Asian Shrimp Stir Fry

Yields: 4-5 servings

Ingredients:

1 lb shrimp, peeled and deveined

2 small zucchini, diced

2 bell peppers, diced

2 tbsp olive oil

For the sauce:

3 cloves garlic, minced

1 tsp fresh ginger (grated)

2 tbsp soy sauce or coconut aminos

2 tsp raw honey

1/2 tsp red pepper flakes

Optional: Sesame seeds to top

Steps:

1. Whisk together sauce ingredients in a small bowl and set aside. If serving with white rice (recommended), start your rice cooker at this time.

2. Heat olive oil in a large pan. Sauté your vegetables until softened (a few minutes).

3. Add your shrimp to the pan and cook until pink. Pour sauce over top and stir to coat. Add sesame seeds if desired and serve with white rice.
