A few weeks back, I got a message on Instagram from @ wilowarestudio asking if I had any extra magazines that could be used for a recycled art class. I had seen Willow around Rincón, we have a few mutual friends, and I knew she was an amazing singer/songwriter. However, I didn’t know she was an artist as well! As I was scrolling through her Instagram profile, I knew this was someone I wanted to get to know and whose art and story I wanted to share with Rincón!

Hace unas semanas, recibí un mensaje en Instagram de @ wilowhestudio preguntándome si tenía revistas adicionales que pudiera usar para una clase de arte reciclado. Había visto a Willow en Rincón, tenemos algunos amigos en común y sabía que era una cantante y compositora increíble. Sin embargo, ¡no sabía que también hacía arte! Mientras miraba su perfil de Instagram, supe que era alguien a quien quería conocer y cuyo arte e historia quería compartir con Rincón.

On May 25th, we met for an interview at El Coquí of Rincón’s office in Ventana al Mar. We started chatting and as soon as Willow told me: “I basically grew up in a family band.” I knew I wanted to learn more!

Willow Rea grew up on the Outer Banks of North Carolina. Her entire family is formed by musicians, and her mom and dad are both music teachers, hence: “I grew up in a family P.10 band.” Willow shared that: “for a while, music was my life and main focus. I played music professionally for a couple years in the Outer Banks, but after a while, I started to get a bit burnt out; I was literally playing shows every day. Something I’ve learned the older I get is that when you turn your passion into a job, it stops being food for the soul.” P.10 10 Page

In 2020 Willow graduated from The University of North Carolina at Wilmington with a degree in Studio Art. According to Willow: ‘my first artistic passion was ceramics. I love ceramics. Unfortunately, ceramics equipment is very expensive, and moving my tools to the island would be difficult—That’s when I decided to focus more on painting and printmaking. I like to live a sustainable, minimalist lifestyle. When I make a painting or a print, I like to give life to items that some people might throw in the trash. I love to use things such as old fabric or organic materials like banana leaves for my inspiration.” Much of Willows’s art celebrates women and the female figure. She tells us that: “as a child, I didn’t understand that I was capable of doing or being whatever I wanted. I hated being girly because I thought it meant I couldn’t surf, play sports, wear the clothes I wanted to wear or do the things I wanted to do. But as I grew up, I realized how incredible it is to be a woman and how our differences from men make us such magical beings. As an adult, I celebrate my womanhood and all the things it means to be a woman. So with my figure drawings, I like to appreciate the power of a woman through my art.” What’s the foreseeable future for Willow Rea? I have always wanted to start a band. I’ve performed so much as a solo artist, I hope to meet the right people with whom I can really connect musically. I’m also working on a series of portraits of people who grew up on the island to celebrate and learn more about the culture and people of Puerto Rico. I start with an interview and sketch while they tell me their story. Then I go home and make the final painting. The personality and aura of the subject are big influencing factors for the work style, whether abstract, realist or something else. This summer, I plan on hosting more workshops and starting an online figure drawing class. Thank you so much for the interview, Willow! Looking forward to all your future artistic endeavors!

En el 2020, Willow se graduó de la Universidad de Carolina del Norte en Wilmington con un bachillerato en Arte de Estudio. Según Willow: “mi primera pasión artística fue la cerámica. Amo la cerámica. Desafortunadamente, mi equipo de cerámica es muy caro y trasladar mis herramientas a la isla sería difícil. Fue entonces cuando decidí centrarme más en la pintura y el grabado. Me gusta vivir un estilo de vida minimalista y sostenible. Cuando hago un cuadro o un grabado, me gusta dar vida a elementos que otra persona tiraría a la basura. Me encanta usar cosas como telas viejas o materiales orgánicos como hojas de plátano para inspirarme.” Gran parte del arte de Willow celebra a la mujer y la figura femenina. Ella nos dice que: “cuando era niña, no entendía lo que era capaz de hacer y que podía ser lo que quisiera. Odiaba ser femenina porque pensaba que eso significaba que no podía surfear, hacer deporte o vestir la ropa que quería”. Pero a medida que crecí, me di cuenta de lo increíble que es ser mujer y de cómo nuestras diferencias con los hombres nos convierten en seres tan mágicos. Como adulta, celebro ser mujer y todo lo que significa ser mujer. Entonces, con mis dibujos y figuras, me gusta resaltar el poder de la mujer a través de mi arte “. ¿Qué le espera a Willow Rea a corto plazo? Siempre he querido formar una banda. He sido solista por mucho tiempo, espero conocer a las personas adecuadas con las que realmente pueda conectar musicalmente. También estoy trabajando en una serie de retratos de personas que crecieron en la isla para celebrar y aprender más sobre la cultura y la gente de Puerto Rico. Samantha- Where are you from? Why Puerto Rico and Calypso

Café?

Caddy- I am from Denver, Colorado, but I love the Caribbean!

I became fascinated with the Caribbean lifestyle when I sailed around the British Virgin Islands at 22. After 20 years of traveling to Belize to scuba dive, sail, and fish, I always had the vision that I would end up in Belize. I’m involved with an orphanage located in Belmopan, Belize’s capital. Calypso Café has been on my radar for years. My sister-in-law is the former owner, Cindie Rice’s oldest daughter, so I’ve been visiting Rincón for years. I fell in love with the town a few years back, and the community has welcomed me with open arms. I have been on and off this island over twenty times within the past seven years. Puerto Rican people are enchanting and kind. It’s the only place I’ve been in my travels where people stop everything to view the magnificent western sunsets and actually applaud it. When Cindie’s second daughter Nani, decided to sell Calypso Café, the timing was perfect for me to retire in paradise. I bought Calypso Café, the house, and the car. I could not feel more grateful for my forever home on the Island of Enchantment.

Samantha- Tell us about your orphanage in Belize, The Kings

Home.

Caddy- In 2010, a group and I of very charitable folks built a 20,000 square foot orphanage on fifty acres of land, complete with a chicken coop, greenhouse, volunteer quarters, and a computer lab. The orphanage can accommodate up to 108 kids experiencing hardships. I was lucky enough to have been adopted from an orphanage and have always looked for the right opportunity to give back. Belize has been a special place to me, so this was the perfect opportunity to contribute in a personally meaningful way. I’m very blessed in my life, and The Kings Home is dear to my heart. I continue to support the orphanage financially, along with other charitable souls and some foundation grants.

Samantha– From your background, it seems as if fundraising and personal philanthropy are something important to you. Where does that charitable spirit come from? Caddy - A giving spirit is a quality the universe gave my life mentors and me. My mother adopted five children, three of which had serious medical issues. She helped me overcome immense obstacles as a child. When I achieved success later in life, it felt right to give back to others facing difficulties. I wrote my first $100,000 check to Children’s Hospital when I was twenty-nine. It was an incredibly proud day for me. My entry into the entertainment and hospitality fields helped me connect with powerful mentors that allowed me to contribute in larger, financially impactful ways. Cindie was deeply embedded in the Rincón’s community and held the same charitable values. It is an honor to continue her legacy via Calypso Café. We have sponsored beach clean-ups, children’s surf outings, and contributed private donations. New Dawn Puerto Rico is one of our latest beneficiaries.

Samantha- ¿De dónde eres? ¿Por qué Puerto Rico y Calypso Café? Caddy- Soy de Denver, Colorado, ¡pero me encanta el Caribe! Me fascinó el estilo de vida caribeño desde que navegué por las Islas Vírgenes Británicas a los 22 años. Después de 20 años de viajar a Belice para bucear, navegar y pescar, siempre tuve la visión de que terminaría en Belice. Actualmente estoy involucrado en un orfanato ubicado en Belmopan, la capital de Belice. Calypso Café ha estado en mi radar durante varios años. Calypso’s History- It all started in 1976 when Domingo Mercado opened a little deli called El Faro. Here he sold beers to the American surfers at Playa Marías for some years. Then between 1983-1987, it became Rosa’s Cantina, run by Milena Massey, who, together with her daughter Karina Moul now own and operate Mango Beach Shop at Sandy Beach. Later in 1988, Jamie Stafford started adding to the building and ran Calypso until Cindie Rice purchased it in 1994. In August of 2020, it was purchased by Michael “Caddy” Cadwell from Cindie’s daughter Nani.

Samantha – You touched on your background in the hospitality and entertainment industries. Tell us more.

Caddy- Like many, I began in the service industry while still in High School. I expanded my roles in college and worked in every area, from cooking to waiting tables and bartending. In my early twenties, I was a corporate trainer for Ruby Tuesday and opened 30 restaurants. Later, I entered the music industry as a live music producer and have produced over one thousand live events. My fondest accomplishment was producing an award-winning DVD/ Pay-Per-View for Kenny Chesney and receiving a Telly Award for best long video of the year. The music industry was lucrative and afforded me the ability to buy a few small music venues with restaurants. Calypso Café is famous for its live music; it was a natural fit for me. Cindie built a fantastic legacy, and I’m eager to expand upon that foundation.

Caddy- Como muchos, comencé en la industria de servicios cuando aún estaba en la escuela superior. Expandí mis roles en la universidad y trabajé en todas las áreas, desde cocinar hasta servir mesas y ser bartender. Samantha- Tell us more about the remodel for Calypso Café? Caddy- The most challenging part was to update the place while keeping the same character, spirit, and vibe. It’s a classic surfer beach bar and should remain that way. I installed a new kitchen to accommodate an upgraded menu. I repaired the roof, painted the building, and built the best ocean sunset view deck in paradise. One of my favorite additions is a new polished concrete bar with a spectacular view of Maria’s beach. The bar now totals eighty-six feet in length with enough cooler space for 2,076 cold beers. Overall, it was a complete rehab and is nothing short of world-class. I remodeled the two apartments upstairs to use for rentals. The apartments are stunning, and I’m excited to welcome my first guests. A friend of mine will be utilizing the downstairs space and turning it into a coffee house and ice cream parlor. They will serve smoothies, juices, and grab-n-go sandwiches. Beach sundries such as surfing items and suntan lotion will be available as well. The shop will be named “Stoked.”

Samantha - What will Calypso’s menu feature? Caddy- We will serve typical beach bar fare with upgrades. I’m adding fresh fish, new salads, three new sandwiches, and some surprise appetizers. Patrons will find their same favorites as before (Ceviche, tacos, burgers, wings, skirt steak, samplers, coconut shrimp, fish & chips, etc.) Samantha- Another personal question, if I may, you bought the most iconic surf bar in the Caribbean, but you’re not a surfer? Caddy – I surf now! Mandatory! Samantha- Was it hard to learn how to surf with your birth defect while being middle-aged? Caddy - My life controls my circumstances; my circumstances do not control my life. Thankfully, I learned that at a young age. As humans, all of us are very capable of making life-altering decisions while adapting and pivoting to accomplish our goals no matter what we’re born with. I am a skier, a rock climber, practice yoga, ride motocross, scuba diver, sailor, etc. Sometimes I just need to take a different route than others to cross the finish line. Where there is a will, there is a way. However, surfing is hard as hell and has been immensely challenging. I was blessed to meet Cristina Moreno (yoga and

Instalé una nueva cocina para acomodar un menú actualizado. Reparé el techo, pinté el edificio y construí la mejor terraza con vista al mar para disfrutar del atardecer en el paraíso. Una de mis adiciones favoritas es una nueva barra en cemento pulido con una vista espectacular de la Playa María. La barra ahora tiene un total de ochenta y seis pies de largo con suficiente espacio para refrigerar 2,076 cervezas frías. En general, fue una rehabilitación completa y es nada menos que de clase mundial. Remodelé los dos apartamentos de arriba para usarlos para alquiler. Los apartamentos son impresionantes y estoy emocionado de dar la bienvenida a mis primeros huéspedes. Un amigo mío utilizará el espacio de la planta baja y lo convertirá en una cafetería y heladería. Servirán batidos, jugos y sándwiches para llevar. También habrá artículos diversos para la playa, como artículos para surfear y bronceadores. La tienda se llamará “Stoked”.

Caddy - ¡Ahora surfeo! ¡Es obligatorio! Samantha- ¿Fue difícil aprender a surfear con tu defecto de nacimiento siendo un hombre de edad media? Caddy - Mi vida controla mis circunstancias; mis circunstancias no controlan mi vida. Afortunadamente, lo aprendí a una edad temprana. Como seres humanos, todos somos muy capaces de tomar decisiones que cambian la vida mientras nos adaptamos y giramos para lograr nuestros objetivos sin importar con qué nacemos. Soy esquiador, escalador, practico yoga, manejo motocross, buceador, marinero, etc. A veces solo necesito tomar una ruta diferente a otras para cruzar la meta. Donde hay la voluntad hay un camino.

The premise was to let her see my physical capabilities in yoga then translate and adapt those capabilities to surfing. Cristina is the definition of greatness! She has incredible patience, her critical thinking skills and vision are superior. She had me doing a tripod headstand within thirty minutes, with a bit of help from some blocks. That is a big deal when you only have one forearm! After two sessions, we hit the waves at Playa María. It took a few waves and a few tries, but I finally got up. I understood instantly why all these surfers are smiling so big. Surfing is FUN! I have only been a few times, and I get beat up, but I’m surfing and will keep practicing and taking lessons.

Samantha- Candid question - How is it being single in paradise? Fun, yes? Caddy - (laughs) Yeah, if I were in my thirties and did not have such a huge project, I’m sure it would be! I’m seeking my forever girl, someone who understands my love definition, encompassing respect, trust, honor, loyalty, and admiration. I’m seeking someone who lives an actual authentic life and honestly understands what that means. In the meantime, I adopted a puppy named Mila. She is now the official Calypso mascot.

Sin embargo, surfear es súper difícil y ha sido un desafío inmenso. Tuve la suerte de conocer a Cristina Moreno (instructora de yoga y surf), quien trabajó en Calypso. Se tomó el tiempo de visitar mi casa, donde practico yoga junto a la piscina. El propósito era mostarle mis capacidades físicas en el yoga y luego traducir y adaptar esas capacidades al surf. ¡Cristina es la definición de grandeza! Tiene una paciencia increíble, su pensamiento crítico y visión son superiores. Me hizo hacer una parada de cabeza con trípode en treinta minutos, con un poco de ayuda de algunos bloques. ¡Eso es bastante desafiante cuando solo tienes un antebrazo! Entendí instantáneamente por qué todos estos surfistas sonríen tanto. ¡Surfear es DIVERTIDO! Solo lo he practicado unas pocas veces y me cansa bastante, pero estoy surfeando y seguiré practicando y tomando lecciones.

Caddy - People often ask me how is it going in Rincón? Like many people around the world, I’ve been writing my beach bar Caribbean script for over twenty years. What I drafted is nothing in comparison to what I have been honored to receive. What I have here in Rincón has far exceeded anything I ever dreamt of. I’m grateful for the town’s excitement about Calypso Café. I promise to deliver my best to the legacy of Calypso Café and the community of Rincón. The bar is hoping to open at the end of June.

Did you know that we have a Community Forest at María’s and Indicador’s beach in Barrio Puntas?

¿Sabías que en Rincón contamos con un Bosque Comunitario en las playas María e Indicador en el Barrio Puntas?

Over time, community organizations have come together to carry out reforestation initiatives on the beaches of Domes, Marías, and Indicadors. These initiatives have formed the Bosque Comunitario La Armonía project. More than 400 native trees have been planted along with other conservation and ecological preservation initiatives in the area.

A través del tiempo, organizaciones comunitarias se han unido para llevar iniciativas de reforestación en las tan visitadas playas turísticas Domes, Marías e Indicador. Estas iniciativas han formalizado el Proyecto “Bosque Comunitario La Armonía”. Más de 400 árboles nativos se han sembrado como parte de este proyecto junto a otras iniciativas de conservación y preservación ecológica del área.

Some of the organizations that have greatly contributed are Organización Comunitaria del Surfing de Rincón, Surfrider Rincón, and Fideicomiso de Para la Naturaleza. Recently, organizations like Salva Tres Palmas and Fideicomiso de Save the Beach in Corona have been crucial for the maintenance and evolution of the project. Both businesses and local families from the community have contributed to the forest, its development, and its sustainability. At the moment, we have Cristina M. Canals Silander, a community social worker and researcher at the University of Puerto Rico in Mayagüez, as the initiative coordinator. And as a scientific advisor, we have Miguel Canals Silander, Professor of Coastal Engineering at the University of Puerto Rico in Mayagüez. Coastal reforestation has been shown to mitigate the erosion of sediment that reaches our coasts. On the other hand, development projects bring a high density of sedimentation coming down from the mountains affecting the coastal zone. This sediment reaches the sea, especially in the rainy season, due to the lack of a good runoff or sewage control system.

Algunas de las organizaciones que han aportado grandemente han sido la Organización Comunitaria del Surfing de Rincón, Surfrider Rincón, y el Fideicomiso de Para la Naturaleza. Recientemente las organizaciones de Salva Tres Palmas y el Fideicomiso de Save the Beach de Corona han sido cruciales para el mantenimiento y evolución del proyecto. Tanto negocios como familias locales de la comunidad y del país, han aportado al bosque, su evolución y sostenibilidad. Al momento, tenemos a Cristina M. Canals Silander, trabajadora social comunitaria e investigadora de la Universidad de Puerto Rico en Mayagüez como coordinadora de la iniciativa. Y como asesor científico, tenemos a Miguel Canals Silander, Profesor de ingeniería costera de la Universidad de Puerto Rico en Mayagüez. La reforestación costera ha demostrado mitigar la erosión de sedimento que llega a nuestras costas. A consecuencia de proyectos de desarrollo, alta densidad de sedimentación baja de las montañas afectando la zona costera. Este sedimento llega al mar, especialmente en la época de lluvia, por falta de un buen sistema de control de escorrentías o alcantarillados.

What does this mean? Our beaches, mainly Marías, Domes, Indicador, and Tres Palmas beaches, receive this sedimentation during rain events, negatively impacting the health of the reefs and marine life in the ecosystem. Tourist events such as beach festivals come with heavy machinery that affects the ground’s surface. They remove some of the vegetation to open space for parking, safety and visibility. Some even threaten the ecological stability of the environment through poor planning and lack of general knowledge. La Armonía Forest seeks to stop the high use and abuse of the area, restoring the soil, increasing the drainage capacity and impermeability that also purifies the air we breathe and lowers the temperatures. Bosque Comunitario La Armonía was created with a great sense of belonging in the community since it isn’t limited to ecological restoration but also has recreational purposes. Zoologists, botanists, professionals, ecologists, professors, and students from the University of Puerto Rico in Mayagüez have participated in planning the forest, giving space to the development of educational activities and research projects.

¿Qué significa esto? Que nuestras playas, principalmente, las playas Marías, Domes, Indicador y Tres Palmas reciben esta sedimentación durante eventos de lluvia impactando negativamente la salud de los arrecifes y la vida marina en el ecosistema. Los eventos turísticos como festivales playeros, vienen acompañados de trabajos que afectan la superficie del suelo o corteza terrestre con maquinaria pesada. Estas remueven parte de la vegetación para abrir espacio para estacionamiento y lograr mayor seguridad y visibilidad. Algunos, incluso, amenazan la estabilidad ecológica del medio ambiente por una pobre planificación y conocimiento en general. El Bosque La Armonía busca frenar el alto uso y abuso del área, restaurando el suelo, aumentado la capacidad de drenaje e impermeabilidad que a su vez limpia el aire que respiramos y disminuye las temperaturas. La organización fue creada con un gran sentido de pertenencia en la comunidad ya que no sólo se limita a la restauración ecológica, sino que también cuenta con fines recreativos. En la planificación del bosque han participado zoólogos, botánicos, ecologistas, profesionales, catedráticos y estudiantes de la Universidad de Puerto Rico en Mayagüez dando espacio al desarrollo de actividades educativas y proyectos de investigación.

And that the only footprints we leave are our feet in the sand.

Lifeguard Training Certification // Certificación de salvavidas Rincón Paddleboards renew their lifeguard training certification along with surf schools and other members of the Rincón community. Every two years at the Rincón Marina, a lifeguard certification course is held to train members of the community vital life-saving skills. The ocean can be a treacherous place for those whose swimming skills aren’t the best, especially in Rincón, a town that experiences frequent waves and strong currents. Rincón is also a place where visitors come specifically to spend time in the ocean surfing, snorkeling, paddle boarding, etc. We met with Chikako Tsuruta at her business, Rincón Paddle Boards, located at the Rincón Marina in late April 2021. She talked to us about the lifeguard training courses and why they are so important. Chikako tells us, “Have you noticed Rincón beaches don’t have any lifeguard stands? That means that when you enter the water, you are doing so at your own risk. Our goal with the courses is to educate as many people as we can. So if anything were to happen, your surf instructor or maybe even the stranger hanging out at the beach would have the skills and knowledge to assist.”

Rincón Paddleboards renueva su certificación de salvavidas junto con las escuelas de surf y otros miembros de la comunidad de Rincón. Cada dos años en la Marina de Rincón, se lleva a cabo un curso de certificación de salvavidas para entrenar a los miembros de la comunidad con habilidades vitales para salvar vidas. El océano puede ser un lugar traicionero para aquellos que no son los mejores nadadores, especialmente en Rincón, una ciudad que experimenta olas frecuentes y fuertes corrientes. Rincón es también un lugar donde los visitantes vienen específicamente para pasar tiempo en el océano haciendo surf, snorkel, paddle surf, etc. Nos reunimos con Chikako Tsuruta en su negocio, Rincón Paddle Boards, ubicado en la Marina de Rincón a fines de abril de 2021. Ella nos habló sobre los cursos de salvavidas y por qué son tan importantes. Chikako nos dice: “¿Has notado que las playas de Rincón no tienen puestos de salvavidas? Eso significa que cuando entras al agua, lo haces bajo tu propio riesgo. Nuestro objetivo con los cursos es educar a la mayor cantidad de gente posible. Por si

But our teacher Cana told me, “Chikako, it’s better than nothing if someone is injured or in danger; you always do your best, that’s what matters, and that’s all we can do!!” It changed everything for me. As a matter of fact, it happened this January, an unconscious person who had epilepsy was in the water at the marina beach, and we had to save them! It was a crazy episode that I will share with you one day...”

Cada vez que tomamos el curso aprendemos diferentes técnicas y conocimientos. No soy un salvavidas capacitada como mi esposo Damiano, que tiene mucha experiencia en el paseo marítimo. Siempre pensé que es demasiada responsabilidad salvar a alguien o poner su vida en tus manos. Pero nuestra maestra Cana me dijo: “Chikako, es mejor que nada, si alguien está herido o en peligro; ¡haz lo mejor que puedas, es lo que importa! Es lo único que podemos hacer.” Esa frase cambió todo para mí. De hecho, este pasado enero, una persona inconsciente que tenía epilepsia estaba en el agua en la playa de la marina, ¡y tuvimos que salvarla! Fue un episodio loco que compartiré contigo algún día ... “

Arroz de piña al curry

Preparation:

Ingredients:

1. Melt the butter in a pot.

1 tbsp of butter Half a small onion 2 tsp of curry powder ½ tsp of salt 1 cup of rice

2. Sauté the onion in the butter for a few minutes. 3. Add the rice and curry powder, salt, and stir until mixed. 4. Add the boiling water, cover, and cook for 15-20 mins.

2 cups of boiling water

5. Finally, stir in the pineapple and enjoy!

¾ cup of pineapple cut into one-inch pieces

Ingredientes: 1 cucharada de mantequilla Media cebolla pequeña 2 cucharaditas de curry en polvo ½ cucharadita de sal 1 taza de arroz 2 tazas de agua hirviendo ¾ taza de piña cortada en trozos de una pulgada

Preparación: 1. Derrite la mantequilla en una olla. 2. Sofríe la cebolla en la mantequilla durante unos minutos. 3. Agrega el arroz y el curry en polvo, sal y revuelve hasta que se mezclen. 4. Agrega el agua hirviendo, tápalo y déjalo cocinar durante 15 a 20 minutos. 5. Finalmente, agrega la piña y ¡disfruta!

Ingredients: 4 cups of sliced mangos 5 tbsp of cornstarch 2 tbsp of water 2 tbsp of lemon juice ½ tsp of cinnamon

Ingredientes:

2/3 cup of sugar

4 tazas de mango en rodajas

1 pie crust (raw, not baked)

Preparación: 1. Mezcle bien todos los ingredientes en un tazón grande para mezclar.

La mejor salsa de maní tailandesa

Ingredients: 2 tbsp of peanut oil ¾ cups of unsalted peanuts 2 shallots 2 garlic cloves 1 tbsp of ginger 2 chilis 1 tsp of ground coriander 1 lemongrass stalk 1 tsp of sugar 1 tbsp of soy sauce ½ cup of coconut milk 2 tbsp of Thai fish sauce 1 tbsp of tamarind puree Juice of one lime

Preparation: 1. Heat the peanut oil in a pan until lightly toasted. 2. To the pan, add the shallots, garlic, ginger, chilis, and coriander. 3. Sauté on medium heat for a few minutes – be careful not to burn! 4. In a blender, add the ingredients from the pan together with the peanuts, lemongrass, sugar, soy sauce, half of the coconut milk, and fish sauce. 5. Finally, stir in the remainder of the coconut milk. 6. Enjoy with fresh summer rolls or as a dipping sauce for your favorite veggies!

Ingredientes: 2 cucharadas de aceite de maní ¾ tazas de maní sin sal 2 chalotes 2 dientes de ajo 1 cucharada de jengibre 2 chiles

½ taza de leche de coco 2 cucharadas de salsa de pescado tailandesa 1 cucharada de puré de tamarindo Jugo de un limón verde

1 cucharadita de cilantro molido 1 tallo de limoncillo 1 cucharadita de azúcar 1 cucharada de salsa de soja

1. Calienta el aceite de maní en una sartén hasta que esté ligeramente tostado. 2. Agrega a la sartén, las chalotas, el ajo, el jengibre, los chiles y el cilantro. 3. Sofríe a fuego medio durante unos minutos, ¡ten cuidado de no quemarlo! 4. En una licuadora, agrega los ingredientes de la sartén junto con el maní, el limoncillo, el azúcar, la salsa de soja, la mitad de la leche de coco y la salsa de pescado. 5.
