a large factory.

Ribe Ribe combines the classic with the trendy Ribe has been among the top ten restaurants since it opened ten years ago. Local raw ingredients have always been preferred at Ribe, although new ways of approaching them have been sought and world flavours have been added. The team at Ribe has a special talent for combining tradition and innovation, the classic with the trendy. On the one hand, this is a classical restaurant, where food, drink and service are combined into a harmonious whole. Salt Salt is like a Tower of Babel for gourmets The tiny Salt Restaurant, brimming with tables, is more alive than any other restaurant in Tallinn. The room is almost always filled with diners, many of them regular customers – once you’ve been to Salt, you’ll surely return. The food is prepared in an open kitchen under the gaze of the guests. And the menu provides gastronomic fireworks. One could say it’s the Tower of Babel for gourmets. Peru, Laos, Sweden, China, Malaysia, France, Japan, Italy Thailand – they’re all represented. Baroque excess, some snob might say with a shrug of the shoulders, but it suits Salt and even the most ambitious dishes are perfectly executed.

Tar Tar The tastiest meeting place in the city centre. Andrei Šmakov, the founder of TarTar, the bistro-style gastrobar that recently opened at the start of Narva Road, is one of the most flamboyant top chefs in Estonia. He has gained his experience in the kitchens of the best restaurants in Estonia and the world’s metropolises. The central features of the menu are the tartare de boeuf and ceviche, but a traditional bill of fare with appetisers, salads and main courses is also available. Expertly blended tastes are supplemented by a careful selection of raw ingredients – the meat for the steak tartare is especially high quality. The service is caring and thoughtful, as well as smoothrunning, as is usually the case when one of the owners is always present in the dining room.

Von Krahli Aed The embassy of pure food in the heart of the city The historical plastered walls, sturdy ceiling beams, and lots of greenery (it’s a garden after all!) confirm that the award for the best restored building in the city has gone to the right place. The small restaurant seems more like a cosy and homey dining room. Friendly service and affordable prices have contributed to its continued popularity. Upside-down main courses are the restaurant’s speciality – you choose a meat, fish or cheese to complement the various vegetable main dishes, rather than the other way around. Or you can opt to eat only the vegetables. For example, colourful beet noodles with black lentils, asparagus, carrots wrapped in seaweed and red beet cream – isn’t that tempting!

Härg A meat restaurant that also serves fish and vegetarian dishes Härg, the new restaurant, which is operated by the owners of the Pull and has rapidly become one of the best restaurants in town, is located in the fast-developing Maakri Quarter and is also focused on meat and good wine. The excellent quality of the dishes at Härg is assured by its team, headed by Enn Tobreluts, Estonia’s most renowned meat guru. Meat, especially beef, is the focus of attention. The steaks cooked directly on charcoal (dirty steak), as well as the other dishes made with aged beef, have become the customers’ favourites. Fish, seafood and vegetarian dishes are also on the menu. The interior design at the Härg, which has been nominated for an interior architecture award, along a courtyard featuring modern architecture where the Härg expands in the summer, also make this restaurant special.

La Bottega Authentic Italy in Tallinn Old Town La Bottega offers Italian cuisine in its most authentic form. And the Italian atmosphere also reigns in the dining room where a cosy homeyness is augmented by timeless elegance. Mantel ja Korsten Gastronomical joys in Kadriorg Mantel ja Korsten, the third as well as newest and most formal of the restaurants run by the culinary Zaštšerinski family, is located in peaceful and green Kadriorg. The wallpapers in cheery soft colours, the chairs covered with bright fabrics and the sunny-yellow pillows in make this restaurant, which is located in a small green wooden house, very cosy and comfortable. The menu combines local and foreign ingredients into a harmonious whole. The rich beverage selection offers exciting finds from the periphery of the wine world, and the sommelier can help to cleverly combine the wine and the food. The Nautilus Oysters, seafood and fish variety The Nautilus oyster bar is an eatery worthy of a maritime city like Tallinn: most of the dishes come from the sea. It is very likely that the seafood selection at The Nautilus is the largest in Estonia. In addition to various oysters, the menu includes a large selection of seafood starting with small pink shrimp and ending with tuna and octopus. NOOT National traditions with a contemporary approach Both music and the sea have made contributions to the name of the NOOT restaurant (in Estonian noot means both a means of catching fish and a musical symbol). The musical NOOT makes the restaurant sparkle and shine; and the fish NOOT reminds us that the sea is only a few hundred metres from the restaurant. As befits the restaurant in a hotel and spa called Estonia, both the menu and interior design is based on national traditions. Rudolf Visnapuu, who is the head chef as well as the president of the Association of Estonian Head Chefs, approaches traditions and localism creatively, by supplementing old recipes with new technologies and pushing the boundaries of Estonianism.

Ruhe Seaside restaurant in an old fishing village The Ruhe Restaurant is located in the seaside Neeme harbour on the north shore Estonia, only a half-hour’s drive from Tallinn. The model for the restaurant’s modern architecture and interior design was provided by the boat culture of the coastal people. Ruhe is the name of a fishing boat or skiff hollowed out of a tree trunk. One of them can be seen under the apple tree on the restaurant’s terrace. In German, Ruhe means peace and this is an appropriate description of the mood that reigns in the cosy restaurant in this old fishing village. The menu includes fish and seafood from both local and foreign waters. The Ruhe’s famous fish patties have remained on the menu through the years, and one will be surprised by the exciting desserts. There are five guestrooms on the second floor, which provide a comfortable space for enjoying the peace and quiet.
