July in Ellicottville: Fun Times for All By Jann Wiswall

Ellicottville has pulled out its red, white and blue to keep the patriotic theme and festival atmosphere going this weekend for visitors and residents alike. Folks of all ages will find more than enough to enjoy, whether you’re into fireworks, concerts, art shows, rodeos, car races, shopping, quiet picnics or all of the above. The Ellicottville Summer Music Festival, July 4–7, is the biggest event of the summer, where art and music are featured at Holiday Valley and throughout the village.

July 5: The festival kicks off at 7 p.m. with an evening of comedy sponsored by Jamestown’s Lucille Ball Comedy Festival. Stand-up comics Tammy Pescatelli and Tony Deyo will keep you rolling in the aisles during their performance billed as “Mountain of Laughs, a HILLarious Event.” July 6: Tons of activities are on the schedule in the Village all day, beginning with the annual Arts & Crafts Show on Jefferson Street from 10 a.m.–5 p.m. At 11 a.m., take a break from shopping to watch the annual Pet Parade down Washington St. Dogs, goats — anything goes. It’s a sight to behold! From 3:30–5 p.m., inspirational musician Will Lowry will perform selections from his newly recorded album “Fragments” during a free concert at the Village Gazebo. Then at 7 p.m., head over to Holiday Valley for the festival’s feature concert starring country music great Gretchen Wilson, with an opening act by the band 90 West. July 7: The Arts and Crafts show continues from 10 a.m.–5 p.m. From noon to 3 p.m., make your way to the Gazebo for the

2013 New York State H.O.G. Rally at the Valley 1,200 Expected to Rumble into Town

By Sue Whistler

Holiday Valley Resort will be going “hog wild” this summer when they host the 2013 New York State H.O.G. Rally. The theme for this year’s rally is “Enchanted Mountain Thunder … Ride all Day, Rumble all Night.” H.O.G. stands for the Harley Owners Group and represents an enthusiastic, diverse group of Harley-Davidson owners, who get together

every year to share experiences from the road, tell tall tales about the Harley “that got away,” promote safe motorcycling and just have fun. Every Harley dealer across the country has a H.O.G. chapter and each state holds its own annual H.O.G rally. Tim McKeever, marketing manager at Gowanda Harley-Davidson, said, “This is all See H.O.G Rally page 9

2nd Annual Golf Classic at HV July 17 Honors Memory of ‘Big Ed’ Szpaicher

By Eva Potter

The second annual Ed Szpaicher Memorial Golf Classic is right around the corner so be sure to get in on action. The event will kick off with a party on

Tuesday evening, July 16 with Freddie N’ Tuck playing crowd favorite tunes at The Ellicottville Depot restaurant. With a personality and generosity as big as Eddie’s, it’s no wonder Ellicottville will never forget Big Ed Szpaicher. “My dad would have been so honored to be a part of an event like this and I know that he is always watching over us helping us along the way. We are looking forward to another great event this year,” said Ed’s daughter, Mila Szpaicher Clauss. Golf begins Wednesday with morning and afternoon shotgun starts. All morning shotgun players will receive a complimentary day pass to enjoy the pools at Holiday Valley, so plan See Memorial Golf Classic page 11

Big Changes in the Works for Ellicottville

By Jann Wiswall

Second Quarter Review If you haven’t been in Ellicottville in awhile, you might be seeing and hearing about some changes that have been in the works. Some changes relate to area infrastructure, others relate to your favorite resorts and businesses.

Transportation Improvements Getting here will be getting easier with two major highway construction projects that are underway. The first is the longawaited road improvements along the Southern Tier Expressway (I-86) between Salamanca and Steamburg. This stretch of roadway has

been the source of public consternation and front-end alignments for several years. Pothole work, bridge repair and overpass improvements have already begun. Be prepared for some temporary lane closures. Most work is scheduled to be completed this year. See Big Changes page 11

Celebrate Rich Cultural Heritage

Seneca Casino Veterans Pow Wow

By Sue Whistler

After one of the most reluctant springs in recent memory, summer is finally here and with it a wide assortment of cultural festivals and country fairs. If you’re looking for something a little different that doesn’t involve

carnival barkers and pie eating contests, check out the 24th annual Seneca Casino Veterans Pow Wow. It’s a wonderful opportunity to learn about our area’s oldest native culture and have a lot of fun in the process. The 24th annual Seneca See Veterans Pow Wow page 9

Comedian Tammy Pescatelli Headliner at ‘Mountain of Laughs’ This Friday By Stephanie Keis Timblin

Sponsored by the Lucille Ball Comedy Festival and appearing Friday, July 5, comedian Tammy Pescatelli, winner of Comedy Central’s Stand-up Showdown and finalist on NBC’s Last Comic Standing 2, will be the headliner for “Mountain of Laughs” at Holiday Valley Resort during the Summer Festival of Arts.

Ellicottville Times (ET) had the opportunity to chat with Tammy last week. Raised in a large Italian household in Cleveland, Ohio, three hours west of Ellicottville, Tammy said she has “always loved comedy.” At the age of 12, she would watch legendary comedians Rodney Dangerfield and Eddie Murphy on VHS tape See Pescatelli page 11

Americana Folk Art & Music Fair Returns to EVL July 20-21

By Alicia Dziak

One of the great things about Ellicottville is that there is always something exciting going on. The weekend of July 20–21 is no exception, with the Americana Folk Art and Music Fair returning to the village lawn from 10 a.m.–4 p.m. each day. The event, formerly known as the Antique Tractor and Farm Fair, was started by Bob McCarthy in the early 2000s, as a way to raise money for the Ellicottville Historical Society and morphed into Americana, with a focus on folk art. McCarthy describes folk art as “making functional art out of something else,” and his days of collecting various items at the Springville Auction naturally led him to create an event around it. “Americana is not your typical craft show,” said Annie Widger, a wool spinner and

weaver, and one of the show’s vendors. “There are a lot of demonstrations by the crafters, which makes it memorable and educational.” Also, unlike other craft shows, vending at Americana is free of charge. “The artists set up wherever they want, whether it’s in the shade or in the grass,” explained McCarthy. “They are not limited to a specific 10-feet-by-10-feet spot.” The folk art portion will feature weaving and spinning, woodworking and carving, stained glass, photography, jewelry making, beading, furniture making and more. “I am always looking for artists for this event,” McCarthy stated. “The only criteria is that all items must be handmade by the artist, and not produced by someone else and then resold.” There will also be tarot card

readings, and a lemonade stand run by two little girls with proceeds being donated to the Ellicottville Food Pantry. On Saturday, Freddie and Tuck will be performing from 11 a.m.–2 p.m., followed by Tory and Rob Bedard on Sunday, from 11 a.m.–2 p.m. McCarthy will also be offering cemetery tours via tractor during the event. In addition, there will be an auction on Sunday to benefit the Ellicottville Historical Society’s Jefferson Street Cemetery Restoration Project. McCarthy will be the auctioneer and will be auctioning off his own garden art, as well as other unique items. “This event is about people enjoying the day in Ellicottville,” McCarthy said. “You can sit and have a conversation, enjoy the music and see some wonderful local artists.” Americana combines a variety of artists and live music, in a family-friendly environment, offering something for everyone. Mark your calendar so you don’t miss this fun and free community event! To participate as a vendor, to donate to the auction or for more information, contact McCarthy at (716) 378-0916, or stop in to see him at his favorite hangout, Katy’s Café in the village.

GROUP FITNESS CLASSES

Artist Barbara Fox is known for her amazing, lifelike watercolors and coin face designs she has created for the U.S. Mint, and she’s added another medium to her lineup. Fox’s innate talent with a brush now extends beyond watercolor paints to oils on canvas to translate her lifelike images. But the new medium came with a few challenges that couldn’t easily be remedied in her home studio. Oil paints require longer drying times and require proper ventilation, which recently lead Fox to open a working studio and gallery at 42 Mill St. in Ellicottville. “I needed a larger space to work on larger paintings. And I didn’t like the odors of oil paints and their related solvents in my home,” said Fox. “I’d painted there last year, and knew it was a pleasant and comfortable space to work, and easily accessible for visitors.” In addition to providing a wonderful gallery space for Fox’s paintings and prints, the Mill Street Studio & Gallery provides much needed work space. Fox’s son, Trevor Brachmann, creates fantastic gemstone jewelry and displays his pieces there as well. The gallery also houses

weaver Jennie Acklin’s large loom, which she and spinner/ weaver Annie Widger use to create beautiful fiber art, as well as Widger’s spinning wheel. A photography major in college, Widger has always been a visual person. When she saw a spinning demonstration by the Enchanted Mountain Weavers Guild at the county fair about seven years ago, she said her “inner artist was recharged.” “I saw a spinning demonstration and was hooked. I signed up for spinning classes with Regina Van Scoy from Limestone and … now I am a spinner,” she said. But you can only spin so much yarn before it begs to be turned into something

beautiful, so the next natural step was to purchase a loom and begin weaving. “Anything that can be created from nature intrigues me. As a farmer and animal lover, I love the idea of incorporating fiber and hair into art,” said Widger. Learning to weave had been on Acklin’s bucket list for a long time. After buying a Swedish countermarche loom, she realized lessons were in order and began apprenticing under the teaching talents of Austrian Annette Graener, a staff weaver at a Denver gallery. Now, Acklin’s loom also lives at the studio. Its large footprint allows her to weave larger pieces like blankets and rugs. “I especially like weaving saddle blankets. I will have

some scarves and some smaller wall hangings, but mostly blankets for sale,” said Acklin. “Currently on the loom is an Irish wool and cashmere blanket in creams, greens and blues. The fiber for this was brought back from Ireland on one of Bob McCarthy’s numerous trips.” If you stop in at the gallery Thursday through Sunday, noon – 5 p.m., and you will surely catch one of these talented artists in action. Fox said, “I love the idea

that this is a working studio. It is about our hard work and creative process, not just the product, as in most galleries and shops. Visitors can see us at work and see our pieces in various stages of completion.” Visit the studio’s Facebook page at www.facebook.com/ MillStreetArtGallery, read Fox’s painting blog at www. barbarafoxwatercolors. blogspot.com and demonstration blog at www. barbarafoxstudio.blogspot .com. Oil paintings and watercolors by local artist Barbara Fox can be found at the newly opened Mill Street Studio & Gallery, located at 42 Mill Street, Ellicottville. Steinbronner Receives ROTC Scholarship at SBU After 15 months of diligent work, Alex Steinbroner, a graduate of Ellicottville Central, learned he qualified but was not selected to enter West Point Military Academy this fall. At this point, the application process was probably the most difficult task Alex had undertaken while not meeting his goal, but plan B was in place and has become his new route. Last November, Alex was awarded an ROTC scholarship. His choice of schools included Niagara University, SUNY Brockport or St. Bonaventure University (SBU). Initially, Alex chose Brockport but then learned that, along with the ROTC scholarship, SBU offered him full room and board. At last Friday’s graduation, Alex was presented the ROTC award package by Lt. Speta from the St. Bonaventure ROTC program. The package includes tuition and fees, a per semester stipend for books and a monthly paycheck (with an annual increase) from ROTC, and full room and board from St. Bonaventure totaling $41,500 per year. Alex must perform in an exemplary manner and will commit to five years’ service post graduation. His classes will include military science courses and

labs, physical training and field operations. Alex will be a psychology major and hopes his degree will enable him to help soldiers and their families who are going through the stresses of wartime. His father is a Vietnam veteran and, although never diagnosed with posttraumatic stress disorder, gave him the idea of going into psychology. “I believe right now, in the Army, there is a need for people that deal with soldiers who are getting deployed and coming back from war zones. The need is even greater than that for nurses and doctors,” Steinbroner said. “I like helping people and it will be a great way to help others and still serve my country.”

At graduation from SBU, he will receive the rank of Second Lieutenant with a full commission. His father Bill is a retired Natural Resources Program teacher at Ellicottville’s Career Tech Center. His mother Michelle teaches Early Childhood Education at the Tech Center. He has two sisters, Kristin and Jessica (Bird), and a brother Noah. Alex plans to work and get into better shape this summer. He will work for his father’s construction contracting business, and will also be a camp counselor at the Ellicottville Town Youth Program.

This very special award was made possible by the Allegany State Park Historical Society, Lanny Anderson and his wife Ann Marie, the Hootenanny Raffle, the Park Pharmacy in Salamanca and VFW Post 8734 in Little Valley, in cooperation with Allegany State Park management, and in conjunction with previous grant recipients provided by WNY Heroes.

The memorial award is named after Dade Anderson, who served as a park ranger for 36 years. The award was conceived by his son Lanny and Lanny’s wife Anne Marie Anderson. (The Anderson Trail is named after Dade.) To all our veterans, thank you for your brave service to our country. Happy Fourth of July! To stay current with activities by the ASP Historical Society,

Veterans Pow Wow

Casino Veterans Pow Wow 2013 will be held on July 19– 21 at Veteran’s Park located at 520 Broad St. in Salamanca. Bud Thompson, Commander of the American Legion Iroquois Veterans Post #1547 and a co-chair of this event, calls the Seneca Pow Wow “a really nice community event that welcomes everybody and honors Native American veterans and their families. You’ll see many native people from all over the country. The Seneca Nation is one of the original Five Nations of the Haudenosaunee or Iroquois Confederacy, which boasts a democratic government that pre-dates the United States Constitution.

Haudenosaunee means “people of the longhouse and is comprised of chiefs from the Seneca, Cayuga, Onondaga, Oneida and Mohawk. This union was later expanded to include the Tuscarora, becoming the Six Nations of the Iroquois Confederacy. At the time of the formation of the Iroquois League, the original five nations occupied large areas of land in Southeastern Canada and the Northeastern United States. The Seneca occupied territory that stretched throughout the Finger Lakes area in Central New York and into the Genesee Valley in Western New York. The Seneca people call themselves O-non-dowa-

Rally and just happens to coincide with the 30th anniversary of the founding of the National H.O.G. Association. It also marks 110 years since the first

Paul Fedorsak, marketing director and investigator for the Kantor Law Firm, which specializes in personal Injury litigation involving motorcycles, is the 2013 Rally coordinator. He said he feels privileged to be working with such a fine, all-volunteer planning committee. “It’s a great experience to be the coordinator of this very special event during this very special year, said Fedorsak. “This is only the fourth time in the Rally’s history that it has been held west of Syracuse. The three-day event kicks off with a special welcome dinner and opening ceremony on Thursday evening in the new Holiday Valley Lodge. On Friday and Saturday, participants will enjoy several attractions taking place all around the resort including a large contingency of motorcycle vendors, the Bubba Blackwell Stunt Show, live music, dancing, golf, a motorcycle light show, and a winery and brewery tour. gah (pronounced Oh-n’owndough-wahgah) or “Great Hill People. Like the other Iroquois tribes, they lived in longhouses, which were narrow, barkcovered dwellings that housed several families from the same clan. There are eight Seneca clans, each named for a different animal — the Bear, Beaver, Turtle, Wolf, Deer, Hawk, Heron and Snipe. Clan membership is passed on to children through their mothers. The Seneca Nation of Indians currently has a total enrolled population of nearly 8,000. Pow wows originated with the indigenous Native American tribes of the American West. They began as cultural festivals akin to county fairs that brought several different tribes together to meet, celebrate and compete. The general program has changed very little over the years. The annual Seneca Casino Pow Wow is an alcohol-free, family event that celebrates the culture and heritage of the Seneca Nation. It will feature real Native American arts and crafts, authentic Native American foods, educational exhibits, as well as competitive Western-style and smoke dances, and drum competitions. It’s a great way to enjoy a beautiful summer weekend with family and friends while soaking up some local culture. Connections:

Feeling Like a Kind with Your Own Children BY JEFF MARTIN

As much as I’m looking forward to the Fourth of July 4, I’m also dreading it. For the past month, my two sons, aged 14 and 7, have been visiting me from where they currently live most of the year with their mother. When they arrived on June 1, coming down the ramp from the plane, I was speechless over how much they had g rown. Because it had been a year since I had last seen them in person, I was shocked to see that my oldest son had eclipsed my height, standing just a pinch of sugar taller than me. He had a mustache, faint but noticeable, that I hadn’t noticed on the webcam and his voice was deeper. My youngest son had g rown, too, but the changes were in def inition. His nose and cheekbones were sharper and his forehead had more acreage. His arms were spindly. When I picked him up, his weight had g rown from a packet of sugar to a duffel bag full of f lour. Two hours later and it was like they had never been away. We fell into old rhythms and conversations, though now I know why my parents got discouraged with me when I was 14, a period of age that seems to invoke a sense of indifference and secrecy among those who navigate through the teen years. Unlike my youngest boy, who displayed wonderment and excitement over even the smallest of events, my oldest had become the g reat economizer of language — all responses had become one-word responses. I f inally realized that, yes, parents do have revenge on their children by moving the circle clockwise. My mother once said to me, “I hope your children don’t act like you’re acting with us right now. We had some g reat times — learning to f ish in Cattaraugus Creek, where the smallmouth bass f ight for their lives, breaking the surface of the water in an effort to unhook themselves; driving portions of the Amish Trail and marveling at their exquisite furniture; attending the Gowanda festival; gorg ing ourselves on sponge candy. My sister took them to the Buffalo Zoo and, for the f irst time, my youngest experienced Niagara Falls, an experience that inspired a basic and fantastic comment, “That’s a lot of water, dad. We hiked numerous trails and waded into the Cattaraugus Creek. The landscape, a mixture of pine forests and massive cliffs, was different from where they live and they reacted as anyone who has a break from routine would — with relief and a sense of joy, wonderment. Even my oldest came around, asking to do things he didn’t appear particularly interested in when he f irst arrived. I think the mixture of rural living with modern excitements, including the Mountain Coaster in Ellicottville, f inally clamped hold of him and wouldn’t let go. And, as their time of departure nears, I couldn’t be happier to celebrate our time together during the Fourth of July 4 with many f ireworks displays in the area. It will be a bittersweet time for me, for I won’t see my boys again in person until the Christmas season. Thing is, the concept of snow is alien to them where they live now. The closest thing they get to ice is in their freezer. Imag ine my excitement over the idea of taking them into Ellicottville during the Christmas season. It made me feel like a little kid when I f irst experienced Christmas in the village last season. Feeling like a kid with your own children ... Isn’t that what’s important in the end?

Trail Talk: Ellicottville-Great Valley Trail is $27,000 Closer to Reality by Eva Potter

If you haven’t been in Ellicottville in a while, here’s a little recreation update. Last July a few business people, government leaders and interested citizens, began meeting about constructing a recreational trail that would provide a traffic-free, safe and scenic trail for moderate-level exercise and general outdoor enjoyment. The group envisioned area residents and visitors jogging, cross-country skiing, biking, snowshoeing, pushing strollers and walking dogs on a wellbuilt trail with interesting trailheads, destinations and gorgeous views around every bend. The committee’s enthusiasm was boundless as they forged ahead opening a trail fund account with the Cattaraugus County Regional Foundation for the collection of donations, forming a non-profit organization, and raising funds for the planning and construction of the Ellicottville-Great Valley Recreational Trail. Eventually,

the trail will run from the eastern boundary of the Village of Ellicottville to Great Valley, connecting businesses, resorts and other stopping points along the way. Within the last two weeks, the Ellicottville-Great Valley Recreational Trail Fund received a huge financial boost with over $10,000 in donations by private individuals and business donors, including HoliMont Ski Resort and the Cattaraugus County Industrial Agency. The Trail Committee hopes to continue this fundraising pace to reach the estimated $1-plus million cost to complete the proposed initial village portion of trail. The fund balance stands at approximately $27,000, which will pay for the Master Plan, designed by Rick Manning,

a professional landscape architect, with excess funds put toward construction. The addition of a multiuse recreational trail will reinforce Ellicottville’s reputation as a four-season resort community, and will increase opportunities for all ages to live a healthy and active lifestyle, all while enjoying the Ellicottville’s beautiful surroundings. But before these grand plans can become a reality, more donations are needed — a lot more! You can help by making a tax-deductible donation at www. cattfoundation.org or by mailing a check payable to: Ellicottville-Great Valley Trail Fund, c/o Cattaraugus Region Community Foundation, 120 N. Union St., Olean, NY 14706. The trail is still in the planning phase and community input is encouraged. Please send your ideas to jennie@ ellicottvilletimes.com, call (716) 699-4062 or Ken Hinman (716) 474-8214, or post on Facebook at EVLTrail.

Pumpkinville 2013

New Attractions and Old Favorites

By Alicia Dziak

Summer is in full swing in Ellicottville, which means fall is not far behind. While most people are sitting back and relaxing this time of year, the Pawlowski family, the owners of Pumpkinville, are busy gearing up for the upcoming season at the popular pumpkin patch, which opens this year on September 14. According to their web site, “Pumpkinville enjoys the claim of being the oldest original pumpkin farm in New York State. In fact, research shows it might be the oldest continuously operated pumpkin farm in the United States.” While certain Pumpkinville attractions keep visitors returning year after year, new attractions are added every year to keep things interesting. New for the 2013 season are two giant jumping pillows. These 35-foot-by-70-foot inflatables will offer a fun way to burn off that back-to-school energy and are sure to be a hit with the kids. In addition, the Boo-tique and Shop got a major facelift

this year, and will offer a variety of new and different products. Popular “old favorites” include hayrides, an elaborate corn maze, helicopter rides, the Corn Cannon, pony rides, Goat Mountain and Storyland. There are also numerous wood cutouts that make for great photo ops. With so much to see and do, you’re sure to work up an appetite. You’re in luck, as delicious homemade food is everywhere in Pumpkinville. Whether you’re craving something sweet or salty, there is everything from kettle corn and pumpkin doughnuts, to apple pie, fudge, chicken

barbecue, and more. Pumpkinville will also be selling pink pumpkins again this year, kicking off Sept. 20-21 with the Pink Pumpkin Festival, which will feature live music and entertainment. Proceeds benefit the Susan G. Komen Foundation and breast cancer research. Join the fun at the one of the area’s most popular fall destinations. Whether you have an hour or a day to spend, Pumpkinville has something for kids of all ages and is sure to become a family tradition. Pumpkinville is located in Great Valley at 4844 Sugartown Rd. From the Route 219, turn onto Mill Street by Kwik Fill. Once you pass under the bridge, Mill Street turns into Sugartown Road. Follow Sugartown Road for 6 miles and Pumpkinville will be on the left. For more information, call (716) 699-2205, visit pumpkinville.com, or like their Facebook page at www. facebook.com/pumpkinville.

Big Changes in the Works Continued from Front Page

The second project, funded by the U.S. Department of Transportation (DOT), is the replacement of the 219 bridge over Cattaraugus Creek in Concord and Ashford, near Springville. This bridge, a critical link for businesses and residents in both Erie and Cattaraugus Counties, was closed for several months in winter 2013 due to structural concerns. The project currently is in design stages. Construction is scheduled to begin in 2015. NY DOT Approves E’ville Improvements At long last, sidewalks will be installed along Rte. 242 from HoliMont into the Village of Ellicottville by the NYS DOT. Originally proposed as far back as 2006, the sidewalk project, which includes drainage improvements, is one of three projects the DOT recently agreed to complete for Ellicottville. The second project is improvement of the Elizabeth/Fillmore/Route 219 intersection. The third is rebuilding the handicap ramps and curbs at five intersections in the village along Washington Street. All three projects, scheduled for completion by summer 2014, will improve safety throughout for vehicle and pedestrian traffic alike. Westmont Ridge Breaks Ground The heavy equipment is in place at HoliMont’s WestMont Ridge development, where contractors have completed tree removal and are now grading roads. In addition, work is underway to bring water and sewer lines into the area. WestMont Ridge, the first phase of HoliMont’s $22 million expansion project, will include 94 ski in/ski out residential properties and 72 condominiums near the Sunset slopes. Twenty of the first 31 lots being readied for

development have already been sold. Holiday Valley Summer Projects This summer, Holiday Valley has been characteristically busy finishing some landscaping and exterior appointments around the new main lodge and has purchased new grooming and snowmaking equipment. They’ve also torn down the old Day Care Center and replaced it with a new plaza. Plus, Sky High Adventure Park now has 13 aerial adventure courses and a new Climbing Forest which is like a 3-D climbing wall that consists of 10 trees fitted with handholds going up some 45 feet. The Inn at Holiday Valley has gotten a facelift, as well. Ellicottville Brewing Company’s Expansion Construction is 99 percent complete on the gorgeous expansion of everyone’s favorite brewery that now takes up nearly half of its block on Monroe Street. Renovations include a new, straight-fromGermany brew house that is in full operation, a state-of-the art kitchen, new dining and bar space, and a lovely new beer garden. Renovations at Old Extension Service Building The Town of Ellicottville has taken ownership of the Extension Service Building at Fillmore Dr. and Parkside Rd. The building is being partially renovated to enable the Ellicottville Courts to hold trials and conduct other business there. Renovations also will improve a large auditorium that will be available for private parties, weddings, meetings and events with direct access to the gorgeous, 8-acre Nannen Arboretum. Broad Support for Rec Trail Momentum is building for the proposed EllicottvilleGreat Valley Recreational Trail, a traffic-free route ultimately running from the

eastern village border into the Town of Great Valley. To date, some $27,000 has been raised to fund development of a Master Plan for the trail. The trail committee, composed of interested parties from all over Cattaraugus County, will be launching a major fundraising effort in the near future to fund the first leg of the multi-million dollar, multi-year project to be constructed in phases. Tim Horton’s Under Construction A new Tim Horton’s Café and Bakery is under construction at the intersection of Routes 219/242. The café will welcome southbound travelers into the village and may serve as northern trailhead for the proposed recreational trail. Ellicottville Central Schools Renovations Residents in the Ellicottville Central School District voted in March to fund a capital renovation project of the school building. Renovations will address maintenance and health and safety/ security issues, including partial roof replacement, electrical, masonry, ventilation improvements, accessibility concerns, security improvements and more. In addition, plans call for reconfiguring and adding a 100-foot-by-50foot addition to the back of the existing gymnasium to create a multi-purpose athletic and performance space. Construction will begin in summer 2014. Ellicottville Relay for Life Thirteen teams and some 125 participants raised nearly $33,000 (and still counting) over the months leading into and including the Relay for Life event held at Ellicottville Central School on June 1. There is still time to donate to the 2013 cause. Visit www. relayforlife.org.

Salamanca Garden Club Meets July 8 Explores Natural Plant Dyes

The Salamanca Garden Club will hold its next meeting on Monday, July 8 at 7 p.m. at the United Congregational Methodist Church. The program is called “Harvesting Color from Your Garden.” Members will learn about plants that can be turned into natural dyes. Three demonstrations utilizing dyed fabrics and fibers will be presented. The first will be how wool is dyed, cut and then

used in the art of rug hooking. Wilma Bridges will be the presenter. Next, members will watch Darlene Subulski needle felt dyed roving into three-dimensional animals. Mary Kay Schreckengost will show members how to create wool appliques for purses, wall hangings and pillows from dyed wool fabric. Members will learn which plants produce which colors. They will then have the

opportunity to dye eggs. Members need to bring a half dozen hard-boiled eggs, a ladle and a couple of paper towels to experiment with the natural dyes. Plans will also be made for trips to the National Garden Festival and Griffis Sculpture Park. Any questions should be directed to Nan Miller at (716) 945-3845.

over and over. Her big break into comedy came when she went to the Cleveland Improv with friends, armed with a fake ID and took a chance on open mic night. A veteran comedian, Tammy has participated in six U.S.O. tours. Tammy shared with ET that working as a comedian is physically challenging, and it takes years to truly make it in

the business. Tammy will be joined on stage by rising young talent Tony Deyo, and a showcase of comedians featuring host Nick Siracuse, a Buffalo native who performs around the country and writes for Jay Leno, Moody McCarthy, a Syracuse native that has been featured on Letterman, Erik Rivera, who has performed on The Tonight

Show with Jay Leno, and Harrison Greenbaum, a Lucy Comedy Fest crowd favorite. The Mountain of Laughs event is for an adult audience and tickets can be purchased for Ellicottville’s Summer Music Festival by contacting the Ellicottville Chamber of Commerce at 1-800-349-9099. Health & Fitness More Fit, Less Fat Aside from how many calories are burned exercising, another way to approach fat loss is through upgrading your fitness level. Research from the University of Southern Denmark has shown that our fat-burning engine increases in power as we become more fit. In fact, researchers from the University of Guelph found that with just seven sessions of high-intensity interval training

over two weeks, fat burning capacity increased by 30 percent. High intensity interval

training has also been shown to be more effective at boosting your fitness level more than moderate intensity training. Steady-state cardio is still great exercise, especially on decreased training load days or for endurance events. Just make sure to include some high intensity interval training (HIIT) as a means to increase your fitness level. As a result, you will end up burning more fat during your steady-state cardio, since your aerobic threshold will have increased from the interval sessions.

A Test of Endurance at 6 Hours of Power Do You Have What It Takes?

by Jesse Mast

Ellicottville may be a good place to enjoy some fun and relaxation — unless you’re racing a mountain bike for six hours straight. Then it’s just fun, though possibly a bit vexing at the same time. Intense competition is what will drive hundreds of cyclists to compete in the 14th annual 6 Hours of Power mountain bike race. The event, hosted by Holiday Valley Resort, is set to take place Sunday, July 14. This is not a typical race in which contestants vie for first place to a finish line. Instead, riders will pedal for six hours and the winner is whoever completes the most laps in that amount of time. This makes 6 Hours of Power not just a test of speed, but also endurance. “There are no skill levels such as beginner, sport or expert as in typical mountain bike races — it’s all about the pure endurance and stamina,” said event organizer Mark Lawrence. Lawrence said the event has grown in popularity over the years, drawing riders from more than seven surrounding states.

Beginning at Holiday Valley Mountain Sports Center, the racecourse is a 10-mile loop featuring just about every terrain type including rock gardens, hard-packed access roads, technical single track and 1,200 feet of elevation changes. “Anything can happen,” said Lawrence, “and if riders save energy, the field can change in an instant.” The race begins at 10 a.m. with a Le Mans-style start, in which riders race a quarter mile to retrieve their bicycles from their racks. From this point on, it’s six hours of intense bike riding. After each lap, riders will dismount and walk through the transition area. Beyond this area, each rider will have a pit area, which provides an opportunity to rest, eat and rehydrate before tackling the next 10 miles. At 4 p.m., the final lap of the race will begin, and whoever is left riding will make one last push for a chance to be declared winner of 6 Hours of Power. The race will officially end at 6 p.m., followed by dinner for all entrants.

Bragging rights are certainly included in the victors’ spoils, but cash awards, trophies and other prizes will also provide incentive for riders to exert themselves for all six hours. Cash awards will only go to overall winners in the male solo, female solo and team divisions, while trophies and prizes will be awarded threedeep in each category, division and age group. Pit areas will be available on a first-come, first-served basis, beginning at 7 a.m. on race day. Online registration is available at www.heartrateup. com until July 9. Registration fees are $105 for teams and $65 for soloists. T-shirts will be given to preregistered entrants and as they last on race day. Proceeds from the event will be used to benefit HEART Animal Shelters. Race-day registration will be available, if not sold out. The field limit for each category is 100, except for solo male, which is 200. Do you have what it takes to endure all six hours? Grab your mountain bike and find out.

Tips Up CafÊ and E’ville Golf Tips: Putting with a Line Spirits & Wines Team up for Gourmet Tapas Pairings by Eva Potter

Prepare your taste buds for a culinary exploration of the Mediterranean on July 11, when Tips Up owner and chef, Anton Roush, and E’ville Spirits & Wines owner, Shannon Carscallen, team up to bring you an evening of tapas-style gourmet food and wine pairing. The first of a series of four tapas journeys will feature “small plates with elaborate preparations of meals from the Mediterranean region, said Roush. Each event will highlight foods and wines from different regions of the world. When Carscallen approached him about doing these events, Roush knew they could put an interesting twist on their pairings. He and Carscallen have worked very closely on menu selections and the perfect complement of wines for each course. Guests can look forward

to five dishes and five wines including salad, a vegetable dish, a seafood and meat course, topped by dessert, with partnering wines from the Mediterranean regions of Italy, Sicily, Southern Spain and Western France. To Roush, who plans to become a big part of Ellicottville’s trendy restaurant circuit, this is so much more than five dishes and five wines. “I look at this as educational entertainment, said Roush,

who will be demonstrating and discussing culinary techniques and ingredients throughout the dinner. The high quality wines for the event were carefully chosen by Carscallen, who travels the world annually in search of distinctive and exceptional wines that are not easily found in common wine stores. But, if you fall in love with one you must have again, Carscallen’s shop will have it available for you. This adult event will begin at 6:30 p.m. in the upstairs dining room and is limited to 50 people. Reservations are required and can be made by calling the restaurant at (716) 699-2136, Roush at (843) 467-7700 or emailing him at antonroush@yahoo.com. Tips Up is located at 32 Washington Street, Ellicottville NY. E-ville Spirits is located at 10 Monroe Street, Ellicottville NY, (716) 699-4474.

Game Improvement = More FUN! by James Arbogast Instructor, Mel Sole Golf Schools at Holiday Valley

If you watch golf on TV, you will see most pros have a long line on the ball. You should as well. This line is used for lining up putts. You can get the clip in most pro shops around the area. It’s a great thing to do,

but there’s a secret to doing this, that is — do not change your mind when you’re over the ball. Your eyes will lie to you when you’re over the putt and you look at the hole by tilting your head. When you do this, the dominant eye takes over and you will think you’re not lined up. But if you use both

eyes from behind the ball and line it up, both eyes work together. Don’t change your mind when you get over the putt. It works great! My students call me all the time and tell me the line changed their games, and putts per round have dropped by at least five per round.

Art in the Park & Taste of Olean

Soak up the Art and Savor the Flavors By Eva Potter

Art in the Park: Olean’s original outdoor art show celebrates its 64th anniversary. The event is produced by the Cattaraugus County Arts Council (CCAC) and held in conjunction with Taste of Olean, sponsored by the Greater Olean Area Chamber of Commerce. This year’s event will take place on Sunday, July 28, noon–6 p.m. on the Olean campus of Jamestown Community College (JCC). Art in the Park is a one-day, juried outdoor art exhibition dedicated to excellence in the visual arts as well as enhancing and promoting the visual arts and the talented artists in the area. This outdoor event attracts over 6,000 people. Once again, artists will be interspersed with the Taste of Olean vendors on JCC’s central lawn, adding a creative flair. Art in the Park provides a wonderful opportunity to meet and talk with regional artists, and the 2013 event will include live music, face painting and additional family entertainment. “Art in the Park and Taste of Olean are a wonderful way to spend a summer afternoon. Sample our regional arts and culture by sampling the wide variety of food from local restaurants, by picking up a treasure from one of the artists, and letting your kids have their face painted by one of our volunteers, said Anne Conroy-Baiter, executive director of CCAC. Artist applications are still being accepted with an additional late fee of $20. Applications and information are available at www. myartscouncil.net, by calling

(716) 372-7455 or e-mailing heather@myartscouncil.net. Taste of Olean: Taste of Olean is an annual event showcasing delectable food samples from area restaurants. This gastronomic delight is cosponsored by the Greater Olean Area Chamber of Commerce and its 47 corporate sponsors. Meme Yanetsko, executive director of GOACC, said, “This year, the Taste Committee has added farmers markets to its booth vendors. This event has always focused on local art, local musicians, local restaurants ... we are encouraged that farmers markets will be coming this year — showcasing their farm fresh to table tastes. There’s surely a taste of something for everyone and it’s a great way to sample a variety of regional and specialty foods from healthy options to decadent treats and everything in between. Most samples range from 50 cents to $3.50. Each year the event also includes lots of great entertainment by local talent inside the CUTCO Theater and on the outdoor stage. The Olean Family YMCA will bring their inflatables for the younger crowd to enjoy.

August Lindell Fundraiser • Photos by Mary Fox

Inside shows include the Olean Irish Dancers, Studio 107 Chamber Players, Best Chef, a performance by Olean Theatre Workshop students and more. On the outside stage, you’ll see the Olean Area African Drum Ensemble, a sneak preview of “Les Miserable, Barbershoppers – Seneca Junction Chorus, Chordiac Arrest and others. The seventh annual Hospitality Wall of Fame will recognize this year’s individuals and/or businesses who have made a significant contribution and given exceptional service to the food service/ hospitality industry in the past and who may continue to do so. Simply Food By Liz Bares

Strawberry Season in Full Swing My fridge is full of fresh strawberries that we just cannot eat fast enough. I’ve made shortcake, a strawberry wine concoction with mint cream, strawberry quinoa salad, strawberry green salad, added strawberries to smoothies, and eaten them in yogurt and oatmeal. I’m ready for blueberry season. However, let’s not get ahead of ourselves. Strawberry season is still in full swing and the best way to store fresh strawberries for immediate consumption (over a few days to a week) you need to keep them in your fridge unwashed. You can wash as you need them. When you wash strawberries and store them in the fridge, they tend to get mushy with the extra moisture. Remember strawberries are almost 100 percent water, so adding water to them makes them

mushy if left to wallow in a wet puddle in your fridge. Freezing strawberries — same rule applies — do not wash them before you freeze them. I typically brush them off before I freeze them whole and take off the green tops. A super handy tip is to spread the strawberries in a layer on a pan, freeze them until hard and then put the frozen berries in a freezer bag or container. This way the berries are individually frozen and, therefore, don’t clump into a smushed ball o’ berry. So, when you want strawberries in December, for example, you can almost pull them out of your freezer individually, rinse them and throw them into a smoothie, or let them defrost and make strawberry shortcake, or just pop them into your breakfast oatmeal. Another way to store fresh

strawberries and will make probably everyone in your house very excited, and makes a wonderful dessert to bring to a party, is to make a granita. A granita is a semifrozen dessert made from a simple syrup and flavorings. Originally from Sicily, it’s a simple dessert to make especially when you have lots of leftover berries or melon. A simple syrup is just water and sugar cooked until the sugar is dissolved. I like making granita because you control the amount of sugar in the dessert. You can also add mint, vanilla or really anything you’d like. I read about one with lemongrass and watermelon — YUM! Here is a simple Strawberry Granita recipe you can take to your July 4th fete, as long as a freezer is available.

Strawberry Granita

4 cups washed strawberries, sliced in half 1 cup water ½ - ž cup white sugar 1-2 tablespoons of lemon juice For the simple syrup, put water and sugar into a small pan, bring to a boil, then simmer for about five minutes or until the sugar is dissolved. Meanwhile, place your cleaned strawberries in a blender or food processor and blend until completely pureed. Pour the simple syrup into the blender with the strawberries (making sure you are careful if your syrup is still hot) and blend along with the lemon juice. Now pour the mixture into a metal cake pan and place in the freezer. Every 10 minutes or so, mix the sides of the mixture into the center so everything freezes well. I do this with a fork. Freeze for about 30-40 minutes, blending every 10 minutes. Once your mixture is softly frozen, use a fork to sort of break apart and grate. If taking the mixture to a party leave it in the pan and then serve in small cups or a pretty glass.

And they offer swimming lessons and water aerobics classes, too. Award-Winning Golf Carve out a few hours for yourself on the magnificent 18-hole, par 70 Double Black Diamond golf course. You’ll love the perfect blend of mountain and flat terrain accented by spectacular views. The 6,500-yard course plays the equivalent of a much longer course. Sign the kids up for Junior Golf Camp while you take a lesson with Steve Carney, a Master PGA Golf Professional. The Mel Sole Golf School, named one of the top five USA golf schools, is also on-site. Rather go solo? Hit the driving range and putting greens to perfect your swing. Then stay for dinner and enjoy a local craft beer along with signature lobster macaroni and cheese at John Harvard’s Brew House inside the Tamarack Club.

Seasonal Rentals for 2013-2014 Season:

Challenging and Careening Fun For the adrenaline junkies, Sky High Adventure Park will give you the fix you crave. In case you’ve never been, the Aerial Adventure Park is a series of platforms and connecting “bridges” built in the trees on a 4-acre section of woods near Tannenbaum Lodge. The bridge may be a log, a hanging chunk of wood or other obstacles or ladder. The challenge is to figure out how to get across to the next platform. The park now offers 11 courses, including zip lines, with two new courses added this spring to satisfy everyone from beginner to commando! New this year, the park now has a Climbing Forest. It’s like a 3-D version of a climbing wall — and the only one of its kind in North America. The 10 trees outfitted with color-coded climbing holds range from very easy to very challenging and top out at 45 feet above the forest floor. For speed demons, the park’s Mountain Coaster, is similar to a roller coaster but built on a mountain. Up to two people ride in a “car” that is pulled up the hill. Then gravity takes over as you zigzag down the spiraling path complete with waves and curves. Prefer your own pedal power? Hit the trails on your mountain bike or in your hiking shoes. Enjoy the 4-5 mile race loop, the wider cross-country trails or explore the twisty singletrack trails. From June to October, take part in informal rides and organized races. For adventure seekers, cross into the adjacent state lands and ride 35-plus miles of epic trails. You can even rent bikes at the Inn at Holiday Valley. Ellicottville is also working on building a new recreational trail for more moderate athletes. With additional monetary donations, you may see some groundbreaking action in the next year or so.
