Smoked Sausage Oktoberfest

Yields: 5-6 servings
Ingredients:

1 lb package of smoked sausage, cut into 4” lengths
1 tsp butter
1 medium onion, cut into wedges
2 cans (14 oz each) of sauerkraut, drained
2 medium apples, cut into wedges
4-6 medium potatoes, diced into squares
1 cup apple juice
Salt and pepper
Steps:
1. Brown sausage in butter in a 1 ½ qt Dutch oven or large casserole dish.
2. Arrange onion, sauerkraut, apples, and potatoes around sausage.
3. Top with apple juice, salt, and pepper.
4. Cover tightly and simmer over low heat, stirring once, for 30-40 minutes or until potatoes are fork tender.
