Mint Oreo Truffles by Sunny by Design Ingredients: 1 pkg. Mint Oreo cookies 8 oz cream cheese (softened) 2 pkg. white melting chocolates makes 35-40 truffles - Grind up cookies to a fine crumb in a food processor. - Mix crumbs with softened cream cheese (this can be done in the food processor or by hand). - Use a small ice cream scoop and shape mixture into one inch balls and place on a cookie sheet covered with wax paper. Then place in the freezer for 20 to 30 minutes or until they feel firm to the touch. - In a micorwave safe bowl melt chocolate in microwave for 30 seconds then stir. Then microwave in 15 second intervals, stirring between each interval until smooth. - Dip balls in melted chocolate using a fork and allow to dry on wax paper. If you’re feeling fancy you can drizzle a little green melted chocolate over the top.
