JERK MARINADE CHICKEN PREP TIME 20 MINS, PLUS MARINATING COOK TIME 30-40 MINS SERVES 6-8 INGREDIENTS ● 5 spring onions ● 1 onion ● 2 garlic cloves ● 1 Scotch bonnet chilli for a mild taste, 2 for a spicier taste ● 1 tsp grated ginger ● 1 tbsp fresh thyme, chopped ● 1 tbsp brown sugar ● 2 tsp ground allspice ● 1 tsp nutmeg ● 1 tsp cinnamon ● 2 tsp salt ● ½ tsp black pepper ● 100ml orange juice ● 75ml soy sauce ● 60ml vinegar ● 2 tbsp vegetable oil ● 1kg chicken wings or thighs METHOD

1 Roughly chop the spring onions, onion and garlic. 2 Next, chop the Scotch bonnets. Make sure you wear protective

COOK’S TIP If you can’t find Scotch bonnets, use other types of red chilli. You may need to increase the quantity to match the spiciness.

BBQ CREOLE RIBS PREP TIME 1 HOUR COOK TIME 2 HOURS SERVES 2 INGREDIENTS ● 2 racks of ribs For the BBQ Creole rub ● 1 tbsp garlic powder ● 1 tbsp onion salt ● 1 tbsp cayenne pepper ● 1 tbsp dried oregano ● 1 tbsp smoked paprika ● 1 tbsp dried thyme METHOD

1 Wash the ribs clean and pat them dry. Mix the spices together in a bowl and slowly start to rub them on top of the ribs. The bottom part of the ribs don’t need seasoning. 2 Cover the ribs with clingfilm and leave them to marinate for an hour. Once the BBQ coals have turned a uniform, ashy colour, place the ribs a good 5-6 inches above the coals – any closer and they will burn – and cover with a lid. 3 Leave the BBQ ribs to cook for 2 hours. Carefully remove the lid then serve the sticky ribs. 4 If the weather turns, you can cook the ribs in an oven preheated to 200°C/Fan 180°C/ Gas Mark 6. Cover the ribs with tin foil and cook for 2 hours.

If you prefer a milder taste, discard the seeds. 3 Add the ginger, thyme, brown sugar, allspice, nutmeg, cinnamon, salt, pepper, orange juice, soy sauce, vinegar and oil to a blender or food processor. Whizz until the marinade has formed a smooth consistency. 4 Place the chicken wings in a glass dish. Cover the chicken with the marinade and leave in the fridge for at least 3 hours so the flavours really get to work. 5 Place the marinated chicken wings on a preheated BBQ and leave to cook for 30-40 minutes, making sure the meat is thoroughly cooked.

COOK’S TIP: Turtle Bay recommends leaving the chicken to marinate for 24 hours or overnight in the fridge for full flavour impact.
