Andronis Group offers a leading Greek tourism product in what is undeniably one of the most sought after and successful tourist destinations in the country. What are your feelings about the Group’s General Management in recent years?

How the group has evolved and the reputation it has gained fills me with great pride and such optimism about the future. I feel very lucky to be located in such a destination with the appropriate dynamics that have allowed me to create a modern, dynamic and progressive organization. Looking towards the future, what do you believe the success of the Group will be based upon? What do you see as new challenges and goals?

I would like the group to be based on a modern and creative work culture that always aims to provide special experiences and one-of-a-kind emotions for its guests while offering our employees a sense of satisfaction in terms of the organization that they work for and its achievements. The company must remain a dynamic, ambitious and modern environment that promotes innovation while remaining flexible and sensitive to the needs and desires of each guest.

Is the Andronis Group targeting new markets in addition to hospitality and catering?

Our plans for future development in the near future include only hotel projects and fun restaurants. With that being said, I am always on the lookout for new opportunities while we continuously track market trends. What are the predictions for this summer season? Everyone is talking about a sold-out season. What do you foresee?

The signs so far are really very positive; at Andronis, we’re looking to maintain the same high level of service in a season where we having added so many new faces to the team.

After the two years of the pandemic where we saw such a contraction in terms of initiatives and growth, we’re really pleased to have increased our number of employees; we actually have more staff now than before the pandemic. We also want to lay the foundations for our future development as an organization.

How can the tourist season be extended on the island? Does the Andronis Group share this broader vision for Greek tourism? What factors need to be in place in your opinion?

There is a tendency for the season to grow every year by a few days. This was of course violently interrupted by the pandemic but this year we expect a slightly longer season.

Santorini has all the prerequisites for a longer tourist season and maybe in the distant future it could become a yearround destination. There are many reasons to visit the island that are not directly dependent on the weather, there are the wineries, the enchanting landscape, the high level of gastronomy that is constantly evolving as well as the island’s historical and cultural monuments.

How much has the unique boutique experience offered by the Andronis Group evolved, or even differentiated itself, and how is it being promoted through the Group’s portfolio of properties right now?

The Group’s hotels have a limited number of accommodations as well as a 2.5 to 1 employee to guest ratio. We really know all our customers and deal with them on an entirely personal level. We are constantly on the lookout for new experience offerings and closely follow global trends. With the development of technology, we have reached the point of giving our future customers many opportunities to decorate their room before arrival by adding their favorite pillows, perfumes and amenities, we have developed some of the most important restaurants in the country in terms of haute cuisine and have created one of the best overall non-invasive wellness products in Europe. Are the hotels connected to the local economy? What other actions and initiatives characterize Andronis’ footprint in Santorini?

Most of the products we use come from local suppliers. We have made local donations - such as the construction of a square in the village of Oia, equipment for school students as well as social activities such as cleaning the path from Oia to Fira, blood donations, etc. However, for us the most important project is building a residential complex for our employees thereby providing them with appropriate living conditions on an island where the summer housing problem has up until now been significant. What steps do you take in reflecting your respect for the special identity of the island?

We respect the architectural traditions of the island, we promote its unique products and we actively contribute to its social development.

Which phrase encapsulates Andronis’ philosophy with which you identify?

Kiriakakis shares his vision for the 2022 Santorini’s season.

You arrive on the island and take on your duties. What is the first place that you would go to in order to relax and rejuvenate?

The first place would be the Andronis Concept restaurant. The path in front of the restaurant has this incredible view of the Caldera and the Aegean Sea that really relaxes me.

What do you believe is the greatest asset that the Andronis Concept Wellness Resort experience offers and what exactly makes it stand out?

Andronis Concept Wellness Resort’s greatest asset is the calm and relaxation that guests get to experience throughout the season. Even when the hotel is at full capacity and the island is in high season, the Andronis Concept has its own rhythms and exudes a peaceful atmosphere.

What is the biggest challenge you face this year (which is fully sold-out)?

The biggest challenge is finding the right staff able to meet both the requirements and demands of this season and Andronis Concept Wellness Resort’s demanding clientele.

What gives you the most satisfaction in your day-to-day running of the Andronis Concept Wellness Resort?

My greatest satisfaction is seeing happy and satisfied guests. What skills or personality traits are essential in luxury hospitality today? What are the key talents you rely on? Patience and willingness!

Can you share a guest’s experience you feel you will never forget in your career?

Last year, we had an especially lovely family staying in one of our suites - at the end of their stay the mother of the family told me that her children viewed me like a member of the family. That’s a moment in my career that I will never forget. Engaging with the world of hospitality is obviously amazing and constantly offers life lessons. How have you evolved through the process of welcoming visitors to the most beautiful island in the Cyclades?

I agree that the world of hospitality constantly offers life lessons and what it has offered me is that I have become much more organized.

What secrets would you share about Santorini and Greece overall with a foreign visitor?

One of the most beautiful and special experiences that I would suggest is walking the impressive 9km hiking trail along the Caldera that connects Fira with Oia. As for Greece, I would suggest that visitors fully discover our delicious traditional cuisine.

What is your personal definition of 5-star luxury hospitality? Has it changed at all over the past few years?

I believe that yes, the concept of luxury in hotel services has changed a lot.

In my personal opinion the personalized approach to the customer and the attention to detail make the difference.

How do you think this summer season on the island will fare?

If there aren’t any drastic changes globally, I predict that 2022 will be Santorini’s best season ever. •

An interview with Andronis Group’s Operations Director George Giourtzidis about the future and challenges of sustainability on the island of Santorini.

How important is environmental-based hospitality for the Andronis Group? Corporate responsibility is beginning to grow and become more and more important globally. At Andronis we definitely wanted to be involved in this and have applied many sustainable practices to how we operate. How is this implemented within the Group’s hotels?

The main initiative that we have implemented is preparing a sustainability report so that we can begin to monitor and reduce the impact that our group has on the environment. Other actions we have taken are significantly reducing our energy, water and waste consumption. The majority of our guests transfers also take place using electric vehicles. Are there specific protocols for proper waste management and energy saving? Yes, of course. With regards to energy saving, we have taken significant steps to reduce consumption, such as replacing oil boilers with heat pumps, installing motion detectors to turn on lighting in public areas and installing smart sensors in guest rooms that automatically reduce the air conditioning output and turn off the TVs. Concerning waste management, we take great care to separate waste into recyclable and non-recyclable, limit garbage in general, have removed all forms of disposable plastics from the hotels and from this year we are going to compost a percentage of our food waste. What do we all need to do to help Santorini develop whilst remaining sustainable for future generations?

We should definitely act with respect for the place in which we operate by, for example, limiting energy use and greenhouse gas emissions. But at the same time, as sustainability consists of several factors, one of which is human, we should all invest in improving the level of people who work in our field. This can be achieved through

training and creating safe and quality-based working and living conditions.

So where is the future of Santorini’s sustainability? Does the island have its own set of challenges?

Santorini is definitely a challenging island overall in terms of the day-to-day operations concerning accommodation especially taking sustainability into account. We are all responsible for the future of this island and we genuinely want to see this place flourish and continue to attract visitors from around the world. However, the island’s infrastructure needs to keep abreast with its rapid development and in this respect, private initiatives just don’t go far enough.

Have you entered into any synergies or collaborations with the end goal of creating the infrastructure necessary for the gentle development and sustainability of Santorini over the next few years?

The Andronis Group generally seeks partnerships with companies that place sustainability high on their agenda, such as Nespresso and Apivita. With regards to operations, we have taken part in many initiatives and collaborations which contribute to Santorini’s sustainability. However, in terms of the island’s infrastructure, not much can be done by a hotel group acting alone. The State has the first say in this regard.

What personalized experiences does the Andronis Group offer that respects the destination that you are so proud of?

One of my favorite experiences is the Cooking class at Andronis Concept. It is essentially a three-hour cooking class during which visitors learn some simple Greek recipes using local ingredients such as cherry tomatoes and fava beans. Another very beautiful and popular experience is the hike that takes place between our hotels in Oia and Imerovigli during which our guests become acquainted with Santorini’s history. •

As a specialist, what is your philosophy concerning Andronis spas? What are the core values of your direction? Human beings are incredible creatures and we have so much within ourselves to not just survive but flourish. Our philosophy is focused on a person’s entire well-being as unique individuals because no two people are the same. With the right tools and proper guidance, our hope is that guests can unwind, reflect, recharge, and reconnect with their inner self. Tell us a bit about yourself and your relationship with Greece. How did you come to Santorini?

It is not a coincidence that a Greek poet said; “moderation in all things”. I believe that moderation reflects the very essence of a healthy lifestyle, so perhaps I was drawn here because I am aligned with this philosophy. In my career, I have lived and worked in Greece on different occasions, but my arrival to Santorini was because a mutual friend of mine and our General Manager, George Filippidis, brought us together after recognizing we were aligned in our forward thinking on the concepts of wellness and the direction Andronis was wanting to take as a leader in the spa and wellness arena

Can you describe a day in your life as the Director of Spa and Wellness at those amazing Andronis Spas?

Every day is unique, I think. I do my best to open the door to all possibilities. I have a great spa manager that takes care of our operations, so that allows me to focus on staying in the forefront of developing our training banks, and creating the best environments, and treatment protocols for our future. It also allows me to nurture our relationships with guests, colleagues,

What should Andronis guests expect this year from

Gosh…. Have you got an hour so I can share everything with you….. expect to be surprised and delighted!

Each one of our 3 spa and wellness locations is different. Both in their environment and menu philosophy. While our foundation has a common bond, we have developed new menus this year for each location, as well as a wellness menu. So, there is a lot going on. A few things to share; body screening analysis, remedial & recovery therapies, and then some lighter offerings; family reconnection fun, an adult art space for guests to find their inner child, mindful eating sessions, kundalini dance… Exciting things are happening!

What has been the most popular spa treatment among them?

I think it is still a bit early to know what will be popular with this year’s guests, but so far, we are seeing a lot of interest in

our signature collections, which are based on our wellness pillars. And of course, one of our most popular from last year is the water healing treatment, The Water Path, which is a combination of our Kneipp pool experience in contrast bathing, accompanied by a treatment that focuses on reflexology and the energy meridians of the body through the lower limbs.

The pandemic has dramatically reshaped traveler attitudes towards health and wellness. What are the changes brought to Andronis Spas as a response to this?

Our wellness concept has matured a great deal in the last year, not necessarily because of the pandemic, but because we recognized that in today’s world there is a growing need for nurturing our mental health in combination with our physical health. Our core values and wellness philosophy will continue to focus on embracing guests’ entire wellbeing through body mind and spiritual balance.

What’s your approach towards therapeutic methods and wellbeing in general?

I think my philosophy has always been that we are powerful beings, and we have the will and the inner strength to heal ourselves and choose wellness for our physical bodies and our minds. My studies have been in the area of human biology and behavioral science, but I am a therapist at my core, so I try to create treatments and services that are all encompassing. How do you explain the strong pace of development of the spas in almost every hotel around the world?

In my opinion, the pace of development of spas has been strong for many years, but perhaps that much more in the last 3-5 years. Perhaps it is a sense of desperation to find that magic “answer” to good health. I try not to get too caught up in the race for trends and passing excitement. I think being present and mindful and creating experiences that enrich the outcome for guests visiting the spa and wellness facilities is the key to success.

What do you love most about your job in the island of Santorini and what are the challenges you face?

Living on an island you always face operational challenges because things don’t always function as they should, and shipments don’t always arrive when we wish them too, so you must be open to adaptation, always!

I love that we live on an island rich in natural infrared radiation from the island’s powerful energy source, the volcanic arc. That in combination of being surrounded by the healing waters of the Aegean Sea… it’s a win win!

What is your favorite Santorini spot you go to recharge yourself?

Hmmmm…. I can’t give away my secret spot, but it is definitely near the water’s edge. I am 100% of the mind that there is healing in natures salt bath. •

“Embracing guests’ entire wellbeing”

Andronis Spa Director, Carla Sage, talks exclusively and explains how Andronis can help us rediscover our best self.

Sotiris Kandilis, Andronis Wine Director

How long have you worked as the wine director at Andronis, and what made you decide to stay with this hospitality group?

When I permanently moved to Santorini in 2017, I joined the Andronis Family and began working there at the Catch bar restaurant as a sommelier. Since the very beginning while working for Andronis I saw that there was great potential for both sides; you could say that I found the vehicle and Andronis found the driver for the race. This was definitely a win-win situation that flourished from the get go. The next year, preparations were made and I became the wine director of this great family.

What is the first thing you want to eat or drink every time you return to Santorini?

Even though I only ever leave Santorini for a short space of time, the taste that I long for when I return is a melitini, a local delicacy that I love to eat while I drink my morning coffee accompanied by a pistachio liquor that my friend Loukas Lychnos distills in his distillery.

What is the day-to-day life of the Wine Director of Andronis like on Santorini? What defines a good Wine Director?

Working in a destination with such high standards as Santorini, you have to behave and prepare just like a professional athlete. You have to leave a lot of things aside and focus on every day demands which requires waking up very early and being prepared for a busy day as there are always a lot of things that need to be done in order to provide your sommeliers with everything needed for the night service. An extensive wine list like ours (1,400 labels and counting) needs to be updated daily. It feels like an endless quest adding new labels, replacing others or storing others in our wine cellars. One thing is for sure, it’s a lot of fun. I believe that being knowledgeable and at the same time humble defines a Wine Director.

Have you noticed any changes in how guests are choosing and ordering wines? Every person is different and has to be approached as an individual. The difference that I see is that our guests are more willing to try Greek wines. What is the secret of pairing? Is there a key element for perfectly balancing wine and food?

Life is simple. We tend to make things complicated in order to satisfy our ego. The rule is that there is no rule in pairings. Trust your instincts and experiment. I always explain to guests that we have a perfect pairing when the food finishes at the same time we finish the bottle of wine. If we finish the bottle of wine before finishing the food that means we enjoyed the wine more than the food and the other way round means the exact opposite thing. When we unintentionally have one sip of the wine, one bite of food and we repeat this process, it means that the pairing is perfect. You see we clean our palette with the wine so that we are ready to have the next bite… it really is that simple.

What is your advice for pairing Champagne with food? Does it work as well as wine?

Personally, I love Champagne, that’s why in 2021 we started the champagne degustation menu at Lycabettus Restaurant. People however have different perspectives and we need to break these stereotypes. Champagne is a magnificent style of wine and should be treated that way. I get so frustrated when I see people in the pool drinking something that is in essence so poetic. It is a pity to waste someone’s efforts just for fun.

What is your favorite grape variety?

It depends… on the mood, the company and the occasion. I love assyrtiko which is why I initially moved to Santorini. The mouth-watering acidity, the minerality and the aging potentials that it has, it’s like a chameleon.

Are Greek wines like assyrtiko growing and becoming better known internationally?

Assyrtiko made Greek wines known worldwide. I feel very proud and honored when our guests ask about trying another Greek variety.

Are you still fascinated by the Andronis world of fine dining?

Pioneers like Andronis lead the way, they don’t follow a path, they create it, that’s fascinating for me. The different concepts in our restaurants and the events that are held every year verify that. The most promising thing is that other hotel chains are following this path.

Are there any lessons you can draw from all these years at Andronis?

If only I had the time to document all the lessons I have learnt! We learn new things every day, it’s endless really because you interact with so many personalities. •

Andronis Group welcomes Summer 2022 on the island of Santorini with new high quality homes for its staff

In keep I ng wI th our belief that our people are our most important resource, September 20th, 2021, signified an important date both for the Andronis Group and its valued staff in an event that celebrated the forthcoming construction of Andronis Group owned employee homes.

As Miltiadis Andronis clearly stated “Listening to the needs and desires of our hotel staff” and prioritising “the provision of high-quality accommodation for all, visitors and employees, we decided to proceed with a project that raises the standard of living while promising a continuing investment towards this direction.”

The accommodations which will

ultimately consist of a total of 200 homes will adequately house our prized staff providing them with everything they need for their well being and peace of mind while they work during the summer months. In what has been a perennial problem for so many staff who work on the island every year, the provision of the homes being built provides a solution to the most basic problem that staff encounter during the summer season, namely staying in good quality accommodation.

Plans also include other amenities such as dedicated staff parking spaces, a restaurant, mini-market, a play area, free sports area and a communal laundry.

As the main photographer behind the beautiful images showcased throughout this summer’s magazine, we caught up with Tryfon to talk about tourism related photography and what makes working in Greece and Santorini especially so special. What do you ultimately believe the role of the Greek photographer is in tourism and the hospitality industry? It’s huge. Photos dominate any holiday brochure, any type of printed advertising material, billboards, guide, brochures for tourist attractions… Images of destinations, landscapes, hotels, people relaxing and having fun. Before choosing a destination, the public wants to see people having a good time, beaches or attractions that they will dream of visiting. Many types of photography can present tourist destinations from many different angles. Apart from architectural photography that depicts hotels and various other accommodations, food photography, lifestyle, even fashion photography also play an important role.

How do your photos highlight Greece’s unique beauty?

As a travel photographer, I travel over 9 months a year and have the good fortune to return to some of my favorite destinations over and over again. The challenge, then, is to look at these same places with a different eye and share that feeling in my photo. Sometimes however, if I’m on a tour and we get to the most spectacular sight of the tour at noon, when the light is flatter, I have to make it work and that’s always stressful. There is always the fear that I am not in the right place at the right time.

Turning to Santorini, are there any other destinations

in the world with such a unique landscape?

Certainly there are destinations that compete with the beauty of the landscape of Santorini, but, photographically speaking, Santorini dominates due to its special color. The alternation of tones is incredible as is its wonderful light.

As a professional who has photographed this island so many times, where would you suggest visitors go to see the magic of this island for themselves?

Well, there’s Oia for sure as well as the unique and traditional village of Emporeio which just transports you to another era. •

Known for its iconic caldera, unique and colourful sand or pebble beaches resulting from solidified lava such as the Red Beach, the Black Beach and the White Beach, whitewashed houses and deep indigo sea, nowhere on earth quite compares with the wild natural beauty of this infamous volcanic island; an island steeped in the legend of the lost Atlantis that has captivated so many imaginations through the decades. Drawing visitors from all four corners of the globe who flock to the island to view its monumental sunsets, awe inspiring views, cuisine and wines, it is no wonder that Santorini has been voted one of the most beautiful islands in the world time and time again. Inhabited since as early as the Neolithic Period (4th millennium BC approx), Santorini’s long history is extremely varied: Archaeological discoveries made near Akrotiri and the island’s famous Red Beach show the existence of an important ancient Minoan colony (who settled on the island between 2000 and 1600 BC) - very similar to those found on the island of Crete. In Ancient times, Santorini Island was

known as Stongili, which means round in Greek. Strongili was the victim of an enormous volcano eruption between 1642 and 1540 BC, an eruption so huge that many consider it to be the main cause of the destruction of the great Minoan civilisation on the island of Crete, situated 70 nautical miles away, through the creation of gigantic tsunami waves that reached the shores of the surrounding islands and Crete. After the explosion, the centre of Santorini sank, with the many earthquakes that followed destroying a large part of the rest of the island. The island has been inhabited by the Minoan civilisation, as well as the Phoenicians, the Dorians and the Byzantines; all the way through to the Venetians and Turks who have all left their mark on the island. The present group of islands known as Santorini, named after the small chapel of Agia Irini (or Saint Irene) by the Venetians, comprises five distinct islands: Santorini (aka Thira), the main island, Thirasia and Aspronisi at the periphery and the two Kameni islands at the centre.

The view of the volcano from Santorini may be dreamy, but the grey calmness of ground zero hides a tension that stirs powerfur new emotions.

Mostly referred to as the «Painter of Santorini», Christoforos Asimis’ paintings are an ode to the island’s mesmerising landscapes and brilliant light. This renowned artist has dedicated over half a century to celebrating the island’s fierce natural beauty. Born and raised on Santorini, Asimis, who studied at the Athens School of Fine Arts, has been inspired from the unique island’s landscape and magnificent light.

The island’s unique and very fertile volcanic soil allows it to produce excellent wine among others. Below: For thousands of years, Santorini wine growers prune their vines in a way that creates a nest for their grapes. This is the Santorini “kouloura”.

The island’s incredible beauty is evident before you even arrive. An astonishing sight from the air – with its collection of five islands floating on the endless blue of the Aegean Sea almost like pieces of a jigsaw puzzle, it’s hard not to feel drawn to the magical legend of Atlantis – everything below seems to have a story to tell while the flat glistening blue sea hints at hidden worlds lost deep down below. As the aeroplane prepares to land, a dazzling mosaic of colours gradually becomes visible, from the grey and red rock face of the crater – Caldera from the Greek for “cauldron”, studded with windmills, the island’s trademark blue-domed churches and terraces of sugar-cube whitewashed settlements that seem to run along the rim of the Caldera almost like a ribbon. Probably Santorini’s most famous image, these whitewashed settlements with Caldera views in

Firostefani, Fira, Imerovigli and Oia are built into the rock face from ancient cave dwellings to now boast exclusive hillside hotels showcasing infinity pools and luxury spas, accompanied by boutique shops, bars, nightclubs and restaurants.

The Caldera itself – famed as one of the most beautiful sights in the entire world – is the result of thousands of years of violent earthquakes and volcanic eruptions, one of which, between 1642 and 1540 BC, caused huge tsunamis that are said to be responsible for wiping out the Minoan civilisation along the north of the island of Crete situated 70 nautical miles away. The island initially split into three parts in the volcanic eruptionSantorini (Thira), the main island, Therasia and Aspronisi at its periphery. Subsequent underwater eruptions (the most recent in 1570) threw up the two further islands – Palia Kameni and ‣

“Roka” Restaurant is settled in an old building of 1912 with interesting architecture –in an area where you can admire old preserved captain houses. The warm colors of the small courtyard filled with trees and flowers give you the feeling of a relaxing and pleasant welcome escaping from the crowd.

Inside there are three small charming rooms to sit ideal for some colder nights near the wooden stove and enjoy delicate flavors. On the backside of the restaurant there is wonderful sea view of the northwest side of the island. Hidden and private but only a few minutes away from the main marble walk way.

A new team with fresh ideas took over the restaurant on 2017 continuing the good work. Our vision is for the visitors to feel welcome and at home receiving experienced, attentive and friendly treatment.

Nea Kameni (“Old Burnt Island” and “New Burnt Island”) – that complete the fascinating archipelago. Today, the aftereffects of these dramatic geological events represent the island’s two main sources of wealth, namely tourism and agriculture, with the latter owing its success to the island’s unique and very fertile volcanic soil and perfect climate allowing it to give birth to excellent produce such as its fava beans, cherry tomatoes, capers and famous goat’s milk cheese known as chloro. What Santorini is best known for, however, is its wine production. Whilst wine was made on the island in Greek and Roman times, the region became particularly noteworthy in the Middle Ages when Crusaders captured control of the island from the Byzantine Empire after Constantinople was sacked in 1203. Today, its production includes indigenous white grape varieties such as Assyrtiko, Athiri and Aidani, other wines produced using international varieties as well as its unique reds made from its indigenous red grapes known as Mandalieria and Mavrotragano. With approximately 1,200 hectares of vines scattered around Santorini, the wines are stored in traditional kanaves (cellars), the most well known being at Megalochori, Mesa Gonia, Messaria, Pyrgos and Oia.

An amazing pottery artist and Santorini original, awardwinning, fifth generation Andreas Makaris continues to work in his workshop and studio “Chroma kai Nero (Earth and Water) Art Pottery Studio” in Megalohori. Inspired by Santorini’s famous light and mythical beauty, he is a natural teacher who was clearly destined to pass on his knowledge to the next generation. Pottery for him is a job that requires strong hands, the mind to work well and the eyes to work well, too. Born in Athens in 1951, Andreas’ first pottery lessons began at the pottery wheel of his grandfather Christos. Later graduating from the School of Ceramics in Athens where he also taught for the next 6 years, Makaris’ talent garnered him 5 awards at the annual Greek National Pottery Exhibition.

Further along the edge of the Caldera, Imerovigli is like an extension of Fira albeit situated on a higher cliff. Also providing very romantic views, Imerovigli offers peace and quiet as well as proximity to the hustle and bustle of Fira. Akrotiri is a traditional village located next to the famous Red Beach which hosts the most important archaeological site on Santorini. Still unspoilt by mass tourism, Akrotiri offers one of the most peaceful spots on the island. Other traditional villages include Emporeio. Surrounded by vast vineyards and

This is the first museum exhibition devoted to this renowned artist to be held in Greece, and is organized by the Museum of Cycladic Art in close collaboration with Marden and curator and artist Dimitrios Antonitsis.

Walking from Oia to Fira is the way Andronis keeps us in action.

the most famous walking path in Santorini is the one that leads to Fira. The hiking trail from Oia to Fira is almost 10.5km (6.5 miles). Part of the path is similar to a sidewalk, parts are cobblestone and parts are a dirt path.
