This summer has been incredibly special, I watched my sister get married to the man of her dreams in the most fairytalelike setting imaginable. Located in England at Anne Boleyn’s childhood home from the 13th centruy and complete with a moat, the Hever Castle and Gardens spans 125 acres. The breathtaking property is full of gems like an 100 year old yew maze, award-winning rose gardens dotted with Italian scupltures and a lake swimming with swans and ducklings. They timed the day perfectly - England was abnormally blue skies and sunny, and the roses were in peak bloom. Standing beside the bridesmaids, I watched my father lead my sister down the red carpet, across the historical gardens to the lakeside ceremony shaded by a stone Loggia. We sipped champagne with the soundtrack of a string quartet and danced the night away to a tenpiece band. I have never felt a room be full of such joy and love, a feeling I’ll never forget. Congratulations Mr. and Mrs. Williams! Not of English royal decent, but another kind of royalty - Miranda Lambert reigns our cover as the queen of country music. She is the most decorated artist by the Academy of Country Music and works tirelessly releasing hit tracks, performing on tour, debuting a new fashion line and rescueing dogs through her MuttNation foundation. We couldn’t be more thrilled to have her grace this issue as our cover feature. And just like the Hever Castle property, this book is also full of gems! You’re currently on a huge tour, The Bandwagon Tour, with Little Big Town, whats your favorite part about being on tour? Where do you find your energy and inspiration comes from the most, especially when touring can be so demanding and strenuous?
I love the road. People on the road become family. I find inspiration from the fans, and in this case from this amazing tour lineup. I love Little Big Town and Turnpike Troubadours so watching the shows makes me really excited to be part of a tour like this. What is your happy place (literally or figuratively) on tour where you can relax and unwind and re-energize? I have a farm outside of Nashville where I spend a lot of my time. It's so peaceful and my animals are there so it really is my happy place. Your Living’ Like Hippies tour was a huge success, selling out shows across the country. You have an outstanding career and are ACM’s most-awarded performer of all-time among many other awards. What is your proudest moment of your career so far? If I had to pick one moment I would pick singing for Merle Haggard at the Kennedy Center Honors. I'm a huge fan of his and it was a very special night all around as I got to spend some time with him as well as we all had dinner after the performance.

Who is your biggest song-writing inspiration/influence? Merle Haggard, Guy Clark, Alison Moorer to name a few as far as songwriting goes. Ashley and Angaleena are both inspirations to me. Writing with the Pistol Annies is so much fun and pushes me to be an even better songwriter.

One of your other passions is animals, you co-founded nonprofit Muttnation with your mom, to save dogs and find them happy homes, how can your fans support your mission and what has been the response/outcome so far? My motto is adopt don’t shop. If you are looking for a new pet, make sure to check out your local shelter because there are so many great dogs in shelters that need good homes. We also had dogs and animals at home when I was growing up and as a teenager I started volunteering at the local shelter, which I think is a great way to be of service and maybe find a new dog. The fans have been incredible, as it turns out my passion seems to be also their passion. MuttNation socials will keep everyone up to date about upcoming events and adoption drives and how to give donations. We have a new program called “MuttNation Citizenship,” where for a $25 donation your dog can become a citizen by posting a photo of the pup on our site, and they get a Citizenship certificate.
Since 2009, the foundation has saved countless dogs and you have 8 rescue dogs, what is your happiest or proudest moment? We are launching September 5th. It will be available in all Boot Barn stores nationwide and online at Idyllwind. com. We named the line after my horse Ellie (Idyllwind Ellund).

Using the hashtag #VanDutch10, revelers can share their favorite VanDutch moment alongside a global collective of fans. Alongside the anniversary campaign, VanDutch’s 2018 model year brings a collection of new products and special editions including the VanDutch 40.2, Super Yacht Edition, 48, 56 and 75, to serve any boating style or function. As a testament to the company’s avantgarde history, the 40.2 represents a new age of VanDutch design, style and function. 1821, the southwestern tip of Nevada was named Las Vegas, a reference to the formerly lush valley accented by artesian wells that produced these far-reaching verdant fields. “Las vegas” means “meadows” in Spanish, which metaphorically reflect the color of money that keeps this local economy thriving. Urbanization began in 1902 as a water stop on the trail, first for wagon trains and later the railroad heading westward to Los Angeles. The area was considered a good stake, and with the State Land Act offering a $1.25 per acre, farmers quickly jumped on the opportunity and made agriculture the primary industry. Considering that not long ago the purchase of a single parcel on the “Strip” totaled $34 million an acre, the original farmers made the right choice! The so-called “Gambling Capital of the World” also is synonymous with marriage and divorce, entertainment and distinctive neon signs, now featuring over one hundred world renowned casinos in which to place your bets, from the MGM Grand to the Bellagio to the Paris, along some of the most valuable property in the U.S. But wagers and betting are not, of course, limited to the Las Vegas Strip, as calculating a winner crosses over into an unlimited number of industries, including racing (cars and horses), sports, manufacturing, investment banking, real estate, medicine, technology and fine art. In fact, there is a peculiar acronym having to do with “best bet” financial returns that spells out SWAG, which refers to subjects that year after year have generated some of the most valuable revenues: Silver, Wine, Art and Gold; those who invest wisely and do their homework can come out ahead. If you picked real estate or the stock market or crude oil as your sure best bet in the last decade, you likely still came up short. Precious metals have been golden, as have rare vintage wines. But nothing can compete with the eye-popping auction prices achieved by savvy art collectors who also can enjoy their investments (and bragging rights) every day on their walls at home. In May 2017, a Jean-Michel Basquiat work painted in 1982 was sold by Sotheby’s at auction for $110.5 million and was surrounded with unimaginable sales numbers attained by other contemporary artists that were propelled by supply, demand and a convincing identifiable style. Among the classic favorites in the art world are paintings that explore the visual rhythms (and often mesmerizing motion) of non-narrative color field and abstract geometrics. As Jazz and

abstract expressionism arguably are the two most celebrated uniquely American art forms, there is an affinity for conceiving and collecting art in this genre. As works by first generation abstract painters like de Kooning and Pollock have become extremely rare and fetch hundreds of millions of dollars at auction and private sales, there has been a renewed interest in repeating the same investment formula for acquiring promising second-generation abstractionists who possess a singular voice, exceptional education and experience, critical acclaim, museum exhibitions, prestigious publications, and the ability to portray inherent beauty and maintain high professional standards. As the former Editor-in-Chief of The Art Economist magazine, my chief responsibility was to identify and carefully examine promising contemporary art and artists. My columns in The Huffington Post have month after month successfully predicted auction records and identified artists who are making noteworthy art that is increasing in value. One of the artists who I have been watching closely is J. Steven Manolis, who is based in Miami and possesses all of the professional qualities listed above, making him a clear front runner for continued accolades and the making of exquisite abstract expressionist canvases that often are ingeniously woven together with dazzling color field theory and handsome constructivist geometric forms. These exquisite and extraordinary compositions have moved noted enthusiasts to take action, as evidenced in Manolis’ impressive collector base.
Although with ambitions at an early age to be an artist, Manolis was persuaded by parental guidance to follow a career in finance. With natural creativity under his belt he applied inventiveness to investments and became the youngest partner in the respected firm of Salomon Brothers. But like most artists who can multitask, and in this case, balance finance with art-making, Manolis continued practicing as an artist through private lessons with the renowned colorist Wolf Kahn, who in turn had studied with Hans Hofmann, who was considered a master teacher and member of the original abstract expressionist group. With all the famed names in contemporary art, you usually can connect the dots en route to greatness by studying a personal link to artists of historic importance. For example, one of America’s most illustrious artists, Robert Rauschenberg, studied at the renowned Black Mountain College, where Robert Motherwell and Willem de Kooning were on the distinguished faculty. When Manolis made the decision to become a full-time painter, much of the mechanism for success already was oiled (excuse the pun) and finely tuned to move forward securely, confidently and in automatic overdrive. Not only are critics observing a unique artistic circumstance and breakthrough; maturity of vision and years of experimentation are fused in the artist’s latest series through highly dedicated studio activity. Manolis has had three solo museum shows in the last two years with more requests following. His most recent upcoming shows are a two-person exhibition at the National Arts Club in

He drew impressive crowds for his lecture and book signing at the prestigious Society of the Four Arts in Palm Beach, and did a one-hour interview with “Voice of America” that was heard by over 100 million listeners. Critical approval is an important consideration for the odds makers, and just like forecasting the winner of a horse race at Churchill Downs, numerous tributes secure the perceived value of the art, like researching a stock, and serve as a kind of title insurance where all the qualities investigated and evaluated add up to an artist on his way to the winner’s circle! A remarkable example of critical praise is the artist’s recent review by the legendary art critic Donald Kuspit, who observed that Manolis is the heir-to-be of Wassily Kandinsky. Kandinsky changed the world forever on how we appreciate contemporary painting. His work, both artistic and theoretical, played a large role in the foundation of later modern movements, in particular abstract expressionism and its variants such as color field painting. His later work influenced superstar Arshile Gorky’s development of a non-objective approach, and also he was a chief inspiration of painters like Mark Rothko, and continued to be a strong, magnetic force even in the 1980s to those of the neo-expressionist resurgence in painting, including Julian Schnabel and Philip Guston. Other noted critics have pointed to Manolis’ handsomely saturated canvases, which have developed into a clear recognizable style that is fresh and inventive. Manolis is keenly aware of art history and the appealing lineage handed down to younger artists, who established hybrid applications of painting surfaces

What was your initial reaction to The Disaster Artist’s adaptation of your book? I’ve always been a believer of think big, big things can happen, and I really started out with that notion… but nothing did happen. But at the same time, I kept that attitude. So when I got the opportunity to write the book, the first idea I had was for it to become its own movie. I created a cast list and my goal was for it to become an awardwinning movie. What a great challenge to have something that was considered

so bad and then have a movie is so good - that it would win an award. So that was my goal from the get-go. I was always hoping for it to play out that way. But there’s so many things that need to happen for a movie to get made - not even for it to be good but just to get made. So when it happened... it's one of those things where you realize, 'wow these things can happen' and there's no reason not to be positive or hopeful. It was extreme validation after so many years of trying to work on things you’re proud of.

It was incredible. What a hard role to play, it’s not just the physicality, you have to get into Tommy’s mind, and very few people… no one has done that really. When I wrote the book, I was very

I initially had Javier Bardem and Ryan Gosling playing the parts, back in 2011 when I first started on the book. So when James Franco came about, I thought it was a really interesting choice that I hadn’t thought of. And I had only seen Dave in one film and didn’t even realize he was James’ brother. At the time, I was thinking, if anyone wanted to make it, I was appreciative! When I saw the movie, I definitely thought it worked and their relationship had the right sensibilities. I think it worked better than most people were anticipating. Dave is a great guy and understands what it’s like to be a young actor and work your way out there - and to be a part of projects that you think are going to work and then they don’t - and how that affects you.

I read that you think Tommy was kind of pigeon-holed as an actor after The Room. Do you think your career was affected in anyway?
He wanted to say that the American dream is a lie… I think? But who knows if that’s what he would have said. I think James was thinking … this may not go well, who knows what he’s going to say… But I thought that moment summed up everything so well because I mean who goes up on stage and then reaches for the mic during someone else’s award speech. But I feel like Tommy felt that he had waited long enough and was invited up there to share the award in some way it’s what makes this whole thing work so well - is that he’s unpredictable.
You guys reunited in Best Friends, which you wrote and starred in, and part two is set to release in the fall… can you tell me about your experience and inspiration behind it? I’ve always been a big lover of movies, and obviously, with The Room it was something I didn’t think anyone was going to see and then it’s interesting because I didn't even know there was a market for bad movies… so when I wrote the book, I took that angle of my love for storytelling and film-making and so I thought it would be a fun challenge to write a film about a story that would be unique and in line with some of my favorite
You’re obviously very busy with screenings, but do you have any goals or anything next for you on your radar? We have volume two coming out officially in the Fall, the next thing I want to work on is a horror film … these two movies tease that direction a little bit but the next thing I want to do is something totally different from this. I love the new wave of horror films that have come out, like ‘Get Out’ and ‘The Babadook’ so I’d love to try and do something in that genre.

A lot of people saw humor in the fact that Tommy attempted to take the mic during James Francos Golden Globe speech. What do you think he would have said if he got ahold of the mic?
Much different. I’ve changed a lot. He has as well. He was ready to do something different. He was more confident in himself and more willing to collaborate. We were both just ready to try to do something different. I never really tried when I did The Room with him because I didn't think it was a movie anyone was going to see. It was very alienlike being there, and was like, “How do you commit to this?” And so it was really cool that we were on a project where we were both able to fully commit.

much in Tommy’s mind, but I’ve known him for so long, but James was able to … I gave him a lot of material and he was able to access it and really understands him …. He said in a Q & A that he’s more like Tommy than he’s scared to admit and I really started to think that was true because some of his responses were so Tommy… and that’s what made the performance so rich… he wasn’t just doing an impersonation he created his own version of Tommy.
You just need to decide what’s fulfilling for you and try to pursue it if you do the right kind of work that’s sincere and articulate then people will follow you. But a lot of time, people get scared when they’re in a cult thing and try to move away from it, because you fall into this comfort zone because people accept you as something, and it’s scary to move away from that. It’s so rare to be apart of a film that really connects with people, so you can’t be afraid, you need to be doing this for the right reasons and that’s to make stuff and you have to go back and keep creating and then see what people think.
Fifteen years is a long time. Was it a different experience filming with him the second time around?

Definitely affected. But that happens anytime you’re in a movie that people see. Whether it’s amazing or terrible… you’re put on the map and it’s up to you what you do from there because you can either prove people right or you can prove people wrong. And I think it’s up to you, the direction you take. For me, after The Room, people asked if I wanted to do Reality TV to play off The Room, but I wasn’t interested in playing off of it because it was uncharted territory… a bad movie that screens around the world for years… it’s interesting to me because what brings people back… but for me, I want to get back to doing the work I always wanted to do - and I think you can - if you have something to offer.

Because after The Room, they assume all he can do is off beat caricature comedy, and I thought it was a great challenge to give him a part where he could surprise the audience and fit a role and be good and interesting! So I tried to make something that I would be passionate about and would combine both of those elements. So fans would be able to enjoy the reunion but also see something new and fresh - The Room has been screening for fifteen years now, so people have seen it. What a great reward to make something where we both really tried, and not just phoned in giving them fan service but really try to do something ambitious, and doing something fifteen years later was a great challenge.

oy George, a legendary pop star who shot to worldwide fame as just a teenager, is still going strong; releasing new music, going on tour, and also still performing his 80’s hits. But according to George, performing those pop classics inevitably feels different and carry a different meaning now. As he’s grown and matured, George has an honest relationship with himself and the world, which is reflected in his new music. As an artist, he’s uncontrived and reveals a newfound respect for his career. Make no mistake, he’s still outspoken and full of playful wit and humor. You’re about to embark on a huge summer tour across the US at the end of the month. How do you prepare for something like that? A bit of starvation! [laughs] Touring for me, is an opportunity to really get myself together, because you have to be really fit to tour night after night. So you have to do things to protect your health, your voice, your sanity. So there’s lots of days on tour where I don’t even speak… which is incredibly pleasant for everyone around me! [laughs]
Is there something you’re really excited about for the tour? I’m excited about doing some of the new songs because you can really tell from the audience reaction, whether something is going to work. If people react to a song like they know it, that’s the best thing in the world if you get through the first chorus and people are already engaged — there’s nothing better. That’s when you know if somethings going to work or not.

Oh yes! A lot of people lose their sense of humor. The road is not for everybody. Some people just cannot cope with touring life.

I follow the opera singer approach where you let the voice rest and make sure you get sleep and eat well. We travel with lots of extra musicians, and you see them bowling into the hotel after a big night and you think there’s no way they’re going to finish this tour in good health! They say, if you want to find out who people are, let them move into your house …or take them on tour with you!

What kind of music can we expect on the tour? The tour is going to be our classic songs interspersed with a few new things on the next album that’s imminent. The new album’s just come to life, it’s very Culture Club… whatever that means! We’ve come to a point in our career where we do something we say, ‘it’s really Culture Club’ without really knowing what that means. I would describe culture club, as ‘world music’ with a lot of 'gay cake.'

Your music has definitely changed, as you’ve grown and your career has evolved, and it sounds like your outlook on life has changed as well. Yes, the things I write about as a lyricist have changed. In some ways, my perspective on relationships as love and life have altered a lot since I was first in this band; the song titles are different sorts of song titles. When I used to write as a teenager, I was always very in the role of the victim. Songs like, “Do You Really Want to Hurt Me,” “Time or Give Me Time,” I played a certain role — a role that I’m not playing anymore because I have such a different relationship with myself, with the world, and with love and life. And that is really reflected in this record. Even in songs that we’ve sung for 20 or 30 years, those songs have changed in their essence. They’re still the same songs but what they mean to me as a performer, is very different. Which is interesting because when you sing a song like “Do You Really Want to Hurt Me,” its almost about something else now. What is the biggest comparison between your new music and that of the past? Do you find yourself coming back to your 80’s roots at all? I think on this album, weirdly, we have thrown a lot of things that we grew up with on this record. So you kind of get to a moment where you fearlessly reference the things you love without being self conscious about it. Because I think

When you’re nineteen, and you become a rockstar, it’s allencompassing, and you lose sense of who you are and forget that it’s a job.
Vegas is definitely on the horizon. There’s been such a delay and it’s something people never would have done years ago but it’s such a hit place now, and you’ve got an audience there that have come to have fun. I can’t see that it would go horribly wrong so I’m really looking forward to doing some stuff in Vegas and playing around with the visuals and putting on a real show. Reflecting back on your career, what are you most proud of? I’d probably say NOW. Not in terms of any sort of achievement but being able to step outside of what I do and look at it from a clear headed perspective and to know that what I do is a job, rather than an be-all-end-all of my existence. When you’re nineteen, and you become a rockstar, it’s all-encompassing, and you lose sense of who you are and forget that it’s a job. And as I’ve gotten older, I’ve understood that what I do is that I sing and entertain people, and knowing that’s my job is a really good thing because it makes me treat the whole thing with a lot more respect and to value it in a way that perhaps I didn’t as a very young man. Because it was thrown at me overnight and suddenly it’s like, 'Oh my God!' Growing into a person that respects what I do, that’s an achievement. What’s your favorite artist or song that you’re listening to right now? There’s a band called “Lower Dens,” they have a song called “Real Thing,” which I play a lot. There’s a
I love your style and unique sense of fashion, where do you get your fashion inspo? I am a Gemini, so I’m very much a cultural sponge, I take ideas from everywhere. A lot of it comes from my own imagination but I read books, poetry, magazines, reference all sorts of things and I try very much to make those ideas a reflection of who I am rather than a complete copy of something else. Because we now live in a world where nothing hasn’t been done, nothing in the world that hasn’t already been worn, its really about how you as an individual carry something off. And I take the view that you can't keep an idea in a box, once you think about something, and you speak about something it almost happens, you open a magazine and you go, ‘wow I was thinking about that! That’s so weird that someone’s done that!’ That’s the thing that excites me the most in terms of making music and fashion is the new ideas. And there's obviously a reference point for me, the 70’s are a big reference point, glam rock, punk rock, those things are still very important to me. I’m always open to anything that’s crazy and outlandish... Liberace, bring it on! All that stuff makes me smile!

I am a massive Nina Simone fan, I think Nina Simone was one of those people that managed to put her passion and anger in everything she did. I think we live in an age now, where there’s a lot of performers… but not that many artists. I come from an era, if I come from anywhere, where people were required to be more than just performers. And I think it started with people like David Bowie, although Elvis had a touch of that as well. The fact is that yes, you have to have musical integrity but you also have to have some sort of visual element as well. If you think about anyone in the last forty or fifty years, from Elvis to Little Richard to Chuck Berry, to Prince, Madonna, Boy George, whatever… throw us all into the mix… all those people had a definable image Michael Jackson; it’s really important to have your music be a part of who you are. At the moment, you listen to songs where you think, yes
After you’re done with the tour this summer, is the next stop a Vegas residency?
band called, “Planningtorock” and they have a few tunes which I play a lot, and a song called “Let’s Talk About Gender;” they’ve also got a great song called “The Breaks” which literally sounds like it could have been made in 1984. I’m a big Spotify fan, I love the fact that I get up on Monday and they send me loads of new tunes that they think I might life and some of them, I do like! That’s the one good thing about the internet… they sometimes get it quite right! One of my favorite bands is Arcade Fire. A lot of the time I like the bands that really have a respect for what’s come before. It’s a bit like furniture… like you see a piece of furniture that’s like very now but has an old world quality about it and I think that’s what appeals to me the most.

You mentioned Dolly, Bowie and The Beatles as inspiration, is there an artist or performer that you look up to the most?
it’s a beautiful song, yes it's a beautiful voice, but I don't know anything about them. At the end of the song, I don't know who they are, they haven’t really let me into their world… like when you hear Amy Winehouse sing, “Love is A Losing Game,” you’re in there with her, you feel that pain. And I suppose those are the kind of performers that appeal to me. Equally, people that are tricksters like Kiss, they’ve got the makeup, and explosions, I love that too! I love to be entertained and I think that’s what the audience wants. So that’s really what I look for is things that are entertaining visually, and emotionally stimulating. That’s what I try to do when I wake up in the morning.

Culture Club’s music has always been very eclectic (I know eclectic is a very overused word) but from my point of view I’m someone that can enjoy Dolly Parton and the Cramps in the same breath, I am a Gemini, my music tastes would make no sense to someone looking from the outside. I really jump around musically, I suppose in a way, what the band has done is put that into a sensible, palatable energy, we are definitely wearing our influences very proudly on this record perhaps when we were younger, we were less conscious. Because when you’re young, you think you’ve invented everything, don't you? Now it’s more like you’re paying homage to what you’ve created all those years ago and all the things that have shaped you. Theres always a lot of Bowie in what I do, and Beatles, obviously big fans and all those things are in there.

f you don’t know who Lukas Nelson is, you will soon. Born into music royaltywith great looks, a hypnotic voice, a penetrating stare and guitar licks to match- Lukas is on a rarified path. Marlon Toro is a graduate of Florida International University School of Hospitality Management with a Bachelor of Science degree in Hospitality Management, focusing on Restaurant Management. "For summer wine I think of three things: freshness, fruit and low alcohol." Hayden grew up on the Main Line of the western suburbs of Philadelphia where he attended The Haverford School for Boys followed by Phillips Exeter Academy. He earned his a B.A. in English Literature from Amherst College, during which his real interest in food and wine began. During his final years at Amherst, Hayden developed his keen interest in wine, sampling what tasty but affordable Bordeaux he could find on a college student’s budget. He moved to New York City in 2001 where he took a position as Captain at Chef Tom Colicchio’s newly opened Craft. His ten-year tenure with Colicchio includes his titles of Assistant Wine Director at Craft and later, Wine Director and General Manager at Craftbar. Moving to Los Angeles in 2012, he helped open and led all Food and Beverage operations for Chef Roy Choi’s multiple concept project at the New Line Hotel. His next position was Director of Operations for Chef Ludo Lefebvre’s awardwinning Trois Mec and Petit Trois restaurants. When Hayden started a family, he moved to Santa Barbara, eventually landing the position of General Manager of Les Marchands Restaurant and Wine Merchant. He also serves as Wine Director for Les Marchands’ parent company, Acme Hospitality.

If we’re talking sun and afternoons, this triad is even more relevant. Whether poolside, ocean-side or for post-hike refreshment, I like nothing more than something quenching. Quenching is all about slaking thirst, so what better than a mouthwatering sip of Feinherb Riesling from a legendary estate producing some of the top Riesling in the world from the Nahe region of Germany? The ‘16, as always a mélange of porphyry and gravel soils, shows Mirabelle and iris and persimmon aromas; the mid-palate is swollen with

$200 and continue drinking Dönnhoff, or shift gears into your favorite rosé of the summer or some great, crisp AC Chablis. The elephant in the room with Riesling is the sugar question, and people’s natural aversion to sugar or “sweetness.” There’s not quite enough space to go into it here, but Riesling does not equal sweet. It can be on many levels, but it can also be bone dry. Germans, who live in the cradle of civilization known for sweet Riesling,

mineral. It’s almost hefty, with a finish that is long and complex, especially for the price point with incredible value. It’s bright, crisp and, at 10% alcohol, it checks the low alcohol box, so you can day drink, stay on point and not worry about the excessive dehydration/ hangover that is a side effect from high alcohol wines. Translation: you can go to the daytime pool party, get in the mix with some Dönnhoff, still make your dinner reservation and either skip to go, collect
typically tend to drink their wines dry. That said, wines with a little residual sugar – and this is fruit sugar – come from some of the most well-cared for and pedigreed fruit grown in the world. There’s more of a perception of fruitiness rather than a true perception of sweetness. The wines are the furthest thing from cloying, and the tightrope walk between sugar/acid balance is what the best winemakers know how to walk. So even a wine that may have 16 grams per liter of residual sugar (which is less than an apple for a whole bottle of wine), finish quite dry and don’t taste sweet, but only a little fruity. The acidity, and this is where the idea of “freshness” comes in, is at such a high level that the wine as a whole is brought into balance, and every finished sip begs for another. In short, quenching. So in general, it’s probably the most quenching beverage I can think of. If you just went for a hike and someone put a bowl of fresh, perfectly ripe strawberries or peaches in front of you, would you say no? But what happens when your favorite fruit tastes 30 times better, with a whole other world of complexity and inflection that intimated where exactly in the world that perfect fruit was grown, along with those similarly perfect flowers, all wrapped around an earthy, mineral core, the flavors of which only a good white wine can express? And physiologically speaking, in a post-workout phase, your body needs to re-up on glycogen stores to aid in muscle recovery. So, if consumed within the hour, the Dönnhoff is preventing further muscle breakdown and aiding in recovery! The alcohol probably isn’t high enough, as long as it’s consumed in moderation, to affect protein synthesis (for the gym rats out there). See practical application: I was at a concert on the Mexican Riviera Maya, and, security being lax as it was, was able to ferry in Dönnhoff Spatlese (which came with me in my checked luggage) in a thermos and dance to great rock music in the warm Mexican sun, drink some of the best white wine in the world and stay quenched, feed my legs the energy they needed to keep up on the dance floor.

"I think that summer chilled reds are the new rose." This is one that will please all on a hot day, outdoor gathering or warm summer evening. The carbonic method allows for the fruit to shine and still be bright and vibrant. Low in production and minimal intervention, its like a farmers market wine. A very charismatic son of a Baptist preacher, drummer, and fifth generation Louisianan, Andrew Reginald Young, recently created St Reginald Parish, a winery based in Oregonâ&#x20AC;&#x2122;s Willamette Valley. The Marigny label refers to a hip neighborhood in the French Quarter best known for its live music and is an ode to his roots. Chefs Club Aspen Presents: Matthew Accarrino began on June 15th, and will run through September 6th. Matthew Accarrino is the nationally recognized executive chef of SPQR in San Francisco. Born in the Midwest and raised on the East Coast, he moved west to California in 2007. He had originally hoped to become a professional cyclist until a leg injury turned his passion for cooking into a career. Now, 20 years later, he is doing both. Matthew’s unique culinary style draws inspiration from his Italian heritage, personal experience, and classical training with some of America’s best chefs. In the kitchen Matthew takes full advantage of the bounty of opportunities California ingredients present. This includes a strong belief in direct sourcing, producing, and playing a role in the creation of his ingredients. The result is an intensely personal cuisine that is both technically polished and soulful; and which has garnered praise from publications such as Food & Wine, Bon Appetit, Saveur, The Wall Street Journal, The New York Times, and The S an Francisco Chronicle. Under his direction, the restaurant has been awarded a Michelin star every year since 2013. Matthew was named a Star Chefs “2010 Rising Star” for his “innovative vision, finesse, and deeply satisfying cuisine,” and in 2011 he took top honors at San Francisco’s Cochon 555 competition. He has been nominated five times for the prestigious James Beard Foundation Award for “Best Chef: West.” Food & Wine Magazine named him “People’s Best Chef California” in 2013, and editorially selected him for the prestigious “Best New Chef” award in 2014. Matthew co-authored and released his first book, published by Ten Speed Press – SPQR: Modern Italian Food and Wine– in October 2012. “In the past few years I have cooked several times at the Chefs Club location in New York,” said Matthew. “I have also traveled throughout Colorado, for cooking and bike racing, my other great passion. The first time I traveled to Aspen in 2014, I arrived by bicycle from Leadville to collect my F ood & Wine ‘Best New Chef’ award during the Classic. Coming full circle, I’m enthusiastic about bringing my cooking to altitude and being surrounded by the mountainscape of Colorado. I’m looking forward to engaging with the local community as well as destination diners. I get to do something totally different, get outside my normal routine, and create a menu experience that is generous, lively and well-rounded with a nod to my Italian heritage.” Curated by Matthew and the Chefs Club Aspen team, the wine list ranges from classics like legendary Bordeaux first growths, to up-and-coming regions like Spain’s Bierzo and Bullas or Greece’s Santorini and Naoussa. The restaurant’s interior will transform with Matthew’s residency, with the addition of new dining chairs as well as artwork from a local Aspen gallery. Matthew will source
specialty ingredients from partner producers like Sartori artisan cheese and La Quercia salami and hams. The front and back-of-house staff will be outfitted in custom designed aprons from Tilit and shirts from Patagonia. For the tabletop, Staub will supply much of the cookware including colorful coquettes and dishes. Since opening in 2014, Chefs Club, founded by entrepreneur Stephane De Baets, has featured nearly 200 chefs from all over the world – from Tokyo’s Zaiyu Hasegawa to Alain Ducasse, among others. In October 2017, Chefs Club NYC debuted a new Chef Residency format, where in lieu of hosting a guest chef for one to three nights, chefs spend three to six months at Chefs Club, completely taking over the space and menu. Recent NYC residencies include Sota Atsumi (current), JJ Johnson (Fall 2017), and Jeremiah Langhorne (Q1 2018).

CHEF JOSE “JoJo” RUIZ: SAN DIEGO: LIONFISH The San Diego native began his culinary career as a sushi chef at a handful of local restaurants, including Yokozuna's, where he learned the art of butchering fish and meat. Displaying incredible talent at a young age, JoJo was on the fast track to success. He began working as a sushi chef at JRDN Hotel’s Tower 23 in 2007, then The Oceanaire Seafood Room as a sous chef in 2008, before stepping up as Chef de Cuisine of Brian Malarkey’s widely successful Searsucker in downtown San Diego in 2010. As Brian’s right-hand man, JoJo moved on to become the Executive Chef of Enlightened Hospitality’s Herringbone in La Jolla in May of 2013, further enhancing his experience with coastal cuisine. chefs Thai Glazed Black Cod, Farmers Market Sugar Snap Peas, Parisian Gnocchi, Pea Tendril, Mint Chimichurri Fish Glaze Ingredients List: 4 cloves garlic, grated on a microplane grater. 1 cup fish sauce. 1 cup lime juice. 1 cup brown sugar. 3 Serrano chilis, Sliced paper thin 1/2 cup finely minced cilantro. 1/2 cup finely sliced scallions. Preparation Instructions: - In a Pot heat up first 5 Ingredients making sure to stir carefully so that the sugar does not burn. Once at a gentle boil make a slurry with a few ounces of the liquid and cornstarch in a separate bowl. - Slowly add the slurry to the sauce until the consistency is close to a runny teriyaki - Season with salt and Add the last 2 ingredients once cooled.
How to Put it together: First Butcher the Black Cod Skin on Portion to 6oz Clean and Blanch Sugar Snap Peas Slice 1 Shallot Slice 3 pc Garlic Wash Pea Tendrils and Dry Sear Black Cod Skin Side Down, and Roast In the oven Until Cooked through (Black cod is very Moist almost impossible to over cook). Pull the Fish out of the oven and remove pin bones with Tweezers and Glaze with the Fish Glaze and Broil for about 30-40 Seconds. The Vegetables: In a Sauté Pan, Sauté Parisian Gnocchi with about a tablespoon of butter and sear until Golden brown, add Shallots and Garlic and continue to cook about 30 seconds add Snap Peas. Once the vegetables are cooked and Tender, season and Plate. Plate up: Place Gnocchi and Snap Peas On the Bottom Of Plate, Place Black Cod on top, Dress the Pea Tendrils with Chimichurri, salt and pepper and Place on top of Cod. Finish The Plate with more Chimichurri.

1. Combine Vinegars and a few pinches of salt in a medium bowl. 2. Add all Ingredients except for Cilantro, Parsley, and Mint into bowl and let Marinade for 10 Minutes. 3. Add in Cilantro, Parsley, Mint and stir in EVOO, Salt TT if Needed.

Parisienne Gnocchi Recipe 1.5 cups Water 3/4 cup Butter 1 .5 tbsp Salt 2 cups Flour 1.5 cups Gruyere Cheese or Parmesan 6 Eggs 3 tbsp fresh herbs (chives, chervil, tarragon, thyme all work very well) Piping Bag and round piping tip Combine water, butter, salt & bring to simmer Add flour all at once, stir constantly Cook flour mixture for about 4 minutes Add dough to mixer (using paddle attachment) Add cheese and herbs Add 2 eggs one at a time on low speed Add 3
eggs one at a time on medium speed Add final egg on medium to high speed Add mixture to piping bag and let rest for 30 to 45 minutes Bring pot of salted water to a boil Slowly push the mixture through the tip of the piping bag and with a small knife cut off the desired size of your gnocchi directly into the water. Work at a steady pace you will probably get about 25 pieces into the water at a time. Gnocchi will begin to float, cook for about 1 minute after floating, remove and place on a platter covered with baking paper. Continue until all mixture is cooked. At this point you can dry the gnocchi and place in airtight container in the fridge until ready to serve. (you could keep the gnocchi in the fridge for up to 48 hours) In a saute pan heat oil on medium to high heat add add your gnocchi and cook until golden brown (this should take only a couple of minutes, do not cook to long as it will dry out your dough)

CHANGING TIDES
How an ambitious Brit became a Real Estate mogul in Turks and Caicos, and how he perservered through extreme disaster and devastation By Whitney Hubbell

an Hurdle traded the grey and rainy skies of England for the hot sun and turquoise waters of Turks and Caicos; not as a beach bum, but as an authoritative force in the Real Estate market. His unique entrepreneurial journey proved effective, and triumphed even through the recession, due to his innate business acumen and unwavering ambition. Growing up, Ian watched his father become one of the most successful building contractors in the South of England; he semiretired at a young age but craved new challenges and adventure and so came about the notion to conquering the Caribbean as the next phase of his career. Ian recalls, “Being nineteen years of age and at that point, having a six pack and some blonde hair, I felt like it would be a great ticket to come along for the ride!” They moved to The Grand Caymen in 1993, and together, they spent five years building and flipping spec homes, which would be Ian’s first insight into the intricacies of the Real Estate industry. All the while, the father-and-son duo couldn’t ignore whispers about the island of Providenciales (the main island of Turks & Caicos) being the next golden nugget of the Caribbean. Intrigued, they went on a recon mission in 1998 and immediately fell in love with the island. Additionally, they recognized how underdeveloped it was, especially in comparison to The Caymens. Captivated by the untapped market, they began building spec homes on Turks and Caicos, “But like any good father and son story, we had spent too much time together, and it was time for me to branch out on my own.” Ian started his own landscaping company and worked exclusively as a landscape contractor.
When the recession hit, businesses all over the island suffered immensely. Ever the entrepreneur, Ian realized the need to diversify and identified a void in the property management market. There were plenty of absentee home owners looking for a reliable individual to look after their expansive estates, and Ian fit the bill. By 2013, the market picked back up and tourism increased suddenly and significantly. Ambitious Ian astutely switched focus to capitalize on vacation rentals. “At that point, I learned that Real Estate agents were, effectively, using me as a resource. I had a cash flow of people coming into villas each week and I was referring them out to other agents… and not getting anything for it. So I decided to take my [real estate] license and the rest is history, as they say.”
He spent four years at Christies International Real Estate; and consistent with his inherent entrepreneurial spirit, intended to eventually branch off and start his own brokerage. Ian had innovative ideas to capture the international market, techniques and marketing tactics that were highly unpracticed and underutilized on the tiny island. At that point, local realtors would simply publish their listing in a magazine in hopes that it would catch a tourist’s wandering eye. “There was no thought process to international buyers or how to reach the international audience. Social media and digital media were foreign words to the real estate association at that point.” He began headhunting Douglas Elliman and spent a full year traveling back and forth to the US in talks that ended
“We had a handshake literally two minutes later on a deal, and with that, I was put in a car and sent back to the airport.” After a long flight, a long day, and just a ten minute meeting, a plan was set forth and they broke ground
“She came back and planned The Agency launch event. Fifteen days later, she became very, very ill. By the end of November she slipped into a coma, and passed away late December. So obviously in taking on the biggest opportunity of my career, and immediately being faced with this personal tragedy and the pressure that put on my wife and our other two children, and put on me… I think all of us have shown incredible strength — to not only to get through, but to produce with The Agency. And basically getting through that experience to the point where it still hurts, but there’s light at the end of the tunnel, you eventually start to find your feet and move forward with life.” Ian showed immense emotional strength to endure such a terrible tragedy, only to be faced with another kind of disaster. August of that same year, Turks and Caicos was hit with the biggest storm in recorded history. “The roof was ripped off our house, then another mega storm hit just a week
Again, Ian perservered, and recognizes the amazing feat. “To be in this position, where we are already considered strong competition to Sotheby’s, who are a long established and dominant force in the real estate market on the island — its very emotional and very pleasing.” He has proven to be an exemplary entrepreneur, “I don’t just say something, I literally go out and get it, and make it happen. And then once we get it, then we worry about how we’re going to do it!” And he is very satisfied by how things worked out with The Agency and describes the working culture very different from other cut-throat, dollarorientated real estate associations. “It’s been a mind-blowing experience — they’re all so down to earth and very family orientated. Everything is about working together and revolves around collaboration. I couldn’t ask for anything more.” Ian’s astounding ability to overcome is truly remarkable. Due to his innate business savvy and unfaltering strength, he was able to navigate through the murkiest water and darkest skies to ultimately find joy and peace in paradise.

“They asked me why I thought The Agency would be a good fit for Turks & Caicos and after about five minutes of waffling on, much like I’m waffling on with you now, Billy Rose basically tells me to shut the fuck up, skip the foreplay, and let’s get to the sex.” Although Ian has lived in the Caribbean his entire adult life, he still clearly exudes British wit and charm, but even more so, emanates intelligence and sagacity.
Just as Ian scored a huge triumph with The Agency, he was subjected to an unexpected and devastating tragedy, a pain no parent should ever endure. In October, his twenty-two year old daughter returned to the island from college to begin her career as an event planner.

Steadfast and determined to succeed, Hurdle took the suggestion of friend and associate Jud Bardwell, to begin communicating with Santiago Arana, partner at The Agency headquartered in Los Angeles (basically other side of the world from Turks and Caicos). However, Hurdle was dissatisfied with just a phone call and requested a meeting with all of The Agency partners. The English entrepreneur, who had never even been to LA before, took a long plane ride, sat in two hours of traffic, and finally arrived at The Agency’s Beverly Hills office.

As Zhang explains, “Design is all about balance. The reason being is that homey and warm looks old but it's comfortable, whereas modern design incorporates a lot of “cold” materials like metals, concrete, and glass. It’s the same story for our commercial designs, we’ve worked with lounges and restaurants, and both are places where people have to spend time, and even the slightest details such as the color of the lights changes the whole atmosphere of the space. Too cool and it becomes almost institutional, too warm and it automatically takes you back in time and makes the space feel old. We strive to find that perfect balance to create memorable, through and through spaces that make a positive impact in our clients lives.”
