2 lbs ground beef

1 large onion, chopped

1 can (14.5 oz) diced tomatoes with green chilis, drained

1 can (14.5 oz) black beans, drained

1 can (14.5 oz) kidney beans, drained

1 can (8 oz) tomato sauce

1 can of beer (pilsners and pale ales preferred)

2 tbsp red chili powder

1 tbsp paprika

1 tsp cumin

1 tsp salt

Toppings:

Sour cream

Chopped jalapeno peppers

Shredded cheddar cheese

Fritos

Steps:

1. In a large pot, combine the ground beef and onions. Cook until meat is browned and onions are soft.

2. Drain fat and return to pan. Add the rest of the ingredients and stir.

3. Simmer over medium-low heat on the stovetop for at least 30 minutes, or move to the crockpot and cook on low for 3 hours. (The longer it cooks, the better it tastes.)

4. Serve with toppings of choice.
