Fill Your Jar Wisely
A
s we kick off the 20th Anniversary year of Elegant Island Living, I came across some words of wisdom that I thought I’d share, hoping it helps start 2022 off on a great note.

A philosophy professor stood before his class with some items in front of him. When the class began, he picked up a large empty jar and proceeded to fill it to the top with rocks about 2 inches in diameter. He then asked the students if the jar was full. They all agreed it was full. The professor then picked up a box of pebbles and poured them into the jar. He shook the jar lightly and watched as the pebbles rolled into the open areas between the rocks. The professor again asked the students if the jar was full. They chuckled and agreed that now it was indeed full. Finally, the professor picked up a bag of sand and poured it into the jar. The sand ran over and between the rocks and pebbles, filling
the remaining open space until the jar was completely filled. “Now,” the professor addressed the class, “I want you to recognize this jar signifies your life. The rocks represent the truly important things, such as family, health, and relationships. If all else was lost and the rocks remained, your life would still be meaningful. The pebbles are the other things that matter in your life, such as work or school. The sand represents the remaining “small stuff” and material possessions. If you put the sand into the jar first, there is no room for the rocks or the pebbles. The same idea can be applied to your lives. If you spend all of your time and energy on the small stuff, you will never have room for the things that are truly important. Remember, take care of the rocks first. The rest is just pebbles and sand.

Cheers to the New Year! Because 2021 often seemed like 2020 Part Deux, we’re celebrating the arrival of 2022 by focusing on the present. No looking back. And while we think resolutions to live a healthier life are great, we also believe in the saying, “Life is short, eat dessert first!” Keeping that in mind, we’re serving up recipes for lighter or more nutritious desserts that you can enjoy without feeling guilty. (Except maybe that last one!)

Fabulous Fruit It’s always a good idea to incorporate more fruits and veggies into your diet. Fresh mango,
berries, and pears are readily available throughout the year,
• Coconut Mango • Panna Cotta Mango and coconut give this traditional Italian dessert a healthier twist and a taste of the tropics. INGREDIENTS FOR PANNA COTTA:
3 c. unsweetened coconut milk 4 Tbsp. maple syrup 1 tsp. agar powder 1 /2 tsp. vanilla extract FOR TOPPING:
1 c. mango purée (2-4 mangoes depending on size) 1 Tbsp. pure maple syrup 1 /2 tsp. agar powder 2 mangos, peeled, diced into large chunks Coconut flakes or chia seeds In a medium sized pot, whisk together all panna cotta ingredients over medium heat. Bring mixture to a boil and then immediately remove from heat. Pour mixture equally between 4-6 ramekins, jars, or glasses. Refrigerate for 2-4 hours until set. To make mango topping, heat 1 c. mango purée, maple syrup, and agar in small pot over medium heat. Bring to a boil, whisking often. Remove heat and allow to cool slightly for a few minutes before pouring/spooning in equal portions over panna cotta. Return panna cotta to refrigerator for another hour to allow mango to set. Serve topped with additional chunks of mango, and garnish with coconut flakes or a sprinkle of chia seeds.

Transfer to a baking sheet and bake until golden brown and toasted, about 20 minutes, stirring twice during baking. Place pan on wire rack and let cool. FOR COMPOTE:
2 c. fresh strawberries, chopped 1 c. fresh rhubarb, chopped 1 /2 c. water 3 Tbsp. honey 1 tsp. vanilla In saucepan over medium heat, combine strawberries, rhubarb, water, and honey. Cook fruit and mash with a potato masher until smooth and mixture starts to bubble. Reduce heat to medium-low and cook 20–25 minutes until liquid has reduced to about 1½ cups. Remove from heat, stir in vanilla. Let cool to room temperature and refrigerate until ready to use. To assemble parfait, layer granola on

• Spiced Poached Pears • Fragrant spices and the natural sweetness of pears combine perfectly with the flavors of wine for this simple yet elegant dessert. INGREDIENTS
1 c. red wine of your choosing 1 orange, zest and juice 1 cinnamon stick 1" ginger root, peeled 3 cloves, whole 2 Bosc pears, firm ripe 1 /4 c. vanilla Greek yogurt PREPARATION
Peel pears; discard skins. Using a tablespoon measure or a melon baller, core pears from the bottom, removing seeds, but leaving pears whole. Set aside. Pour the wine into small saucepan and add orange zest, juice, and all spices. Bring almost to a boil then arrange pears on their sides in wine mixture. Reduce heat, cover, and allow pears to simmer gently, about 30 minutes, or until they have slightly softened. Carefully turn pears a few times while they are cooking to ensure they color evenly. Gently remove pears from liquid and set aside. Do not discard wine mixture; remove ginger root, cloves, and cinnamon stick, turn heat to high and reduce liquid to a syrup. Sweeten with honey or agave. Let cool slightly. To serve: put 2 Tbsp. yogurt in bottom of each of 2 shallow bowls, top each with a poached pear, spoon syrup over pears.

Mix well until dough comes together. Add 1 Tbsp. chocolate chips and mix some more. Add remaining chocolate chips. Microwave on high for 60 seconds. Serve warm.

Peel and mash avocados. Combine with all other ingredients in a blender or food processor until completely smooth. Top with toasted pistachios.

f you ask Patrick Parker about how the Golden Isles became his home, he’ll tell you he wasn’t lucky enough to be born here, but he was smart enough to move here. But it was not by chance that he came to raise a family and build successful businesses in Glynn County. He knew well how special the Golden Isles was after spending summers and countless weekends with his grandparents, aunts, and uncles on St. Simons Island when he was a child. “We moved around a good bit in the late 1950s and early ’60s,” Parker said. “But we eventually settled in Vidalia, where I went to high school. We would come down and spend the summers at East Beach. I just always loved Gould’s Inlet and the beach.”
Redfern Village, as well as a gas station in the village where Iguana’s Seafood is today. His uncles owned businesses where Southern Soul Barbecue, the Trupp-Hodnett building, and Beachcomber now sit. His grandfather also owned The Golden Isles Hotel next to the pier that was his family’s headquarters when visiting from Vidalia before his grandmother moved to East Beach. His mother would tell Parker stories about a bygone era when she and her childhood friends would jump from the pier and swim to Jekyll Island, something he still can’t fathom today. “The thought of my 90 year-old mom jumping from the pier and swimming over to Jekyll is kind of crazy,” Parker said. What’s not crazy is Parker’s dedication to a hands-on approach to running his stores. The family’s history in Coastal Georgia and Patrick’s own commitment to the Glynn County community led him to open his first
Parker’s convenience store on St. Simons Island in 1988 near the Village. It was on Ocean Boulevard, where Hildy’s Pizza is today. Throughout the 1990s, Patrick expanded the business, opening stores around Glynn County. There are now 11 stores in Glynn, McIntosh, Liberty, and Appling counties, and each is operated with the same founding principles of the first store: family, community, and people matter. The Parker’s store at the corner of Mallery Street and Ocean Boulevard in the Pier Village opened in 2001 on property Parker bought in 1996, the same year he moved his family and all business operations from Vidalia to the Golden Isles. That store has become a village staple during the past 20 years and is an example of the type of convenience store he likes – one with fresh, upscale food options, eco-friendly products, and that is fast and simple to navigate. Parker was lucky enough to be born into a family with deep roots in the Isles, roots that go back 90 years to 1931 when his grandparents bought property on St. Simons Island and opened several businesses over the years. That is the same year his mother, Edith Cofer Parker, was born. She was one of six children and had three sisters and two brothers. Back in those days, his grandfather owned a business just south of what is now

While so many other convenience stores are owned by larger companies, Parker takes pride in his hands-on operation of Parker’s stores, saying it keeps him grounded and connected to the place he loves so much. There’s nothing like seeing his customers and employees face to face, Parker says. “The best part of my job is actually being in the stores,” he added. “A couple of days each week I go around and visit all the stores. Those are the best days, getting to ride around Glynn County and talk to everyone.” To Parker, his employees and customers are part of the family. One look at the shelves behind his desk and it is clear that family is paramount. Dozens of photos show generations of smiling faces. Color pictures show his two daughters, Ava and Isabel, his son Jack, and his wife, Dana. Black and white photos show his parents, uncles, and grandparents on St. Simons Island when true beach cottages were the norm. The display illustrates his deep connection to the Golden Isles. This is home. There’s nowhere else he’d rather be. “I really can’t imagine living anywhere else,” Parker said. “My aunts and uncles had lots of kids, so there have been a lot of my mom’s family around here for a long time. And now we’ve raised a family here,” Parker said. “We are so thankful to have the opportunity to live here and work here, and we try to give back to the community.” One of the most successful and popular programs Parker’s stores use to pay it forward

That’s a win-win for the business and the customer because it is set up so both sides save money, Parker said. With the business savings, Parker wanted to create what he called a win-winwin situation, so on the first Wednesday of every month, one penny of the cost of each gallon Perks members pump is donated to a local school of the card-holder’s choice. “We want the people in the community to benefit from the program,” Parker said. And the donations add up quickly. A few times each school year, Parker’s provides those donations to the schools in grand style with an oversized check presentation. Parker takes the 90-year family legacy of giving back seriously. While sitting in his office overlooking the boats docked at Morningstar Marina and the St. Simons Sound, Parker named off the top of his head St. Simons Land Trust, Firebox Initiative, Communities of Coastal Georgia Foundation, College of Coastal Georgia Foundation, Coastal Georgia Historical Society, Brunswick-Golden Isles Chamber of Commerce and Christ Church Frederica as just some of the organizations his family and businesses have contributed to over the
years. But there are plenty more. “If there’s a fun-run or a golf tournament or something, chances are, we probably have supported it at some point in time,” he said. “Supporting the good works in the community is very important to us. We’re very cognizant of the fact that we live in a great place, and anything we can do to help different organizations doing good works, we want to do.” In addition to supporting nonprofits, Parker hopes to be part of a new wave of economic development to bring more good jobs and affordable housing to the county’s mainland areas. Parker is proud of his work and the legacy of giving back he has the privilege to continue. At 63, he has considered retirement, but only briefly. He quickly concluded he was not ready. There are still causes to which to contribute, people to meet, and a community to serve. As is his focus when running his business, Parker wants to help however he can, not because it serves his businesses or to bolster the family name, but because Parker’s pays it forward. “We don’t want to sit on the sidelines. We want to be active and engaged in our community,” Parker said. By demonstrating this dedication and commitment, he can also be proud of the legacy he will leave.

Frederica Golf Club on St. Simons Island will host this highly anticipated “girls’ day out” on Saturday, March 5, from 11:30 a.m. to 3:00 p.m. Proceeds from the event support the services of the Hospice of the Golden Isles (HGI), the area’s only community founded non-profit hospice. Auxiliary President Donna Johnson says, “Our Auxiliary team made an amazing pivot to a virtual event with at-home parties in 2021 and people loved being able to have the experience at their own comfort level, whether that was 2, 4, 8 or 10 people. On Sunday, February 27, 2022, women throughout Coastal Georgia will gather for an afternoon of fun, laughter, bingo, and a chance to win fabulous designer handbags at the second annual Designer Handbag Bingo & Silent Auction benefiting Safe Harbor Children’s Center. Ryan Butler, who is co-chairing the event with Timme Feininger and Alice Selman, says, “I can’t think of a better way to spend a beautiful Sunday afternoon with friends and supporters of Safe Harbor Children’s Center. The funds raised through this unique special event represent hope and healing for children and youth experiencing trauma and crisis in their lives.”
n 1991, Safe Harbor Children’s Center was a dream that became a reality for Jekyll Island residents, Susan and Bob Hamer, dedicated parents who recognized that children and youth living in crisis had limited opportunities to seek help locally. The Hamers began researching options that were not readily available, or even considered realistic, for children and youth experiencing child abuse and neglect. By building on program models throughout the country and adding their personal vision, Safe Harbor Children’s Center was born. From those humble beginnings, Safe Harbor Center Children’s Center has evolved into a nationally recognized leader among nonprofit

organizations dedicated to serving children, families, and individuals who have been abused, abandoned or neglected, who are homeless or have run away from home, and who are otherwise at risk or feel threatened. Through generous philanthropic support of individuals, family foundations and the local business community, Safe Harbor’s services have grown exponentially, providing a comprehensive array of programs and services designed to meet the individual needs of children and families with the utmost care and compassionate support. Co-chair Timme Feininger has been a longtime supporter of Safe Harbor. “My husband, Peter, and I feel extremely fortunate to be able to call St. Simons and
the Golden Isles ‘home.’ However, we recognize there are tremendous needs in our community and throughout Coastal Georgia. Upon relocating from the Atlanta area, we were often overwhelmed to learn of the many challenges our neighbors face in our community.” She continues, “We share similar values and believe in the power of a connected, giving community. Safe Harbor is a remarkable organization in so many ways. That is why, for nearly 30 years, we have volunteered our time, energy, and philanthropic resources to help Safe Harbor break the cycle of poverty, abuse, and homelessness among our community’s most vulnerable. We simply saw an opportunity to make a difference, and we went into service.”
The mission of Safe Harbor Children’s Center is to provide services that promote security and stability for at-risk families, children, and individuals. That mission is powered by eight dynamic programs: Safe Harbor Children’s Center is a long-
term residential shelter serving children up to age 18 who have been removed from dangerous situations as a result of abuse, neglect, or abandonment. The center provides nurturing care, medical and dental services, academic support, and therapeutic counseling in a loving home-like environment.
The Family Preservation Program is
designed to help parents and caregivers in crisis to acquire the knowledge and skills necessary to meet the needs of their children in a safe, positive, and healthy manner. Services include case management, service coordination, advocacy, transportation, individual and family counseling, home and center-based parent education, and life skills training. Safe Place provides access to immediate help
and supportive services for youth in need of accessing safety as a result of bullying, suicidal
thoughts, homelessness, abuse, and neglect. As a community initiative, the program designates schools, fire stations, libraries, and other youth-friendly organizations as Safe Place locations, creating a safety net for youth throughout Coastal Georgia. Safe Harbor’s STRIVE Transitional Living Services makes available the
needed supports for youth who are most at-risk to experience violence, trafficking, unemployment, homelessness, incomplete education, drug addiction, pregnancy, and poverty. Services are designed to help

young people make a successful transition to self-sufficient living while providing a safe living environment.
victims and their families, the centers utilize a multidisciplinary team approach for the identification, investigation, prosecution, treatment, and prevention of child abuse.
Zach’s Place is an emergency shelter
providing for the immediate needs of homeless and runaway children and youth up to age 18 in Glynn County. At Zach’s Place, children and youth receive safe, temporary housing, food, clothing, medical care, counseling, and the encouragement to fulfill their potential and successfully contribute to society. Safe Harbor Children’s Advocacy Centers
are safe, child-focused environments for children who disclose sexual assault, physical abuse, neglect, or have observed violence and/ or abuse of another person. To reduce the trauma of

provide valuable services to support the physical and emotional healing of sexual assault victims and their families. With locations in Glynn, Wayne, and Camden Counties, center services include forensic interviews, forensic medical examinations, follow up medical services, 24-hour crisis line, crisis intervention, advocacy services, and therapeutic counseling. Street Beat addresses the needs of
runaway, homeless and street youth and their families by providing services that promote safety, well-being, selfsufficiency and permanent connections with caring adults. Street Beat not only helps youth leave the streets, but also assists them in moving and adjusting to a safe and appropriate living arrangement. For the children and youth who come to Safe Harbor, the first pages of their story have been difficult and discouraging.

The children and youth they serve have experienced complex, compounded trauma throughout their lives. This includes rejection by their families, exposure to violence and abuse, sexual exploitation, homelessness, and other hardships. Time and again, they have been discarded and discounted. They’ve been told they aren’t worthy by those who should have loved them unconditionally, leaving behind physical and emotional scars that can linger for a lifetime. But if you’ve ever met them, you know that’s only part of their story. Their goodness, their bravery, and their resilience are truly inspiring. The first pages of their story do not have to be predictive of how it will continue. Safe Harbor represents the start of new pages in their life to bring hope and healing. The hope at Safe Harbor is that, through their time there, the trajectory of their life and the content of their story going forward will be profoundly changed. runswick resident Thearon Filson says she was a single mother of three girls living in public housing in January 1997, when STAR Foundation entered her life and changed it forever. “I received a flyer for free computer training classes promising to open the door to higher-paying employment. I was working at Wal-Mart for $4.75 an hour, so I signed up immediately.” On the first day of class, Filson remembers, she was nervous. “I’d been a teen mom, I lived in the projects, I came from a dysfunctional urban family, and I’m an introvert. Plus, I knew nothing about computers. I walked in expecting to be stereotyped and judged. But Ellen Murphy wrapped her arms around me and I felt like she saw ME, not my situation, and heard me, too.” Only months earlier, Murphy, her sister and brother-in-law, Katie and Wally Orrel, proprietors of Dataline Computers, a

successful Golden Isles software training and computer repair company, had approached the director of the Brunswick Housing Authority with a proposal offering residents computer training classes, and thus, STAR was born. “Don McGlamory
gave us trial-basis permission to use a rec room in the Glynnvilla Apartments for a quarter,” recalls Wally. “And for the next three years, it was always ‘I’ll give you another four months’ until the program expanded, and we moved.”

From day one, students received much more than the basic computer skills the flyer promoted. “Ellen, Katie and Wally were family,” says Filson. “STAR became this wonderful support group where we’d discuss our hopes, dreams and problems. We learned how to change our approach to change the outcome; that your attitude matters; how to live better lives. And then ‘oh by the way, this is a mouse,’” she remembers warmly. “Yes, I learned computer skills, but STAR’s greatest gift to me was a confidence I truly didn’t have before. And it’s carried me through ever since.” Thearon enrolled in the College of Coastal Georgia following her STAR graduation, earning her AA in 2013 and a four-year BA in business administration in 2017, while working full time and helping to raise grandchildren. The recipient of CCGA’s Student Hall of Fame award her senior year, Thearon began working in the school’s Office of the President as a student, serving both Valerie Hepburn and Gregory Aloia. She is currently CCGA’s Health Services Coordinator, acting as a liaison between students and area medical, mental health and nutrition resources. She’s proud of two of her initiatives, Walk A Mile in Her Shoes, and a collaboration with the Glynn County Health Department promoting physical and mental wellness, as well as positive sexual health. STAR’s relationship with the College of Coastal Georgia is a close one. The two

CCGA president Dr. Michelle Johnston, explains, “Our partnership is about two very likeminded organizations. We share a deep commitment to ‘futures’ – to changing lives and the trajectories of entire families. We share the belief that education is the doorway to opportunity and the gateway to success.” She adds, “It’s amazing what STAR’s employment readiness program does to build skills and confidence quickly. When you combine that with the courage and determination it takes to complete the program, there is no limit to what STAR graduates can achieve.” The nonprofit will celebrate its 25th anniversary with a “Catch A Rising Star” formal gala (black tie optional) to be held at 6:30 p.m. on Friday, January 21 in the A.W. Jones Heritage Center. The timing could not be more critical for the post-COVID economy, says STAR’s new executive director, Markisha Butler, Ed.D., who took the helm this September. “The dearth of job-ready employees in Glynn County has reached crisis proportions. STAR’s holistic workforce training program delivers graduates who are properly prepared and ready to work on Day One. Our
commitment to meeting the area’s workforce development needs is unparalleled in the region. During the pandemic, we expanded to include mobile and onsite workshops, in addition to our core employment readiness, office professionalism, financial literacy and education readiness programming.” STAR board chair Donna Davis (Don McGlamory’s daughter) shares that the organization has served more than 1,400 local adults and their families over the past quarter century, with plans to expand to serve even more. “We are excited about upcoming growth opportunities and corporate partnerships,” Davis stated. “STAR is a program like no other, and we are passionate about true transformational change and the multi-generational impact STAR’s programming achieves. Sherneck, as its president and CEO. Raynes has served as president of Baptist Hospitals, Inc. and executive vice president of Baptist Healthcare Corp in Pensacola, Florida, since 2013, overseeing the operations of the organization’s five hospitals. During his tenure at Baptist in Pensacola, Raynes led Northwest Florida and South Alabama’s largest health system, a national leader in patient satisfaction, which includes five hospitals and residency and fellowship programs in orthopaedics, internal medicine, primary care, sports medicine, cardiology and anesthesia. DELICIOUS DINNER TO SUPPORT ACADEMICS In 2014, St. William Catholic Church hosted its first Wines of the World and Coastal Cuisine fundraiser for St. Francis Xavier Catholic School (SFX). The initial masterminds behind the idea were Monsignor John Kenneally, then pastor of St. William, and parishioners Tom Delaney and Mark Gagliano. Now an annual dinner with many local chefs showcasing their finest fare paired with wine presented by local sommeliers, this event has raised funds for improvements to technology and various academic programs at SFX, including completion of the first LabLearner STEM Lab in Glynn County. This year’s event will be held on February 6, at 6:30pm in the St. William Catholic Church Parish Hall. competition in 2012 as a way to bridge the communication gap between high school seniors and senior citizens. Since the program began, more than $386,000 has been awarded to assist students for college and trade school expenses. Submissions are being accepted now through February 11. SPECTATORS RETURNED TO THE RSM CLASSIC AT SEA ISLAND GOLF CLUB THIS YEAR AND, BOY, DID THEY RETURN! To open the week, the St. Simons Rotary Club enjoyed a great turnout for their Meet the Pros event at The Cloister that featured a fun Q&A session with PGA Tour players Kyle Westmoreland, Jonas Blixt, and Charles Howell III. The tournament grounds were abuzz during the sunny, warm final round that saw Talor Gooch beat 2016 winner Mackenzie Hughes take home the trophy, but spectators also braved the earlier cold and windy days too. It was great to see so many local PGA Tour players on the greens and tournament host Davis Love III making it through to the final round of play. Let’s do it again next year! 70

A Monumental Figure
A
n impressive monument in downtown Brunswick recalls one of the most prosperous periods in the city’s history. Erected in November 1926, the 22-foot-long granite wall with benches serves as a memorial to Columbia Downing, Jr. It was Downing’s company that put Brunswick on the map at the turn of the 20th century as one of the largest shipping ports in the world for naval stores. As a testament to his standing in the community, the memorial was funded by his friends and business associates.
Downing was born in Meigs County, Ohio in 1845. During the Civil War, at the age of 17, he enlisted in the 7th Ohio Light Artillery Battery of the Union Army, advancing from bugler to first lieutenant. He spent the last year of the war as aide-de-camp to General J.A. Maltby. After attending college and working in Ohio, Downing moved to Atlanta in 1877 and opened an office for the Chess, Carley Company, an agency of Standard Oil. As the company representative in Atlanta and Savannah, he traveled throughout the state.
In 1881, Downing came to Brunswick to open a naval storehouse for Standard Oil, and within a year, he had purchased the business. Naval stores – turpentine, rosin, tar, and pitch – were originally used in building wooden ships, but by the late 19th century referred to a number of pine resin products. By 1890, his company was handling 125,000 barrels of rosin and 25,000 barrels of turpentine annually at a value of $600,000. The company also operated a wholesale grocery business and a barrel making factory. Columbia Downing was involved in other activities in the community. When the First National Bank of Brunswick was organized in 1884, he became its president. He also served on the Brunswick Board of Trade and as a director of the Oglethorpe Hotel Company, which opened the 125-room hotel on Newcastle Street in 1888. He was known as a generous contributor to charitable causes. On Christmas Day, for example, the Downing Company distributed
hams, bacon, flour, crackers, and other goods to Brunswick’s needy families. Downing died in 1924 and is buried in Palmetto Cemetery. The memorial, shown here on a postcard from the Society’s archives, includes a bronze portrait of Downing and is located in Queen Square. Also shown is a picture of the Downing Company docks. His home on Halifax Square has been converted into what is known today as the Brunswick Manor.
